ents grown on his family’s Colorado farm, Chef Grant Buchanan is whipping up a delicious new spin on local cuisine. Taking a cue from chefs country-wide who are employing their native ingredients to create new, truly American fare, Buchanan utilizes homegrown produce, and techniques learned during his years studying in Paris, to craft unique recipes for his Boulderbased catering company, GB Culinary. Buchanan’s Wine Braised Chicken recipe is the perfect cure for the Colorado winter chill. This dish can be made ahead of time and warmed, freeing hosts to mingle with their guests instead of staying cooped up in the kitchen. Buchanan recommends pairing a light, crisp wine to cut through the heaviness of the dish, and serving soft chocolate or vanilla mousse as the finishing flourish for a perfect winter meal.

WINE BRAISED CHICKEN WITH FALL VEGETABLES AND CORNBREAD INGREDIENTS:
- 4 oz. Slab Bacon, diced
- ½ lb Crimini Mushrooms, quartered
- 1 Whole Chicken, cut into 1/8ths
- 4 Baby Carrots, peeled & halved
- 1 Large Sweet Onion, sliced
- 6-8 Brussels Sprouts, quartered
- 3 Garlic Cloves, smashed
- 1 ½ cup Butternut Squash, diced
- 3 Thyme Sprigs - 1 Sprig Rosemary - 1 Bay Leaf - ½ cup Dry White Wine - ¾ cup Chicken Stock - 1 tbl Butter - Salt & Pepper to taste
& divided into 1 cup and ½ cup - 2 Thyme Sprigs - Olive Oil - ½ cup Chicken Stock - 1 tsp Sorghum Syrup or Maple Syrup - 2 tbl Butter - Salt & Pepper to taste
METHOD:
1. Preheat oven to 375F. Season chicken with salt. 2. Heat a cast iron pan over medium heat. Add diced bacon and cook until grease releases and bacon browns. 3. Remove bacon and set aside. 4. Place chicken in pan, using the grease from the bacon to brown chicken on all sides, about 2-3 minutes per side. 5. Remove chicken and set aside. 6. Add sliced onion to pan and sauté until translucent, scraping up any bits of bacon or chicken from the bottom of the pan. 7. Add white wine. Cook until reduced by half. 8. Add chicken stock, garlic, thyme, rosemary, bay leaf and butter. Season with fresh cracked pepper. 9. Return chicken to pan and arrange in one layer. Bring to a simmer and cook for 15-20 minutes (until chicken reaches 160F internally or juices run clear when pierced with a knife). 10. Cover with foil and rest for 15 minutes. 11. Place mushrooms, carrots, brussel sprouts and ½ cup of diced butternut squash with thyme sprigs in a bowl. 12. Season with olive oil, salt and cracked pepper. Place on a baking tray in one even layer and roast at 375F for 15-20 minutes or until all vegetables are fork tender. 13. In the meantime, place remaining diced squash in a saucepan with ½ cup chicken stock, 2 tbs butter, salt and pepper. Cook until squash is very tender. 14. Place in food processor and run until smooth. 15. Season with sorghum syrup or maple syrup and set aside. To Finish: Bring chicken back to a simmer and top with roasted vege-
tables. Serve with squash purée, garnish with bacon and pair with your favorite cornbread.

