THE TEXAS HILL COUNTRY GAME FAIR RETURNS TO JOSHUA CREEK RANCH, UNITING WORLD-CLASS SPORTING TRADITIONS WITH A VITAL MISSION TO FUND SCHOLARSHIPS FOR TEXAS YOUTH.

There is a specific kind of magic found in the quiet rustle of the Hill Country brush and the crackle of a shared campfire. It’s a heritage that defines the Texas spirit. And on June 12-13, that spirit takes center stage as the Texas Hill Country Game Fair returns to the prestigious Joshua Creek Ranch (JCR). For its second year, this premier outdoor celebration pairs JCR’s world-class sporting grounds with the philanthropic mission of the San Antonio Stock Show & Rodeo’s Wildlife & Natural Resources Committee.

Following a successful inaugural launch in 2025, the fair’s purpose remains singular: helping Texans understand, appreciate, and protect the great outdoors. Led by Duane Westerman, Chairman of the Wildlife & Natural Resources Committee, the event serves as a bridge between today’s conservationists and the next generation of land stewards. “If we can get even just one more young person into nature with a fishing pole, or sitting at a campfire, or hunting a deer, I think it is a success,” Westerman says. “My concept, which

is borrowed from others, is we may not be able to change the world, but we can work to change a little at a time.”

The two-day celebration highlights the pinnacle of outdoor sport and Texas hospitality. The festivities ignite on Friday with the Game Changer gala. This evening features live music, chef-prepared hors d’oeuvres, and a high-stakes live auction with firearms and world-class hunting adventures.

Saturday shifts the focus to the field. Families and sporting enthusiasts can enjoy a competitive shooting tournament, live demonstrations, and a silent auction. New for 2026, the fair introduced a “Buckaroo Que Competition” for kids ages 4 to 17, alongside more accessible day-pass pricing and an expanded exhibitor lineup.

The evolution of the event is the result of a deep-rooted collaboration between the San Antonio Rodeo and Joshua Creek Ranch. The two teams have worked to elevate the Game Fair into a cornerstone of the Texas summer calendar. “Through lots of

brainstorming, including opportunity assessment, together we dreamed up the idea of a Game Fair in the summer of 2024 before launching our inaugural event in 2025. We envision it becoming an annual event for years to come, attracting local, state, and even national interest and participation,” noted Kevin Welborn, Managing Director of Joshua Creek Ranch.

While the atmosphere is one of celebration, the underlying goal is educational. Proceeds support the San Antonio Rodeo’s expansive scholarship and grant programs, a Texas staple since

1949. This includes specific initiatives such as hunter safety, angler education, taxidermy scholarships, and a burgeoning archery program. “We remain consistent with the focus on raising funds to support and educate the youth of Texas, specifically as it relates to the outdoors and conservation of our agricultural and outdoor culture,” Westerman notes.

By partnering with Joshua Creek Ranch—a legendary wingshooting lodge for over 36 years—the Wildlife Committee provides an immersive setting that words alone cannot capture. For Welborn, the partnership is a natural fit between two organizations dedicated to excellence. “It is an honor to be working with the San Antonio Rodeo, one of the largest and most prestigious fundraising organizations in Texas,” says Welborn, “while also building an event that has something for everyone in the sporting world and our community, in general, to experience and look forward to.”

Beyond the gates of JCR, the fair has garnered local support from groups like the Kendall County Junior Livestock organization. For Boerne families, it is an invitation to step away from the screen and back into the landscape. “The most important aspect of this event is that it is for our future and the future of our kids and grandkids,” Westerman says. “At the Wildlife Committee, we have been focused on supporting and educating youth about the outdoors, wildlife, and all that many of us take for granted in Texas, but not every kid has a chance to experience."

From the patient smoke of a brisket to the precision of physical therapy, true mastery takes time.

There is a distinct, primal satisfaction in the craft of the long game. This June, we feature a dish that embodies that intersection of grit and refinement: Smoked Brisket with Scratch-Made Thai Green Curry and Kimchi Queso with Wagyu Sirloin

The recipes come from a man who understands peak performance. As a Texas native and co-owner of ECHO Physical Therapy and Athletics in Boerne, Craig Akin spent years optimizing the human body before realizing the most vital work happens in the kitchen. Driven by a desire to reclaim his health and prepare for the arrival of his first daughter this fall, he’s trading processed shortcuts for whole, grass-fed, organic ingredients. “As I have progressed as a cook, it’s turned more into a love language and art than a task,” Akin says. “A successful dish tastes even better when you have failed at it multiple times!”

