February Love Local Issue I don’t know about you, but this time of year I am always torn. I find myself torn between resisting the commercialization of another greeting card holiday and indulging in all the sweet excuses to enjoy the season. To do a Valentine’s Day date out or enjoy a cozy night at home? To buy a card or just say a kind word? I usually land somewhere a little in between. We’ll each arrive at different answers based on our preferences and personalities, but what we hold in common is an opportunity to make sure those around us know we love them. And regardless of how you choose to celebrate, we hope the pages of this month’s magazine will help you do just that as we celebrate and highlight what’s to love in your local community. While we teeter between the chill of January Winter and the excitement of Spring, we hope you’ll be inspired to take a moment to come together with the people in your life. The ones in your home and on your street. In your neighborhood and your community. “Love local” means your local businesses, those in your community - but it also means loving what is near. Reservations For Two Dreamy destinations for couples looking to get away.

Finding a life partner just might be easier than finding someone you can travel with. Pace, patience and priorities all matter when organizing itineraries, straddling time zones and navigating new places. Do you like languid mornings with room service, wide sandy beaches and white-glove service? Or, do you prefer watching the sunrise in hiking boots, launching into eye-opening excursions and digging to find that hidden gem of a restaurant that serves local food to locals? When the stars align, both partners have an affinity for generally the same kind of vacation, or are willing to compromise. Enjoying travel with your mate is the icing on the (wedding) cake. Here are a few ideas for fabulously romantic getaways. Bon Voyage!

Traveling can be as stressful as it is sublime. Exhausting as it is inspiring. Traveling as a couple requires additional planning and communication with a healthy dose of patience. Much like marriage! But, waking up in a faraway place, exploring unknown terrain together and leaving your routine and all its trappings behind can be therapeutic. You both can take on new roles and release tired habits.

If you’re parents, consider setting boundaries for texting and phone calls so you can put the phone away and immerse in one another. Let the kids know you will be checking your phone at a certain time each day (and stick to that). Let the grandparents or caregivers handle the day to day drama.

Take turns charting a course for the day. On day one, you check museum opening times, get the timed tickets and find a nearby spot for a healthy lunch. On day two, you sit back and let your partner call the Uber and source out the perfect shopping district, walking distance to a park. Enjoy the ride, either way.

what you do 1. Mound the flour in the center of a work surface with a well in the middle. Crack the eggs into the well and beat with a fork until smooth, then work flour into eggs with the fork. Use a bench scraper to work in the rest of the flour a little at a time. When the flour is incorporated, form the dough with your hands into a rounded mass for kneading. Lightly dust your workspace with flour and knead dough about 10 minutes, until smooth and elastic. Cover dough with a bowl or plastic wrap and rest 1 1/2 hours, or chill overnight. 2. To roll by hand, flour a clean work surface. Vigorously roll dough to a very thin circle and roll constantly with even pressure as it stretches for several minutes until as thin as possible, almost translucent. 3. Dark Chocolate Truffles what you need 1/2 cup heavy cream 8 ounces bittersweet chocolate, chopped 1 teaspoon pure vanilla extract 1 cup cocoa powder, for dusting

what you do 1. Bring the cream to just a simmer in a saucepan over low heat. Pour the cream over the chocolate in a bowl and let stand about 10 minutes to melt the chocolate. Add the vanilla, stir until smooth and set aside to cool for 1 hour at room temperature. 2. Beat chocolate at medium speed until thick and light-colored. Spread over the bottom of a baking dish, smooth and refrigerate 2 hours until firm. 3. Pour cocoa powder onto a deep plate or shallow bowl, and using a melon baller or small ice cream scoop, scoop out balls of chocolate. • Grab a wooden bowl, some acrylic paint, and a brush. • Hand paint some paint on one section of the bowl. • Let the first coat dry and paint another two to three coats of paint until you’re happy with the result. • Let the paint fully dry. • I wanted my gold leaf paper to overlap the paint for a layered look, so I took a paint brush and painted some Mod Podge in an overlapping pattern. • Once the Mod Podge gets tacky, use your hand to apply the gold leaf and accompanying wax sheet. • Push the gold leaf onto the tacky glue, then remove the top layer of paper. • Use your fingers to gently push the gold leaf onto the glue a little further. • Next, use the golf leaf brush to smooth over the whole area and gently wipe away any excess gold leaf. Pay extra attention to the edges. • Next, smooth the gold leaf section as much as possible, but don’t worry about any imperfections. The organic look of the gold leaf being imperfect gives the piece character. • Next, work your way to the outer edge. • Once the gold leaf is perfected, gently brush over the leaf with some Mod Podge to seal it to the bowl. • Let it completely dry and enjoy!

CHOCOLATE and WINE The Key to a Successful Wine and

Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.

Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another. Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

CREATING THE PERFECT PAIR DA R K CHOCOLATE TIP 1: M ATCH SUGA R WITH SUGAR When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

TIP 2: M ATCH INTENSIT Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Meatless diets have been shown to improve health outcomes by lowering the risk of developing heart disease, diabetes, high blood pressure, inflammation, and some cancers. It also improves gut health because of added fiber to your diet. A plant-based diet still allows to you consume the carbohydrates, protein, fats, minerals and vitamins that are necessary for good health, with the added benefits of being higher in fiber and phytonutrients. You do not have to give up meat entirely and there are labels to identify where you fall in your plant eating journey. Do what is comfortable for you so you will stick with it. You can choose to be a flexitarian which mean you occasionally eat meat but you choose plants as the primary foods you eat. You have some flexibility with your diet. If you choose to be a vegetarian, then you do not eat meats but you still eat eggs and dairy products as opposed to being a vegan who eats no animal products. There is also another reason to add more fruits and vegetables to your daily food intake; It is better for the environment. The industries that produce our dairy and meats is said to account for a third of the world’s water usage in addition to producing greenhouse gas emissions. Eat your greens and save the planet!

TIPS TO GET STARTED ON YOUR PLANT-BASED JOURNEY: 1. Make small changes to test your comfort level when reducing meat intake. There is a risk of being overwhelmed if you suddenly stop eating meat altogether, and it will be harder stick to your choice long term. Increase consumption of plant foods you already like. 2. A plant-based diet does not mean boring! You can create a variety of dishes, including ethnic meals that are meat free and delicious. This is a great time to try new spices to add a punch to your vegetables and add green leafy vegetables to your smoothies. 3. Use the whole plant because there are nutrients in every part of the plant, including the stems and leaves. Use the leaves from celery, radishes, beets and carrots and use the stems from spinach. Don’t throw away vital nutrients like potassium, vitamin C and fiber. You are also reducing waste. 4. Eat the rainbow! Choose different colored fruits and vegetables to get a variety of nutrients. The color of plant-based foods is often an indicator of the vitamins and minerals they contain. So, more colors mean more nutrients. Example: Orange foods contain beta carotene, the precursor for vitamin A. 5. If you do not eat animal products, you will need to take a B12 and possibly an iron supplement. Vitamin B12 is an essential vitamin available only in animal products. Low B12 can cause anemia and damage to the nervous system. Some vegan foods are fortified with vitamin B12. 6. A meat-free diet does not automatically mean healthy if you replace the meat with highly processed junk food and meat substitutes. You need to eat fresh quality fruits, vegetables and grains to get the health benefits that can add years to your life.
