As a reader, you’ve known and supported Bend Lifestyle throughout these past six years and as we celebrate where we’ve been, our eyes turn to the possibilities of the future. With this New Year, we look forward to the change and growth that lies ahead. As you can see on the cover of this issue, we’re excited to unveil a new look. The change coincides with the strengthening of our tie to the CityLifestyle.com website that offers even more connection with the local Central Oregon community, and to cities all across the country. This first issue of 2022 focuses on wellness. Starting with healthy meals, local resident Antonella (Toni) Caporello shares delicious recipes with Italian flair from her recently published cookbook based on what she calls “Biological Cuisine.” We talked with local health experts including Dr. Peter Palacio, whose practice focuses on inner health and outer beauty. His team at Viva! Gyn helps women to feel their best on the inside as they experience midlife changes, but also look their best on the outside as they age by taking advantage of current aesthetic offerings. We also talked with Central Oregon Radiology Associates about the minimally-invasive alternatives they can now provide through high-tech vascular and interventional radiology. Paying tribute to our backyard playground and the outdoor health benefits it provides, our story “Mt. Bachelor Love” highlights three long-time employees of Mt. Bachelor who share why working up at the mountain is so much more than a job. Lastly, check out our list of local resources for health and relaxation in this issue’s Local Experiences. SE T A P L ACE AT YOUR TA BL E CREATE HEALTHY MEALS AT HOME WITH A SERVING OF ITALIAN HOSPITALITY
For Antonella (Toni) Caporello, multiple guiding forces uphold her approach to cooking, including her family history and Antoine de Saint-Exupéry. Her recently published cookbook, “Add a Place at Your Table,” exudes Italian hospitality. “Since I grew up in Italy, it’s an integral part of my cultural heritage,” she says. Toni spent the first 39 years of her life Italy, with her family hailing from Padova, 24 miles inland from Venice. She and her husband moved to Bend in 2015. Her cookbook draws on life experience, her own health journey, and inspiration from SaintExupéry who wrote, “Perfection is achieved not where there is nothing more to add, but when there is nothing left to take away.” For Toni, simplicity in the kitchen is key.
B I O L O GIC A L C UI S INE Her philosophy is summarized in what she terms Biological Cuisine. As the name implies, Toni’s recipes are thoughtfully in harmony with the needs of our bodies. “I cannot claim to have invented anything new,” she says. “I have given a logical name to a way of cooking that already existed when we had no other choice than to make our food from scratch with naturally wholesome ingredients.” Toni focuses on the essential elements of fresh, organic, wholesome, unprocessed and seasonal ingredients that she says lead to healthy well-being and weight, plus prevent illnesses. To start the new year, she suggests planning ahead and eating at home as much as possible. Here, she shares a few health-forward recipes to create and serve at your own table. BiologicalCuisine.com

HALIBUT ‘EN PAPILLOT TE’ INGREDIENTS • 2 Halibut fillets, about 6 oz. each • 16 Green olives (like picholine), pits removed • 3-4 Tbsp. Extra virgin olive oil • 1 tsp. Green pepper berries (capers) • Sea salt to taste • Fresh basil, parsley, thyme
DIRECTIONS 1.) Preheat oven to 400 degrees. 2.) Cover a baking pan with a big piece of parchment paper approximately three feet long. You must have enough paper to close it loosely around the halibut. 3.) Grease the center part of the parchment paper with oil and place the halibut on it. Scatter olives, capers and herbs on the halibut fillets, and add the remaining oil. 4.) Grind sea salt on the fish and close the paper loosely around the halibut, but tightly at the seams so that the heat cannot escape while the fish is cooking. 5.) Bake for 20 minutes. Carefully open the paper, starting from the top, to let the steam inside the wrap evaporate for a few seconds before plating. You can also wrap the fillets individually and place each open wrap directly on the serving plate.