This meal serves as a testament to the importance of returning to our roots. By pairing the deep smoke of Texas beef with the vibrant, seasonal zing of a garden-fresh green curry and the rich taste of kimchi and queso, he proves that eating for health does not mean sacrificing bold flavor. They are fresh and clean, and they represent a peak of culinary craftsmanship.

DIRECTIONS:

1. Build your smoker's temp to 190° F. Trim the fat from the brisket and reserve. Mix dry seasonings together, then rub honey over the brisket and apply the seasoning mix evenly.

2. Place the brisket on your smoker with the fat side up.

3. While brisket is smoking, cube the fat into 1-1.5” pieces. Place them in a stock pot or saucepan and cover with ¼ inch of water. Bring water to a simmer, stirring occasionally until the fat dissolves and the liquid becomes golden (1-2 ½ hours). Then strain the liquid through a fine-mesh strainer into a container.

4. Once the brisket’s internal temperature hits 160°, remove from the smoker.

5. Spread rendered fat over the fat side of the brisket, and then wrap it in butcher paper.

6. Place the brisket back on the smoker for another 2-4 hours

7. Raise smoker temp to 250°, and cook until the brisket’s internal temp hits 203°.

8. Remove the brisket and wrap it (still in the butcher paper) in plastic wrap. Let it rest for at least 2 hours.

INGREDIENTS:

• 1 grass fed & finished brisket

• ¼ cup raw honey

• ¼ cup salt

• 2 tablespoons black pepper

• 2 tablespoons white pepper

• 1 tablespoon garlic powder

• 1 tablespoon onion powder

• 1 tablespoon ground ginger

• 1 tablespoon ground coriander

DIRECTIONS:

1. Place all ingredients in the first section into a food processor and purée until smooth, adding water as needed to reach the desired consistency.

2. In a wok or saucepan, melt the coconut oil over medium to medium-high heat. Cook the bell pepper and onion, stirring until aromatic. Reduce the heat to medium.

3. Melt tallow and add curry paste, ensuring the paste does not burn.

4. Pour in the can of coconut milk and stir the ingredients together.

5. Reduce the heat, and let simmer for 30 minutes to 1 hour.

6. Ladle curry into a bowl, and serve with the brisket and rice. Garnish with peanuts, basil leaves, and lime.

CURRY

INGREDIENTS:

• 8 stems cilantro

• 1 cup of Thai basil leaves

• 3 cloves garlic, minced

• 2 Thai chilies, deseeded and diced

• ¼ poblano pepper, diced

• 1 tablespoon shallot, diced

• 1 tablespoon lemongrass stems, sliced

• 1 tablespoon fresh ginger, minced

• 1 tablespoon coriander seeds

• 1 tablespoon cumin

• 1 teaspoon white pepper

• 1 teaspoon salt

• Zest from 1 lime

• Juice from 1 small lime

• Water (as needed)

• ½ yellow onion, sliced

• ½ red bell pepper

• 1 tablespoon coconut oil

• 1 tablespoon grass-fed beef tallow

• 1 can organic unsweetened Thai coconut milk

• Crushed peanuts

• Thai Basil leaves

• Lime

KIMCHI QUESO

WITH WAGYU SIRLOIN

INGREDIENTS:

• ¼ cup yellow onion, diced

• ¼ cup red bell pepper, diced

• ½ cup kimchi, diced

• 1 tablespoon butter

• 1 tablespoon white rice flour

• ½ cup whole milk

• 2 ounces cream cheese (¼ block)

• ½ cup shredded cheddar cheese

• Wagyu sirloin

• Salt to taste

• Cilantro

• Cotija cheese

DIRECTIONS:

1. Melt butter in a stockpot or saucepan over medium heat.

2. Sauté the yellow onion and red bell pepper. Season with salt, and stir until aromatic.

3. Add half of the Kimchi and stir.

4. Sprinkle rice flour into the mixture and stir to coat the ingredients. Then add milk slowly to create a roux.

5. Allow roux to simmer, stirring occasionally, until it thickens slightly.

6. Add cream cheese and stir until it melts. Then add the cheddar cheese and stir until melted.

7. Garnish with cooked sirloin, cilantro, cotija, and additional kimchi, and serve with chips.

London FROM WITH LOVE

English craftsmanship finds a new home on Hill Country roads.

