AS NOVEMBER ROLLS AROUND, WE’RE ANXIOUSLY AWAITING THE APPROACH OF THANKSGIVING, THE HOLIDAY SEASON AND TIME SPENT WITH OUR LOVED ONES. The winding down of the year always brings about a time of reflection for us— remembering everything we’ve done or accomplished in months past; looking forward to a morning watching the Thanksgiving Day parade or afternoon spent curled up on the couch after one too many pieces of pie; thinking of the people, experiences and things we’ve been blessed with in the last year. As we press pause on the hustle and bustle of life putting together a monthly magazine, we’re able to look back on the past year and, most meaningfully, the stories from all of you that have made what we do possible. We also take this chance to think of those less fortunate and encourage you to take the opportunity this giving season to donate to local organizations or charities giving back locally. Scentsy Rock-a-Thon Raises Raises Record-Breaking $260,568 For 12 hours, more than 1,300 volunteers kept 70 rocking chairs going nonstop to raise funds for the Women’s and Children’s Alliance. Scentsy owners Heidi and Orville Thompson donated a total of $210,000, while $50,568 was donated by everyone at the Rock-a-Thon. Scentsy employees collected 2,635 jars of baby food, 441 baby snacks and 183 cans of formula.

Well, that all changed as our family grew and my sister's sister-in-law, Susan Hackney Richeson, started bringing the stuffing to Thanksgiving dinner. Now we all make Susan’s stuffing, and she is happy to share her recipe. She also shares how this recipe came to be a family tradition.

CORNBREAD STUFFING

Hackney, at the holidays," she says. "Betty was a Southern woman born in Georgia. She came up with this variation of the stuffing for our family gatherings at Thanksgiving and Christmas. It quickly became my mother’s favorite dressing, and she has carried on the tradition. It is now made by the granddaughters and has since been passed on to many friends. We never have a Thanksgiving without it.”

“We would go to Georgia and eat with my grandfather and his wife, Betty

INGREDIENTS + 2 boxes Jiffy cornbread, prepared according to package directions + 3-4 cups corn flakes + 1/2 cup diced onion + 1 cup chopped celery + 3 tablespoon butter + Salt and pepper + 1 teaspoon poultry seasoning + Drippings from roasted turkey DIRECTIONS The night before: Prepare the cornbread and let it sit out uncovered overnight to dry out. The morning of: Saute the onions and celery in butter. Season with salt and pepper while cooking. In a large bowl, crumble cornbread with your hands, add cornflakes, sauteed vegetables, poultry seasoning and a bit more salt and pepper to taste. Once turkey is done, use drippings to moisten the stuffing; adding bits of turkey is optional. Slowly add the turkey drippings to get the right consistency, similar to oatmeal. Bake at 450 degrees until golden brown and set, about 25-30 minutes.

PECAN PIE INGREDIENTS + 1 unbaked pie shell + 1 cup light brown sugar + 1/4 cup white sugar + 1/2 cup butter + 2 eggs + 1 tablespoon all-purpose flour + 1 tablespoon milk + 1 teaspoon vanilla extract + 1 cup chopped pecans + 1/2 cup whole pecans DIRECTIONS Toast chopped pecans on a baking sheet at 350 degrees for 12-15 minutes. Preheat oven to 400 degrees. In a large bowl, beat eggs until foamy, and stir in melted butter that is cool enough not to cook the eggs. Stir in the brown sugar, white sugar and flour; mix well. Add milk, vanilla and nuts. Pour into an unbaked 9-inch pie shell and bake for 10 minutes. Remove from oven, top with whole pecans, then reduce temperature to 350 degrees and bake for 30-40 minutes, or until done.

They’re the spokesmodels for the valley’s abundant waterfowl population, and if waterfowl watching were a bingo game, they would be the free space. Look a little closer and you can see a variety of waterfowl in the valley, and many species can be seen at easily accessible places, such as the Boise River along the Greenbelt, in parks, neighborhood ponds or other nearby locations. That’s the beauty of waterfowl watching: you don’t need to travel far. And while a good pair of binoculars comes in handy, you don’t have to have them. You’re not trying to spot a small, flittering songbird in a brush patch or identify a raptor from a football field away. Waterfowl are big enough that they’re easy to spot, not to mention they’re usually on the water, and they have beautiful plumage and make some cool calls. I have never considered myself a birdwatcher, but I am a waterfowl hunter, and one evening on a walk with my wife I started naming all the birds in our neighborhood ponds. “When did you become a bird nerd?” she asks. I laughed, but I also realized I had inadvertently become a birdwatcher. Hunting waterfowl has made me appreciate how many different kinds of birds live near water beyond ducks and geese and how each behaves a little differently. It also makes it exciting when I spot a bird that’s rare for the area or one that’s here out of season.

