Lake life. Village vibe.

Welcome to Barefoot. Two distinct neighborhoods with unique places to live, play and gather. Including two signature lakes anchoring our community. Barefoot Village’s new favorite hangout, Shindig Park, with a fire pit, picnic area and monthly makers’ market. And more on the way at The Square (like a pool, event lawn and pop-up farmstand). Plus a fresh mix of homes that put you steps away from it all.

This is where community thrives, kids run free and life feels a bit lighter. Come see. 1 9 M O D E L H O M E S O P E N D A I LY F R O M T H E H I G H $ 3 0 0 S T O $ 8 0 0 S + BAREFOOTCOLORADO.COM

LIFESTYLE LETTER

A Taste of Broomfield Food has the ability to tell a story before we ever know the person behind it. Sometimes that story comes in the form of caramelized cheese, unexpected toppings and a perfectly crispy square of Detroit-style pizza. Other times, it’s a beautifully prepared piece of sushi placed in front of you with an invitation to simply trust the chef. For our October Food Issue, we’re stepping behind the plate to meet some of the people bringing creativity, experience and a little bit of the unexpected to Broomfield’s food scene. Inside this issue, you’ll meet a classically trained chef whose winding career eventually led him back to the kitchen and to creating a neighborhood pizza spot that is anything but ordinary. We’re also exploring the Japanese tradition and inspiration behind omakase, a phrase that essentially means, “I’ll leave it up to you.” It’s an idea built around trusting the person behind the counter to use their knowledge, skill and creativity to create an experience for you. And maybe that’s part of what makes dining out so much fun. We walk through the door, take a seat and allow someone else to surprise us. Great food isn’t only about ingredients. It’s about the people who dream up the menu, perfect their craft and take a chance on creating something they hope their community will love. This October, we invite you to try something new, support the people behind our local restaurants and, every once in a while, trust the chef. Happy eating, Broomfield! YES, YOUR DENTIST EATS DESSERT. Taking care of your smile doesn’t mean giving up the things you love. It means knowing how to enjoy them — while giving your teeth a little love along the way. Love coffee? Coffee can stain your teeth. Enjoy it, rinse with water afterward, and stay consistent with brushing, flossing and professional cleanings. Got a sweet tooth? Have dessert with a meal instead of grazing on sweets throughout the day. Your teeth will thank you. The most important rule? No guilt. Great dental health isn’t about being perfect. It’s about simple habits, consistency and a little TLC. ENJOY LIFE. TAKE CARE OF YOUR SMILE.

TRUST YOUR Sushi Chef

Have you ever looked through a menu and thought: Not quite. That sounds good, but without those two ingredients. Or maybe with a little more of this. What if you could tell the chef what you’re in the mood for - and let yourself be surprised? Amy Long knows just how you feel. At Matsumotto Sushi and Grill, her Westminster restaurant, the answer is simple: Trust your sushi chef. Since opening, the two-year-old Westminster gathering place has developed a devoted following, with some customers regularly traveling considerable distances to dine there. Great food and a welcoming atmosphere are certainly part of the appeal, but Amy believes something else is at work. Much of Matsumotto’s success comes down to consistency - in the food, quality, and service. It’s a standard Amy and her family have emphasized from the beginning, and one she believes distinguishes the restaurant as much as anything on the menu. Whether diners are new to sushi or have been enjoying it for years, Amy and her team want them to feel comfortable asking questions, expressing preferences, and leaving the rest to the chef. She also wants them to feel at home. Amy was especially honored when longtime customers Ashley and Jensen Kaye of Northglenn chose Matsumotto for their pre-wedding dinner. They had discovered the restaurant “completely by chance,” they said, and it quickly became one of their favorites. “It meant so much to us that we chose Matsumotto for dinner with our entire family the night before our wedding. They graciously accommodated our large group and made the evening feel incredibly warm, intimate, and memorable.” They added, “You can find great sushi in a lot of places, but it’s much harder to find exceptional food alongside this kind of genuine warmth and hospitality, where the people remember you, welcome you back, and make you feel like you truly matter.” Family is at the heart of Matsumotto. Amy owns the restaurant with her brother Vinh and father SENH. Vinh manages the sushi bar and selects the sake and wine. SENH runs the kitchen. And although Amy’s mother, Moi, is retired, she still comes in once a week to check on things and prepare traditional meals for the staff. Then there is the food. Fresh fish is a given at a high-quality sushi restaurant. What sets Matsumotto apart is Vinh’s worldwide network of purveyors, with selections flown in daily from Japan, Alaska, New Zealand, Scotland, California, and Hawaii. Once that beautiful fish arrives, the magic begins. Sushi Chef Florence Tam draws on her 13 years of experience to create the day’s specials and prepare dishes to order, taking into account customer preferences. This is where Matsumotto truly shines. The Japanese concept of omakase translates as “I’ll leave it up to you.” While Matsumotto does not follow the traditional format, Amy encourages customers to embrace that same spirit: “trust your sushi chef.” And sometimes that surprises people. On a recent evening, a regular customer sat at the sushi bar, looked over the menu, and seemed ready to try something different. “In this business you have to know how to read people,” says Amy. So, she walked over and started chatting with the woman, who explained that she was craving certain flavors but didn’t see precisely what she wanted on the menu. Could she order something else? "Of course,” Amy told her. “Just tell Chef Florence what flavors you’re