CELERY AND MACADAMIA PESTO INGREDIENTS • 1 oz. Fresh celery leaves • 1 oz. Spinach leaves • 1 oz. Macadamia nuts • 1 oz. Pecorino cheese • 6 Tbsp. Extra virgin olive oil DIRECTIONS 1.) Wash the celery leaves and the spinach. 2.) Put the first four ingredients in a blender with two tablespoons of extra virgin olive oil. Blend on low and slowly increase the speed. 3.) Add two more tablespoons of olive oil and blend for a few more seconds. If the ingredients don’t blend well, add one tablespoon of water. 4.) Taste and adjust for salt. The result should be a smooth, light-green sauce. Antonella Caporello, author of the recently published cookbook, "Add a Place at Your Table."
BOLOGNESE R AGU INGREDIENTS • 1 lb. Mixed ground meat (veal, pork, beef) • 1 Carrot • 1 Stalk of celery • 1/2 Yellow Onion • 2 cloves Garlic • 1 sprig Rosemary • 1 cup Water, hot • 1/4 cup Olive oil • 1 cup Tomato sauce* preferably Toni’s homemade recipe, found in her book “Add a Place at Your Table.” • 1 cup Milk DIRECTIONS 1.) Finely chop the onion, carrot, celery and sauté in olive oil, together with the garlic. 2.) Add the rosemary, and the meat, then brown the meat for five minutes on high heat. 3.) Add salt and pepper, then cover and simmer for 60-90 minutes. If the sauce gets too dry, add some hot water. 4.) Uncover, add the hot milk and let it evaporate for five minutes, stirring often the milk will balance the acidity of the tomato sauce.

ORECCHIE T TE WITH BROCCOLI R ABE INGREDIENTS • 10 oz. Orecchiette pasta • 1 lb. Broccoli rabe (rapini) • 4-6 quarts Cold Water • 6 Tbsp. Extra virgin olive oil • 10 Anchovies, canned • 1 oz. Pecorino cheese, grated • 2 Tbsp. Bread crumbs • 2 tsp. Salt • A few flakes of Red pepper
DIRECTIONS 1.) Start the water to boil, in a pot big enough to cook the first two ingredients. Don’t be deceived by the amount of broccoli rabe as they will significantly decrease after cooking. 2.) Cut off and discard the tough ends of the broccoli rabe, wash them thoroughly, and cut them into two-inch pieces. As soon as the water reaches a full boil, add first the salt and then the pasta. Gently stir, and after three minutes add the broccoli rabe. 3.) While the pasta is cooking, warm up four tablespoons of oil in a saucepan and cook the anchovies until they melt. 4.) In a separate pan, toast the bread crumbs with two tablespoons of extra virgin olive oil. 5.) When the pasta is cooled al dente (follow package directions for cooking time), drain the pasta and broccoli rabe, transfer them into a serving bowl, dress with the anchovies and oil mix, grated Pecorino cheese, red pepper, toasted breadcrumbs. Toss and serve hot.

While life-work balance in Bend includes dreams of lunchtime laps on trails of snow, there’s a special commute when your office is Mt. Bachelor. For Cary Stanfill, Gary Camp and Terry Blaylock, and their cumulative 132 years of employment at the mountain, they share work at a place where they played in their youth, and an early morning drive they love. Whether arriving to see the lights of a snowcat grooming runs, the moon setting as the sun rises with an alpenglow, or a herd of elk seeming to float above a dawn’s fog as they graze along Century drive, these three share reasons they first visited the mountain playground of Central Oregon, and why they stay:
“I first visited Mt. Bachelor from Portland at age 10 for a weekend and told my family, ‘This is the most incredible place’”! Cary studied Forestry in college and took a job at Bachelor after graduating so she could ski, and she never left. She has worked and overseen almost every branch of service, from food and beverage to security, ticketing and transportation.
FAVORITE PART OF THE JOB: “Every day is different,” she says. She loves the people and the relationships formed with both casual guests and the deep relationships formed with best friends from her first days at the mountain.

FAVORITE PART OF THE JOB: Gary has helped implement almost every chair on the mountain, and is referred to as “The Rememberer” by co-workers. He understands the many parts that make the mountain run with all the services of a small city, he explains. His mind is a resource for the technical details to keep things going. Gary first came to the mountain in 1976 and has skied plenty. He also has eight horses on his property east of Bend, but his favorite way to enjoy the mountain is, “Just being there.”

FAVORITE PART OF THE JOB: Terry remembers visiting Mt. Bachelor at age 12 when he’d be “turned loose” to explore. His many stories from the hill include skiing routes and places he and his friends called Cornice Land or The Notch that are parts of Avalanche or Outback we know today. “I can always find a perfect day,” he says. Even when it’s stormy, there is always a hidden glade for a late afternoon “stack attack” for those who know the mountain well.

