Love is what makes the ride worthwhile While February is the shortest month of the year, in many ways it feels like the longest. By February I’m always over the cold, and Spring feels so close I can taste it. Yet inevitably we get hit with more Winter weather, which just makes me kind of cranky. I’m a girl who lives for the summer. By 40 years old, I should know what to expect, and yet every year I sit here surprised by just how cold and dark February is. But not everything about February is dreary because Cupid makes his big appearance. Now, I know the “Day of Love” gets a bad reputation for being another commercialized, greeting card holiday, but it’s actually the day my husband and I tied the knot. This February 14th marks 14 years of (mostly) blissful marriage and 20 years since our first date. That first evening he showed up with flowers in hand and took me out for a sushi dinner; therefore, it only seemed fitting to include instructions on page 16 on how to make your own sushi rolls. It’s easier than you would think! Whether you choose to make a reservation and go out for a fancy dinner or relax at home, Tara Vitollo, owner of Olcott Squared in Bernardsville, will help you pick out a fun date night style. One of her options even includes stretchy jeans, so you can indulge and not feel like you’re busting out of your pants by dessert. Check out her sophisticated yet flirty options on page 30. For Victoria Murray, the most romantic nights are often spent in the kitchen, cooking with your loved one. “It’s a great way for couples to connect,” she says. “There is an element of teamwork: You have to read the instructions and execute a meal together. And depending on how you are in the kitchen, the recipe could turn out as expected — or like an episode of ‘Nailed It!’” This Valentine’s Day, get adventurous and try your hand at homemade sushi. “It’s an elevated dish that people don’t try at home, but it’s easy,” says Murray, owner of Soul Child, a holistic wellness program that incorporates nutritional cooking, meditation and yoga. “You cannot just use any raw fish. It is important to get sashimi-grade fish. My go-to fishmonger is Metropolitan Seafood & Gourmet in Lebanon. You can also use canned fish like crab or tuna if you prefer.” Murray recommends creating a whole experience by pouring wine and putting on Japanese music to set the mood. 1. Make 1 cup of sushi rice according to instructions of package. (Especially make sure to rinse the rice until water runs clear.) After rice is fully cooked, season with 2 tbsp of mirin, applying all over surface of the rice to evenly disperse. Set aside to cool. 2. Cut carrots into matchsticks. 3. Cut ¼ of cucumber off and reserve. Cut rest of cucumber in half lengthwise, then scoop out seeds and slice into matchsticks. 4. Cut avocado in half and remove skin and slice into thin strips. 5. Chop up tuna into a fine dice and mix with 1 tsp Sriracha. Taste and add more Sriracha if needed. 6. Drain crab if needed and blot off any excess moisture. 7. Combine ¼ cup Kewpie mayo with 1 tbsp Sriracha or to desired spiciness. TO ASSEMBLE THE SUSHI ROLLS: Place bamboo rolling sheet inside a large zip-close bag. Place nori sheet shiny side up and wet fingertips with water and pick up rice, about ½ cup, and spread a thin layer across the nori. Flip over nori so rice is on the underside. Place a few strips of carrot, cucumber and avocado pieces on the nori then place about 1 ½ to 2 tbsp of crab on the lower half about 1 inch up from the bottom of the sheet and out to the edges of the nori. Roll up the nori from the bottom to the top, gently pulling the bamboo rolling sheet toward you. When the roll is complete, slice into ½-inch pieces. Repeat with tuna. Dip into soy sauce with muddled wasabi and pickled ginger or spicy mayo.

EDAMAME • 2 cloves garlic, minced • 2 c edamame • 2 tbsp soy sauce

Chop garlic and add to pan with 2 tbsp of soy sauce, then add edamame and toss together on medium-low heat with ¼ cup water and cover. Remove from pan once edamame is cooked and water has evaporated, about 5 minutes. SORBET • • • • •

1 can full fat coconut milk 1 can lychees in syrup 1 lime Salt 1 jar raspberry jelly

In a blender, combine can of coconut milk and lychees drained with zest of 1 lime and juice of half and pinch of salt, then combine until fully incorporated. Taste and add additional lime juice or sugar if needed. Put in a container with lid and place in freezer. In a small saucepan, add ½ cup raspberry jelly and 3 tbsp of water on medium-low heat and stir until jelly becomes a sauce. Remove from heat. SAKETINI • • • •

1 1/2 inch of cucumber Vodka Sake Simple syrup

Slice 4 thin slices of cucumber and place remainder in a cocktail shaker then muddle. Add 1 ½ oz of vodka, 1 ½ oz of sake and ¼ oz of simple syrup then shake with ice and serve in a martini glass with 2 thin cucumber slices.

They’re high-waisted, so are very forgiving, and have fur trim at the cuffs by the ankles. The top is casual, age-appropriate and feminine but screams ‘sexy,’” she says. In another twist on black-and-red, Vitollo married vegan leather joggers with an oversized, hot-pink cashmere sweater with romantic bell sleeves. “This is also very forgiving, with an elastic waist,” she says. Vitollo loves suits especially because they are so versatile. “You can pair the blazer with jeans and boots or wear a bodysuit and a denim or leather jacket with the pants, which are mid-rise with a wide leg,” she says. A more casual modern look is a cotton-blended knit that teases by showing a bit of shoulder worn with hugging denim jeans, a leather jacket and boots. “I love the texture,” Vitollo says. “I always feel sexy in boots and denim that fits tight in the right places. As a student at Sayreville High School, I was fortunate to have teachers and coaches who I credit with changing the trajectory of my life. I believe my life would have been very different if I did not have experienced coaches like Brian Merrigan, Bill Scarola and Bill Doll, and teachers like Rita Vail and Marianne Quiatkowski. The school system has long been considered one of the best in the state. WHAT SHOULD PEOPLE KNOW ABOUT THE BRIDGEWATER-RARITAN REGIONAL SCHOOL DISTRICT PUBLIC REFERENDUM IN MARCH? This referendum will help us modernize our learning environments: HVAC, indoor air quality, classroom updates and all-purpose room updates. It will allow us to enhance educational offerings and student experience, such as providing full-day kindergarten and creating an authentic middle school experience for grades 6 to 8. Structural improvements will address safety and security throughout the district by replacing interior and exterior doors and adding security vestibules to each building. The Bridgewater-Raritan Regional School District is a high-performing district with aging facilities. We need to upgrade our buildings and instructional space to meet the needs of our students. It is essential for our residents to vote because the referendum must pass for the district to receive debt service aid from the State of New Jersey. Debt service aid is approximately 34 percent of the overall project costs, representing significant savings to the taxpayers of Bridgewater and Raritan. Full-day kindergarten will have a tremendous impact on learning and taxpayers within the community. This service will place our students and programs on par with similar districts. The middle school addition will create an optimal environment for learning for our students. Creating a grade band of 6th to 8th grades will enhance curricular offerings, co-curricular offerings and differentiated outcomes for Special Education and Gifted and Talented students.
