Dive Into Summer
As the days grow longer and the weather gets warmer, I find myself eagerly anticipating the arrival of summer. There's just something about this season that brings about a sense of excitement and adventure. Sure, fall has my favorite flavors and scents, winter has its cozy charms, and I love the beauty of spring. But when the summer solstice rolls around, I’m more than ready for the long, languid days sitting by the pool or floating on a boat.
The pages in our Summer Fun issue will help you make the most of this season in Boerne. And even if summer doesn't mean three months of summer vacation anymore (because school schedules have changed) we can still look forward to an adventure by crossing things off our ultimate summer bucket list (check the table of contents for ours!) and curling up with a new favorite beach read. (P.S. Teachers, you deserve this much-needed break!)
Sometimes, I wish there were more days to sleep in and lounge by the pool than there are, but there are just so many fun things to do. BBQs in the backyard, live outdoor music, kayaking in Boerne Lake, or building castles at the Port A beach are just a few ways my family enjoys summer. How about you?

The Texas Hill Country is known for its rich culinary traditions, and one of the most revered traditions is grilling. The art of preparing meat over an open flame has been passed down through generations and refined by home cooks and professionals alike for hundreds of years. The result? A unique and flavorful style of cooking featuring charred-but-fresh flavors and tender, juicy meats. The sizzling sounds and mouth-watering aromas of the grill are sure to tantalize the taste buds and make any summer gathering a hit. So let’s grab the tongs, fire up the grill, and get cooking!
Honey and Pepper Jelly Chicken Sandwich
This is a perfect combination of sweet and spicy flavors. The chicken is juicy and tender, coated in a glaze made from honey and pepper jelly. The sandwich is then topped with candied jalapenos and red onion, adding a sweet and crunchy texture. The cream cheese adds a creamy and tangy touch that balances the heat. This sandwich is a delicious and unique option for lunch or dinner.
INGREDIENTS
• 4 boneless, skinless chicken breasts

• 1/4 cup honey

Salad with Cotija Cheese

• 4 ears of corn, husks removed

Grilled Pineapple Margarita
A unique and delicious twist on the classic cocktail that’s perfect for summer. To make this drink, chunks of fresh pineapple are grilled until caramelized and then blended with tequila, lime juice, and triple sec. The result is a sweet and smoky flavor that perfectly complements the tangy lime and tequila. Garnish with grilled pineapple wedges and a sprinkle of chili powder for an extra kick.

• 1 pineapple, peeled and sliced into rounds
• 1/4 cup lime juice
• 1/4 cup tequila
• 2 tablespoons triple sec
• 1 tablespoon honey
• Salt for rimming glasses
DIRECTIONS
1.Heat your grill to medium-high heat.
2.Grill pineapple slices until lightly charred, about 2-3 minutes per side.
3. Remove from grill and dice.
4. In a blender, combine diced pineapple, lime juice, tequila, triple sec, and honey. Blend until smooth.
5.Rim glasses with salt, if desired, and pour the margarita over ice.

INGREDIENTS
• 4 ripe peaches, halved and pitted
• 2 tablespoons brown sugar
• 1/2 teaspoon cinnamon
• Vanilla ice cream
• Caramel sauce
• Chopped pecans
DIRECTIONS
1. Heat grill to medium-high heat.
2. In a small bowl, mix together brown sugar and cinnamon.
3. Sprinkle the sugar mixture over the cut sides of the peaches.
4. Grill peaches cut-side down for 3-4 minutes until lightly charred
5. Serve peach halves with a scoop of vanilla ice cream, a drizzle of caramel sauce, and a sprinkle of chopped pecans.

Jared’s passion for cooking began in the Hill Country, working in various restaurants around Boerne. Seeking adventure, he took off to Colorado to live in the mountains and to work at Rex’s family of restaurants and French bistro Bon Vivant nestled 11,000 feet above sea level. He also traveled to Vermont to hone his catering skills at Basin Harbor Club, where he contributed to numerous events and weddings, including one with over 900 guests.