Sculpted lines. Masterful craftsmanship. Understated luxury. 007. For many, these are the essence of British cars. But for Vin Patel, these precision machines from across the pond represent a personal history, a sense of nostalgia, and a visceral way to reconnect with his roots.

Patel’s drive begins in London, where he was born and raised. Back in the 1980s, owning them seemed impossible. “Going through college back in the ’80s, we could not afford cars of this caliber back then,” he says. “You would always see the other guy drive them.” But even over the years, he never outgrew that early admiration.

Years later, Patel moved to Texas and established a successful career in the hospitality industry. Despite the miles between San Antonio and London, he found himself drawn back to the motorcars that had captured his imagination as a lad. He certainly appreciated the technical craftsmanship, yet there was a deeper emotional resonance at play. “They represent a personality in myself,” Patel says. “They’re a symbol of my British heritage. They just take me back home.” And now, with the means he once lacked, his appreciation shifted into a passion.

A prime example of this dedication is his 1981 Ford Capri 2.8i. Securing this particular specimen felt like a top-secret assignment that spanned nearly two and a half years. The search required numerous scouting trips across the United Kingdom while he was visiting his retired mother. "I would go up and down the motorways of the UK, inspecting cars from private sellers and specialized dealers," he remembers. "None of them quite caught my eye. I was waiting for the right one." When he finally located a specimen that met his exacting standards, Patel jumped into action. With that purchase, he added the first vintage piece to his growing collection.

The Capri was not alone for long. He soon added a beautifully restored 1973 MGB GT to his personal "Q Branch," shipping both vehicles from the English docks to his garage in San Antonio. Today, Patel’s fleet includes the Capri and the MGB GT, alongside a 2000 Jaguar XJ8 and a 2011 Bentley W12 GTC Convertible.

For Patel, British cars stir more than just a love of driving and craftsmanship. “Today, everything looks almost the same,” he emphasizes. “You don’t see the shape and the craftsmanship of these vehicles anymore. You see the steel, the chrome, the lines.” It’s the art of a bygone era that makes his cars stand out on today’s roads, Patel says. "Today, I’m at a point in my life where I can enjoy a little bit more of the finer things," he said. "We’ve worked hard all our lives. Now it’s time to give back and enjoy it." Together with his business, Chauffeurs on Demand, his classic cars have even been deployed from time to time as escape vehicles for Hill Country newlyweds.

For Patel, these cars are more than collectibles. They embody memory, heritage, craftsmanship, and a sense of achievement. They are quiet reminders that sometimes moving forward starts by revisiting where you began. And maybe there’s a bit of James Bond allure to it, too. “The next one on my list,” he says with a cheeky grin, “is going to be an Aston Martin.”

Getting to wake up every morning and work alongside my family has been the greatest privilege of my life.

My father, Kyle Kirl, founded Le Sauce & Co. in 2019. He turned years of quiet contemplation and the steady encouragement of friends and family into a tangible reality. His vision was as clear as it was ambitious. He wanted to offer all-natural, gourmet gravies and sauces that empower everyone to craft a delicious, world-class meal with minimal time or effort. I joined the business shortly after graduating from college in 2021, and my brother-in-law joined the team the following year. In the seasons since, I have learned more from my father than I ever did in a classroom. While the education has been rigorous, it has been far more rewarding than I ever could have imagined—and a lot more fun too.

My dad launched this venture following a distinguished 30-year career in the consumer packaged goods industry. He is a true veteran of the trade who spent decades scaling iconic food brands for ConAgra. In the mid-2010s, he was instrumental in helping the Tillamook County Creamery Association take its famous cheeses to a nationwide audience. Today, he applies that same relentless tenacity to Le Sauce & Co. Under his stewardship, we have evolved from a small startup into a respected national brand. Currently, our products are featured in over 1,000 stores, and we are preparing for a major launch at Kroger later this year. Following our successful expansion into the Pullman market, we are now focused on bringing our all-natural gravies to H-E-B shelves as soon as we can.

