Bridgewater, this month it’s all about food, glorious food. It’s our tastiest issue of the year, one that will be sure to leave you licking your chops. As my grandfather used to say, “You can call me anything you want. Just don’t call me late for dinner!” My grandfather was a foodie and was always mentally planning his next meal before his current one was finished. Food is the great equalizer. It is the glue that brings friends and family together. I was recently attending a birthday party and I heard my friend’s son ask his mother, “Is there going to be cake?” She replied to him, “You know what I always say, ‘A party without cake is only a meeting.’” That quote resonated with me. Cake is the main attraction at every celebration. Or at least any celebration that I want to be part of! When my oldest daughter was a baby and I was in the throes of new motherhood I was frequently asked, “When are you having another baby?” I wasn’t really sure. Having just one child seemed so difficult at the time. Then I received a solid piece of advice that I’ve passed on many times over the years. When deciding how many children you want, don’t just think of right now. These times will pass. Picture your life 30 years from now. How many people do you envision sitting around the Thanksgiving table? I realized my vision was of a full table, and so now, we have a full family. October brings Halloween and all of the fall fun associated with it. Looking for ways to fill up your weekends? Check out our Events department on page 50. Service Over Self THE ROTARY CLUB OF SOMERVILLE AND BRIDGEWATER CELEBRATES 100 YEARS OF IMPROVING LIVES THROUGH GOOD WORKS ARTICLE BY NANCY A. RUHLING PHOTOGRAPHY BY SAMANTHA ANDERSON PHOTOGRAPHY

From financing student scholarships to building playgrounds for underprivileged children, the Rotary Club of Somerville and Bridgewater has dedicated itself to community service for the last 100 years. Its continuous commitment to “service over self” commenced on May 18, 1922, when 17 civic-minded businessmen and professionals gathered at the Somerset Hotel and made plans to join the international organization. Their purpose—good works and good fellowship—has been embraced by succeeding generations of Rotarians, who have devoted themselves to a series of community betterment projects. “It’s an organization that anyone in the community can reach out to if they need anything or if they know an organization that needs anything,” says President Robert Hardgrove. “Whether it’s helping financially or doing hands-on work, if there’s a good cause that’s brought to our attention, we will consider it.” Hardgrove, who is a financial adviser for Raritan-based Northeast Financial Network, joined the Rotary Club of Somerville and Bridgewater in 1985, right around the time it expanded its membership to include women.

“When I saw what was going on, I said, ‘This is for me,’” he says, adding that he’s starting his fourth one-year term as president. “It’s not only about doing good; it’s about meeting other professionals and forming friendships. When I need a doctor, a lawyer, a banker, a Realtor or a new car, I go to someone in the Rotary Club before anyone else because I know their ethics are beyond reproach.” Long-term memberships like Hardgrove’s are not uncommon. Jason Dameo, partner/ CEO of Dameo Trucking & Distribution Center in Bridgewater, represents the third generation of his family in the Rotary. And just like their fathers, Craig MacArthur, formerly of MacArthur’s Appliances in Somerville, and Jamie Rick, president of the LaFontaine & Budd insurance company in Somerville, became club members. Although the club, which has 25 members, contributes to global causes such as polio eradication and clean water through the international organization, its primary focus is local. Through its fundraisers, including the October 2022 gala that will celebrate its centennial, the club awards 11 scholarships to students in the community’s four high schools and community college and CONTINUED >

supports Somerville’s Agape House, which has been offering emergency housing and case management services to single adults and families with children for nearly 30 years. “Our members built a new playground for Agape,” Hardgrove says, adding that it was fulfilling to take up hammer and nail for such a worthy cause. “And we partner with the Branchburg Rotary Club, which has a food pantry, to deliver home-cooked meals to the residents.” The club does other good works, such as packing weekend meals for elementary-school students through the Food Bank Network of Somerset County’s backpack program and holding street cleanups, where members, donned in reflective orange vests, pick up trash. It also sponsors Interact, a Rotary Club for students at Somerville High School. “We have our finger on the pulse of the community because we are so involved,” Hardgrove says. “Being a Rotarian has made me aware of people who are less fortunate than I am, and it has put me in a position to help in a big way. These platters are really a combination of cheeses, charcuterie, fruit, crackers and other items ranging from olives to chocolates and other sweets,” says Missy Raho, owner of Behind the Plates in Basking Ridge. Raho’s creative takes on charcuterie boards—which also include single-serve charcuterie cones that look like ice cream cones filled with nuts, cheese and fruit, and charcuterie

