We had the pleasure of spending time with Spring Alaska Schreiner, owner of Sakari Farms in Tumalo, to share her story on the following pages. Sakari Farms in an Inter-tribal farm serving Native Americans near and far by growing food, preserving Native seeds and offering a gathering place and educational opportunities to teach what it means to honor the seasons of each crop. Spring describes the very essence of Sakari Farms as “honoring the natural rhythms of life and the seasons of food and plants that nourish each of us, body, mind and spirit.” With the changing of the season it’s also helpful to be proactive with our emotional wellness. In this issue, Allison Jones, MN, FNP of Bend’s Evolve Health updates us on the cutting edge treatment options they offer for depression, anxiety and more, to help people get back to a better quality of life. October brings Halloween fun, and as your family prepares for this, keep in mind the safety of your pets. In this issue, veterinarians Erin Miller and Lauren Stayer of Pawtown Veterinary Care provide tips to keep our pets safe and feeling secure on Halloween this year. There is an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood dining table, which can be incredibly powerful and comforting. Food brings us all together, whether we are sharing a meal with loved ones or enjoying a night out on the town. Halloween, with its costumes and candy, is a fun holiday for both kids and adults. Lighted jack-o’-lanterns and spooky decorations are also a big part of the magic. Unfortunately, this is also a holiday that carries some hazards for your four-legged family members. Dr. Lauren Stayer and Dr. Erin Miller of Pawtown Veterinary Care in Bend, which opened in March of this year, work diligently to keep the animals in their care healthy and happy. “Lauren and I have been friends and colleagues for eight years,” says Dr. Erin. “We wanted to start a practice that felt personable, like a family practice — where our patients, clients and staff felt cared for.” Here, they provide helpful tips on keeping pets safe this Halloween: Candy After the candy has been brought home and sorted, and little ones (and their parents) have had their fill, make sure to stash the leftovers someplace safe. “Chocolate, especially dark chocolate, is toxic to pets, and if they ingest the wrappers of the candy, that can also cause problems,” says Dr. Lauren. “Not all candy is toxic, but a lot of it can cause vomiting or diarrhea, upset stomach and other issues.” Candy containing artificial sweeteners (like Xylitol) and macadamia nuts are also toxic to pets. Pets ingesting any of the above should be taken to a veterinarian right away. “Time is important,” adds Dr. Erin. “You can also call the *Pet Poison Helpline (855-764-7661) or the *ASPCA Animal Poison Control Center (888-426-4435; fees may apply) for advice on whether to seek care.” Pet Costumes “Let's face it, pets in costumes are adorable!” says Dr. Erin. “But the majority of our pets do not like dressing up. Costumes can be uncomfortable, cumbersome or even dangerous.” If you want to dress up your pet, here are her recommendations:

