with a Love for our Waters If you’ve never been to Dixie Divers, you should. After my original Christmas gift for my husband fell through, I walked into Dixie Divers in the hopes of finding something cool for him, knowing he loved to spearfish growing up. There are stores that are stores, and then there are stores that are communities. Dixie Divers is the latter. It’s something of a pleasure shopping at a store where the people truly love what they do. Every single person that I interacted not only had a passion for the ocean but the expertise to offer the best advice about what to get. One of Dixie Divers’ biggest assets is that it is a one-stop shop. Need equipment? Check. Want to get scuba certified? Check. They have an on-site dive pool for training. Want to go on a diving excursion? Check. Their 46-foot custom dive boat, Lady Go Diver – I love the name! – runs from Fort Lauderdale all the way up to North Boca. They also do Dive Trips in the Caribbean to Bimini, Cozumel and Bonaire, and even perform underwater weddings. Divers can book a private charter for a fun time with

the family or to celebrate a birthday. Some local colleges book private charters on Lady Go Diver for Marine Biology students who are doing research. Dixie Divers aren’t just service providers. They really care about the health of our waters. They offer a PADI invasive lionfish tracker course which teaches why lionfish are a threat to our local waters, reefs and ecosystem and how best to safely eliminate them. We sat down with one of the partners, Michelle Day, to chat with her about what she loves most about diving.
WHERE DID YOUR LOVE OF DIVING BEGIN? I grew up in South Florida, so growing up on the water had a huge impact on my love of the ocean and diving. I also ended up majoring in Marine Biology and minoring in scientific diving.
WHAT IS YOUR FAVORITE THING ABOUT DIVING? When I’m diving, it is like being on a different planet and each time I dive there is more to experience and learn. My favorite thing is probably the ocean environment, the ecosystem, the biology behind it as a scientist. I love the animals, especially specifically whales, sharks and dolphins.
WHAT IS YOUR FAVORITE DIVING SPOT? Cozumel is at the top of my list. The reefs are spectacular. The water is warm, there’s a wide variety of fish and mammals, nice resorts, excellent weather, and very accessible. As a diving destination close to South Florida, Cozumel is hard to beat, which is why we frequent it so much with our DXDivers Dive Trips.
WHAT’S THE MOST MEMORABLE DIVING EXPERIENCE YOU’VE EVER HAD? We have our own travel department and I led a group to Bimini for a hammerhead shark dive. There was a 14-foot shark only four feet away from you, and it’s the most gentle soul. I love the conservation aspect of these dives. On Christmas Eve, I left the store with a new spear gun for my husband but more importantly, I left feeling I’d just witnessed something special. A warm and thriving local business.