Amundsen, an annual 100-kilometer crosscountry skiing race that took place in Norway. At the end of the race, Dan and Elaine placed second in the co-ed division. HOW DID YOU GO ABOUT TRAINING FOR SUCH A PHYSICALLY DEMANDING RACE?
The race course is a vast, treeless plateau called Hardangervidda. The race appealed to us because we're not particularly fast but we can go a long way. We also were drawn to the adventure side of the event - the wild terrain, the potential for multiple overnights in a climate that is as close as you can get to Greenland or Antarctica without going there. In the summer we mountain bike, hike, run and roller ski, but this would not adequately prepare us for the sled weight. So starting in November, we loaded up our sleds with weight and pulled them up and down mountains. HOW DID THE RACE GO? WERE THERE ANY UNEXPECTED CHALLENGES?
Placing wise we did quite well, coming in 2nd overall in the co-ed division and becoming the first non-Norwegians to ever podium in the race. Elaine was something like the 6th fastest woman in the entire event. Looking back we probably did as well or better than we could have hoped, but there are always things you'd like to do better. It's a very complex race, so while our physical shape was quite good, thanks in large part to training all winter at 10,000 feet and above, our inexperience and rookie status caused us to make more mistakes than normal. YOU LIVE IN ELDORA, CO, WHAT ARE SOME OF YOUR FAVORITE THINGS TO DO IN BOULDER COUNTY?
In the winter, the Indian Peaks provide alpine touring, telemark and nordic touring options galore. We spend 125-150 days a year skiing in these mountains. The Nordic Center at Eldora is a Boulder County gem, with some beautiful trails and it is a great place to get an amazing workout in just an hour. We'll often go up there before work. CONTINUED >

ROCCO GRIMALDI Rocco Grimaldi was a late-season call-up to the Avalanche from the affiliated San Antonio Rampage. This year, he made it through to the last rounds of cuts of the preseason for the Avalanche. Only time will tell if Grimaldi is called back up to the Avalanche again this year, but one thing is for sure: no matter where he’s playing, hockey is a huge part of his life. WHERE IS YOUR FAVORITE CITY THAT YOU’VE GOTTEN TO VISIT FOR A GAME?
Oh, my goodness, I’ve been so many places, that is such a hard question. I’ve been to 44 states and ten countries. Obviously, Denver’s cool because of the scenery and mountains. I played in Portland, Maine, a couple of years ago and it was a surprisingly cool town on the water. WHAT IS A MEMORABLE PLAY THAT YOU’VE HAD THROUGHOUT YOUR CAREER?
In 2013 we had the World Junior Championship, and Team USA was in the gold medal championship against Sweden, and we were down 1 – nothing and I scored two goals in the second period, and then we won 3 – 1. So it was pretty memorable to do something like that for your country, to win a gold medal for the USA.

CONNIE SCIOLINO Connie Sciolino is many things. A business owner, a wife and mother, and an athlete. From skiing to ice climbing, Scolino is about as active as they come. She’s also the owner of the Alpine Training Center, where she helps others get the strength and endurance necessary to be active all winter long. IF SOMEONE HASN’T BEEN ACTIVE IN A WHILE, WHAT IS THE FIRST THING TO DO TO GET BACK IN SHAPE?
The first thing anyone should do is develop an aerobic base. So that means start walking if that’s the level you’re at, or hiking if you can. If you’re farther along than that, go jogging or running. It just gets you moving and going from sitting all the time to wanting to do something. Starting with only thirty minutes, three or four times a week, and then building on that base. That’s the best thing you can do. THE GYM IS INDOORS, SO HOW DO YOU GO ABOUT TRAINING FOR THINGS THAT ARE ON SNOW, OR ON THE ROCKS?
My job is to get people strong and increase their overall conditioning. That’s my goal in the gym. I want to train specific muscle sets and how they move. The best example is the ice climbers: they bring their ice climbing tools, and they hang and move on our “ice climbing” wall. And when they’re out, that’s when they practice the technical aspects. WHAT IS ABOUT SKIING THAT YOU ENJOY THE MOST?
I love being out in the mountains. That’s the first thing that drew me in, was being outside. For me, it’s the whole learning process of skiing. Even now I’m still learning, and I think it’s a sport that you can keep working on your entire life. CONTINUED >

