LIFESTYLE LETTER
One Step At a Time “All big things come from small beginnings.” - James Clear, Atomic Habits Ah, the New Year. It’s a time of big ideas and big dreams. But if you’re anything like me, all the big plans and big resolutions can just feel like big pressure. Eat less, drink less, exercise more… do better at school, at work, in life, in everything! It can all get overwhelming really fast. But what if this year, we focused less on the big and more on the small? In his book Atomic Habits, James Clear talks about how it's the little, everyday decisions we make that shape the course of our lives (“Turn New Pages,” p. 68). I think this is a great concept for us to keep in mind as we start 2024, so we’ve put together an issue that will hopefully help you on your journey. One small step at a time is literally how Boerne adventurer Ikuko Groesback has traveled the world. Her inspiring story (“Finding Life On the Trails,” p. 32) proves that you don’t have to go fast to go far. You can start your trek toward change by taking a few steps of your own out in nature at one of the beautiful state parks around us (“Natural Reset,” p. 72). They’re local and accessible, and the time you spend there can give you the recharge you need. Similarly, there are a host of small steps we can take to make a huge, positive difference in the mental health of the kids and teens in our lives (“The Healthy, Wonderful Years,” p. 58). And could your at-home menu use a little reimagining in the new year? We’ve got some delicious, healthy, surprisingly easy Koreaninspired recipes to help you break out of your flavor rut and into a fun, creative approach to food (“Sweet, Spicy, Savory, p. 40). No matter what lies ahead or where this year takes you, we hope it moves you closer to the best version of yourself. So here’s to 2024: may it be our best year yet! Happy New Year!

Beautiful new You RE JUVENATED, REFRESHED, AND RE ADY FOR 2024
Self-care is a balance between physical and mental, and the new year consistently reminds us of the importance of both. But when you’re starting to care for your physical side, it can be difficult to know where to begin. So start by caring for your outermost layer: your skin. Aesthetic nurse Melanie Fulton-Ruiz of La Vraie Beauté says to focus on finding products that make your skin healthy and resilient, able to withstand the damaging effects it encounters every day. Here are four skincare essentials that she recommends to give you beautiful skin all year long. Fulton-Ruiz starts off strong with the Plated SkinScience DAILY Serum, which she says is “designed for the most challenging skin needs.” This concentrated serum builds collagen and elastin and works to diminish the appearance of redness, brown spots, and wrinkles. Her second recommendation focused on the neck and jawline. Revision Skincare’s Nectifirm is a great product that helps make for a firmer jawline. Recommendations three and four are a combo of sorts: using Environ Vitamin A, C, & E Body Oil with Environ Body Essentia Derma-Lac Lotion are one-two punch of hydration for rough and dry skin. Ruiz says, “These two products in combination are also excellent for dry rough skin on the body including feet, elbows, and knees.” lvbsa.com | 210-687-1110

tiles and brass hardware establishes a classic, upscale aesthetic in this design. To introduce an element of surprise, a rich blue mosaic tile graces both walls, seamlessly matching the cabinet color. This pop of color adds vibrancy and personality to the space. White river rocks scattered on the tub floor contribute to the organic, relaxing atmosphere, grounding the room in nature's tranquility. Organic, hand-crafted candles, soaps, and bath salts from Rosewood Maison complement the look and add a luxurious, peaceful aroma to the space. “If you want to stay healthy physically, mentally, spiritually... that is the best reason to hike.” Mark Twain once observed, "Age is an issue of mind over matter. If you don't mind, it doesn't matter." Had he known Boerne resident and hiking enthusiast Ikuko Groesbeck, it wouldn't be a stretch to say Mr. Twain had her in mind when he made that comment because age has certainly not slowed her down. At 81 years old, Groesbeck has been a committed hiker for decades. What started as a search for moderate activity through walking has become almost as critical to her health and wellness as breathing and eating. Groesback started walking with a friend after her divorce nearly thirty years ago. They wanted to mix things up one day and ventured to nearby Friedrich Wilderness Park for a hike. The change of pace captivated her immediately. At first, she hiked
on the weekends, but after retirement, she also started to hike on weekdays. "Since I hike in areas with a more natural landscape, I like the fresh air,” said Groesbeck. "Hiking up and down, rather than on level surfaces like streets, also builds my strength. And, when I hike with others, there is a social piece that I enjoy." Not long after she started trekking, Groesbeck joined an online, all-ages community of hikers. But she found the group's younger members tended to move quite a bit faster, and it was challenging for the older hikers to keep up. "In 2015, I hiked in Rocky Mountain National Park,” Groesbeck explained, “and met many senior citizens who were local to the area and about my age. That inspired me to join a hiking group in San Antonio, but they are younger and walk faster, and it was hard to keep up with their pace." CONTINUED >