Five Local Veterans Reflect On Their Lives and Love of Country
On Independence Day, we celebrate those who served. Five local heroes who represent different branches and specialized in different trades shared their stories of military careers that spanned the globe and the years. They are brought together today at Franklin Park Boerne where they are united by shared virtues, service, dedication, and love of country.
HONORING OUR HEROES ANN SCARDINA, USAF
Ann Scardina served in the U.S. Air Force as a dedicated and passionate operating room nurse for nearly twenty years. She teases that she chose the Air Force because they have the best uniforms; there is nothing quite like the sharp blue, especially compared to that “ole’ Army green.” It was a work-hard, play-hard atmosphere where Scardina and her colleagues were passionate about taking care of the troops. “The gals who didn’t do it didn’t know what they were missing!” Scardina’s joy for her life’s work is equally as rare as it is infectious, “I wouldn’t have given up the Air Force for anything!”

CHARLES MCEWEN, USN
Charles “Mack” McEwen served in the Navy from 1943 to 1946. Simultaneously studying and training, McEwen entered the V-12 program at the University of Pennsylvania, a course designed to meet the demand for commissioned officers during World War II. Upon completion, McEwen became a Navy line officer in 1944, sailing aboard the destroyer escort Edward Allen. This small, lightweight surface ship could cruise at high speeds with a smaller crew. The ship followed a “picket line” route, beginning in Miami and sailing south in the Atlantic creating a protective border. McEwen’s role was in the intelligence command center. His daily work required quick, advanced trigonometry skills that enabled the Edward Allen to reload and relaunch every 20 seconds. The loss of McEwen’s older brother in the war prompted him to return to civilian life. He continued his studies at Penn after the war, where just rooms away, the world’s first general-purpose computer was developed, so McEwen followed the Navy with a long career at IBM.

CLYDE ALLEN, USA
Clyde Allen is a highly animated and comedic veteran who served in the U.S. Army from 1956 to 1958. Allen was a draftee and his enlistment began immediately after school. With a “diploma in one hand and induction in the other,” he spent time in Heidelberg, Germany. He and his wife were married in the brief days before leaving. The years Allen served as an Order of Battle Analyst in the intelligence division were marked by a time of relative peace and they were able to travel Europe in their car during their time abroad, what he calls “a military-style honeymoon.” His primary responsibility was to keep track of enemy positions and to be aware of specific movements. He recalls the intelligence division used a pinboard to mark locations relayed by spies. After the Army, Allen was dedicated to a family business in Kingsville. He has since had three daughters and continues to make everyone around him laugh, including his wife, Judy.

B.J. BURTON, USN
B.J. Burton began his experience in the U.S. Navy in Corpus Christi in 1954. As a hospital corpsman, Burton sailed aboard the heavy cruiser U.S.S. Rochester up the Pacific coast of California to San Francisco Bay. In the Bay Area, he worked in a naval hospital as one of the few who could operate a Smith typewriter. During his service, he worked with a four-star general. As a civilian home in Texas, Burton enjoyed his career with the State Board of Insurance.

RICHARD FINK, USAF
Richard “Rick” Fink served in the Air Force from 1955 to 1986 through the Cold War. “We call him ‘The Colonel’!” his friend “Mack” calls out (more on him in a minute). Fink studied at Union College and received an MBA from George Washington University. He was promoted to colonel in 1978, working as Chief of the Morale, Welfare, and Recreation program for over 100 bases. In this role, he established programs to keep servicemembers at peak performance and made multiple visits to the Pentagon. Settling in San Antonio after military retirement, Fink earned an additional master’s degree in gerontology and spent ten years as an administrator for The Forum at Lincoln Heights, bringing a memory care program to their facility. Multiple family members followed in his footsteps of military service.

A Tour Through Local Music Venues in Boerne & the Hill Country

Driving down Main Street in Boerne on any Wednesday, Friday, or Saturday evening almost guarantees you will be serenaded by live music. It may still be under the radar to those music aficionados in Austin, but Boerne and the surrounding Texas Hill Country are actually home to many spectacular venues offering a taste of everything from country to folk to classic rock. In this array of atmospheres and music genres, there are multitudes of artists and venues to keep the feet of both residents and visitors tapping. But what makes a music venue great? According to Texas country sage Corey Morrow, it’s simple: "Great stage, great sound, great
staff, and crowd interaction." Well, Mr. Morrow, you’re welcome to come try out Boerne any time.
Throughout the week, you can find live music at any of sixteen different venues in town and in the surrounding Hill Country. Here’s a tour through some of the Boerne-area venues that check all of Morrow’s boxes.