My father isn’t just building a company for today; he is cultivating a multi-generational legacy designed to last. His goal is to reimagine the "dinner space" by creating an enduring brand that helps families connect over high-quality meals for decades to come. Our success is a direct result of his deep intuition for the grocery industry, yet our daily inspiration comes from his tireless, hardworking spirit. I’m not sure if he set out to teach me that lesson intentionally or if it simply came from being the father of two girls—but I’m grateful either way. Because of him, I learned how to use a paintbrush and tape off a wall, change out electrical fixtures and a faucet, ride a mower, and handle a weedwacker.

I enjoy the people I meet, the places I get to explore, the experiences I accumulate, and the growth I gain not only as a photographer but also as a human being interacting with such a beautiful spectrum of unique individuals.

HOW DO YOU WANT READERS TO FEEL WHEN THEY VIEW YOUR PHOTOS?

I want them to feel what they are meant to feel. For some, a photo may stir a feeling of joy and ignite contemplation. For others, it may allow grief and remembrance to arise. No matter what it is, I find it beautiful that each individual can have a completely different experience of the exact same photo.

WHAT'S SOMETHING ABOUT YOU THAT SURPRISES PEOPLE?

I lived in Australia for a year and became a Surf Lifesaver in Sydney. It was a dream come true to be a lifeguard at a beach.  CONTINUED >

Of all the personalities and stories I’ve had the privilege of writing about, one that has stayed with me is an article about a woman who worked in hospice care. Her devotion, compassion, and unwavering commitment to serving others during life’s most vulnerable moments were truly unforgettable. Writing her story gave me an even deeper appreciation for how heroic, selfless, and profoundly important that profession is.

WHAT’S A LOCAL SPOT THAT YOU TELL PEOPLE THEY ABSOLUTELY HAVE TO VISIT?

Two absolute must-visit places in Boerne are Free Roam and Cibolo Creek Brewing. Both are family-oriented spots that really capture the spirit of the community, offering live music and a welcoming atmosphere where families and friends gather to enjoy time together over beer, wine, and incredible food.

WHAT DO YOU DO WHEN YOU’RE NOT WORKING ON THE MAGAZINE?

I treasure every second of being a dad to my children. I love watching them grow, supporting them in sports and church, and creating lifelong memories together here in the Boerne community. Family is at the center of everything I do, and being present for these moments is what I value most.

WHAT'S YOUR FAVORITE STORY YOU'VE WORKED ON?

I've loved all of the stories I've written, so I can't say I have a favorite. Every person I speak with has a fascinating story to tell, and I'm honored to write about them. Of course, the very first piece I wrote about wellness coach Alison Canavan stands out. I've not previously done this kind of writing, so having the opportunity to interview someone and then translate that into something that would capture the attention of readers was a welcome challenge. It was a great learning experience for the subsequent work I've done for the magazine.

WHAT DO YOU DO WHEN YOU'RE NOT WORKING ON THE MAGAZINE?

When I'm not writing for Boerne Lifestyle , I work at USAA as a Survivor Relations Representative. Most weekends, you'll find me either at a local music show in San Antonio, where I live in Southtown, most often at the Lonesome Rose, or enjoying a beer at Roadmap Brewing.

HOW DO YOU WANT READERS TO FEEL WHEN THEY PICK UP THE MAGAZINE?

I want readers to sigh with happiness upon picking up the magazine and feel compelled to stop what they are doing to read it from cover to cover. I want them to develop a deeper appreciation for the people, places, businesses, and nonprofits in the greater Boerne area and to feel glad they are part of the community.

WHAT'S A LOCAL SPOT THAT YOU TELL PEOPLE THEY ABSOLUTELY HAVE TO VISIT?

Other than the BHS stadium and my daughter's soccer games, hands down, it’s Tardif's American Brasserie. I love it. The service, ambiance, and food all contribute to a truly fine dining experience.

WHAT DO YOU LOVE MOST ABOUT BOERNE?

Greater Boerne has so many good qualities that it is no surprise that it is growing so quickly. The people are real, caring, and involved; that’s why there is such a strong nonprofit culture here. The magazine has helped me become more aware of the giving hearts that ultimately define the Greater Boerne residents.

WHAT'S YOUR FAVORITE STORY YOU'VE WORKED ON?

My favorite story so far for  Boerne Lifestyle was “A Legacy Lives On,” which was in the February issue. I loved hearing the story behind how Boerne was founded, and the impact of the families still in Boerne today. Listening to all the stories from Marilyn and Jenn was really inspiring and engaging.

