An OB/GYN paid to see you. Not to see a lot of you. That's the whole difference. A physician paid per appointment is paid for how many, not how long. thrē Clinic is a concierge OB/GYN, so nobody here is paid by the visit. The practice caps membership at 400 so that one physician sees you for all of it - annual, hormones, fertility, delivery. The average visit here runs 45 minutes, not seven. Bring the list. LIFESTYLE LETTER

Favorite Foods, Favorite People Everyone has their irresistible food. It might be a favorite takeout that you could eat every day or the guilty pleasure in your pantry that you keep saying “I can’t have these around the house.” Everyone has something that hits the spot every single time. In my experience, it’s usually divided into two groups—those who like savory vs. those who like sweets. For me, it’s sweets. Sweets of just about any kind. I grew up with a sweet tooth, and a mom who is incredible baker, so there wasn’t any way around it. When I moved out on my own, I realized quickly that if I wanted to maintain my addiction, I’d need to learn to bake for myself. After all, I had grown accustomed to a certain lifestyle. So that’s what I did and I still enjoy it. I grill and bake, everything in between is never consistently great, but usually passable by my kind wife’s standards. She’s definitely the cook. The other day, I had a craving for this dessert my aunt always brought to Christmas dinner. It’s a pretty simple dessert and I got my hands on the recipe from my aunt. I made it, let it chill, and was so excited to dig in and… it did not taste great. I mean, I ate all of it, but it wasn’t what I remembered. I quickly blamed the ingredients so I went to a different store, bought different brands of ingredients, and repeated the experiment a couple weeks later. This time it was much better, but still not what I remembered. I thought I might have over-hyped it in my own mind to the point that it could never live up, and maybe that was part of it, but the other truth is that I wasn’t eating it after Christmas dinner, surrounded by my family. Our favorite foods light up the brain’s reward system, and sharing them with people we love adds another layer to the experience. In a way, we’re getting a double dose of feel-good chemistry when we enjoy our favorite foods with our favorite people. As we head into fall and family gatherings, I hope you often find yourself enjoying your favorite foods with your favorite people. All the best,

“WE WANT THE MENU TO BE DISARMING WHILE BROADENING THE SCOPE.”

There’s no denying that Bentonville is growing spoiled with great eateries. As our region grows, attracting a standard of dining expected from coastal cities, the most challenging part of managing a social calendar is choosing where to make a reservation. Yet whenever you ask plugged-in locals for their most repeated dinner spot, one name tops the list: Bar Cleeta. Opened in Downtown Bentonville in 2019, Bar Cleeta has bypassed the fickle hype cycle of modern dining by doubling down on an enduring truth: exceptional food tastes better when served without pretense. Co-owners Trae and Weisi Basore have cultivated a neighborhood anchor that feels less like a traditional restaurant and more like an invitation to the intimate, high-vibe dinner party you always hope to get invited to. Trae, a Bentonville native, inherited his epicurean instincts from his grandfather, a rural Arkansan with an unexpected passion for the finer things. “He was a foodie before that was even a term,” Trae recalls. “He loved the arts, listened to opera, and cooked straight out of Julia Child’s cookbook.” That early spark eventually led Trae from business school at the University of Arkansas to the Culinary Institute of America in New York, and ultimately into a stint as executive sous chef for celebrity chef Tom Colicchio. “I WANTED TO INTRODUCE WHAT PEOPLE PERCEIVE AS LUXURY INGREDIENTS AT A LOWER PRICE POINT–SMALLER PORTIONS–TO GIVE IT TO PEOPLE WHO ARE FROM HERE THAT HAVE NEVER HAD THAT EXPERIENCE.”

It was in New York that Trae met Weisi, an NYU graduate then working in beverage and hospitality management. Their joint culinary story took root over date nights where friends worked, eventually taking them across the country to Los Angeles. But periodic visits back to Arkansas revealed a rapidly evolving region ready for something fresh. “I never thought I’d be able to come home and open the exact type of restaurant I wanted,” Trae admits. His vision was simple yet radical for the region: demystify high-end dining by introducing luxury ingredients in small-plate formats at accessible price points, allowing curious guests to explore without the anxiety of a massive financial commitment. Modeled after the couple’s favorite restaurant during their New York days–a tiny space serving tapas style plats–Bar Cleeta marries an elegant menu with an effortlessly welcoming atmosphere. You might encounter foie gras, tarte flambée, or unfamiliar wines, but the setting instantly strips away intimidation. “The intimidation of fine dining is entirely our industry’s fault,” says Trae. “It’s food. It’s supposed to be fun.”

