This month is all about celebrating the guys who make our community such a rugged, reliable, and welcoming place to call home.

Castle Rock is full of standout public figures—the business owners, coaches, and local leaders who are out front, driving our city toward a bright future. Their drive and leadership are easy to see, and we are proud to share their stories of success and grit.
But, just as importantly, we wanted to take a moment to tip our caps to the "behind the scenes" men. These are the guys who don’t look for the limelight but are always there when a neighbor needs a hand. They are the dads coaching from the sidelines, the quiet volunteers at our local charities, and the professionals who keep our infrastructure running smoothly. Whether they’re out on the trails, maintaining our open spaces, or simply being the bedrock for their families, their impact is felt in every corner of this town.
There’s a certain "Castle Rock brand" of masculinity that we’ve always admired— it’s a mix of hard work, a love for the outdoors, and a genuine commitment to looking out for one another. A: “If you’re a good person going in, that shows. If you’re not, that shows too. I also learned that people form this parasocial relationship with you — they assume things about you. When in all actuality, different circumstances bring out different parts of who you are. I was on TV trying to find love. The kindness people were showing after felt a bit fake, because they wanted to be a part of something that isn’t who I am individually, but a part of what they saw on TV. And so I had to get away from everybody and everything and the noise.”

Q: YOU JOINED THE AIR FORCE RIGHT OUT OF COMMUNITY COLLEGE. WHAT WERE YOU ACTUALLY RUNNING TOWARD?
A: “There was something in me that was saying: I’m not living up to my full potential. I was being a follower. My uncle said, ‘What’s going to make you become an adult the fastest?’ I said, obviously, the military. The Air Force broadened my thought process more than anything. We’re so caught up in our own perception — when you learn to understand different people’s perspectives, it adds to you in so many ways.”
Q: WITH OSHUN, YOU OWN YOUR MANUFACTURING, YOU EMPLOY A CHEMIST, EVERY PRODUCT HAS A BATCH NUMBER TRACEABLE TO ITS ORIGIN DATE. WHY DID YOU DECIDE TO GO THAT DEEP WITH THE BRAND?
A: “The EU bans 1,100 ingredients in personal care products. The U.S. bans nine. That’s my starting point. Oftentimes, it might be the same ingredient, but it comes from a place where it doesn’t have the highest purity. And 60% of what we put on our skin is absorbed. Every product Oshun makes carries a batch number that goes back to the exact day it was created — I can show you every single supplier, the date, the origin. I own more than one part of the supply chain because that’s the only way I can stand behind what’s in the bottle.”

The sun is shinning, the flowers are blooming, the bees are happily buzzing along. Yes, June has arrived and with it we are now in the perfect time to plant the glorious gardens we have dreamed about all winter. Whether you are a flower gardener or a veggie gardener, this is your time to shine.
• Warm-Season Veggies & Herbs: Transplant tomatoes, peppers, and eggplant by mid-June. Direct sow beans, corn, cucumbers, squash, radishes, pumpkins, and melons.
• Sow Root Vegetables: Carrots, beets, and radishes, along with summer lettuces.
• Flowers: Plant as companions to your vegetables. Try sweet alyssum, nasturtium, zinnias, petunias, and marigolds. Mid-June is also a great time for sowing sunflowers.
• Perennials & Shrubs: June is the last month for planting new perennials before the heat of late summer makes it difficult for them to establish.



Gardening is more than a lifestyle—it’s a passion cultivated over 25 years in landscape design. I cherish every moment spent nurturing the earth, watching beauty unfold, and sharing nature’s bounty. From vibrant blooms to fresh harvests, my hope is to inspire you to step outside, breathe deeply, and grow with intention.

• Watering: Water evenly and directly at the base of plants in the before 8:00 am to be water wise and to prevent evaporation and diseases. If rain is scarce, deep water trees and shrubs, Colorado summers are very dry.
• Mulching: Apply 2-3 inches of organic mulch (straw, bark) around plants, to retain moisture, keep roots cool, and suppress weeds. Keep mulch 2-3 inches away from the base of plants to prevent rot.
• Weeding: Regularly remove weeds before they go to seed. This will help to prevent the weed from reproducing and reduce competition with other garden plants.
• Harvesting: Begin harvesting cool-season veggies like spinach, lettuce, and kale before they bolt (go to seed) due to rising temperatures.
• Soil Amendment: Work in organic compost for high-production plants like tomatoes.
• Fertilize: Use organic fertilizers. Weekly applications of fish emulsion has worked well for me.
• Wind & Hail: With our recent very warm winter and a potential Super El Niño developing be prepared to protect plants from sudden June hail storms.
• Water-Wise Gardening: Focus on drought-tolerant plants or xeriscaping to manage lower water availability. Take the Castle Rock Water District Water Wise class to learn more.
Companion planting creates a more productive, healthier and sustainable garden by using the natural relationships between plants. Companion planting serves as a natural pest control, enhances soil health, boosts pollination, and maximizes garden space making plants rely less on chemical fertilizers or pesticides. Most vegetable crops have friends or foes in the garden. Here are a few companions for tomatoes and zucchini.
Tomatoes:
• Friends: Basil, cilantro, parsley, thyme, asparagus, carrots, marigolds, nasturtium, borage, calendula
• Foes: Potatoes, cabbage, broccoli, cucumbers, corn, rosemary, dill, fennel
Zucchini
• Friend: Radish, corn, beans, nasturtium, marigolds, calendula, borage, dill, oregano, parsley
• Foe: Potatoes, sweet potatoes, other squash, melon, fennel