So she started a group for hikers exclusively for those 60 or older as a result of her experience in Colorado. What began with only a few people has blossomed into more than 70 regulars who can participate in four hiking levels. "We offer a three-mile beginners hike, a three-and-a-half-mile hike with steeper climbs that focuses on cardio, a slow five-mile hike [which she leads], and a five-mile hike that aims for a two mile-per-hour pace." Groesbeck will hike alone when others aren't up for it, and she regularly treks three to five days each week year-round, cold or hot. She also finds that some might think they are up for the task but will find they still need to prepare for a next-level activity. "I had a lady who regularly walked six miles and thought she was in good shape," Groesbeck recounts. "She came to a 3-mile hike and gave up soon after we started. She said she couldn't do it and gave up. I find that runners have more strength and stamina to hike." Groesbeck also practices Tai Chi, a Chinese martial art marked by slow, deliberate movements to keep her in good condition for trekking. "Tai Chi is especially good for older
adults," she notes. "The biggest benefit is helping me with my balance, which is important for hiking." In addition to her local hiking adventures, Groesbeck also travels with Road Scholar. The nonprofit started in 1975 offering group trips primarily for adults 50 and older. They offer trips throughout the U.S., Canada, and to more than 150 countries across the globe. While not focused exclusively on hiking trips, many of Road Scholar's excursions include hiking options. Groesbeck has taken non-hiking trips to destinations such as Sedona, Key West, and, most recently, a music-focused adventure to Nashville and Memphis. Her first trip with Road Scholar was in 2018 to Superstition Mountain and the Sonoran Desert in Arizona. Since then, she has also gone on guided tours to Bryce, Zion, the Grand Canyon, Yosemite, and Joshua Tree National Parks, the Southern Appalachian trails and Blue Ridge Mountains of North Carolina, the Matterhorn region of Switzerland, and the Mont Blanc regions of Italy and France. "One of the things I like about Road Scholar is the hiking guides are also CONTINUED >

Road Scholar has been a leader in nonprofit, educational travel for adults since 1975. Marty Knowlton and David Bianco, then staff members of the University of New Hampshire, shared a common vision for bringing the youth hostel experience of their day to an adult clientele. What started as a "conversation between friends" has grown into a global, nonprofit program offering older adults opportunities to learn about the world around them. With thousands of trips for up to 100,000 travelers every year, Road Scholar has something for every taste. And while the original "hostel experience for adults" model has transitioned into more comfortable spaces, they remain committed to building community and camaraderie among all who join them. naturalists in U.S. trips. They have lots of knowledge about flora, fauna, geology, and other fields. They share their expertise by giving us trailside talks." Groesbeck continued, "Sometimes, Road Scholar invites local wildlife rescue centers. They bring real wild animals and birds they rescued and give us presentations after dinners." Her enthusiasm for the organization is evident: "I keep traveling with Road Scholar because they take care of us very well, as they give us opportunities to learn. Also, they make arrangements to visit exciting places we can not do on our own." When pressed to name a favorite trip, Groesbeck responds diplomatically, "I have a hard time answering because I choose where I want to go, and I love all of them." For Groesbeck, hiking is not only a physical endeavor but also one that affects the mind and spirit. "For your health," she explains, "if you want to stay healthy physically, mentally, spiritually, for a long time, that is the best reason to hike. That is my reason." But her reason may go deeper still. Her favorite quote and personal mantra is from Sir Edmund Hillary: "It's not the mountain we conquer, but ourselves."