WHAT DO YOU DO WHEN YOU'RE NOT WORKING ON THE MAGAZINE?

Professionally, I work full-time as a videographer at Oak Hills Church and also do freelance photography and videography. I love being able to tell stories as a profession and giving people a platform. Personally, I love spending time with my girlfriend Ashlee, running, playing pickleball, hiking, watching movies or shows, visiting coffee shops in the area, and cooking.

WHAT'S SOMETHING ABOUT YOU THAT SURPRISES PEOPLE?

I have run two marathons: I ran the Houston Marathon in January 2024 and the Panther City Marathon in February 2021. I don't plan to run another marathon anytime soon, but I love running and being outdoors.

WHAT DO YOU DO WHEN YOU'RE NOT WORKING ON THE MAGAZINE?

Outside of Boerne Lifestyle, I work in nonprofit communications. I love just staying home with my wife and daughter (both of whom appear somewhat regularly in these pages), but I also love to travel, and I've been to 47 of the 50 states. WHAT DO YOU LIKE MOST ABOUT THIS WORK?

I like getting to know people and sharing their stories. It's been so much fun meeting so many different kinds of people in our part of the Hill Country—to learn about them, what they love, and how they're making their part of the world just a little bit brighter. It can sometimes feel like we only hear about the negative things happening around us, and we certainly face many difficult challenges in life. But at Boerne Lifestyle , our role is to highlight the people and organizations doing good for their neighbors, the experiences that make us smile and laugh, and the things in life that bring us joy.

FROM VISION TO REALITY

A TOUR OF ST. PETER’S NEW SCHOOL CAMPUS, SHAPED BY CLARENCE KAHLIG’S PHILANTHROPY, REVEALS A VISION ROOTED IN DISCIPLINED ACADEM-

ICS, ENGAGED STUDENTS, AND ENDURING VALUES.

Long before the buildings were designed or the funds were raised, the foundation had already been laid by a community that believed students deserved more than a standard education. That foundation is now coming to life at St. Peter the Apostle Catholic School, where a new campus reflects both a shared vision and the commitment behind it. Walking the grounds offers a clear view of how the project came together: the influence of philanthropist Clarence Kahlig and his wife Tina, the leadership of Father Norman “Norm” Ermis, and a community that responded with wholehearted support.

Beyond the limestone walls and carefully planned spaces, the school seeks to distinguish itself with a high level of student engagement, personalized instruction, and learning shaped by rigorous academics and an understanding of the role of faith in daily life. This approach is already on display in temporary classrooms serving more than 110 students in kindergarten through seventh grade, before the full campus opens in August with the space to grow to 550 students.

Clarence Kahlig, the founder and president of Kahlig Auto Group, is known for his philanthropic work that extends well beyond a single project. Though he speaks about his role at St. Peter’s with little emphasis on himself, it is foundational. He first approached Ermis with a direct question: “I asked him, ‘If I gave you five million dollars, would you build a Catholic school?’” Then, a process of prayer, consultation with the archbishop, and a formal feasibility study confirmed strong backing from both parishioners and neighbors alike. As Kahlig recalls, “Community support for the school was unmatched and has been there since the beginning.”

The campus of St. Peter the Apostle has been built in layers. At the front of the property sits the original chapel. Behind it stands the larger sanctuary, opened in the late 1990s, with a layout that departs from tradition. Pews face inward, creating an open space, framed by limestone walls that feel like the Hill Country brought indoors. As the campus expanded with the addition of the Cana Ballroom and other structures, this same material was used to create a sense of continuity throughout.

The school grounds fit the space as well. The land, purchased from the Benedictine Sisters and then donated to the parish, sits just beyond the main campus, connected by both proximity and design. Walking from the church to the school, the transition feels seamless. Retaining walls and graded elevations guide the descent, shaping the landscape as it opens up. At the entrance, textured limestone stretches across two primary buildings, punctuated by polished limestone pillars that give structure and rhythm to the facade. To the right, the academic wing rises with 43,000 square feet of learning space, anchoring the campus with a presence that is both substantial and cohesive with everything that came before it.