Women going through perimenopause and menopause often have a lot of questions and concerns about the changes happening to their bodies, both inside and out. Unfortunately, they’re often told that these changes are just a normal part of aging and something they have to live with. One local medical practice is setting out to prove that this is not the case. “I was part of a busy OBGYN practice for 12 years and felt like we weren’t managing and caring for women after their childbearing years well,” says Dr. Peter Palacio, the founder of VIVA! GYN in Bend. “I especially knew that we weren’t handling women in menopause very well. I thought that we could do better, and I think I struck a nerve because women were feeling unheard,” he says. One of his main focuses is to educate women about midlife and menopausal changes that happen to them physically, mentally, and emotionally. “A lot of women will think it’s just them—that they’re broken when it’s normal age-related physiology.” While VIVA! GYN provides all the pertinent medical exams found in a gynecological practice, it also offers so much more. One of its therapies is Mona Lisa Touch®, which Dr. Palacio explains is a non-hormone laser treatment that effectively treats vaginal and bladder symptoms that occur with menopause. It takes less than 10 minutes and is painless. Another focus is to assist women with not only feeling their best on the inside, but also looking their best on the outside. “We believe in helping patients live their best lives,” says Physician Assistant Alyssa Abbey, who has more than 15 years of experience in dermatology and aesthetics. “When people start
feeling better inside, for example, by having more energy, more vitality, better sleep, improved relationships, and a better mood, it only makes sense that they would want their appearance to reflect just how good they feel,” she says. Alyssa says that offering aesthetics along with treating women as they age makes absolute sense. They currently carry the Galderma line of aesthetics which includes a complete line of facial fillers, as well as Dysport® neurotoxin. There are more services to come as VIVA! GYN plans to provide facials, peels, microdermabrasion, and more in the new year. “I find aesthetic medicine very rewarding,” says Alyssa. “Sometimes doing something very subtle like a bit of filler or Dysport® can go miles in helping someone feel better when they look in the mirror. We’re not changing their appearance, only softening some of the evidence of aging in a natural and beautiful way. Luckily, for many patients this alternate approach exists in Central Oregon. “Interventional radiology is a high-tech problem-solving specialty,” says Dr. Garrett Schroeder, an interventional radiologist with Central Oregon Radiology Associates (CORA), the largest medical imaging company in both Central and Eastern Oregon. “What we do is specialize in minimally-invasive image-guided medical procedures. Most of what we do is often accomplished through a small needle starting at the groin or at the wrist using the blood vessels as a map to reach wherever we need to go in the body with medical imaging,” says Dr. Schroeder. These procedures can treat issues from strokes in the brain to opening up blood vessels in the feet. “Some of the common things we treat in the outpatient setting are uterine fibroids, varicoceles, spine fractures, varicose veins, peripheral vascular disease, and venous disease,” he says. “We also collaborate with oncologists and provide cancer therapies.” Dr. Schroeder is very excited about two newer options patients living in Bend now have to treat medical problems that tend to plague an aging population. “We are now able to treat enlarged prostates, which is a common problem among the retirement-age group. This procedure is called Prostate Artery Embolization [PAE], it relieves many of the common symptoms
associated with this condition. We performed the first PAE procedure in Oregon right here in Bend and I’m really proud of that,” he says. The other is a new way to treat pain associated with arthritis in the knees. The treatment, called Geniculate Artery Embolization, reduces the amount of blood flow to the inflamed portions of the knee that are causing pain. CORA has five experienced and highly trained interventional radiologists on staff. “We have an excellent team,” he says. “The physicians’ expertise here is unmatched when it comes to this type of therapy, and we all have the tools needed.” The office staff, from the people who schedule appointments on the phone to the ones who greet you when you walk in the door, are, as Dr. Schroeder describes, “Extremely knowledgeable, friendly and efficient.” To increase the availability of care, CORA recently opened an outpatient facility for interventional services on the west side of Bend. “Before, we did every procedure in the hospital. Now we are now able to accommodate many patients on an out-patient basis, which has been critical during the COVID pandemic” says Dr. Schroeder.
