Idaho Potato Drop While the COVID-19 pandemic changed plans, the Idaho Potato Drop still lowered a massive spud to ring in 2021. Held at the Ford Idaho Center Amphitheater instead of Downtown Boise, the event featured two bands, athletes, and some great fireworks. ZOO BOISE WELCOMES BABY ANTEATER Zoo Boise announced that anteaters Gloria and McCauley welcomed a new pup on December 23. The anteaters are visible to the public in their new indoor exhibit. Zoo guests will have to look carefully though, as Gloria carries the baby on her back so their stripes match up. This allows baby anteaters to camouflage from predators. Gloria and McCauley were paired together by the Species Survival Plan. This is Gloria’s fourth baby and McCauley’s third. To see the new baby, visit zooboise.org for tickets.

BOISE AIRPORT REACHES AGREEMENT WITH RIDESHARE PROVIDERS The Boise Airport has reached agreements with Uber and Lyft. The rideshare companies now have dedicated pick-up locations on BOI's east end upper curb, with signs directing passengers to these areas. Now let’s talk about a few luxuries that are always a nice way to start off the new year. New bedding is first on the list. There is nothing like a fresh pair of sheets. They are so welcoming and will assist in a good night’s rest. Look for breathable cotton or linen blends. As the nights start to get warmer you will be more comfortable in a cool fresh bed. The last thing on my list for a spring makeover are a few new throw pillows and possibly a new area rug. I try to change out my sofa throw pillows seasonally. My secret is to buy the same size covers so I can easily change them out and store my extras folded up in my linen closet. This way I can have multiple looks but not take up a huge amount of space. By just changing out a few pillows and rug you can get a whole new look without breaking the bank. I hope these tips inspired you to give your home a quick and easy spring makeover. My husband and I recently visited Jackson Hole, Wyo. for a new experience in the “old west,” a secluded mountaintop retreat that exudes warmth and welcome and something out of the ordinary. The name itself sets the expectation: Amangani means peaceful home. It’s part of the worldwide Aman family of resorts, and one of only two in the United States. The theme at the luxurious Amangani is one of nature and simplicity, and it’s a perfect complement to the surroundings. The resort feels more like a tranquil home than an opulent hotel. Rattan and natural sinew chairs are lined with faux fur cushions throughout the lounge areas and suites. The two-story windows facing the valley below greeted us with marvelous views. The wood-lined walls and fireplaces harken back to the pioneer days of the west. Imagine yourself in a cozy, rustic old-west cabin on a mountaintop with a crackling fire and a fur blanket. Then kick it up five stars. “Our locations are strategically chosen and offer a sense of peace and tranquility,” said Amangani General Manager Stuart Lang. “We create sanctuaries where our guests can unwind and rebalance.” When I need to hit the reset button, I seek out experiences that create joy. Big or small, those feelings of enjoyment truly are healing, and my go-to is a spa day. With a menu of curative treatments I opted to start my Amangani Spa day in the eucalyptus steam room to warm up and unwind. Afterward I donned my thick robe and slippers and walked to the infinity pool overlooking the valley. I sank into the jetted hot pool and sat chin-deep in the hot water which gave me a sense of levitation. I felt one with the land as my senses took in the clean air and incredible vista.

Hi! I’m McKenzie and I’m so excited to share three of my favorite spring recipes with you! We leave the months of winter and heavier food behind us and welcome in the fresh, light foods that grow abundantly in spring. Crisp peas, long asparagus, crunchy radishes, fresh greens, all nourishing foods that hold so much goodness and radiate vibrant colors. Starting to implement these lighter, brighter foods back into our meals is like a breath of fresh air. Allow these foods to fill your plate and fuel your body with nutrients and energy. The recipes I’ve prepared are chock-full of nutrient-dense and delicious ingredients that will have you feeling your best. I practice seasonal eating, which is eating produce that is naturally in season. Seasonal eating allows you to source your food locally, which gives you the opportunity to eat food quickly after harvesting. This means you are ingesting the produce at the height of its nutritional value instead of days or weeks after harvest, which is the case for most foods at the grocery store. + 12 oz haricot verts (green beans) + 1 lb fingerling potatoes + 1 lb asparagus, trimmed + 10 radishes + Microgreens + Arugula + 2 hard-boiled eggs, halved + Capers + Dill + Kalamata & Castelvetrano olives WHITE BALSAMIC DIJON DRESSING

+ 4 TBSP Extra Virgin Olive Oil + 3 TBSP White Balsamic + 1 Shallot + 1 TBSP Dijon Mustard + 1 TBSP honey + Sea Salt & Black Pepper

Preheat the oven to 350 and line a sheet pan with parchment paper. Slice the potatoes in half. Place potatoes, haricot verts and the asparagus on the pan. Drizzle everything with olive oil, sprinkle with salt and pepper, and place in the oven for 15 minutes, or until fork-tender. Hard-boil eggs while you wait. Place all dressing ingredients into a blender or whisk in a bowl and set aside. Using a serving dish, place the arugula down first and then layer the other ingredients on top, sprinkling the dill and microgreens on last. Serve the dressing as you individually portion out the salad.