TREVOR GAGSTETTER For Denver-local Trevor Gagstetter, skiing is a part of his life year-round. From Vail to St. Mary’s Glacier and all the way down under in New Zealand, he hasn’t let a month slip by without skiing since September of 1997. WAS IT A CONSCIOUS GOAL TO GO SKIING EVERY MONTH FOR 20 YEARS?
Yeah, initially it started out as wanting to ski in the summer months and then realizing that I could ski every month if I wanted to. It started before the streak started, in ’96. I wanted to go skiing on my birthday, which is in August. So I had to figure out if you could do that, and I learned you could go up to St. Mary’s [Glacier] and ski year round. So that’s when it occurred to me that I could ski year round. FROM THERE, GAGSTETTER DECIDED HE WANTED TO TRY TO SKI EVERY MONTH FOR A YEAR. SINCE THEN, HE'S SURPASSED HIS ORIGINAL GOAL 20 TIMES. BUT IT WASN'T ALWAYS AN EASY TASK. RIGHT AT THE BEGINNING OF HIS STREAK, GAGSTETTER FACED CHALLENGES THANKS TO MOTHER NATURE.
When I was a freshman at CU in the dorms, and I had taken a bunch of my friends up to ski in August. It was sunny, and we had a great time. And fast forward to September 30th, and I set the day to go up, and everybody bails on me because it had been raining all day. So I’m sitting there thinking, “Man, am I really going to go do this?” And something in me just told me that I had to go up. SO IS THIS STREAK GOING TO KEEP GOING? IS THERE AN END-POINT OR ARE YOU GOING FOR A 30-YEAR STREAK?
It’s gonna keep going… Learning how to ski, doing Professional Ski Instructor Association training has helped me a lot. Learning the proper techniques for traversing snow has been crucial to me keeping myself healthy. If you know how to control your center of gravity and your speed at all times, you’ll never fall, and you’ll never hurt yourself.

hen you think of how most non-profit organizations got off the ground, you might imagine a situation of suffering: a gloomy call to action followed by a taxing triumph.
This is not that story. This story emerges from the dancing feet of a String Cheese Incident concert and extends from the helping
hands at Pine Ridge Reservation in South Dakota. Conscious Alliance has a lot of happy faces behind their movement toward hunger relief and youth empowerment. Take it from Executive Director Justin Levy. The way he sees it, the story of Conscious Alliance is the story of those folks. Allow him to introduce you...

From the floors of the Fillmore in Denver, circa 2002, Conscious Alliance kickstarted what would later be known as their famous ‘Art that Feeds’ Food Drive when an artist, Michael Everett, donated a highly sought after commemorative event poster that was used as an incentive for fans to donate food. In total, it allowed them to collect 4,000 meals. It gained such rapid traction that the following food drive brought in twice that. Needless to say, the band was eager to get them on board for all of their shows. Now, fifteen years later, Conscious Alliance’s impact is undeniable. They’ve distributed 2.5 million meals to over 30 communities; they’ve engaged hundreds of volunteers who have collectively contributed 100,000 hours to hun-

ger relief efforts; and they host nearly 100 food drives at concerts and festivals each year with a growing roster of bands including STS9, Jack Johnson, Michael Franti & Spearhead, Phish and Dave Matthews, as well as major festivals like Bonnaroo, Lockn’, Electric Forest, and Wakarusa. Their network has expanded significantly, and as Levy explains, it extends well beyond just their Boulder base. PINE RIDGE
While studying at the University of Colorado, Founder Justin Baker became invested in Native American Studies and read a book written by an elder from Pine Ridge Reservation in rural South Dakota. While Pine Ridge is about the same landmass size as Connecticut, it only has one grocery store, and the distance between communities and resources is vast. From the start, Conscious Alliance knew they wanted to take their mission 350 miles north. In 2005, the organization opened their first food bank on Pine Ridge; in 2013, they installed a Learning Garden; and in 2015, with the help of Plum Organics, Justin’s and Suja Juice, they launched the nation’s first all-natural backpack program for kids, where out of 250 students, over 100 of them are considered homeless. Building on the growth they’ve sprouted, Conscious Alliance has implemented a family garden program, so that kids who’ve enjoyed gardening at school can start gardens at home. Levy smiles thinking about a young boy whose life changed in one of those gardens. “He’d recently lost his mother,” he says. “His grandmother said that he was suffering badly from the loss, but since he’s been working his garden every day, it made him happier...That’s what makes us happy.” THE REAL HEROES
When asked about his favorite memories, I feel a strong presence fill the small space of his office… It’s Hannah Marx: a 13-year-old, who’s been volunteering with them since she was three, visiting Pine Ridge, helping carry meals after an event and continuing to host food drives at her school. It’s Dolores Price: the woman who runs the food bank in Michigan, stacking and loading boxes of food, eagerly preparing for all the Electric Forest fans, a community that could be looked at as counterculture, to take over her property for the weekend. It’s the little girl at the Pine Ridge skatepark their friends at the Stronghold Society built and her fearlessness dropping into the bowl. It’s every person that has volunteered, contributed and been impacted by Conscious Alliance’s cause. Reflecting on their work, Levy says, “When I think about those moments, the

