Welcome fall! October always brings new energy— cooler weather, colorful leaves, and plenty of opportunities to gather with friends and family. This issue celebrates the season with local flavors, seasonal discoveries, and ideas to enjoy all that fall has to offer.

If you’re looking for delicious gluten-free desserts, Lara’s Cakes and Bakes is worth checking out. Owner Lara Arnold talked with us about her love of baking and the joy she finds in creating treats that everyone can enjoy. Sinclair’s Restaurant also shared a few recipes you can try at home. Whether you’re hosting friends or experimenting in the kitchen on your own, these recipes are a fun way to celebrate the flavors of the season.

Fall in Blue Springs also means community traditions—football, festivals, chili cook-offs, and crisp evenings spent with friends. INDOOR PAR FORE OFFERS DRINKS, GOLF AND GOOD TIMES IN BLUE SPRINGS

When Kathy and Michael Kellis first considered opening a business together, the idea wasn’t fully formed. Kathy, a veteran bartender with 25 years of experience, had long dreamed of owning her own bar. Michael, a lifelong golfer, had been refining a home golf simulator setup in their garage for over a decade..

Their first attempt — a bar concept at the Lake of the Ozarks — was put on hold after Kathy’s back injury kept them from moving forward. About a year later, Michael suggested a new idea: What about a golf simulator bar? Kathy stayed up researching until 3 a.m. When Michael got up for work the next morning, coffee in hand, she looked at him and said, “Okay, let’s do it.”

From that spark, Indoor Par Fore was born. Opening in March 2023 in Blue Springs, the space combines state-of-the-art golf simulators with a laid-back, neighborhood-style bar. In just a short time, it’s become a go-to spot for league play, date nights, team-building events, and casual drinks with friends.

Indoor Par Fore has grown into more than just a business. It’s a thriving blend of their passions — a place where good drinks, great swings, and community connection come together.

“This was always a dream,” Kathy said. “I just didn’t know it would look like this.”

A BUSINESS BUILT ON BALANCE

Kathy runs the bar, and Michael manages the golf simulators — but over time, they’ve learned each other’s roles. Kathy recently joined a local golf league, and Michael doesn’t hesitate to jump behind the bar when things get busy.

“He’s the golf guy, I’m the bar girl,” Kathy says. “But we’ve learned to blend it.”

That teamwork carries over into the space itself. Guests can choose from four hightech simulator bays with access to more than 1,800 courses worldwide. The technology provides real-time feedback, including ball speed, swing analysis, and shot playback. There’s also a pool table, and plenty of space to relax with a drink.

Indoor Par Fore hosts several leagues, including “Fore the Ladies,” men’s leagues, and co-ed weeknight options. But guests don’t need to be seasoned players to enjoy the experience.

“People come to hit balls, celebrate birthdays, hang out with friends, or just grab a drink,” Kathy said. “We see it all.”

MORE THAN JUST A BAR

While the golf bays are a major draw, many come for the drinks and the welcoming atmosphere. Kathy takes pride in crafting cocktails that are both Instagram-worthy and intentionally curated. The bar includes a “skinny” cocktail menu with low-calorie options and features top-shelf selections like Blanton’s, Weller, and Buffalo Trace.

“I love making ingredient-intensive drinks in a warm, inviting space,” she said. “It’s about creating a vibe where everyone feels comfortable.”

That approach keeps people coming back. One longtime guest raves about Kathy’s old-fashioneds. Others stop by just to catch up. Some even lend a hand when needed. “People love this place so much, they treat it like it’s their own,” Kathy said.

DESIGNED FOR CONNECTION

Before opening Indoor Par Fore, Kathy bartended everywhere from dive bars and sports grills to high-end lounges, wedding venues, and large events. That broad experience now infuses every corner of the new venture.

“I’ve been able to take little pieces from all my past jobs — the best parts — and build something that really works,” she said. “We treat people like family.”

That sense of family isn’t just for guests — it’s deeply personal. Kathy and Michael’s two grown daughters, Tiffany and her husband Tanner, and Tori and her husband Corwin, along with their grandson Sylas, are some of their biggest cheerleaders.