Ringneck duck

Some of the birds migrate from as far as Alaska and Siberia, and they are resting here before continuing their southward flights. There are too many to list, but aside from the geese and mallards, it’s common to see wood ducks, wigeons, gadwall, goldeneyes and ringneck ducks. Some are close by because they are avoiding guys like me by staying within the safe confines of city limits. Don’t kid yourself; those carefree-looking ducks are survival-savvy, and when they find a safe place, they stick to it. Some of my favorite places to spot waterfowl (when I am not hunting them) are those I’ve already mentioned, but there are a few in particular I enjoy and see a lot of birds. The Hyatt Hidden Lakes Reserve on Maple Grove north of Chinden Boulevard is a 44-acre haven for waterfowl that includes trails, benches and overlooks. It’s an amazing place to watch the evening flights arrive, and whistling wings and bird calls make a beautiful soundtrack. The MK Nature Center on Walnut Street adjacent to Idaho Fish and Game Headquarters is another cool spot to watch waterfowl. It’s like a miniature wildlife sanctuary with a surprising variety of other wildlife, including mule deer. If you venture a little farther, Fort Boise Wildlife Management Area near Parma has truly world-class waterfowl watching, but be forewarned: hunting is allowed there. But there’s a covered observation platform where you can watch birds coming and going from one of the ponds that’s off-limits to hunting, and you can drive right to it. Lake Lowell is another waterfowl magnet, which also allows waterfowl hunting, so don’t be surprised if you hear gunshots while you’re there. But like Fort Boise, there are areas where hunting is restricted on the refuge. There’s a variety of resources available to help you identify the birds you’re seeing, and one of my favorites is the Cornell Lab of Ornithology’s “All About Birds” website, Birds.Cornell.edu. You can find color photos of each bird, and you can also listen to the calls each bird makes. I can identify most waterfowl, but I still like to listen to their calls and link the sound to the different birds when I see them in the wild. 30

DECORATE YOUR SPACE: What decor do you already have around your

home that you could incorporate? If you don’t have a lot of fall decorations, don’t hesitate to accentuate with the beauty of nature. Collect pinecones, fall leaves or even branches from pruned trees. Looking to add to your fall collection? Start with thrift stores, and work your way up. TJ Maxx and Homegoods are wonderful little-known finds that have many similar pieces available at the larger more expensive craft stores. If you choose a more formal setting, a simple garland down the middle of the table can do wonders. For more of a whimsical flair, look to use household items in unconventional ways. Sheer curtains make a great substitute for a table runner, and serving items like cake stands can be used to hold any number of decorations instead of food.

3 INCORPORATE GRATITUDE:

My inspiration for incorporating gratitude into these tables was

memories of my childhood. When I was young, we didn’t have extra for fancy table settings, but my mother was wonderful about inspiring us to be creative and grateful for what we did have. She has an eye for design, worked to make her own beautiful flower arrangements and carefully budgeted for versatile fall decor. She also incorporated a tradition of gratitude for God’s tender mercies and for each other in a number of ways. As I grew up in a family of six kids, she was called on to be the peacemaker nearly every day, and one night she gathered the children and explained she wanted us to each draw a sibling’s name. We were to be each other’s secret “pixie” for the week, doing kind acts of service in the hope of endearing us to each other a little more. It worked, and my siblings and I have grown to become a close-knit group that enjoys helping one another and sharing in each other’s laughter and tears. However, whether you have a close family or not, it is never too late to start new traditions of gratitude.

GRATITUDE SCROLLS

This same idea can be modified and incorporated into a Thanksgiving table. As family and friends arrive, put each guest’s name in a dish. Names are drawn, and blank scrolls are passed out. These can be a simple piece of paper rolled and tied with a string. Then guests write a note of gratitude for what they are thankful for about that person, and completed scrolls are placed on the table at that person’s place setting. Kids can draw a picture or have adults help them write a simple note. If writing on the spot is intimidating, try doing a family rotation so everyone knows whom they are writing about in advance. Handwritten notes have nearly become a thing of the past, and your loved ones will treasure whatever kindhearted things you choose to share.

PLACE CARDS

As my siblings grew older and had families of their own, labeling cups became a necessary tradition for many family gatherings. Over the years, simple names on plastic cups grew to incorporate drawings and doodles and occasional random titles from whoever was assigned to the cup brigade. Likewise, handwritten place cards add a personal touch to Thanksgiving dinner. Our handwriting is as distinct as we are, and even if we don’t like our own writing, these little cards become meaningful as the reader recognizes it was you who put in that little touch of love. Place cards can be as simple or as intricate as you wish, but a simple thought is to add an adjective you appreciate about that person or the quality that seemed to be exhibited most that year. Why not surprise them with a quality you admire? The table setting or decorations may be forgotten in a few days’ time, but people will remember how you make them feel. A simple compliment may become more meaningful than you realize.

As my brothers and sisters had more children of their own, Thanksgiving at Grandma’s house started to encompass this quote best: “My family is the perfect mix of chaos and love.” Trying to rein in the excited grandchildren and still incorporate the spirit of gratitude, my wise mother one year made nut cups with a little candy corn mixed in for each of us. Then she explained we couldn’t eat it until each of us had gone around the room and shared what we were grateful for that year. This became another beloved tradition in our family. One year she ran out of time to make nut cups, and one of the sibs grabbed a bag of candy corn and passed around one single piece to each of us. Sharing gratitude for life opened opportunities to learn of often unknown trials we all faced. The things that we learned about each other and what hardships had been overcome that year drew us all closer together. This tradition has become my favorite over the years as each Thanksgiving gives us this opportunity to reconnect and express gratitude for each other and the tender mercies afforded to each of us.
