I don’t know about you, but this time of year I am always torn. I find myself torn between resisting the commercialization of another greeting card holiday and indulging in all the sweet excuses to enjoy the season. To do a Valentine’s Day date out or enjoy a cozy night at home? To buy a card or just say a kind word? I usually land somewhere a little in between. We’ll each arrive at different answers based on our preferences and personalities, but what we hold in common is an opportunity to make sure those around us know we love them. And regardless of how you choose to celebrate, we hope the pages of this month’s magazine will help you do just that as we celebrate and highlight what’s to love in your local community. This February, we hope you’ll be inspired to take a moment to come together with the people in your life. The ones in your home and on your street. In your neighborhood and your community. “Love local” means your local businesses, those in your community - but it also means loving what is near. Those under your own roof included. So grab a coffee at The Seed and head home for a game night with the family. Or snag a bottle of wine from Total Wine & More and some cheese from Gourmetphile and indulge on a movie night in. We’ve always believed what we can do together is so much more than what we can do apart. And we continue to see that demonstrated through the many stories told in these pages month after month. Tagliatelle al Cioccolato (Chocolate Pasta with Mushrooms and Rosemary) Source: Food52 Instead of heading out to a crowded restaurant on Valentine’s Day, try something fun and new like making pasta together. Make it extra romantic by incorporating chocolate.

FOR THE PASTA DOUGH:

• 1 3/4 cups all-purpose flour • 1/4 cup cocoa powder, plus more for dusting • 2 large eggs • 1/2 teaspoon salt • 1 tablespoon extra-virgin olive oil • Water, as needed

2 tablespoons butter 1/2 pound mixed wild mushrooms 1/2 cup heavy cream Splash of white wine 1 tablespoon minced fresh rosemary

DIRECTIONS TO MAKE THE PASTA:

• Whisk together the flour, cocoa powder, and salt. • Make a well in the middle of the dry ingredients and add the eggs and olive oil. Stir the wet ingredients in with a fork until it starts to come together, then turn it out onto a floured surface and switch to kneading with your hands.

• Knead until the dough comes together—if it’s too dry, add water, one tablespoon at a time, until the dough is elastic and easy to knead (but not sticky). • Place the dough in a large bowl, cover, and let rest at room temperature for 30 minutes. • After resting, knead the dough a few more times, then roll it out and cut it into thin strips. You can either roll it out thinly by hand and cut with a sharp knife or pizza cutter, or use a pasta machine (or pasta attachment to a stand mixer). • As you slice the pasta, transfer it to a baking sheet and dust it lightly with cocoa powder to keep it from sticking. • To cook the pasta, bring a large pot of salted water to boil. Cook for about 2 minutes, until just shy of al dente. Drain the pasta, reserving 1/2 cup of the pasta cooking water, and set aside.

DIRECTIONS TO MAKE THE SAUCE:

• Melt the butter in a large skillet over medium-high heat. Add the mushrooms with a pinch of salt and pepper and cook, stirring, until they star to turn golden on the edges. Add the cream, wine, rosemary, and reserved pasta cooking water, and cook, stirring constantly, until the sauce thickens slightly. Remove from the heat, add the cooked pasta to the skillet, and toss to combine. • Serve hot.

CHOCOLATE and WINE February brings celebrations of love which frequently include the timeless treasure of wine and chocolate. Whether it’s over romantic dinners for two or between female friends at “Galentine’s” parties, wine and chocolate will be making lots of appearances this month. Use this as your guide to creating an exquisite experience for your loved ones this month. These aphrodisiacs have a lot of similarities to each other. For one, they both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. But because these characteristics affect flavor, it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. Fortunately, we’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

T I P 1 : M AT C H S U G A R WITH SUGAR What’s true of relationships is not true of wine and chocolate: opposites do not attract. When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. Sweet white chocolate pairs well with sweet wines high in residual sugars and bitter darks with dry wines with just a hint of residual sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

T I P 2 : M AT C H I N T E N S I T Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.

TI P 3: PAI R FL AVORS WITH FL AVORS Wine and chocolate both carry their own intense flavors. If your chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

ON SERVING WINE AND C H O C O L AT E F L I G H T S : Just as you would with any other tasting, it’s best to start with light chocolates and wines, increasing the intensity as you go along. Start with white chocolates and light wines and save the richest, dark chocolates and wines for last. By doing this, you will keep your palate from starting out too strong and missing out on the subtle sensations found in more delicate chocolate and wine selections.

Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines.

Milk chocolate is typically creamier and sweeter with flavors of brown sugar, vanilla, and cream. It requires a wine that is light to medium in body, with a ripe fruit character.

White chocolate, which is made with sugar, milk and cocoa butter has a sweet, buttery flavor with notes of cream and honey. Sweet white and rosè wines help cleanse the palate of the rich flavors from white chocolate, as does sparkling spumante like Moscato d’Asti.