boats—feature anything from candy to vegan options to boards filled with just cheese or meat. The standard variety of items are cheeses with different textures, cured meats, fruit and crackers. “Beyond that, you can decide if you want to lean more toward the savory or the sweet,” she says. “You can incorporate a variety of chocolate, which is a great combination with cheese, or go the route of olives or spreads as an accompaniment. There is really no right or wrong. It’s just placing the food on the board until it is aesthetically pleasing.” CONTINUED >

STEP 1 Select three kinds of cheese of varying texture: soft (like brie or mozzarella), semi-hard (Manchego or Gouda) and hard (aged cheddar or Parmesan). Quarter the soft cheese until you have eight or 16 slices to create pinwheels on the board. Slice the semi-hard cheese into triangles. Crumble or slice the hard cheese into cubes.

STEP 2 Cut a log of hard salami into circles and use the edges of the board or of the cheese to create a design with the hard salami. Place the circles on top of each other in a line to make a pattern. Create “ribbons” with the thin salami: fold 10 to 12 circular pieces in half and then in half again. Position them against the cheeses and face them upward with the closed portion facing down toward the board.

STEP 3 Fill in the gaps with seasonal fruit like berries in the summer, figs during the holidays or candied cranberries in the winter. Grapes are standard. Put all the grapes in one place and the berries together.

STEP 4 Add garnishes like chocolate, olives, nuts and fresh herbs, like rosemary, or fresh flowers. When adding food, Raho recommends positioning some items, like the cheese triangles, off the side to give the board some texture. INGREDIENTS • 20 pieces U-10 scallops (U-10 means under 10 in a pound) • 4 Yukon Gold potatoes • ½ lb bacon • 1 butternut squash • 1 small red onion • 1 red bell pepper • 4 garlic cloves • 1 bunch parsley • 4 scallions • 2 8 oz cans of black-eyed peas, drained and rinsed • 3 tbs butter • 12 tbsp oil (approximate) • Salt and pepper

METHOD Remove the small abductor muscle on the sides of the scallops, if not already removed, and clean the scallops. Pat dry and set aside.

1. Set oven to 400° F. 2. Cut potatoes into small cubes, about ½ inch thick. 3. Put in a pot and cover with cold water. Boil potatoes until a fork goes in and comes out smooth. 4. Drain potatoes and let cool slightly. 5. Cut bacon into thin strips and slowly render in a sauté pan until crispy. Drain the bacon and set aside in a large mixing bowl. Once potatoes are slightly cooled, sauté them in about 4 tbsp of oil to get crispy, roughly 5 minutes, stirring occasionally. After the potatoes turn a golden brown color, add them to the mixing bowl with the bacon. 6. Peel and cube the butternut squash, toss in approximately 3 tbsp of oil and lightly season with salt and pepper. 7. Put the squash on a sheet pan and roast in the oven at 400° F for about 20 minutes until the squash is fork-tender. 8. Add squash to the bacon and potatoes. 9. Slice the red onion and bell pepper into strips and cook on medium heat for about 4 minutes. Mince garlic and add it to the peppers and onions. After another 2 to 3 minutes, remove from the heat and transfer to the mixing bowl with the squash, potato and bacon. 10. Chop parsley and thinly slice scallions, adding them to the hash along with the drained and rinsed black-eyed peas, turning it into an herbaceous warm salad.

SEARING THE SCALLOPS: 1. Season scallops with salt and pepper. 2. Set a large sauté pan on high heat for 2 to 3 minutes to allow the pan to expand and seal small scratches that would make the scallops stick. 3. Add 4 to 5 tbsp of oil to the pan. 4. Add scallops and allow them to sit until they turn golden brown on the edges. After 3 to 4 minutes, flip scallops and add 3 tbsp butter. Reduce heat to low for 2 minutes. 5. Top scallops on the warm hash.

