There are so many fun and exciting things happening in May (check out the May calendar on page 38). Obviously, this is a great time to celebrate mom with a new workout together, some glorious flowers, sparkling gems, and maybe a nice brunch on the patio!
But however you decide to give some extra love and appreciation to she who brought you into this life, don't put it off! Pick up the phone and let's get a plan together!
And there certainly are many brunch options, either homemade using Sybil's recipes starting on page 26 (Did someone say Bananas Foster?) Or brunch-it-up at local restaurants. See some of our Local Favorites on page 14 .
Obviously there are plenty of other things to do this month. For some, the first weekend of May is a great time to head south to the Sonoita Fair Grounds to take in some local horse racing (and maybe place a small wager on the Kentucky Derby). While you are down there maybe stop by a winery or three around Sonoita and Elgin to enjoy local fruit of the vine. That's where you will find us!

Humberto and Czarina Lopez pledge $5 million to TMC

Tucson Medical Center recently received a major gift from the Humberto and Czarina Lopez family. The TMC CardioVascular Center is recognized nationally for exceptional, innovative diagnostic work and treatments.

The nationally recognized cardiovascular center will receive a total of $5,000,000 to support the center’s lifesaving work. The donation includes $1 million in donation matches. The program will be renamed the Iliana Maria Lopez CardioVascular Center at Tucson Medical Center.

They are back! Sweet Tomatoes Salad Buffet.
Sweet Tomatoes -- the salad buffet restaurant and a huge local favorite -- will reopen the former location at 6202 E. Broadway in the coming months with new ownership. Both locations of the popular restaurant closed during the pandemic. No word about plans to reopen the location on Wetmore Rd., which is owned by Tucson Mall.

Jonathan's Cork — long a local favorite — has new owners
For more than 40 years Chef Jonathan and Colette Landeen have literally set the table Tucson's special occasion dinners. Western-style steak dinners, escargot and buffalo, and a robust menu that have been longtime favorites. All on a background of white tablecloths.

Late last month the Lundeens turned over the "cleaver" to new owners Glenn and Sally (nee Shamrell) Murphy from Perth and Bisbee, respectively. The new owners pledge to keep the place like it has been for decades.

Oh, Fabulous Diamonds!
We have become very good at creating actual diamonds in the lab! So that stunning gem might have taken a different path to you. And it might have nothing to do with a messy mine in Africa.
Lab-grown diamonds, also known as synthetic diamonds or cultured diamonds, are created in a laboratory using advanced technological processes that mimic the natural geological conditions that produce diamonds underground. Think extreme heat and massive pressure!
On the other hand, earth-grown diamonds, also known as natural diamonds or mined diamonds, are formed deep within the earth over millions of years through geological processes.
“Customer education has created acceptance, and their confidence in lab grown diamonds has

been increasing,” said Birko Roland of The Diamond Store. “We carry both and let the customer decide.”
One of the most significant differences between lab-grown and earth-grown diamonds is their origin. While lab-grown diamonds are created in a controlled laboratory environment, natural diamonds are extracted from the earth through mining. The mining process is often environmentally destructive and can lead to significant environmental damage, including soil erosion, water pollution, and habitat destruction.
In terms of quality, lab-grown diamonds are virtually identical to natural diamonds. In fact, they are often considered superior to natural diamonds in terms of their color and clarity since they can be grown under controlled conditions without some of
the impurities that can occur in natural diamonds. This means that lab-grown diamonds are often less expensive than natural diamonds of comparable quality.
“People don’t buy diamond jewelry for its investment value. It’s an emotional purchase and that is where its true value lies,” said Roland.

Lab-grown diamonds also have several other benefits over natural diamonds. For one, they are more sustainable and ethical since they do not involve the environmental damage and social issues associated with diamond mining. Additionally, lab-grown diamonds can be produced in larger quantities, allowing for greater availability and more affordable pricing.
However, some people prefer natural diamonds due to their rarity and unique characteristics. Natural diamonds
also have a certain mystique and history that some find appealing. Additionally, some argue that natural diamonds hold their value better over time than lab-grown diamonds, although this is a matter of debate.
“Natural diamonds are finite and rare,” said Roland. “Diamonds are becoming rarer every day because no new significant deposits have been discovered in about 30 years.”
In conclusion, while there are differences between lab-grown and earth-grown diamonds, both types of diamonds have their advantages and disadvantages. Ultimately, the choice between the two depends on personal preference and values, including considerations such as environmental impact, social responsibility, rarity, and cost.
Natural diamonds are truly rare, but does it matter, if you can get a bigger and better lab grown diamond for 50-70% less cost?