looking for and anything you don’t like. Then let her make you something special.” The customer was startled but willing. Florence prepared four unique sashimi dishes. The woman loved them all. On the way out, she stopped to thank Amy. She explained that in most restaurants, if you ask for something even a little different, they act as if you’re being difficult or demanding. From now on, she said, she’ll simply describe the flavors she has in mind and let Chef Florence surprise her. She told Amy that she can’t wait to return for another meal tailored just for her. That level of trust is exactly what Matsumotto aims to build with every customer. That transformation - a customer coming in ready for something different and leaving delighted by the experience— is one of the great pleasures of owning a restaurant, according to Amy. Jason and Karin Wojahn describe Matsumotto in much the same way. “Matsumotto is one of those rare places where you can simply trust the chef and enjoy the experience,” they said. “The fish is consistently exceptional, but what keeps us coming back is how personal it feels. Amy and the team treat you like family, and you always leave feeling like you had something special.” Meghan Stephenson agrees. “The sushi is consistently excellent every time we visit, which is why I have so much trust in the chef,” she remarked. You can tell there is real care, skill, and pride behind every dish. I trust that the ingredients will be fresh and that whatever I order will be thoughtfully prepared and delicious.” And sushi is only part of the story.

“Amy and the team treat you like family, and you always leave feeling like you had something special.” — Jason Wojahn

Amy cannot recall a time when her father wasn’t in the kitchen. “When we were kids, we’d say we wanted something KFC, maybe, and he’d say, ‘I can make it better at home.’ And he always did.” Sinh continues to create distinctive dishes with that same devotion. For diners who aren’t in the mood for sushi, they can enjoy several teriyaki, katsu, and tempura options, as well as a range of other cooked choices. Attention to detail extends to the basics, too. The sushi rice takes three hours to prepare and is made fresh each morning. For Vinh and Florence, yesterday’s rice simply doesn’t belong alongside today’s fish. Wendy Highfield, who now lives in Hygiene, commented, “I regularly bring clients to my favorite sushi place for the delicious food and the genuine connection to customers and community. It’s really a place to call home.” She added, “It’s worth the trip. After all, it’s only about 40 minutes away.” And perhaps that is Matsumotto’s real recipe: consistency in the food, quality, and service; genuine connection; an open mind; and enough earned trust for customers to let the chef decide what comes next.

“NOT ONLY THE INGREDIENTS THAT I USE, BUT IT’S ALL ABOUT THE TECHNIQUE.” - JASON DASCOLI

You had me at caramelized cheese. Then locally foraged mushrooms and cup-and-char pepperoni just put me over the top. Who knew I would find these delicious toppings on a pizza, or that foodie pizza even existed? As I stepped through the unassuming doors of Rock City Pie and Ice, I discovered a new take on an old classic right here in our Broomfield backyard. Simple, homey, and ridiculously delicious, Rock City looks a little like a classic neighborhood pizza joint. But there’s much more going on behind the counter than meets the eye. Owner Jason Dascoli is a classically trained chef with decades of experience in some of Colorado’s finest kitchens, and a decidedly unconventional path to pizza. CONTINUED >

“CARAMELIZED CHEESE, GOURMET TOPPINGS AND SILKY ITALIAN ICE PROVE ROCK CITY IS ANYTHING BUT YOUR TYPICAL NEIGHBORHOOD PIZZA JOINT.” - KRISTEN HAMM