Dr. Scott Herbert and John De Lay create an impact throughout our community

Dr. Scott Herbert, MD, has known many communities throughout his endeavor to become a doctor. He grew up in Illinois, where he attended college at Illinois Wesleyan University and went to medical school at Southern Illinois University. His residency brought him to Baylor College of Medicine in Houston, followed by an oncology and hematology training at Indiana University. Shortly after, he moved to New Mexico, where he opened up a private practice.
Even with all the places he’s lived and worked, Dr. Herbert says the town of Castle Rock already feels like home.
As the first oncologist at the new cancer center at AdventHealth Castle Rock, Dr. Herbert is amazed by what the Castle Rock community offers.
“The fact that the community worked so hard for a couple of years to get this facility financed and built really shows everybody’s dedication and involvement in the project,” Dr. Herbert explains. “It’s a community that deserves to have its own cancer center.”
With 19 years of experience in private practice in New Mexico, Dr. Herbert recently moved to Castle Rock to support the new cancer center. Despite the short tenure, his impact is already being felt throughout the community.
“I’ve actually had a lot of patients that were treated at other facilities, and now they prefer to be treated closer to home,” Dr. Herbert says. “When you’re going through therapy and when you have repeat appointments for radiation or chemotherapy, the last thing you want to do is fight traffic or drive 40 minutes somewhere.”
With emotions running high through such a difficult time, Dr. Herbert’s interest lies in discovering how the mind and body connection impacts a person when going through cancer treatment.
“I was always really interested in the mind/body connection and how emotions really impact your body, whether that was in tumor surveillance or side effects from therapy,” he says. “I thought cancer really lent itself to exploring that question.”
With this new cancer center, Dr. Herbert can also help patients find cancer studies they may qualify for in the hopes of furthering research right here in Castle Rock and in conjunction with other AdventHealth hospitals.
“I was drawn to cancer care because it was a chance to be part of really impactful decisions,” Dr. Herbert explains. “
“Our research program is getting off the ground,” he says proudly. “We’ll be able to tap into studies that are open at all our other sites.”
Having seen patients through many different types of cancers, such as lung, prostate, breast, lymphoma, and more, Dr. Herbert understands the weight of the diagnosis, what it means for the future, and how he has his patients’ trust to guide them through such a difficult time.
“I was drawn to cancer care because it was a chance to be part of really impactful decisions,” he explains. “All the decisions around that process, whether the people get better or they have post-traumatic stress disorder afterward, or they have to transition to palliative care or hospice and say goodbye, those are big, life-changing discussions and decisions. It’s such a privilege to be a part of it.”


Stepping into Pegasus Restaurant in Downtown Castle Rock fills customers with a sense of home and family. For owner John De Lay and his wife Janie, that type of atmosphere is exactly what they’re most proud of after 50 years in the food industry.
“Next month is my 50th anniversary,” John exclaims. “I started [in the restaurant business] June 28, 1976, and Janie and I got married a month and a half later, on August 14, 1976. So this is my centennial year.”
He goes on to describe what truly fills his cup throughout his time in the restaurant industry. “It’s the quality of our customers and staff. We have lots of repeat customers, and it’s like the Cheers theme song, where everybody knows your name. We’ve also had three Torres brothers work for us for 30 years.”
Listening to John’s stories about buying the current Pegasus building and renovating it to purchasing a hundred-year-old roulette wheel he proudly displays in the restaurant’s bar to hearing about the time he had a meal with George Lucas, it’s no wonder loyal customers come back for more.
“Most of it’s true,” he jokes about his countless stories that fill the restaurant with ease and delight.
“Two guys are walking our way,” John recalls on the day he met George Lucas in September 1984 at a restaurant in Fort Worth, Texas. “And the one guy I knew…the other guy I didn’t recognize. It was George Lucas. We sat for two and a half hours…they took a tour of the restaurant, and walked into the kitchen…and George Lucas couldn’t have been more pleasant.”
John’s stories flow throughout the restaurant, bringing humor and delight to Pegasus’s atmosphere. Pair that with the delightfully eclectic menu featuring American, Greek, and Mexican cuisines, and customers receive an experience that transcends a regular meal.