A HOME THAT TELLS A STORY INSIDE A SPECTACULAR BOULDER REMODEL

ouses are truly made into homes through the efforts of the owners to not just personalize, but fully invest themselves in creating spaces that
tell a unique story. Few houses exhibit this transition like this Boulder home remodel. Striking a balance between grandeur and detail, practicality and creativity, this Boulder home shines in its deliberate design, careful craftsmanship and the family story it represents. A multi-year project, this venture was a collaborative design effort between Judy Goldman, homeowner and owner of Design Studio Interior Solutions, architect Leonard Thomas of Urban West Studio, and the framing team at Gilbert & Sons. Requiring drastic structural changes to fully realize the home’s expansive views while maintaining an intimate, inviting feel, the previous home was stripped to its two-by-fours and rebuilt with family, comfort and individuality in mind.Â

“This home was created with such heart,” says Goldman. “As people walk through it, I wanted to create subtle, yet powerful wow moments that would make them feel surprised and embraced by the space at the same time.” Focusing on creating cozy, comfortable spaces within an open architectural plan, each room uniquely engages its occupants. The home also emphasizes the connections between its indoor and outdoor spaces, creating design continuity with features like the steel of the indoor staircase and banisters mirrored on the outdoor decks, and the main floor ceiling wooden beams that stretch unencumbered to the outdoor covered deck. Aside from the stunning views overlooking Boulder and beyond, deliberately chosen design details also create moments of pause and awe throughout the home. From the energetic red of the glass tile in the guest bathroom to the recycled stoplight glass Vetrazzo countertops in the butler’s pantry, each unique element is understated, yet impactful. The true beauty of the home also lies in how wholly it embodies the lifestyle and experiences, past and present, of the homeowners. “This home truly tells the story of our lives,” says Goldman. “When people are in it, I want them to feel they’re part of it and experiencing that story themselves.” Housing a unique art collection inspired by the owner’s world travels, the home is full of marquee elements that directly translate to a vacation, an excursion, an adventure. Perhaps the most notable of these details is the Murano glass chandelier extending from the top to nearly the bottom of the three-story staircase. Commissioned by Schiavon Massimiliano Art Team, this piece was designed by the family while on a trip to northern Italy. Each colorful disc is handmade, unique and illuminated with LED lights, making the experience of just being in the stairwell grand and enveloping. It’s this type of storytelling and individuality through design that Goldman looks to embody both in her own home and in her work at Design Studio Interior Solutions. Frequently hosting events for various local nonprofit organizations, Goldman hopes that her home embodies the same warmth and welcoming that she and her family feel they’ve found here in Colorado. 68