Dascoli practically grew up in local kitchens. Working his way through high school in Boulder’s Bangkok Cuisine, Jason developed an interest in Eurasian-inspired food. Though a passion for science briefly tempted him toward marine biology, his perpetual presence in a number of Colorado restaurants turned his passion toward cuisine. Chef Dascoli cooked his way up the food chain, both locally and abroad. His second foray into the food world had him throwing pies and tossing salads at Franco's in the Boulderado Catacombs. Perhaps that was the birthplace of Jason’s love for pizza. However, when the opportunity arose to explore farther afield and work in a resort kitchen, Dascoli jumped on it. His natural talent for cooking caught the eye of his bosses, who offered to

pay for Jason’s culinary school tuition. He packed his knives and moved to Kendall College in Chicago, where his cooking experience blossomed. From learning to make quality fare in mass quantities, to mastering the art of fine dining cuisine, and discovering how to craft a mouth-watering menu, Dascoli ate it all up and thrived. In the early 90’s, Colorado called Jason home, and he began working with a buddy at Spice of Life in Boulder, where he eventually became head chef. Flagstaff House, Jacks Fish House, Boulder Cafe, and Roy’s in Cherry Creek were all touched by Jason’s culinary creativity before the insane demands of restaurant life “cooked him.” Looking for more balance in life, he transitioned into a career in corporate sales. This expanded

Jason’s business acumen, which came in handy when he finally started his own company during COVID. The history-altering virus put Chef Dascoli back in the kitchen, this time in his home in Superior. From his extensive experience in restaurants, sales, and analyzing food trends, Jason suspected Detroit-style pizza was the hot new player in the culinary world and could take center stage for another couple of decades. So, he began making and selling the square pizza out of his house one night a week at the end of 2020. Not wanting to be swallowed whole by the restaurant life, Jason took a small step forward and started renting a shared kitchen in Broomfield a few nights a week. The other niche food producers in the shared kitchen made ice cream sandwiches, specialty salad dressings, and

Kosher foods. When Dascoli’s Detroit-style pizza proved successful, he took over the entire space in May 2024, now home to Rock City Pie and Ice. You don’t need to sink your teeth into a delicious signature square of pizza to know that Rock City offers something special. Customers make the drive from Ft. Collins, Loveland, Littleton, Eaton, and Windsor just to get their Detroit pizza fix. And the pie is just the main attraction. Dascoli balances the chef-inspired menu with another specialty item: Italian ice. This refreshing

treat is the love child of a sorbet and a slurpie, with its American origins in both New York and Philadelphia. Traditionally crunchy, Dascoli puts his own spin on Italian ice, smoothing out the texture into a silky treat. For those not in the mood for pizza, Jason offers a few other traditional Italian dishes and salads. In an effort to keep things simple, Chef Dascoli keeps his space and menu succinct. He does, however, cater parties, craft charcuterie boards, and offer delivery to his customers. Someday, he dreams of taking his show

on the road and having an Italian Ice truck or catering trailer at concerts and sporting events. From his early kitchen years to becoming head chef at some of Colorado’s most respected restaurants, and now running his own little corner of Broomfield, Dascoli’s pizza journey has been anything but traditional. And judging by the caramelized cheese, gourmet toppings, and tasty Italian ice, that’s probably exactly the way he likes it.

SIP, SWIRL, AND SAVOR YOUR WAY THROUGH YOUNTVILLE, THE CULINARY HEART OF NAPA

DESTINATION DELICIOUS Looking for a once-in-a-lifetime epicurean experience? Yountville, which is nestled into Napa County with vineyards in every direction, is a treasure trove of foodie greatness at every turn. Here is how to take a bite out of it all.