Over the past few decades, we’ve lost something fundamental in medical practice in the US. In most clinical medicine, the entire patient care process has lost the “care” portion almost completely and we have devolved from patients to numbers. It’s not that there are no longer caring doctors; but the whole insurance-dependent, corporate-driven system makes it near-impossible for doctors to deliver the kind of care need, and – dare I say – that we’ve forgotten we deserve. Patients enter crowded waiting rooms and, when they finally get to see the doctor, often get less than 15 minutes of one-on-one time. Not to mention waiting weeks or months for an appointment, and not being able to make same-day appointments when we’re sick. Well, with concierge doctors like Dr. Caitlin Prickett, that’s all changing. Dr. Prickett became a physician because she is passionate about helping people live heathier, more fulfilling lives. As a Doctor of Osteopathic Medicine specializing in Internal Medicine, she focuses on whole-body health. And, after completing her residency at a level one trauma and regional stroke center, she has developed the skills not only as an experienced diagnostician, but also as a physician who can stay calm in emergencies and deliver personalized, effective care to her patients. We sat down with Dr. Prickett to get an inside look at concierge medicine and how it differs from the traditional medical model.

What was the “Aha moment” for you, in choosing the concierge model over traditional practice? My previous experience comes from a large medical group where I was one of hundreds of physicians. I was told how many patients to see and how much time I got with patients. I really had no independence or autonomy in the way I practiced. I was seeing over 20 patients a day, with only seven minutes with each patient. I've always been interested in concierge because you really get to have that personal relationship with your patients. You really get to know who they are as people, what their lifestyle is, their background and family history, and what's worked for them in the past.

What are the main benefits of seeing a concierge doctor? My patients can get in touch with me whenever they want. If there's ever any issue, they can always pick up the phone and call, text or email me. This really helps patients who may have gotten inadequate care in the past or feel like they need more detailed care. Patients are guaranteed same-day appointments in the office. We know you on a first-name basis; you're not just a name on a list. If a patient calls with a concern or question, I know what medication they’re on, what to expect and how to handle it. We have an in-house pharmacy, carrying common prescription medication at a wholesale price, which reduces the need for an extra stop after leaving our office. We offer a high-quality personalized approach to health and wellness. For instance, if a patient is struggling with their diet, I will go shopping with them. I'll have them do a food diary and we sit down and review it together, and then I’ll offer recommendations. I also incorporate supplements and other natural approaches. I have therapists, health coaches, nutritionists, and mind coaches who I work with closely. Another huge benefit of our concierge membership is the proactive focus on wellness and prevention. Patients are not just signing up for concierge care and only using it when they need it. I encourage patients to go ahead and start developing that relationship with me to determine what we can start improving on now.

It’s vital to be proactive so we can detect things early and prevent problems from occurring in the first place. I recommend, at a minimum, that we touch base with each other every three months.

Was there any other change that your patients remark upon? Besides 24/7 access, it’s the amount of time we spend together. We get started right away when patients join. They sign medical record release authorization forms so we can gather records from current and previous physicians. I then spend about a week reviewing those, and then I have the patient come in for an hour and a half, and we sit down to complete the established care and history review appointment. My experience working in an intense hospital environment also enables me to handle a wide variety of emergent issues myself, rather than sending someone to the ER, as a matter of course. I do everything I can to manage care: I can run blood, do the EKGs, take vital signs, and thoroughly evaluate patients without having to send them to the ER where they're going to sit for hours.

What should patients be aware of when switching to concierge medicine? Many patients who are new to concierge don't really believe that they can contact me 24/7, but they can! We’re really going back to the way medicine was 70 years ago when physicians spent time with patients, made house calls and they really got to know you. I also offer house calls to my concierge members for an additional charge. Our average appointment time is 1 hour, so we really have time to discuss any current and ongoing issues regarding their health. We also do a thorough review of the patient’s family history, as knowing what you are predisposed to or at risk of developing in the future is extremely important. Knowing this information allows us to take action now regarding your health, as opposed to waiting for the disease to develop. There's also no crowded waiting room with a bunch of people waiting to be seen. Our office doesn't feel clinical. There is friendly staff, contemporary furniture, nice music and Pellegrinos in the fridge!

There’s no sign-in sheet. We know who you are on a first-name basis. With my previous practice, I was a primary care physician for 3,500 people. Now, in my concierge practice, the panel is in the hundreds. You can't get to know 3,500 people, but you can know a few hundred. I also have a good network of specialists that I trust and that works with me, even concierge specialists, like cardiologists and orthopedic surgeons. It makes a difference when a physician calls and tries to get a patient scheduled for an appointment as opposed to the patient calling themselves. And often I will speak with the specialist personally just to give that specialist all the pertinent information about that patient to prep them, so they know precisely what to focus on.