“This isn’t just a bar, it’s a place to bring people together.”

“They’ve heard me talk about opening a bar for years and have seen their dad hit the course every chance he got,” Kathy said. “To combine those passions and thrive has been inspiring to them. It hits different when your kids are proud of the life you’re creating. Who knows — maybe one day this will be theirs.”

That same spirit extends beyond family and guests. Kathy and Michael give back through causes close to their hearts, including the UMatter Movement, H8 Cancer, the Tony Wilcox Foundation, and The Salvation Army. They also host themed events and private parties throughout the year.

Indoor Par Fore is located at 1326 NW Hwy. 7, and it’s open yearround for guests of all skill levels. Whether you’re chasing your best round or just looking for a laid-back night out, the Kellis’ have created something more than a bar or golf lounge. They’ve created a place where everyone feels at home.

“We’re always looking for ways to level up,” Kathy said. “But at the end of the day, it’s about people. That’s what makes this place special.”

VANESSA STARKE’S JOURNEY THROUGH BREAST CANCER: COURAGE, AWARENESS, AND HOPE

Every October, we are surrounded by a wave of pink — a symbol of Breast Cancer Awareness Month and a call to remember the importance of screenings, education, and support. But every pink ribbon represents more than awareness; it represents a story. Some are stories of survival, others of loss — but all belong to people and families in our communities. For Blue Springs attorney Vanessa Starke, that story became personal earlier this year when she was diagnosed with breast cancer.

What began as some swollen lymph nodes quickly became a whirlwind of appointments, specialists, and treatment plans. Like many who hear the words “you have cancer,” the moment felt surreal and overwhelming. “I remember just sitting in my office when I got the call. I went completely numb,” Vanessa recalls. “My husband was out of town, and I called him right away. We both had the same reaction — is this real?”

Despite the shock of her diagnosis, Vanessa has faced each stage with courage and determination. Having completed chemotherapy, she is now recovering from surgery and preparing to begin radiation. “When I first met with my oncologist, one of the very first things she said was, ‘The goal here is to cure,’” Vanessa shares. “Hearing those words gave me so much hope.”

Throughout her journey, she has leaned on the encouragement of her family, friends, colleagues, community members, and medical team. Small gestures — a handwritten note, a thoughtful conversation, or someone simply showing up — have meant the world. “My aunt has written me a card every single week, just sharing little pieces of her life. It seems like a small thing, but those cards have been so meaningful,” she says.

“I never thought I’D BE DONE with chemo, and here I am. I DID IT.”

Balancing her role as a business owner and attorney at Starke Law Offices has also given Vanessa a sense of normalcy — and, in many ways, a sense of control. “I’m used to being in control of my schedule. When I started my treatments, I had to let go of that because it became a priority to make sure I was being taken care of and getting to my appointments. Other than treatment days, I’ve only missed one day of work,” she explains. “I didn’t want to sit around and feel sorry for myself, especially because I was lucky to physically feel okay. Staying busy has actually helped me feel strong.” Her journey has also been a powerful reminder of the importance of listening to your body and seeking medical advice when something doesn’t feel right. “It’s better to have something checked out and find out it’s nothing than to wait and discover it’s something serious,” she shares. Early detection can make all the difference in treatment and recovery, which is why awareness is so critical.

For those navigating a cancer diagnosis, emotional support can be just as vital as medical treatment. Organizations like Gilda’s Club offer no-cost programs, support groups, and education for individuals and families impacted by all types of cancer. Vanessa says groups like these are invaluable: “When you’re first diagnosed, it can feel isolating. But talking to others who have gone through it helps you realize you’re not alone, and you can get through it too.”

Beyond emotional support, practical resources also play a vital role. Programs like Show Me Healthy Women provide free and low-cost breast cancer screenings. The American Cancer Society’s Reach to Recovery connects newly diagnosed patients with survivors who can share guidance and encouragement, and The Road to Recovery Program offers free rides to treatment appointments. Together, these services remind us that no one has to face cancer alone.