John’s belief in the Castle Rock community transcended to the Chamber of Commerce. His time on the board in the 90s paved the way for the outlets that had an enormous financial impact on the town, showing his love for the local community.
“They [a California company] showed us how the outlet mall would change everything in Castle Rock, but also move the economy downtown,” he explains. “And everything they told us was right.”
Not long ago, the Chamber called him to come back. “Four years ago, they called me. The director at the time wanted me to come back to the board. I asked why, and she said, ‘We need someone historical. We need someone on the board who was here before the outlets’…I’ve been on the board four years now.”
It’s a good thing John took a chance on the town of Castle Rock all those years ago, because there’s no doubt that his impact has been felt far and wide in this ever-growing community called home.

Scott Warren fell in love with cars the moment he got my first one, a 1998 Honda Civic. It was not fancy—but it was his. Scott spent countless hours working on it, upgrading the suspension, putting on new wheels, and installing a sound system. He wasn’t just driving anymore—He was learning, experimenting, and enjoying every part of the process.
His first job wasn’t as a technician — it was checking in cars, answering phones, and cleaning the shop but he always wanted to be in the bay, working on the vehicles. Some technicians took the time to show Scott the basics, and he quickly realized maintaining and fixing cars was the career for him. He moved to Sears Automotive and within three years, worked his way up to a lead technician, performing every service the shop offered. After appling to work at BMW, and being told he needed more formal training, he attended Universal Technical Institute and then Scott was sponsored by BMW to attend BMW STEP school. Upon graduation, he began his career with BMW as a technician and eventually became a Master Technician. For the next 17 years, he worked with BMW. His final BMW dealership was Murray BMW, now BMW of Denver Downtown.
Scott was then presented with an opportunity to sublease a small shop space to start his own repair shop. Leaving a stable career was one of the scariest decisions he ever made, but Scott believed he could take better care of his client’s vehicles and the people driving them. Today, Titan Auto Tech has grown into a larger facility with a strong team and a focus on customer experience, including complimentary loaner vehicles and a commitment to treating every vehicle as if it belongs to a member of their own family.

In speaking to Whiskey lovers (most happen to be men, but do accept me in their brethren as a fellow enthusiast, writer, and educator), I’ve learned a great many opinions on how to drink Whiskey. Specifically, preferences on adding water and ice vary greatly.
A brand ambassador that I had the privilege of listening to recently said the obvious: both dilution and temperature change when you add ice, so if you are going to add something, a little water is best. I personally prefer to use a water dropper, so I can add one drop at a time until I get to the desired taste.

HERE ARE THE DIFFERENCES:
THE BEST WAY TO ENJOY YOUR WHISKEY: ON THE ROCKS, ROCK, NEAT, OR WITH WATER
Rocks: Provides the highest rate of dilution as a lot of ice melts quickly. If you are drinking a barrel proof Whiskey, it kind of defeats the purpose as the distiller didn’t add water as they do in every other type of finished Whiskey.
On the Rock: The single rock, cube, or sphere is the slowest to melt and thought to be the most aesthetic. It’s nice if you want to stretch out your tasting. I often order on the rock if I want my drink to last longer.
Neat: This is the way single malt Scotch is served at a tasting event, in a branded Glencairn or Neat glass so that proper nosing for aromas can be achieved - and a dram of Scotch, smaller than an ounce, fits in them perfectly.
Water: As I mentioned above, quoting the brand ambassador, a little water is better for a fine Whiskey over any kind of ice. Often, if ordered with water, the water is served in a separate vessel on the side so you can add in as much as you want.
Quoting another expert on the subject, Richard Paterson of The Dalmore famously and enthusiastically demonstrates in his Scotch classes how to drink single malt Scotch Whiskey: Paterson fills a lowball glass to the rim with ice, adds Scotch and then ceremoniously throws it over his shoulder onto the carpet of the classroom – because that much ice makes the drink worthless. One more quote, never “add green tea or milk to Whiskey. You can add a little water, but not a lot of ice.”
Ultimately, the reason we add ice can be for aesthetics, to stretch out the time spent on one glass, for cooling, and for dilution. However, the number one reason enthusiasts add water is … drumroll please … because adding a little water actually opens up a Whiskey to show more aromas and flavors.