Inside the academic wing, Kahlig pointed out details that might otherwise be overlooked, each one tied to how students will learn and move through the day. Classrooms are sizable but intended for smaller groups—no more than 20 to 30 students per class. “Young people are being formed with a base and foundation of Christianity and values,” Kahlig says of the current students. “They are academically strong, and it is just amazing to see how they are progressing in their analytical thinking.”

Built for direct instruction and individual attention, each classroom features a simple whiteboard, a contrast to other approaches that rely heavily on computers and online learning. Technology is used selectively: security systems are top-of-the-line and comprehensive, while instruction relies on teacher-led learning, favoring whiteboards over screens. The youngest grades have bathrooms inside the room, a feature that keeps students present and minimizes disruption. As Kahlig moved through the space, it became clear that these choices were intentional and central to the school’s priorities. In the chapel, eight stained-glass windows add a sense of meaning, with panels carefully selected, customized, and designed just for the space. The composition helps create a setting in which focus is expected, and students are shaped through consistency, structure, and direct engagement.

Hearing Kahlig’s vision for students' academic and spiritual potential echoes the legacy of Sam Champion, the namesake of the city’s second public high school. He was known for taking his time to speak directly to students, remembering their goals, and following up with a handwritten letter of encouragement, all small gestures that reinforced a larger belief in their potential. Kahlig’s work and the vision of St. Peter’s operate on different scales but share a similar throughline: a commitment to creating an environment in which Catholic and non-Catholic students are expected to grow, engage, and take their education seriously. It is a continuation of a legacy the community has long valued, now taking shape in a new setting. “Seeing the community improve makes it all worthwhile.”

For a rancher, cowboy, and bull rider, daily life depends on mobility. Mike Weaver has spent decades in the saddle, accustomed to rigorous physical demands until injuries gradually caught up with him. Climbing into a saddle became difficult. Weaver made his first appointment at StretchLab Boerne as a commitment to a good friend, a National Finals Bareback Rider who had become paralyzed after breaking his back. “Within the first thirty minutes,” Mike remembers, “I knew that what they were doing was helping me.”

In 2009, Weaver unknowingly broke his hip for the first time. He jumped off a trailer, felt the impact, but kept moving. At the time, he was riding bulls regularly, and injuries were part of the territory. Two months later, a bull rolled over him during a ride, sending him to the hospital, where a CT scan revealed that he had fractured his hip—again. The damage: a crescent-shaped chip off the socket. He recovered and kept working, but a few years later, a bucking horse brought another hard fall. Over the next decade, the joint gradually deteriorated, the repeated trauma developing into severe arthritis that progressively limited his movement.

The night before his first visit to StretchLab Boerne, Weaver filmed himself attempting to mount his horse. He could barely lift his left foot into the stirrup, and his right leg wouldn’t clear the cantle at the back of the saddle. The movement that had been routine and automatic throughout his lifetime became untenable.

Then, he recorded another video after his fourth session. This time, Weaver stepped up, swung his leg over, and rode off normally. “I’ve been going for about 12 weeks now. My hip is back to about 85% to where it was before I started going,” he says. “And it’s gotten progressively better every visit.” The change points to something often overlooked in traditional health and wellness routines: mobility as the foundation for everyday function.

Studio owner and operator Valerie Garrison understands the need for mobility in clients like Weaver. “He’s a rancher. He’s a cowboy,” she says. “He just wants to be able to put his leg over the horse, and he couldn’t because his hips were so tight.” Functional fitness, in this sense, centers on whether the body can perform the movements daily life requires. Valerie clarifies the gap in services: “A lot of people know how to get cardio. You know you’re supposed to go for a walk or run. How do you increase muscle mass? Work with a trainer, lift weights, and do conditioning. But what we do is the middle ground where we help people learn to stretch and work on their mobility, so when they do exercise, they are getting maximum range of motion.”

For StretchLab clients, the process begins with an assessment that evaluates current areas of restriction. From there, a structured program is developed, typically involving weekly one-on-one sessions paired with exercises to complete at home between visits. Sessions are hands-on, with practitioners guiding clients through assisted stretches designed to gradually increase mobility. Consistency is key; meaningful gains in range of motion tend to build week by week, allowing the body to relearn movements that may have become progressively limited.