A block south in downtown Boerne, Free Roam Brewery hosts live music at their kid-and-dog-friendly “Biergarten” every Wednesday, Friday, and Saturday evening using an old flatbed truck as a stage. Jeremy Affeldt, one of Free Roam’s owners, said he wanted to make sure to offer live music because of the people. “I think it’s important because it offers community. And music hits people in different ways. It can be the same song but you could have different feelings. But in the end, it’s all about community and togetherness and music. I believe it brings people together.” Tusculum Brewing Company makes its home in of the oldest buildings in Boerne. Opened in 1911, the H.O. Adler Building was once home to Bergmann Lumber Company. Today, you’ll find freshly-brewed beer and great tunes every Friday and Saturday evening. Sometimes, musical artists are hosted inside the beautifully renovated interior; others, the bands and fans cut it up in the back barn area where the lumber was once stored.
For an elevated but no less historic experience, you’ll find it at Salvador Dobbs. Situated on beautiful River Road, this adults-only venue has a lovely patio with swings, a fire pit, and cornhole to pass the time between sets. Owner Veronica
Brown knew it was vital to have live music as part of the atmosphere she wanted to create. “To me, it was very important to set up a venue with live music where you could enjoy the music,” Brown explains. “A lot of bars add music later, it’s a second thought. I created Salvador Dobbs with a stage from the initial plan. I chose the section of the bar with the highest ceilings for the best sound and seating arrangement. It’s important to have live music to involve the guests and to share experiences that you can’t have without live music.”
Cibolo Creek Brewing Company boasts another family-friendly outdoor music space. Tunes can be heard on Saturday nights and Sunday afternoons rising from their laid-back backyard stage. They offer a relaxed, patio atmosphere and a full menu that makes you want to stay awhile.
Feel like taking a relaxing drive out of town? There are plenty of live music options just outside Boerne too. The Roundup near Bergheim, hosts musicians in their large outdoor stages most Friday and Saturday evenings. Even more recognized artists make the drive like REO Speedwagon, The Spazmatics, and The Josh Abbot Band.
A short drive up I-10 to Comfort will put you in of the most beautiful music venues nearby, Singing Water Vineyards. With breathtaking views, great wine, and food options, their space is a relaxing place to spend the weekend afternoon relaxing while listening to talented local artists. Nestled along the Guadalupe River in Kerrville, Texas lies an adventure everyone should add to their summer bucket list. Located at the Knapp Boat Dock, you will find Hill Country River Rat. Owner, Captain James Wright, has created a one-of-a-kind pedal and electric solar boat to cruise down the Guadalupe River. You’ll climb aboard a 12-passenger pedal boat with your best pals and the fun will just be beginning. This is an experience you won’t want to miss.
You’ve probably seen the cycling pub crawls go through bustling downtown cities, stopping at the hippest bars, grabbing a drink and hopping back on to pedal to the next location. But imagine that taking place on a boat and not having to hop off, while also plunging to cool off in the refreshing Guadalupe River. This was Wright’s inspiration behind the floating social cruise. You’ll embark on a two-hour cruise down the river in a boat powered by you. But don’t worry, this isn’t a workout in the least. You’re encouraged to bring drinks, food, music for the speakers provided, tubes for floating and most importantly, your party hat. This is the best way you’ll spend your time for any event. Captain Wright has an interesting and inspiring story of how he got this pedal boat on the Guadalupe. In 2017, he was working on purchasing three pedal boats in St. John’s. That’s when Hurricane Irma hit the island and he quickly decided against the idea. It was much too risky and costly, but he still wanted to see this concept come to life. While sitting at a restaurant overlooking the Guadalupe, he had a thought. He noticed a particular portion of the river was not being used and quickly began creating and building his first pedal boat. This boat took him two years to construct. Getting the boats to pass through the city council brought another challenge, but a fun cruise on the river in the captain's new boat changed their minds. They were sold by one entertaining trip on the water. In April 2022 Hill Country River Rats' first cruise took place. Wright’s main goal is that every person that enters his boat has a fun-filled time, and he definitely delivers. His heart for this company and the people that venture out for a ride shows through his attention to detail and kind nature.
