WAREHOUSE FOOD HALL ANNOUNCES TENANT PLANS A major new food and drink hub plans to open in downtown’s BoDo district — and it’s whetting Boise’s appetite with tasty details. The Warehouse Food Hall, 370 S. 8th St., announced its first three tenants: Paddles Up Poke, Rush Bowls, and The Loading Dock. Around 13-15 tenants are expected in the 21,000-square-foot destination, which will include food, beverage, and specialty spaces. The Warehouse “will serve as an extension to the already thriving 8th Street dining district,” according to a press release. It’s on pace to open in spring 2022.

Kinship in Boise MICHELLE KWAK BELIEVES FOOD COMMUNICATES ACROSS PERSONAL DIFFERENCES TO EXPRESS LOVE. At the new local eatery, Kin, Michelle introduces Boise to something it has yet to see – plated desserts. Served on a minimally designed white dining plate, Michelle’s newest dessert is her fresh version of the Pavlova. “As a painter would, I take separate components and experiment with how to bring them together on the canvas,” she says. She applies the same technique to her food presentation. The meringue treat of whipped egg whites looks like that of the Russian tutu claimed to be its original inspiration. Like the design of a Hindu geometric mandala, meditative and intentional, the dessert is topped with whipped, buttery quince blossom cream, six thin slices of ambershaded Membrillo, or cheese made from quince blossom, a sprinkling of chopped pistachios, and petals from the quince blossom. The first spoonful marries the delicate and nutty sweetness.

“The flavor is all there,” Michelle says about the classic dish. “It’s a little bit chewy on the inside, crispy on the outside, and blends perfectly with creamy, fruity flavors.” After culinary school, Michelle worked at Eleven Madison Park in New York, winner of five James Beard Awards and three Michelin stars.
When Michelle and her
husband wanted to be closer to her family in Seattle, they moved to Boise. She began teaching at Create Common Good, a nonprofit organization feeding and teaching job skills to people in need. Later, she began cooking at State & Lemp and found the beginnings of the crew that would lead to Kin seven years later. The friendships forged blossomed into the kinship that you will find at the restaurant now. Originally slated to open early 2020, COVID-19 rapidly gave the owners and staff of Kin a different direction. Kin staff volunteered their time to cook and deliver meals to those who had been directly impacted by the global pandemic. There was no question “if” anyone would help; they knew it was the right thing to do. By summer, they could safely host customers, local musicians and artists outside, safely providing

both entertainment and fine dining. Michelle Kwak is one of several talented staff at Kin, and the only pastry chef in the Treasure Valley creating new and adventurous plated desserts to challenge and delight the person lucky enough to be sitting in front of it, fork in hand.

A SUMMER ESCAPE TO PARK CITY, UTAH
NO ADVENTURE GOES ENTIRELY ACCORDING TO PLAN. That (and your attitude) is what makes it an adventure. That’s the lesson I’ve taken from travels with my mom, Sheri. Our adventures include getting lost in South Carolina, finding tucked-away destinations in Hawaii, and traipsing through a drizzly New York City. And adventure is what we did as we jetted off to Park City, Utah, for four days in August. Less than an hour away from Salt Lake City International Airport, we arrived at our temporary home base: The Goldener Hirsch Inn. The modern architecture is literally married to oldworld charm, as a skybridge connects newer units with the original building. In one part, we found ski storage that lit up as you walked by, while we found the other decked out with alpenhorns and an antler chandelier. We immediately set out to explore.