South Florida has an abundance of design firms specializing in modern and contemporary styles. But there’s nothing quite like Interiors by Steven G.’s showroom. Entering the firm’s legendary showroom is like stepping into history, with exquisite, hand-selected elements. The expansive 110,000 space, replete with imported Italian furniture, artwork and greenery, has no parallel in the industry. This passion for excellence to the very last detail has brought the design firm a continual stream of repeat clients and referrals over the last 40 years and has made it the preeminent design firm in South Florida.
The team is adamant that every client falls in love with their new home, no matter how big or small the project. It prides itself on ensuring 5-star design and installation right down to the smallest element. Steven G. and his team love working with condominium associations, which remodel their entire buildings. “It is time-consuming but so worth the challenge.” says Steven G. “To bring a design concept, present it to an entire building of residents, and get them all to agree is a thrill.” Turnberry Ocean Club is one of the team’s latest projects. Development Team to create furnished models and custom-designed residential units throughout the building. The first round of models sold out in record time, quickly followed by complete sell-outs of the second and third rounds. The project at Turnberry Ocean Club started during preconstruction with the design of a furnished model in the sales center. The design team envisioned the potential buyer stepping directly from the private elevator to their home and designed the look and ambiance of the space from that vantage point. Once construction began, the team recreated the model inside the condo building with a fresh, new look.
The team at Interiors by Steven G. designs their furnished models to be timeless and neutral, in order to appeal to all buyers. Artwork and accessories add a splash of color and personality to the space. Custom ceilings and lighting allow prospective buyers to get a sense of the possibilities for their home. Dramatic feature walls bring texture to the space. The design team used wood or textured coverings to add a subtle sense of drama and individuality to the condos at Turnberry Ocean Club. They selected custom, imported Italian furniture to elevate the living space and utilized wood and leather to add warmth and fabrics like linen, ultra-suede and silk organza to intensify the luxurious feeling of the models. Steven G. strongly believes Turn-Key Furnished models are an essential asset in the sellout of a building. Residential owners tend to fall in love with the Team’s design work, as it helps them visualize how unique their units can be. The design team’s work is present throughout Florida and beyond. Strolling along the breezy corridors of Mizner Park, it is impossible to miss Max’s Grille. Centered in a prime location with a generous sprinkling of umbrellas for outdoor diners to beat the Florida heat, the restaurant commands attention. The brightly colored exotic cars lined up like birds-of-paradise at the valet station, the celebratory tinkling of glasses, the general air of bonhomie, and the inviting aroma of fresh ingredients grilled over mesquite with the sizzle of piquant sauces, all combine to invite you in. When you enter Max’s Grille, the ambiance is distinct. The high ceilings and modern cylindrical chandeliers are balanced with rich plush leather booths and warm wood elements. An impressive wall of wine bottles adds a refined feel to the dining room. For diners who like to savor their meals al fresco, as I do, there is extensive outdoor seating with plenty of shade. Boca dog lovers can order from a special Bark Café menu for their fur babies. It’s wise to call ahead for a special table. The restaurant offers a good selection of elevated American classics., rooted in the California movement. In fact, Max’s Grille was the first South Florida restaurant to offer Chopped Salad. Owner, Burt Rapoport, first sampled Chopped Salad at Beverly Hills’ famous La Scala restaurant back in 1994. It was so good that he promptly added it to the Max’s Grille menu and the rest is history. This flair for understanding exceptional cuisine that people will enjoy is one that Burt Rapoport inherited. As a third-generation restaurateur, his fondest memories were of family meals at his grandfather’s kosher dairy restaurant in New York, which was a Lower East Side institution for 50 years. Burt’s decades-long experience working in the restaurant industry has enabled him to select staff that shares his values. Executive chef, Mike Casari, has a passion for great food and never stops reading, experimenting and studying other great restaurants. This hunger for excellence is reflected in Max’s Grille’s menu, which is designed to tickle the taste buds with contemporary delicacy, wide variety and ample portion sizes. From the classic Tomato Bisque to a piquant Asian Vegetable Stir Fry to a decadent Mixed Berry Crème Brulee Pie, there is indeed something here for every taste – and diet. The restaurant offers many gluten-free and vegetarian dishes. The wine list is generous and highly lauded, and the cocktails are fun and inventive. The zesty Strawberry Basil Cooler is a crowd favorite, and the Pisco Sour is a playful tie-in to the recent Macchu Picchu exhibit at Boca Museum of Art. CONTINUED >