20

M UST SE E | FO O D + BEVERAGE

Weisi echoes that philosophy in both her hospitality and her thoughtfully curated wine list, which deliberately skips fleeting trends in favor of versatile, deeply delicious pours meant to harmonize with Trae’s food. “We want the menu to be disarming while broadening your scope,” she explains. “The cuisine and wine we’re introducing isn’t scary. The inspiration behind the cuisine draws from across cultures and techniques. There are thousands of grape varietals in this world, yet most of us only rotate between a handful.” Unintentionally, the couple’s approach has made Bar Cleeta a cultural touchstone for the area—even serving as a secret weapon for local companies recruiting big-city talent who crave a sense of urban familiarity softened with Southern hospitality. Ultimately, Trae and Weisi have created a rare sanctuary where quality and craft take priority. Whether you are a seasoned finediner or taking your very first step into a new culinary experience, Bar Cleeta invites you to relax, pass a few plates, and simply enjoy timeless foods artfully prepared and served with heart.

Cheyenne Evans, is executing a full-blown culinary makeover—and her vibrant new menu is giving this longtime favorite a serious second wind. Evans isn’t your average kitchen lead. Originally from the San Diego area, she honed her passion at culinary school in Las Vegas before spending nearly two decades as a chef for the Tyson family and Blessings Golf Course. Evans explains her long stint with the Tyson family is abnormal for most chefs. “Typically, a chef moves around every other year, collecting different experiences. It wasn’t until after a longboarding accident where I was out of work for months that I decided I needed to leave and try something new.” Following a pop-up project with breakfast bar Prelude, Good Spirits Co. owner Joshua Widner invited Evans to run an in-house concept for Scotch & Soda. She didn’t just take the job—she designed an all-new dining experience, tapping an all-female culinary crew to pull it off. “Josh gave me full control of the menu, but he wanted to do something inspired by East Coast steakhouses,” Evans explains. Working alongside her sous chef Ruth, with her mom handling prep, Chef Evans’ new menu is channeling raw culinary flex, sourcing pristine filets from Missouri and flying in world-class seafood directly from East Coast legends like Island Creek Oysters. The result? A hyper-craveable, disarmingly playful lineup built for both casual happy hour grazers and dinner dates. Think crispy salmon fish & chips, a decadent crab cake BLT, perfectly seared lamb racks, creamy fresh burrata, and an array of shareables designed specifically to play nicely with the bar’s legendary cocktail program. Scotch & Soda has spent almost a decade being your “old reliable.” But under Chef Evans’ leadership, it’s morphing into the most exciting table in town. Don’t let your old memories keep you away— grab a booth, order the oyster spread, and taste what happens when a classic spot gets a brilliant second act. CONTINUED >

LANGMAN'S PURE WINES

32

H AP PY H OU R | FO O D + BE VE RAGE

Did you know that, to create wine, the grapes need to be stressed out? A scrappy climate forces the vine to work hard and to focus on its fruit so that, come harvest time, you won’t have lazy grapes. Instead, you’ll find premium, flavorful, and rich bulbs of juice worthy of a corked bottle. The Langman Winery vineyard is set in the Sierra foothills; a high desert climate where the atmosphere is thin, the sun is intense, and the soil is composed mostly of crushed granite. “We want the grapes to stress themselves,” explains owner James [Jim] Langman. “We limit the number of vines per acre, and growth arms to four. Then, the annual growth shoots, we clip every other bud. The vine wants to have 500 growth arms and 10,000 annual growth shoots, so we make it focus.” The resilience and hyperfocus that create Langman Wines aren’t unlike its founder. Langman grew up in a dangerous area of Chicago where mob rumors and crime were commonplace, and immigrant families poured their blood, sweat, and tears into family businesses to create a better future for their children’s children.

“When Al Capone was so bad he got kicked out of Chicago, he moved to Cicero, and that’s where I grew up. We just wanted to survive.” Despite the stressful environment, Langman found peace in working for his neighborhood pharmacy. “My whole family, all eight of us, at one time or another, worked at the local pharmacy. Mr. Osblack, without realizing it, taught me business and how to care for patients, and his wife, she taught me empathy in a neighborhood that had none of it.” Langman worked at that neighborhood pharmacy from age ten until he was a junior in pharmacy school. His 44-year career, which brought him to Bentonville for leadership roles with Sam’s Club Pharmacy and Walmart Health and Wellness, had an unsuspecting influence on his retirement plan: To buy a vineyard and open a California winery with his wife, Susan. Between 2001 and 2009, the Langmans began exploring land in Napa and Sonoma, but quickly realized it wasn’t where they wanted to do business. “Big companies were buying up these family wineries and turning them into large corporations. I worked in a large corporation my whole life, but the corporate CONTINUED > OCTOB ER 2 0 2 6 | C I TYL I FE STYL E . C OM/B E N TO N V I L L E A R