Here you’ll find a refreshing cucumber salad, a spicy cold noodle side, an elevated take on Korean bibimbap, and a bowlful of colorful, tropical fruits for a sweet and simple dessert. But remember, the secret ingredient is always the delicious sauces. My versions of these Korean sauces are soy- and gluten-free and sweetened with honey. You can easily substitute to make the rice and noodle dishes grain-free too. Dig into a tasty and healthy New Year!

directions 1. Toss all ingredients into a bowl and serve! Adding some Asian zing to your meals this year is a great way to ensure balanced meals and — as you can see — it can be a lot easier than you might think. And they’re also highly versatile. You can mix and match proteins, add in your favorite veggies, and even come up with a sauce of your own. And if there are any food sensitivities or allergies you have to consider, it’s easy to swap in cauliflower rice or go with “zoodles” (spiralized zucchini) or sweet potato glass noodles to cut the grain from your meal. So get creative and resolve to have fun and feel great about your food this year!

CUTTING-EDGE TECHNOLOGY WITH
a patient-centered approach
ADVANCES IN DENTAL TOOLS AND TECHNIQUES OFFER ENHANCED CARE ARTICLE BY CAROLINE HEIBERG | PHOTOGRAPHY BY JESSI EDISON

H OU SE CA LL | LO CAL SE RVICE S
Maintaining optimal dental health is fundamental to overall well-being, and advancements in dental technology are playing a crucial role in transforming the field of oral care. As technology continues to evolve, so does the ability to diagnose, treat, and prevent dental issues. Dr. Kurt Mackie continuously explores and employs new technological advancements in his burgeoning Boerne office to help people keep their mouths healthy. Most adults have had years of patchwork dentistry. In our mobile and fast-paced society, dentists try to fix problems instead of taking a comprehensive, long-term approach. Patients that Dr. Mackie sees are often seeking solutions after years of frustration. Comprehensive treatments involve engineering a bite to an anatomically stable position. He creates bite guards from an anatomical point of view, creating a bite that is nondestructive and comfortable. This method has a higher clinical success rate than other bite guards because it takes into account the position of bones, muscles, and other tissues and provides a long-term solution. Bite guards stop muscle activity and curb the cycle of clenching or grinding without the need for major surgery. When it comes to restorative dentistry, advancements in materials and techniques are reshaping the way dental procedures are performed. Computer-Aided Design/Computer-Aided Manufacturing (CAD/CAM) technology has streamlined processes. With the help of digital impressions, dental restorations can be created with exceptional precision, improving the overall quality of restorations. The quality of scanners has advanced to such a degree that dentists can scan arches instead of taking impressions. Another noteworthy development is the use of laser technology in various dental procedures. Lasers offer a minimally invasive alternative for tasks such as cavity repair, gum surgery, and teeth whitening. Laser dentistry minimizes CONTINUED >

Diode lasers are utilized to disinfect teeth and heal wounds. This technology represents a shift in the way certain dental procedures are conducted, offering patients a more comfortable and efficient experience. This embrace of proven new technologies and patient-centered treatments has characterized Dr. Mackie throughout his career. He graduated from the University of Nebraska in 1983 before beginning a career as a commissioned officer in the public health service. After running a health clinic for several years, he began his own practice in the Rio Grande Valley. The practice prioritized comprehensive dentistry and included an oral surgeon and an orthodontist. In 2015, Dr. Mackie relocated full-time to the Hill Country. At a standard dentist, patients get their teeth cleaned before having an evaluation from the dentist. However, Dr. Mackie begins patient care with a comprehensive evaluation where they have plenty of time to discuss questions, problems, or concerns. In his relationship-based practice, patients are treated holistically. In addition to comprehensive dentistry, Dr. Mackie prioritizes patient education and