Max’s Grille has been a Mizner Park fixture for over 30 years – an incredible feat, considering how many restaurants come and go. The challenges that COVID wrought on many restaurants did not deter Burt Rapoport. He absolutely refused to compromise on the quality of the food or portion sizes, opting instead to streamline the menu and hours to accommodate his staff. This dedication to delivering true value to its diners made 2021 the best year ever for Max’s Grille, even as many restaurants have struggled to keep their doors open in the last two years. Burt Rapoport contends that there are three ingredients restaurants must offer to keep diners coming back for more: food, service and ambiance. “Most importantly, I want to make sure my family is taken care of for the rest of their lives. I would not be where I am today if it weren’t for them.” “If you don’t ask, you won’t get.” This is the personal motto of Jake Tuchman, President & CEO of Simplicity Jets, a private jet chartering company. At 33 years old, Jake has already accomplished more than many others his age. After extensive experience working in travel, hospitality and sales, he was ready for a new challenge. And so, in 2017, Simplicity Jets – a private jet charter service with access to more than 60,000 aircraft and over 8,000 airports worldwide – was born. The company prides itself on having you in the air and on your way in as little as four hours from a phone call. All the jets chartered are Argus/ Wyvern-rated, which means they adhere to an internationally recognized safety standard. Growing up in Millburn, NJ, 25 minutes away from New York City, Jake is accustomed to a fastpaced life. Running a business where last-minute requests can come in the middle of the night would ruffle many people, but Jake has a very strong work ethic. He maintains that to be successful, you must be prepared to put in hard work and make sacrifices. It’s more than just about showing up and working hard, though. For Jake, it’s all about mastering your craft, whatever it is. Continuous learning is vital, particularly from others who have already achieved success in the field. Jake’s mentor, Dirk, has been a significant catalyst in his success. Jake comes from a close-knit family, all of whom unceasingly support his dreams and goals and encourage him in his daily life. His father and mother are his biggest cheerleaders, while his brother took the time to mentor and guide him. His sister regularly checks in to give support and a listening ear. This outpouring of love from his family drives Jake in his day-to-day business. “I wouldn’t say I’m successful just yet. There are many other things I would like to accomplish
in my lifetime. In addition to growing the Simplicity Jets charter brand, I would like to have multiple standing offices across the US to manage aircrafts for family offices. Most importantly, I want to make sure my family is taken care of for the rest of their lives. I would not be where I am today if it weren’t for them.” Like many others in the travel industry, Jake’s business has been impacted by COVID. “At first, people weren’t traveling at all. Then when they started to, private operators reduced their prices by 50-60%. Many first-class travelers used the opportunity to try out private charters, so our business actually rose for a while.” With commercial travel making a comeback; and parts and pilots being scarce in private aviation, prices have gone back to normal or risen and many of those fliers have returned to firstclass travel. There’s still plenty of demand for private charter service, though. Jake took a brief break on a last-minute business trip to San Francisco to speak with me. When asked what he would do with a free day, he laughs and says the first thing he would do upon waking is turn off his phone and go visit his niece. He would get his whole family together and spend the day relaxing and enjoying meals. There are not enough days in a lifetime to spend with those you love and as Jake gets older, he has realized you don’t get time back, so it’s important to take advantage of every moment. Jake’s advice to up-and coming entrepreneurs is clear and forthright: “This is not for everybody. You must be willing to lose sleep, miss out on important events, and cancel plans. You must be willing and able to research your craft and eat, sleep and breathe it. If you have the passion and want to succeed in something, you will succeed.”

Adapted from Almost Bourdain’s Lemon, Lime and Orange Soufflé, original recipe from Raspberry Soufflé in Serving The Menu Again by Ben O’Donoghue and Curtis Stone.

Base • 4 - 6 ounce container of fresh raspberries • 125 grams / 4.5 ounces caster sugar • 4 teaspoons corn flour • Water Soufflé Mix • 10 egg whites (room temperature) • Pinch of salt • 1 teaspoon rose essence • 100 grams / 3.5 ounces caster sugar • 200 grams / 7 ounces butter, softened, enough to grease the moulds • 100 grams / 3.5 ounces caster sugar, enough to coat the moulds • Icing sugar, for dusting • Creme anglaise or ice cream, to serve
1. Puree the raspberries in a blender and press through a fine sieve to remove the seeds. Add enough water to make 500 milliliters of puree. 2. To make the base, place the raspberry puree and sugar in a saucepan over a medium heat. Stir to dissolve the sugar and bring to the boil. Mix the corn flour with just enough water to make a smooth paste. Once the fruit puree reaches boiling point, reduce the heat to low and whisk the corn flour paste into the fruit puree a little at a time. Whisk for 1 minute and do not allow mixture to boil again. Remove from the heat and set aside. Chill to cool completely. 3. Preheat the oven to 180°C/350°F. 4. Place the egg whites into a very clean, very large mixing bowl, add the salt and beat at high speed until soft peaks form. Add the sugar, a little at a time, and beat until stiff peaks form. Do not over whisk or the egg whites will break down and be unable to hold the air required to life the soufflé. 5. Place the fruit puree base into a very large bowl and whisk until smooth. Add a little of the egg white mixture and stir in to loosen the consistency. Gently fold in the remaining egg white and rose essence. 6. Brush the bases of 6 1-cup capacity ramekins with the softened butter, then, using upward strokes (this is very important), brush the sides. Chill in the refrigerator until set, and then repeat. Sprinkle in a little of the caster sugar, turning the ramekins to coat the base and sides. To fill the moulds, use a palette knife to spread the soufflé mixture around the sides while holding the ramekin at a 45-degrees angle. Fill the middle and smooth top top, without allowing any mixture to stick to the rim or run over the sides.
