I performed catastrophic insurance adjusting on hurricanes, bought “right of way” for cell towers and pipelines and was a business consultant of the SBDC. For two years, I managed a large Detroit Diesel shop that maintained haul trucks and draglines for the largest coal mines in North America. Those are just some highlights of what I have done. HIGHLIGHTING WOMEN WHO MAKE BOZEMAN THRIVE IN FEBRUARY WE ARE CELEBRATING WOMEN IN BUSINESS! Urban Kitchen hosted another Bozeman Life Magazine Event in the new UK Wine Bar. We coordinated the event with a photo shoot for the cover of the magazine which is from a collaboration of women owned businesses. February’s cover includes the “Campfire Cake” by Meg Romano, who owns Urban Kitchen with her husband Joe. Babs Noelle, owner of Alara Jewelry, provided an intriguing piece from the Brevetto collection by designer Serafino Consoli. The piece is capable of expanding from a ring to a bracelet; they cleverly used it as a napkin ring. 18

Katie Wing, owner of The Loft Spa, supplied a ceramic cup for heart shaped “cupping”. Remy Brault, owner of Labellum, provided a beautiful flower arrangement. Kari Chapman, owner of Montana BigWicks, showcased candles and paraffin wax dipped pine cones. Urban Kitchen provided an amazing spread of desserts that was both beautiful and decadently enjoyed in the warm, classy, and beautiful space of the Urban Kitchen Wine Bar. Guests were served champagne and enjoyed a seemingly endless supply of Campfire Cupcakes, truffles, and cookie sandwiches. Bozeman musician Savannah Wood played guitar and shared her beautiful and powerful voice with us.

CHEF’S TA B L E THE URBAN KITCHEN CULINARY CREW IS ALWAYS IN SEARCH OF LOCAL SEASONAL INGREDIENTS TO EXCITE THEIR GUESTS WITH DELICIOUS NEW CREATIONS. There is never a lack of culinary talent with Chefs Joe, Meg and KG running the show and they are constantly fueling their culinary talent with new menu items and daily specials. The chefs draw from years of collective experience training in kitchens focusing on many different cuisines and cultures from Italian, French, Southern Cooking, Mexican, South American and Asian just to name a few. The goal is to select accompanying ingredients and flavor profiles to highlight the true star of the dish. With high quality seafood, all that may be needed is a touch of acidity and oil such as citrus, soy sauce, mirin and olive oil. The vegetables become the background ingredients that make the dish complete adding delicious pops of flavor. Recently, Urban Kitchen has teamed up with Wild West Local Foods to focus on fresh, exquisite seafood. It was a natural pairing with Wild West, which features fresh seafood, local and regional meats individually portioned or custom ordered. They have worked together to create specific seafood options

SPICED AHI TUNA TA R TA R E W I T H P I C K L E D V E G E TA B L E S INGREDIENTS + 6 oz tuna + ½ t sesame oil + 1 ½ t soy sauce + ¼ t mirin, rice wine + garnish (sesame seeds, chopped parsley, grilled ciabatta bread)
METHOD Using a sharp knife, slice the tuna into small dice. Stir in the sesame oil to coat the tuna. Add the soy sauce, mirin and garnish with sesame seeds and chopped parsley.

METHOD Slice all vegetables into strips. Heat mirin, honey, turmeric and pickling spices and simmer for 5 minutes. Pour the hot liquid over the vegetables and let steep overnight. Serve with grilled ciabatta bread.