For a bull rider like Weaver, the results brought the concept of functional fitness into sharp focus. After years of adapting his life around pain, he now moves with far less hesitation. He lifts one foot into the stirrup and swings the other easily over the saddle. He sleeps comfortably in bed again after five years in a recliner. He’s even doing a Spartan race this month. Weaver’s progress has been measured in the return of ordinary movements that make everyday life possible. For him, functional fitness means waking up rested, moving through the day without the constant negotiation of pain, crushing a goal, and getting back in the saddle.

Functional Fitness and Mobility

Mobility is the ability of joints and muscles to move freely through their full range of motion. When mobility decreases, everyday activities like tying shoes, climbing stairs, reaching overhead, and getting in and out of a car can become difficult. Why is this therapy more than just a "mouth guard" for grinding?

Many patients experience what we call “nocturnal parafunctional habits,” or excessive forces placed on their teeth and jaw subconsciously or during sleep. This tension stresses teeth, jaw joints, supporting tissues, and facial nerves.

Occlusal Guard Therapy (OGT) involves a highly customized appliance designed to align with your “Centric Relation.” This is the jaw’s most balanced, braced position; when reached, it effectively “turns off” overactive muscles and prevents trismus (painful muscle spasms). By relieving this constant pressure, we stop the damage and create an environment in which the jaw joint can begin to repair itself. Many patients even report relief from tinnitus (ringing in the ears) and balance issues.

What are some overlooked symptoms that suggest a need for guard therapy?

Beyond hypersensitive or fractured teeth, chronic morning headaches and neck stiffness are telltale signs of subconscious clenching. Most importantly, we see patients frustrated by deteriorating gum health despite good hygiene. In these cases, the sheer physical pressure of clenching is often the hidden culprit that’s accelerating bone and tooth loss.

Why is a professional guard better than a drugstore "boil-and-bite"?

A proper guard must be incredibly stable and precisely balanced. Research shows the oral system can detect changes as tiny as seven microns—a level of detail the human eye can barely see. If a guard isn’t adjusted to this microscopic tolerance, the brain never sends the signal to “turn off” the jaw muscles, and the destructive clenching cycle continues.

Generic or vacuum-formed guards simply cannot meet this standard of stability. Only a professionally adjusted, therapeutic guard can fully quiet muscle activity. Once that control is achieved, sleep cycles improve, allowing the body to rest more deeply and truly begin the repair process.

Byron Velvick has been around water so long it’s practically written into his genetic code. Before he was a household name on national television, he was just a kid in diapers with a fish in front of him or a three-year-old clutching his father’s fishing rods. "When my mom sent in all these pictures to The Bachelor, everything had to do with boats, the water, and my dad's fishing trips,” Velvick says with a chuckle. “So I guess it's kind of in my DNA since I was as far back as I could possibly remember."

Growing up in Southern California, Velvick was literally forged by the pros. While other kids were idolizing quarterbacks, Velvick lived a few streets over from a regional pro, Steve Oliver, who took him under his wing. "I met him in the neighborhood, and I went home and opened up my fishing magazines, and he was in them," Velvick recalls. "For me, that was like a kid who likes playing football, living down the street from Joe Montana or Peyton Manning." So by the time he was 16, when he was finally old enough to compete, Velvick traded the "figures I watched on television" for peers and competitors like Bill Dance, Jimmy Houston, and Roland Martin.

FINDING HOME IN THE HILL COUNTRY

So how does a California saltwater kid end up a fixture in Boerne, Texas? Like most things in Velvick’s life, it started with a lake and ended with a story. During his time hosting Bass Center on ESPN, the tour stopped at Lake Amistad. "We all came out and fell in love with the area, the Hill Country, and fell in love with Lake Amistad in particular," he says. He eventually bought a house, a hotel, and a restaurant there, where he met his daughter’s mother.

Eight years ago, he officially settled in Boerne. For Velvick, the Hill Country offers a reprieve from the big metropolises that overwork their nearby waters. "It's just such a beautiful place," he notes. "You don't have as many people beating the heck out of lakes, and they're beautiful. They have great fishing, and you can be kind of left alone a little bit."

When he isn’t traveling, you might find him playing around at Boerne Lake because it’s a "cool little lake" where he can just bang around with a trolling motor. He’s also a fan of Canyon Lake, which reminds him of the deep waters out West, and Choke Canyon,

where he once hauled in a bass weighing 13 pounds, 3 ounces, the biggest catch of his tournament career.