mindset is not the mindset that traditional winemaking has had for the last 1,500 years.” To understand how the industrialization of American-made wine has affected production, Langman says to think of it like Coca-Cola versus Diet Coke. “You can tell the difference, right?” According to Langman, two-thirds of wines in the US are packed with added chemicals. “In America, 132 ingredients can legally be added to wine, and they don’t have to tell you about it,” he said. “41 of those ingredients caused histamine release, and 71 of them start as petroleum. As a pharmacist, I was horrified.”

34

H AP PY H OU R | FO O D + BE VE RAGE

Conversely, in Europe, where the art of winemaking has existed for centuries longer than in the US, there are purity standards, which are identified by a DOCG label. “That stands for: ‘Purity in the vineyard, purity in the barrel, purity in the bottle.’ It also means that’s a state wine,” Langman explains. “If you see DOC, it’s pure, but it’s coming from other vineyards.” After a realtor recommended the Sierra foothills as an alternative, the Langmans discovered their place. He describes the rural, family farms as “Old World style” wineries, where the wines are pure and smell like produce. “Your wine should smell like food. Our wines are pure. We have the starter yeast to make the wine, and the juice from the grapes, and that’s it.” At first, Langman aimed to finish out his career in Bentonville while his grapes grew for a few years, then build a winery and move to California. But the ease of living in Northwest Arkansas was so appealing, they decided to stay, leaving the vines to be managed by a winemaker, Marco Capelli, and establishing Langman Winery and Restaurant on the edge of town at 11507 AR-72 in Centerton. The young establishment, polished with lessons in perseverance and purity, strives to mimic the “Old World” experience with wines cared for from root to sip, and quality foods that inspire gathering with loved ones, like those honored on each of Langman’s bottles.

Grindstone Fuels The Outdoor Experience

Grind Stone Gear Garden Location

It’s undeniable that passion fuels most culinary endeavors. The sacrifices it takes to make it in one of the most unforgiving industries require a kind of motivation that many can’t muster. Of course, it helps when that concept is fueled by heritage and supporting your neighbors. James and Miriam Wallace opened Grindstone Coffee in 2025 to fuel the outdoor experience. Launching with their flagship ‘trailer’ location at Gear Garden in Bella Vista’s Blowing Springs Park, the couple has infused her Mexican background and his former Florida life into a menu celebrating quality coffee drinks and casual bites. “I grew up in an Italian family,” James said. “We were always gathering around food, and then living in different places– Pennsylvania, Florida, Tennessee, Arkansas–we got to experience a lot of different foods that we can share here.” Their 727 drink is named after Pinellas County in Florida. Trail IV, which is popular for post-ride hydration, is inspired by the Mexican suero drink James and Miriam shared when they met in Cancun. At their newest location inside Phat Tire-Bella Vista, Grindstone serves acai bowls, breakfast tacos, and a Cuban sandwich called “Ybor,” named after Ybor City, a predominantly Cuban area of Tampa. From the beginning, however, Grindstone has served four signature drinks, which include Miriam’s Café de la Olla Latte. “I was born and raised in Mexico, and the piloncillo we use to make the syrup is shipped in from Mexico,” she explains. “The sugar is the raw presentation of the cane sugar; it’s not processed. I melt it in water, and it becomes the syrup, and then I’ll add cinnamon, anise star, and clove to make the Café de la Olla.” While they pull much of their personal histories into their brand, the Wallaces never claimed to be coffee experts when they started. “We didn’t really know anything about coffee at the beginning,” James says. “We really leaned on our community to learn about sourcing, roasting, and making coffee.”

38

H OT SP OT | FO O D + BEVERAGE

Their humble launch into coffee entrepreneurship began with help from Airship and later to a relationship with Alpha & Ωmega founder Nick Adolphsen, who is now Grindstone’s roaster. Adding baked goods to the menu, they found local sourdough specialist Boston Break Co. through Instagram, which sparked Grindstone’s mission to collaborate with more Bella Vista-based food brands. Today, they partner with Granola Gal, Front Porch Cravings, Natural State Beverage Company, Kindred, Natural State Bakery and Ozark Mountain Bagels, serving hot drinks out of mugs made by Sugar Creek Ceramics. The future for Grinstone looks to include a third, independent location, but for now, locals can enjoy their unique fusion of trailhead fuel at Gear Garden and Phat Tire in Bella Vista.