BUILDING A WORKOUT PLAN TOGETHER WITH THE WOMEN YOU LOVE CAN BE SATISFYING AND FUN ADDITION TO YOUR RELATIONSHIP.
Are you the type who prefers group fitness classes, training by yourself or perhaps with a partner? The great thing about fitness is there are so many ways to do it. But let’s build a plan.
Start off with a goal in mind and visualize where you want to be. Just think of it as a roadmap or GPS to your final destination. This will help keep you and your training partner on track, said Natali Medlin, owner of Built4This Personal Training Studio.
HERE ARE A FEW WAYS TO BEGIN YOUR VERY OWN ROAD MAP TO BUILDING A BETTER BODY:
• Get a notebook or exercise journal.
• Write down your goals and create a schedule of what, when and where you plan on working out. If you’re not sure how to workout or what to do then start doing a little research and if you’re concerned about injuring yourself or you need that accountability then it’s time to seek out a professional trainer.
And working out with friends and partners (who can keep you accountable) is another fun alternative! Mother-daughter workouts can be a great way to get fit together through shared fitness and health goals.
“Always ‘listen’ to your body as you are working out,” said Natali Medlen, owner of Built4This Personal Training studio. “And be very focused on your technique when doing these exercises for maximum gain.”
These are some of my favorite springtime exercises that can be performed outside with body weight, resistance bands, or at the gym with dumbbells.

AS ALWAYS, START OFF WITH A LIGHT WARM-UP OF 10-15 MINUTES. THEN PERFORM THESE KEY EXERCISES:
• Glute bridges — 3 sets of 10-20 reps
• Squats — 3 sets of 10-20 reps
• Push up or kneeling push up — 3 sets of 8-12 reps
• Step ups — 3 sets of 10-20 reps
• Supermans — 1 set of 20-120 seconds
• Side lying abduction — 1 set of 15-30 reps (each side)
• Crunches — 1 set of 15-30 reps

Better Than Breakfast, Let's Brunch!
Our Favorite Mother's Day Brunch Recipes
BANANAS FOSTER

Serves 4
INGREDIENTS:
• 2 tablespoons unsalted butter
• 6 tablespoons light brown sugar
• 1 tablespoon Rum
• 2 tablespoons banana liqueur
• 1 tablespoon vanilla extract
• 1 teaspoon cornstarch
• 4 medium bananas-sliced
• 2 1/2 cups vanilla ice cream
• Chopped pecans
DIRECTIONS:
In a medium bowl, mix butter, brown sugar, banana liqueur, vanilla and cornstarch until well combined.
Place this mix in a medium sauté pan and bring to a boil. Then fold in the bananas. Stir to combine and add the rum, ignite to flambé. Remove from heat and serve over vanilla ice cream, sprinkled with the pecans.
ARTICLE BY SYBIL VELARDEEGGS BAKED OVER SAUTÉED MUSHROOMS AND SPINACH

Serves 4
INGREDIENTS:
• 1 tablespoon olive oil
• 1 large leek, white and light green parts only, cut into 1/2 inch pieces
• 1 tablespoon unsalted butter
• 1 pound white or cremini mushrooms, thinly sliced (about 6 cups)
• 1 tablespoon soy sauce
• 1/4 cup dry red wine
• 5 ounces baby spinach
• salt and pepper
• 4 large eggs
• 4 slices whole grain toast
DIRECTIONS:
Preheat oven to 350F. Heat up the oil in a deep skillet. Add the leek and cook over moderate heat, stirring until softened, about 3 minutes. Stir in the butter and mushrooms. Cover and cook, stirring occasionally until the mushrooms are softened and a lot of the liquid is released, 7 minutes.
Uncover and add the soy sauce and red wine. Cook over moderately high heat,
stirring until the liquid is reduced to 2 tablespoons, 5 minutes. Add the spinach and stir until wilted, 2 minutes. Season with salt and pepper.
Coat 4 1-cup ramekins or small gratin dishes with oil. Transfer the mushrooms and spinach to the ramekins and crack an egg on top of each. Bake 10-12 minutes, until the white is barely set and the yolks are runny. Let stand for 2 minutes and serve with the toasts.
SALMON MOUSSE CUPS

Yields 2 dozen
INGREDIENTS:
• 3 ounces cream cheese softened
• 1/2 cup butter
• 1 cup all-purpose flour
• 8 ounces cream cheese
• 1 cup fully cooked salmon chunks- or 1 can (71/2 oz) salmon, drained, boned and skin removed
• 2 tablespoons chicken broth
• 2 tablespoons sour cream
• 1 tablespoon finely chopped onion
• 1 teaspoon lemon juice
• 1/2 teaspoon salt
• 2 tablespoons chopped fresh dill
DIRECTIONS:
Beat the cream cheese and butter in a small bowl until smooth. Add flour and mix well. Shape into 24 balls. Press onto the bottom and up the sides of miniature muffing cups.
Bake at 350F for 10-15 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks to cool completely.
For filling, beat the cream cheese in a bowl until smooth. Add the salmon, broth, sour cream, onion, lemon juice and salt until blended. Spoon into the shells. Refrigerate for 2 hours at least. Sprinkle with dill.

Dr. Arun Nagabandi is a board-certified interventional cardiologist specializing in interventional cardiology and structural heart disease. Well recognized for his leadership qualities and communication skills early on in his career, Dr. Nagabandi served as chief internal medicine resident during his training at Creighton University Medical Center in Omaha, NE and chief cardiology fellow while at Augusta University.