What are your top 5 tips for wellness in 2023? 1. Eat unprocessed and organic foods when you can. There are a lot of chemicals and additives in our foods, which lead to diseases like heart disease, cancer and diabetes. So, when you go to the grocery store, make sure you're looking at the labels. Make sure that what you're eating is high quality and doesn't have any additional things that shouldn't be in there. 2. Limit the inflammatory oils like canola or vegetable oil. Inflammation is one of the main causes of disease. People who switch to less inflammatory oils like olive oil or avocado oil have much less inflammation in their body. Chronic inflammatory disorders, like arthritis, atherosclerosis and autoimmune disease, are on the rise; diet is thought to be a large contributor. 3. Manage your stress. Stress plays a large role in our body and in our health. Every research study that's done on cancer, heart disease, or diabetes, shows that stress exacerbates those conditions. Managing stress can be as simple as taking 30 minutes to yourself. You can do some meditation, mindfulness or reading a leisure book. And just breathe! Put your phone down, quit scrolling, and just be. It makes such a difference.

4. Get adequate, high-quality sleep. Sleep is often overlooked. but it's just as important as exercise because it’s our body's restoration time. And so many of us have bad sleep hygiene. Make sure that you're not sabotaging your sleep by watching TV or playing on the phone in bed. I use a device called Whoop that tracks the quality and quantity of my sleep. It helps to keep me accountable and provides knowledge I can pass on to patients. 5. Avoid being sedentary. Being sedentary is definitely going to have a negative effect on your health. Make sure that you're getting up and walking around throughout the day, if you have an office job. Or set aside time to exercise. Avoid sitting on the couch for three hours at a time. When you do that, your lymphatic system slows down. And the only way to really improve your lymphatic system and to flush out those toxins is to move. So, try not to bingewatch TV. It increases your risk for developing heart attacks and strokes. One thing to keep in mind: don't try to make too many changes at once. Don't overwhelm yourself. Start by changing one thing. Get an extra hour of sleep or start working out three times a week. Focus on making small changes that are sustainable over time.

Who are the biggest inspirations in your life? My significant other, Jeffery, has been my business partner and advocate. I've learned so much and look up to him because of his business savviness and his skill in entrepreneurship. That's one thing we don't learn in med school: how to run a business. I’m lucky to have him by my side. Growing up, my parents instilled a good work ethic in me and encouraged me to set and achieve my goals. Having a solid foundation in perseverance and motivation has helped me throughout my career as a physician.

Besides medicine, what are you passionate about? I'm passionate about healthy life in general. Jeffery, and I have five-year-old twins, and we really do practice what we preach. We mostly cook our meals at home, we try to stay active, and we try to instill these healthy life habits in our children. I recently joined the Junior League of Boca Raton, which has provided an opportunity for me to really get involved and give back to the community. A sneak peek inside the closet of active mom and entrepreneur Keri Tarantino of Leawood, KS reveals a dressing room that rivals celebrity homes in Beverly Hills. But it didn’t come easily. Keri painstakingly planned, designed and curated the space with care. When we first stepped inside, we gasped as our eyes beheld the glory. No detail went unnoticed in this dreamy dressing room. Here are some guiding principles that can be drawn from her exquisite taste and vision. How you organize your closet will of course differ based on the size of your space, the size of your wardrobe, and the kind of life you lead. But applying the guidelines Keri used in her space will result in a much more organized and aesthetically pleasing space.

Reserve the front and middle of the closet for clothes worn most often. For someone who gets dressed for work each morning at 6 a.m., work clothes should be at the front of the closet. Store lesser-worn items like formal wear and out-of-season clothes toward the back and on the upper shelves. The large mirror and counter with chair provides the perfect spot to select jewelry and finalize finishing outfit touches. While every closet is different, the key here is everything has a home.

Group clothes by kind first and color second. This ensures quick location of that favorite shirt when it’s needed. Bonus - it’s easy on the eye. Group like with like: Gather belts, sweaters, longsleeve shirts, work pants, dresses, button-down shirts, jeans, shorts, etc., and decide the best place to store each item as a group (e.g., hang pants in the closet, fold and stack sweaters in a bureau). Working with groupings will help you figure out how much space you need and the best way to store each type of item.

Get clear container storage for small bags and purses so you can locate and access them easily.

HIDDEN STOR AGE Hidden storage is a game changer in keeping a closet visually clean. Tuck folded clothes behind closed cabinet doors if the space is multipurpose. The floor-to-ceiling built-ins in Keri’s closet contain folded clothes, athleisure and other items she needs as she gets ready each day. Tuck away the least-used items: Use hidden storage and the very top of the closet for outof-season items and stuff only worn a few times a year.

LIGHTING Lighting is everything in a closet. Gone are the days of dim recessed lighting being sufficient. Consider adding a statement lighting fixture like a chandelier or pendant that provides ample bright lighting to your space, no matter how big or small.