mentorship. At Boerne and Champion High Schools, a practicum program gives students an opportunity to experience various fields. Students who show interest in medical, dentistry, pharmacy, or nursing careers can take an exam and interview to be accepted into the practicum. Interns at Dr. Mackie’s office are educated about infection control, room setup, and preparation, and they even sit in on treatments and consults. Students who demonstrate particular skill go on to perform chairside assistance. Through the program, several of Dr. Mackie’s interns are training to be the next generation of dental health providers. The marriage of dental health and technological innovation is reshaping the landscape of oral care. Dr. Mackie’s utilization of new tools offers local residents a diverse range of options for a holistic, person-centered approach to dentistry. From advanced diagnostic systems to cutting-edge techniques, technology is enhancing every facet of dentistry. As these innovations continue to evolve, the future of dental health promises more personalized, efficient, and accessible care for individuals around the globe. mackiedental.com | 830-331-5456

We all know that an unhealthy or unsafe environment can affect our well-being. But what if that goes for the security of your technology too? For business owners like me at Emergentz Technologies, we manage external threats with things like security systems and door locks. But the one thing that isn’t always a priority is what we let into our business or home through that always-open window called a computer.

Computers and the internet are everywhere at home and at work. That little box on your desk can cost you large amounts of money if not taken seriously. A business can be tremendously handicapped or worse by just clicking a bad email link. There are now so many different types of cyber-attacks via the Internet, there are too many to list. And on top of this, some countries even sponsor these criminal enterprises that target businesses and wealthy individuals. These bad actors are intelligent, trained, and highly productive, and they know how to capitalize on your weaknesses. If you weren’t stressed prior to reading this, you probably are now. Sorry about that, but these threats really exist and can cause lots of personal and business issues. Time, money, and loss of data are the most prevalent problems thanks to schemes like ransomware, phishing, spyware, and malware. This doesn’t even include local computer issues like computer worms, viruses, and those wonderful trojans. We think this will never happen to us, but it only takes one misstep. Cyber security is very similar to physical security: it’s not needed until it is. CONTINUED >

Small and medium businesses (SMBs) are targeted in nearly 43% of cyber-attacks, but only 14% are equipped to handle such attacks. Over 90% of the successful attacks are caused by human error that either directly compromised the business or left a “window” open for the hackers to climb through. These breaches required SMBs to spend anywhere between $826 on the low end to upwards of $650,000, per incident, to correct. The average cost is somewhere around $50,000 and usually, the business loses data, customers, and/or employees due to the breach. Not to mention that while a bad actor could return your account access or data after payment, there are no guarantees and they may just disappear or demand more after handing over the money. Year after year, these attacks are not slowing down — they’re multiplying. Circling back to similarities between personal health and technology health, both are important and somewhat dependent on each other. Stress on our bodies can be extremely harmful and can cause many other issues within our personal and business lives. If you are blissfully unaware sitting back with rose-colored glasses thinking that this will never happen to you, you may be right. But if you aren’t, these issues could put you out of business and give you long-term health problems to deal with too.

EXP E RT H E LP | EDUCATION
Just like the human body, computers can catch viruses and worms, which have the propensity to cause the same symptoms and issues. Anti-virus software, or AV, has the ability to look for these “infections” and quarantine them. They work like penicillin or vaccines: AV targets locations where these pests attack and put them into a container that renders them harmless, or it catches them when they enter the system and shuts them down before they cause any damage. The light at the end of the tunnel is really quite simple and not overly expensive. A quality provider should be able to put together a cyber-security solution for well under $1 a day per user. This solution should include an anti-virus for the computer, a monitoring solution for the anti-virus and general health for the computer, email security, and an internet safety application. All are available for your business and your home. So as we start this new year thinking about healthy habits for our body, let’s remember that we need to keep our technology safe to keep our homes and businesses healthy too. emergentztech.com | 210-399-2021