RH YOUNTVILLE RESTAURANT The flashy, splashy RH Yountville is hard to miss as it takes up nearly a full block along Yountville’s ultra-walkable downtown. The Restoration Hardwareowned property is a wine, food, and shopping mecca comprised of five separate experiences—an indoor/ outdoor restaurant with a glass roof surrounded by 100-year-old olive trees and adorned with dramatic crystal chandeliers; a two-story wine-tasting space with its own share of crystal chandeliers and a sleek limestone bar; a limited-production wine center; an espresso bar; and a boutique design gallery grander in scale than even its ever-so-lavish sister property at the Scottsdale Quarter in Scottsdale. Award-winning chef Brendan Sodikoff leads the kitchen, sourcing seasonal ingredients from nearby farms and using them as inspiration for both whimsical, shareable, and New American fare, as well as twists on comfort-food classics. His team allows vegetables to shine right along with proteins, making it the perfect place for all diets. There are at least 40 wines by the glass on the menu at any given time, many from neighboring wineries. The expertly trained staff has pairing suggestions—be they wine, craft beer, or craft cocktails—for each dish, offering recommendations based on guests’ palates and preferences over trends and their personal tastes. RH.com/yountville/restaurant

TASTING ROOM TREATS Yountville’s many wineries and vineyards toss out tradition—bellying up to a bar for a flight of wine with crackers to cleanse the palate or a basic meat and cheese board—in favor of interactive foodie fun when it comes to its tastings. RH Yountville. Photo courtesy RH Yountville

Handwritten Wines, for example, offers a Breadand-Butter Experience. During the 90-minute seated event, guests can enjoy white truffle potato chips and Bouchon Bakery baguettes, along with multiple mouthwatering artisan butters. The butters are handmade to complement five of the winery’s most awarded varietals that are made on the Napa Valley hillside and most coveted vineyard blocks. HandWrittenWines.com

Priest Ranch, which is next door to Handwritten, boasts a Bacon and Wine Tasting. A must if you love meat and wine, the 90-minute experience marries four wines with its own bacon, each of which has been flavored with everything from honey to harissa to Italian herbs to bring out distinct notes in the wine. PriestRanchWines.com

Silver Trident Winery, across the two-lane street from Priest Ranch and Handwritten—so a one-minute walk— is home to what it calls the Potato Chip Extravaganza. True to its name, those who book this crunch-tastic tasting are treated to five types of potato chips, each sourced from a small producer. Each chip comes with a glass of wine to accompany it. The combination will take your taste buds on a magical mystery tour of flavor. SilverTridentWinery.com

JCB Tasting Salon, approximately 300 feet from Silver Trident, is home to a Caviar and Sparkling Wine Pairing. This dive into the ultimate in decadence pairs four high-end sparkling wines with four distinct artisanal caviars. Prepare for bubbly effervescence and over-the-top indulgence. JCBcollection.com

Chandon is nearly a mile from the others, but well worth the three-minute drive. During its ambitious Epicurean Experience, chef Juan Cabrera highlights the beauty of bubbles by pairing his favorites with five precisely plated works of culinary art. Chandon.com

Baldacci Family Vineyards sits at the intersection of Yountville and Stag’s Leap, and its Perfect Pairings program is just that. The nibble-heavy experience explores the science of how wine and food amplify each other, and even offers suggestions of what to pair with your personal favorite bites and sips. ROMANTIC RESORT RESTAURANTS As one might imagine, all the accommodations in the region drip luxury, but Hotel Yountville, Bardessono Hotel and Spa, and North Block Hotel stand out, thanks in great part to their dining options.

Hotel Yountville, just steps from more than a dozen tasting rooms and boutiques and built using river rocks from the nearby Napa River, has elegance to spare—and that extends to Heritage Oak, its signature eatery. Guests in the know always arrive prior to their reservations for killer craft cocktails (and adult popsicles!) at the Y Bar before being seated for elevated comfort food infused with wine country sophistication. HotelYountville.com

Bardessono Hotel and Spa is approximately two blocks from Hotel Yountville. The striking, sprawling LEED Platinum Certified property, situated within its own vineyard, is committed to providing a lavish experience for guests and diners within a sustainable environment. Its world-renowned Lucy Restaurant & Bar—named for the Bardessono family’s matriarch—serves up craveable farm-to-fork dishes with global flair, using ingredients from the hotel’s orchards, on-site certified organic farming garden, and similarly minded farms and purveyors across the region. Bonus: The dog-friendly restaurant also has a menu for pups. Bardessono.com

North Block Hotel, which is nearly next door to RH Yountville, features all things wood-fired and wonderful at its primarily al fresco Restaurant at North Block. Beyond the gorgeous grilled main dishes, North Block is a happy hour hot spot thanks to its daily Oyster Hour, where fresh oysters are just $1, as well as a local craft beer selection and seasonally changing menu of scrumptious sourdough pizzas.