As Vanessa continues forward with her treatment and recovery, she remains hopeful and optimistic about the future. “I never thought I’d be done with chemo, and here I am. I did it,” she reflects. “I’m excited for my hair to grow back, to get back to normal, and maybe even travel next summer.”

Vanessa’s story is one of perseverance and community — a reminder that behind every pink ribbon is a person with strength, courage, and a journey worth honoring. By sharing her experience, we not only recognize her resilience but also shine a light on the importance of early detection, continued research, and the networks of care that lift patients through their recovery.

Together, through awareness, compassion, and hope, we can make this path a little less overwhelming for those walking it today — and for those who may face it in the future.

Lara’s Cakes and Bakes, located in downtown Blue Springs, is not your typical bakery. Do they have cinnamon rolls and cookies? Yes, but they have so much more than that! So what makes them unique?

Owner Lara says, “Our bakery is 100% gluten free and celiac safe. I want everyone to feel welcome and safe to eat their pastries from our shop.”

Lara gained a love of baking at a young age from watching her mom bake from scratch. As she got older, her love for baking only grew. Lara found any opportunity she could to bake for her friends and family. During the pandemic, she wanted to bake some sweet treats and deliver them to her co-workers. Once she heard a couple of them were vegan, she made it her mission to include them as well. She experimented and tweaked a chocolate chip cookie recipe, and they were a big hit. “I kept making them, playing around with the recipe, and that is what became my vegan chocolate chip cookie recipe that I bake and sell weekly,” she said.

SO WHAT CAN YOU FIND AT THE BAKERY TODAY?

“We make large macarons in a variety of flavors. I try to keep 10-12 flavors in the case every weekend. We are also known for our coffee cake, cinnamon rolls, poppy tarts (hand pies), chocolate cake, and vegan oatmeal raisin cream pies. You wouldn’t know the oatmeal cream pies are vegan at all. The cookies are soft and chewy and the buttercream filling is so good. Our chocolate cake is very moist and perfectly chocolatey. Flavor and texture are very important to us.”

Lara has a huge heart and wants everyone to enjoy delicious baked goods, no matter their dietary needs. Anytime she hears someone say they miss a specific treat since going gluten-free or vegan, she heads to the kitchen and gets to experimenting. She says this is how a lot of her recipes have come about.

Lara began selling her baked goods at the Blue Springs Farmers Market and has since continued the connections she made there, including buying fresh eggs from a local family farm. Even the chives in her cheddar chive scones are harvested straight from her garden.

If you haven’t tried Lara’s Cakes and Bakes, or even if you’re a regular, you won’t want to miss what’s in store for this fall and winter season. Lara says, “We will have some fun new cookies coming out soon along with all our fall and holiday flavored items. I’m hoping to have time soon to start working on some croissants and other French pastries.” She shared that she is excited to introduce her famous pies to the bakery this season too.

Shane Miller, owner of Sinclair’s Restaurant, brings his culinary creativity straight to your kitchen, sharing two of his favorite recipes that are sure to delight any occasion.

Spinach Artichoke Dip

INGREDIENTS

• 6 oz cream cheese, softened

• 2 tbsp mayonnaise

• 2 tbsp grated Parmesan cheese

• 2 tbsp shredded mozzarella cheese

• 2 tbsp crumbled feta cheese

• 2 tbsp vinaigrette dressing

• 1 cup fresh spinach, lightly packed

• ¾ cup canned artichoke hearts, drained and chopped

• ⅛ tsp kosher salt

• ⅛ tsp coarse black pepper

DIRECTIONS

1. Drain the artichoke hearts and set aside.

2. In a large mixing bowl, combine all ingredients except the artichokes. Beat on low speed until blended.

3. Add the artichoke hearts and mix until combined.

4. Transfer to an oven-safe dish and bake at 350°F for 20 minutes, or until bubbling.

Serve warm with pita bread, vegetables, or tortilla chips.

Bulldog Smash

INGREDIENTS

• 1 oz Crown Royal

• 1 oz Cointreau

• 1 oz peach purée

• ¼ oz fresh lemon juice

DIRECTIONS

1. Combine ingredients in a shaker with ice.

2. Shake well, then strain into a rocks glass.

3. Garnish with a lemon wedge.