The Healthy, Wonderful Years HELP YOUR KIDS BE THEIR BEST SELVES THIS YEAR
The new year is a transformative time, but that fact may be forgotten when it comes to those in their early years. With more than 20 years of working with kids, counselor Rachel Franco is no stranger to mental health or the minds of Boerne youth as the Lead Counselor for BISD middle schools and the Lead Counselor at Boerne Middle School North. Franco says that mental health care is of the essence at all stages of life, especially in those early years. So here are some key mental health practices specifically for kids and teens that can be carried into 2024. CONNECT SOCIALLY Franco says it’s critical for kids to simply get involved in something they love doing. “Some kids are into sports, some kids are into arts,” she explains. “Something they’re passionate about where they’re also around other kids their age and interacting is very important.” Franco adds that many poor mental health conditions are related to isolation, so getting involved is key. LIVE HEALTHFULLY The importance of a healthy body undoubtedly correlates to a healthy mind. Franco emphasizes the importance of kids going to the park, taking a walk, and eating well, especially when so much of their time is spent inside. “I think we get really bogged down and we work a lot indoors and so getting outside and really getting that fresh air and eating well is a huge part of practicing mental health,” Franco explains. KEEP A ROUTINE For both kids and teens, having a steady routine is important in maintaining mental wellness. In fact, Franco says this is one of the first things she asks her students: “What is your routine like when you go home?” She says

routine is very important for helping kids feel safe and that the structure can help them feel secure. Franco said that her own children practice gratitude journaling as a great activity for kids and teens to build a routine around. PRIORITIZE DOWN TIME Franco stresses the value of kids simply doing nothing. “Kids need to be bored sometimes,” she explains, “because when kids are bored that is when they really start to establish conflict skills, whether it’s with siblings or friends.” It’s during this downtime that kids get a chance to work on these social skills and also create for themselves. “Boredom sometimes is a chance for kids to be creative,” so Franco says it’s helpful to ensure kids’ schedules include unstructured time. MODEL MENTAL HEALTH A critical detail that Franco emphasizes is the strong connection between kids’ mental health and their parents. She notes that when parents model good mental health behaviors, kids will feel more inclined to follow. “I think teens and kids are more likely to open up and feel more comfortable with you if you as a parent are opening up to them,” says Franco. To help, she says to embrace the simple moments with them: “Turn the music off in the car and just talk.” PRACTICE IN COMMUNITY Incorporate “Mindful Monday” into your family’s routine, where you dedicate your Monday to concentrating on mental health. Lead the family on a guided meditation or do some yoga. To get outdoors, explore the trails at Cibolo Nature Center and experience nature with the family.

Sauté di Cozze ARTICLE AND PHOTOGRAPHY BY RAFFAELLE & DAHLIA MARTINI
Martini & Company’s Signature Steamed Mussels for a Delicious New Year Truly the taste of an Italian New Year’s Eve, this recipe is a personal revisitation of a celebratory dish Raffaele’s mother made each year in Cortona, Tuscany. It’s no surprise then that it’s now among the most popular choices on our menu! Raffaele serves this zesty and succulent dish with fresh focaccia bread, and it’s especially delightful when paired with a crisp Vermentino. Buon anno!
ingredients: (serves 4) • 40 mussels • 3 tbs extra virgin olive oil • 2 cloves garlic, minced • ¼ cup parsley, finely chopped • Pinch red pepper flakes • Salt and pepper • 1 cup white wine • Croutons for plating
directions: Step 1. In a large stockpot, heat the olive oil. Once oil is hot, add garlic, red pepper, and black pepper. After 30 seconds (before garlic burns), drop in mussels and half of the chopped parsley. Mix together. Step 2. When mussels start opening, add white wine and a pinch of salt. Lower heat to medium. Stir every 30 seconds, and cook until alcohol evaporates. Step 3. In each dish, add handful of croutons, 10 mussels, and a ladle of stock. Garnish with remaining parsley and enjoy! martiniandcompany.com 830-428-6090