PRO TIPS FOR THE WEEKEND WARRIOR

If you’re heading out this June, Velvick has a few words of wisdom to keep you from looking like a total amateur. The biggest mistake he sees? Impatience. "One of the most common mistakes people make is fishing too fast," he explains. "A lot of times when reeling it in—swimbaits especially—people have a tendency to fish them too fast." Instead, fishers should take their time with the lures.

He also warns against the "dock talk" that often obsesses recreational anglers. "Most of those fish have already been caught, or they've been scared off by the amount of traffic," Velvick points out. "You’ve got to kind of follow your own path."

For the summer heat, his strategy is simple: beat the sun or wait for it to drop. "Mornings and evenings are key," he insists. "The middle of the day is a good time to go wakeboarding or jet skiing. Just have fun with your friends. But mornings and evenings are your sweet spot."

THE NEXT FRONTIER: INTERACTIVE FISHING

Velvick has never been one to stay stagnant. While his retirement plan eventually involves guiding for bluefin tuna around Catalina Island, his current focus is a tech-savvy pivot into streaming. Velvick has recently launched a regular broadcast of live, interactive fishing sessions from local lakes. Unlike the "fly on the gunwale" tournament streams, Velvick’s show is designed for engagement. "We're going to be actually live-streaming, and including a moderator in the boat so we'll be able to engage with the audience," he explains. It’s essentially a free, three-hour "glorified guide trip" for people stuck in their office cubicles on a Wednesday afternoon. "I'm able to not be focused on a tournament, but be focused on the audience and interacting," Velvick says. Whether he’s explaining his lure choice or just catching a monster on camera, it’s the next evolution for a man who has spent his life proving that fishing is as much about the connection as it is the catch— when you’re there for the right reasons.

Q: YOU JOINED THE AIR FORCE RIGHT OUT OF COMMUNITY COLLEGE. WHAT WERE YOU ACTUALLY RUNNING TOWARD?

A: “There was something in me that was saying: I’m not living up to my full potential. I was being a follower. My uncle said, ‘What’s going to make you become an adult the fastest?’ I said, obviously, the military. The Air Force broadened my thought process more than anything. We’re so caught up in our own perception — when you learn to understand different people’s perspectives, it adds to you in so many ways.”

Nice? Is Whiskey On Ice

THE BEST WAY TO ENJOY YOUR WHISKEY: ON THE ROCKS, ROCK, NEAT, OR WITH WATER

In speaking to Whiskey lovers (most happen to be men, but do accept me in their brethren as a fellow enthusiast, writer, and educator), I’ve learned a great many opinions on how to drink Whiskey. Specifically, preferences on adding water and ice vary greatly.

A brand ambassador that I had the privilege of listening to recently said the obvious: both dilution and temperature change when you add ice, so if you are going to add something, a little water is best. I personally prefer to use a water dropper, so I can add one drop at a time until I get to the desired taste.

HERE ARE THE DIFFERENCES:

Rocks: Provides the highest rate of dilution as a lot of ice melts quickly. If you are drinking a barrel proof Whiskey, it kind of defeats the purpose as the distiller didn’t add water as they do in every other type of finished Whiskey.

On the Rock: The single rock, cube, or sphere is the slowest to melt and thought to be the most aesthetic. It’s nice if you want to stretch out your tasting. I often order on the rock if I want my drink to last longer.

Neat: This is the way single malt Scotch is served at a tasting event, in a branded Glencairn or Neat glass so that proper nosing for aromas can be achieved - and a dram of Scotch, smaller than an ounce, fits in them perfectly.

Water: As I mentioned above, quoting the brand ambassador, a little water is better for a fine Whiskey over any kind of ice. Often, if ordered with water, the water is served in a separate vessel on the side so you can add in as much as you want.

Quoting another expert on the subject, Richard Paterson of The Dalmore famously and enthusiastically demonstrates in his Scotch classes how to drink single malt Scotch Whiskey: Paterson fills a lowball glass to the rim with ice, adds Scotch and then ceremoniously throws it over his shoulder onto the carpet of the classroom – because that much ice makes the drink worthless. One more quote, never “add green tea or milk to Whiskey. You can add a little water, but not a lot of ice.”

Ultimately, the reason we add ice can be for aesthetics, to stretch out the time spent on one glass, for cooling, and for dilution. However, the number one reason enthusiasts add water is … drumroll please … because adding a little water actually opens up a Whiskey to show more aromas and flavors.