“You think you know Park City, and then you get there and there’s all these hidden gems,” Megan Skiles with Visit Park City said. And she’s right. We found everything from cute boutiques like Mary Jane’s, libation spots like No Name Saloon, and art galleries galore (Prospect Gallery was a favorite). We got ourselves into a “Mine Trap” at Escape Room Park City. Solving puzzles across three rooms, we ‘dynamited’ our way out with 11 seconds to spare. I was particularly proud of snagging the key for an enormous old-timey padlock I’d eyed since we were locked in. Then it was off to Riverhorse on Main for a delicious filet mignon (me) and macadamia nut-crusted Alaskan halibut (Sheri). I’m still dreaming about the goat cheese appetizers. Day two started with a quick breakfast at Goldener Hirsch, followed by a stroll around the Deer Valley Resort property. Chairlifts abound across Park City, waiting to whisk you into the mountains. Adirondack chairs also abound – perfect for soaking in the atmosphere and enjoying a to-go latte. Down the mountain, I tried Alpen + Hyde’s Massage’s deep tissue massage. Getting into a vacation is a lot easier when you don’t wince every time you move your neck to look at something cool. In need of sustenance, we took in the locally sourced options at the lakeside Deer Valley Grocery~Café. I love when folks know how to utilize ingredients, and the café’s turkey panini perfectly paired crisp apple with gooey cheese for a lovely lunch. Then it was back to home base for a quick swim. I was both nervous and excited to take a dip in the hot tub. Why? It’s perched six stories up on the Goldener Hirsch’s front, sporting a clear side wall so you can truly see you’re on the edge. Summer offerings include a scenic chairlift ride, biking, ziplines, and a mountain coaster. We started off on the chairlift, taking in the mountain air and making a game out of spotting the various black diamond runs that will soon be covered in snow. Rustling aspens wove beautifully soft melodies with the swaying chairlift as we peacefully ascended our way to the top. Once we had our fill of gorgeous panoramic views, we headed back down. Something that caught my eye from the chairlift was the Alpine Slide (one of the longest slides in the world). Sheri and I hopped back on the chairlift, ready for more fun. Grabbing our bright yellow sliding sleds, we picked the “Last Chance” track, one of four paths down the mountain. You set the ride speed as you push your control stick forward, or pull back to brake. I whipped down so fast I had tears in my eyes, while Sheri had time to admire a whistle pig gamboling by the track. Deciding we needed a pre-dinner cocktail, we dropped by Alpine Distilling’s Pie Bar. In its speakeasy atmosphere, we sampled pie-andcocktail pairings. My favorite was Preserve Liqueur: a blood orange, black tea, raspberry, lemon balm, and ginger spirit. From there, we cruised our way through the Arts Festival to reach our final dinner location: Nelson Cottage by High West. The cozy atmosphere inside made the cool evening feel pleasantly warm. Although, to be fair, that might have been the whiskey paired with our prix fixe meal. Each plate offered new tastes like squash blossoms and sweet corn gougere, along

Go do that thing. Date to discover each other. We sit on our front patio at night like a couple of old people in rocking chairs and chat for hours. What on earth do you talk about after 20 years? Well, everything. If you stay curious, you keep surprising each other. Set up dates for good conversation. Then ask questions. Good questions open the door to discovery. Go deep by thinking of questions that build on each other and you’ll be talking for at least an hour. Try these: What’s the happiest you can remember being? How do you gauge happiness? What are three things on your bucket-list you have yet to accomplish? What is your idea of the perfect day? If you want to keep it light: Do you find tattoos attractive? What styles do you like most/least? If I got a tattoo, what would turn you on the most? Need a romantic setting for conversation? Take a walk along the Greenbelt! Drive around neighborhoods looking at houses you could never afford! Spend a LONG time at dinner. We have lots of great romantic restaurants around like Little Pearl Oyster Bar, Bella Aquila, The Lively, Fork, Alavita, and Amano. Relationships are in constant flux because you and your other are always changing. No one stands still, nor should they. We can’t help but change and evolve as we navigate life. That’s as true for your person as it is for you. Change happens almost imperceptibly over the course of years and if we don’t pay attention along the way, we’ll wake up some day not recognizing the person lying next to us. WHAT ARE THE BEST SKILLS YOU BRING TO YOUR JOB? I think it’s a combination of my finance experience and comfort in speaking with people. Ironically, my father is an introvert, but when I was in high school, he invited me to attend the local chamber of commerce meetings at which I had to fend for myself talking with various businesspeople. That experience, along with showing up at the golf course as a single when I was first learning and getting paired with random people, made me comfortable listening and holding a conversation. WHAT’S YOUR DEFINITION OF SUCCESS? Success for me both personally and professionally is helping others achieve their goals. At work, I’ve been successful if my colleagues are given the opportunity to learn and advance. Personally, it’s the same with my family. I am a proud member of the humble-brag club, and I am extremely proud of my children, whether it was something I did in helping to raise them along with my wife Alaina, or more likely something I didn’t do. DO YOU HAVE SKILLS OR TALENTS THAT MOST PEOPLE DON’T KNOW ABOUT? Traditional talents like mastering a musical instrument or speaking a foreign language have eluded me. However, I was able to bring two fantastically talented and motivated children into the world, and I live vicariously through them. I’m a huge music fan, yet can’t read music or play an instrument. My son plays guitar, drums, keyboard, etc. and even put out an album on Spotify in 2020. I’m also a big believer in science, but I pursued finance as a career. However, my daughter is completing her Master’s degree in Public Health and has had a front-row seat to the efforts to fight COVID-19. WHAT ARE SOME CAUSES YOU CARE ABOUT? Education, housing affordability, and food insecurity.

WHO DO YOU ADMIRE AND WHY? I’m lucky that both my parents are still thriving. While I admire them both equally, since I already mentioned my father, I’ll share that I admire him because of how hard he works and how much he cares for other people. As long as I can remember, he has always helped the less fortunate, not necessarily with a donation, but with meaningful work, opportunity, and companionship.