It’s hard to not feel a bit of sensory overload when you first walk through the doors of the Dutch Country Farmers Market in Flemington. Shoppers bustle about as if to find the origins of the delicious smells of something freshly baked or roasted to perfection hanging in the air, while the vendors hurry to accommodate, snatching goodies with tissue paper before handing them off in brown paper bags. While it will take a bit of time to fully explore all the market has to offer, one thing is immediately clear: This is not your average grocery store. CONTINUED >

The market, which opened in 1991, has always been populated by independent, family-owned Amish vendors, many of whom travel from Lancaster County to sell their goods. Currently, the market has 11 vendors, offering everything from fresh cheeses, meat, wooden crafts, baked goods and a pretzel stand whose chewy, perfectly buttered twists are the delicious reason behind the bending line often several dozen people deep. “Each vendor specializes in what they sell,” says market manager Allen Stoltzfus, who is also the owner of Stoltzfus Fresh & BBQ Poultry. “That way, there’s much more attention to quality. We want people to go home and enjoy a truly fresh product. Fresh meat, cheese and produce come in weekly from Lancaster County. We’re not selling items that have been previously frozen.” Stoltzfus explains that shopping at the market provides a more personalized experience and perhaps this is why they have so many regulars. “We have clients who have been coming in from day one,” he says. “It feels more like seeing old friends; we know each other’s names and what they like to order, and this creates a unique, personalized experience. You’re not going to find that in a grocery store.” While many customers are local to New Jersey and Pennsylvania, some come all the way from New York or beyond. Stoltzfus, who has been a part of the market for nearly 18 years, explains that many of the vendors have been with the market for 12 to 15 years or longer, like Melven (Mel) Beiler of Beiler’s Cheese and Pickles who has been with the market since 1991 alongside his wife who runs Marty’s Candies and Canned Goods, where you can find jams, dried fruit, spices, homemade fudge and a candy selection that will take you back to the days of penny candy. “Most of our cheeses come right from Lancaster County,” says Beiler, who admits having a soft spot for super-sharp cheddars or a nice smooth Colby. Along with blocks of local and imported cheeses of all sizes and shapes, Beiler also sells hormone-free milk, yogurt, butter, sauerkraut, and all types of pickles. “Food should be an experience—and nothing compares to eating a pickle straight from the barrel,” he says. If you live in Bridgewater, you may not know that you’re living in a town full of American history. You may not know that in a tiny section of the eastern side of town is a place so sacred it should be coined the “Valley Forge of New Jersey.” Welcome to the Middlebrook Encampment. The story of the Middlebrook Encampment history takes you back to 1777 and 1779 when General George Washington was purposefully trying to hide his troops behind what is known as the Second Watchung Mountain, a geological fortress that protected the troops from roaming British troops so that the Continental Army could recover for the spring fighting season. In June 1777, before the Army was getting prepared for their next campaign after their surprise victory crossing the Delaware River on Christmas and taking Trenton, the Continental Congress was meeting to pass an act of Congress to recognize what would be the first official flag of our new country. The Congressional Act was ratified on June 14, 1777, which is why we celebrate Flag Day every June 14. Immediately after voting for the flag, they chose not a Betsy Ross flag, but a flag now known as the Francis Hopkinson American flag. Francis Hopkinson was a New Jersey delegate and signer of the Declaration of Independence. He was also a master craftsman. It was Hopkinson’s flag that was dispatched from Philadelphia to the Continental Army and General Washington in Middlebrook (Bridgewater) New Jersey in 1777 after Congress approved the flag design. The Hopkinson flag has 13 stripes representing the original 13 colonies, along with a blue field in the upper-left containing 13 stars that would later increase as additional states joined the United States. What many don’t know is that the blue field was taken from General Washington’s own “General’s flag” whose entire flag was blue with stars on it. The encampment where that first official American flag was raised is now under the stewardship of the Washington Camp Ground Association, which for 128 years has met every year on July 4 to raise a new Hopkinson flag and recite the Declaration of Independence. Nothing is more American than this celebration that I often refer to as “New Jersey’s Gift to America.” Be proud, Bridgewater residents. Valley Forge has nothing on your Middlebrook section of Bridgewater. The Washington Camp Ground is open year-round, just north of Route 22.