I
t’s a fact – being outdoors, seeing big open spaces, smelling flowers and feeling warm sunshine are good for mind, body and soul. Two young Boulder filmmakers are not taking this for granted and want
to ensure that this exposure to nature is appreciated, preserved and available for future generations. Meet Liam Walton and Ani Yahzid, two 18-year-olds who did not know each other until meeting during the writing of this story. Each is on a mission to celebrate the outdoors through the lenses of their video cameras. Liam just graduated from Boulder’s New Vista High School; Ani is a sophomore at the University of Colorado. Liam wants to raise awareness of global warming’s impact on the sport he loves – skiing. Ani grew up in Atlanta and discovered the outdoors through an after-school program that took him out of the city and into the woods, inspiring him to introduce other multicultural youth to the awesomeness of nature. “I remember leaving the big city of Atlanta and driving a couple of hours north to Georgia’s mountains and seeing a totally different world,” said Ani. “It was a bunch of small towns, and I remember looking out the window as we drove there and seeing the trees, all the farms, just the amount of open space -- it was crazy to me. Just being able to see far! That’s when I decided that the outdoors was cool.”

Liam’s perspective was different. Born and raised in Boulder, learning to ski and snowboard as a toddler at Eldora Mountain Resort just 45 minutes up Boulder Canyon, he took for granted what the outdoors offered. But recently he began hearing about what climate change could mean to the ski industry, that in 50 years there may not be any skiing due to global warming. The result is his film, a high school graduation project, “Melting Away.” “I’ve been skiing my entire life, and once I found out that climate change was impacting the ski industry, I wanted to find out why,” he says in his 16-minute documentary. He interviewed the foremost climate model experts, meteorologists and ski industry veterans about this growing concern. His film paints a powerful picture of what is impacting the planet, not just the ski industry. Both these young filmmakers want to grab people’s attention about what they believe to be important – appreciating and preserving nature. “I always want to have skiing in my life, and I want to know that my kids will have skiing in their lives, to be able to enjoy the delicacy of snow and how beautiful the special feeling is to ski and ride through waist-deep powder,” said Liam. Ani’s approach to getting inner-city youth to think that the outdoors is important -- and cool -- is through music. He took Atlanta hip-hop artist Namaste and music producer Keylan on a two-week backpacking trip to Washington’s Olympic Peninsula this past summer and filmed them experiencing nature for the first time. He is calling the project “Exposure.” “I told them that it’s going to be a very tough trip, physically and mentally, because it will be pretty overwhelming. They were like, uh, we’ve climbed trees before, we’ll be okay,” said Ani, laughing. “It does matter to capture the balance of the good and the bad, so the film is not just cool “slo-mo” moments of them walking through the mountains. It also captures the emotional aspects of the trip, the emotions that the outdoors can evoke from anyone, both good and bad.” It hasn’t been easy for these young filmmakers to attain their objectives. Each launched a fundraising campaign to buy equipment and cover travel and production expenses. Liam had “zero” experience with filmmaking and editing and didn’t have a good computer for the editing software. “I had no idea how to use a DSLR camera, everyone uses their phones as cameras,” he said. He bought equipment with funds from his crowdfunding campaign and taught himself via on-line videos and courses. Likewise, Ani, a double-major in evolutionary biology and business, has never taken a photography nor filmmaking class. Despite no formal training, their untrained eyes are proving to be able to see and produce some powerful images. “At first it was just a creative project for me, the hip-hop-in-the-outdoors mixture,” said Ani. "I want to reach multicultural youth with films through Youtube, to get them to hear the music, to see (black people like themselves) and think it’s cool to get outdoors,” he said. And Liam's goal? “What I want to happen is that my film will open people’s eyes,” he said. “People don’t know how lucky they are to be outdoors.” In addition to visibility on Youtube, both young filmmakers have had their works accepted for screening at film festivals. Boulder's Adventure Film Festival is supporting Ani's project and helped produce and distribute “Exposures” in October. "Melting Away" has been accepted by the Vail Summer Film Festival and Liam is talking with the organization Preserve Our Winters (POW) with hopes it can get “Melting Away” additional visibility.