• Do not leave a costumed pet unsupervised • Choose a costume that does not limit mobility or vision • Avoid anything that could shift or tighten around a limb or neck • Make sure the costume is not too hot or too heavy • Limit the amount of time your pet is in costume Adds Dr. Lauren, “I would also avoid anything with very small pieces that the pet could chew off and ingest, which could then cause a foreign body blockage.” Human Costumes Many animals may become fearful or even aggressive when they see someone in unfamiliar attire. “Costumes can be scary to pets, especially when they can't see people's faces,” says Dr. Lauren. “Consider keeping your pet in a separate room or in a crate during trick or treating hours,” adds Dr. Erin. “Or have a designated family member keep the pet on a leash with them inside the house.” This will also prevent them from running out the door every time it’s opened. “It’s important to have your pet chipped,” Dr. Lauren explained. “If they have a microchip and they're found, then any clinic or humane society can scan the chip and be able to contact the owner.” There are also GPS collars to track your pet. Decorations “Consider your pets when choosing Halloween decorations,” says Dr. Erin. “Avoid candles, and be mindful of electrical wires or things that are easy to knock over. It’s like a form of trauma therapy.” —Spring Alaska Schreiner Just off Highway 20 near Tumalo, nestled at the base of a small cliff, is a piece of land that was once inhabited by local Native tribes. In 2018 this land was purchased by Spring Alaska Schreiner and became known as Sakari Farms, an Inter-tribal farm serving Native Americans near and far, growing food, saving seeds, offering a place to gather while teaching what it means to honor the seasons of each crop. Encompassing just over 2.5 acres, Sakari Farms is not a large piece of land. “You can do a lot with small spaces,” notes Schreiner, “What we grow here is full of flavor and highly nutritious, not grown for quantity or uniformity, but for the integrity of the seed and with the intent to feed people and save Native seeds.” An enrolled member and shareholder of the Chugach Alaska Native Corporation and Valdez Native Tribe, Schreiner is also a member of the Indigenous Seed Keepers Network and the Native American Food Sovereignty Alliance. Through these connections she has been collecting Native seeds for over 15 years, and that seed is now being grown on Sakari Farms. “That’s what makes us so unique,” explains Schreiner, “we have Native seeds that other farmers do not have access to.” Schreiner brings years of experience as a resource manager, ecologist and agriculturist to Sakari Farms. Native seeds grown on the farm are tribal seeds from Wisconsin, Minnesota and the Southwest, primarily because these tribal lands mimic the climate of Central Oregon. A walking tour of the farm reveals sections of land planted in Hopi Blue Corn, Oneida Cranberry Beans, Hopi Red Amaranth, Apache Safflowers, White Buffalo Calf Tobacco, Bachelor Buttons, Marigolds, potatoes, Hopi Creole Red Onions, Native wild strawberries, Native American Sweetgrass, Navajo Tea and herbs planted in a large Medicine Garden. Three large greenhouses are home to Wisconsin Tribal Geti Squash, a variety of tomatoes and peppers, young asparagus, white sage and much more. Every plant grown here has a purpose and is utilized completely.

A small irrigation pond on the farm is multi-purpose. “We work hard here, we don’t have enough help, like everyone,” Schreiner states. With a smile, she adds, “This is where we do cannonballs… you’ve got to have some fun!” Schreiner also explained that this irrigation pond goes dry every other week. “We struggle, along with other farmers in the county, with issues related to farm worker housing, water rights and infrastructure development costs,” she says. According to Schreiner, Sakari Farms has over 40 commercial accounts across the country, selling crops grown and preserved at the farm to Native-owned restaurants and chefs, and to Native Reservation stores and trading posts. “Blossoms from our Geti Squash are dried and sent to a restaurant in Los Angeles where a tribal chef uses them in dishes,” she says. Schreiner’s husband, Sam, is an integral part of the farm, a chef and a “pepper whisperer.” He is responsible for an original line of hot sauces made from the peppers grown at Sakari Farms. These hot sauces, along with other Sakari Farms products grown, preserved and created on the farm, can be purchased at their online store. “Most of our products, within 48 hours to two weeks, are sold out because everyone knows generally when we harvest certain crops and when our products are available, once a year,” says Schreiner. “We are creating this anticipation and appreciation… they know there’s only one time a year something is available, so they wait, then ration it, save it and appreciate it more. It’s pretty cool.” “We teach the value of the seed, how to take care of it . . . you only get to do it once,” notes Schreiner. “We teach the lesson to keep an eye on the sky, on the weather. We teach reconnection to the land. Community Education Offers Cooking Classes to Inspire Foodies

This fall, chef Candy Argondizza will be teaching a number of culinary courses through Community Education at Central Oregon Community College (COCC). Sure to bring out the foodie in all, these courses are perfect for when the weather turns cold, and we want to huddle with family and friends in the kitchen. One of the courses she teaches is Asian-Style Steamed Buns, also known as Bao Buns. They are a delicious, warm, fluffy treat of stuffing wrapped inside a sweet, white dough. Attendees will be able to

make their own leavened dough plus hearty fillings to stuff them with including ground pork, shiitakes, mushrooms, ginger, garlic and hoisin, and General Tso’s chicken. These are a Chinese delicacy to enjoy any time of year. Try making them yourself with this recipe provided by Chef Candy’s Ingredient Studio. Steamed Buns YIELD: 6 buns These steamed buns can be filled with almost anything. For this recipe you’ll only need one cup of most fillings, just be sure the filling isn’t too wet. Try something unique like a Korean Bulgogi meat filling or go vegetarian with a miso carrot filling. The options are limitless! INGREDIENTS • 1 tsp. instant yeast • 1/4 cup warm water • 1 1/2 cup all purpose flour • 1 1/2 Tbs. sugar • 1/4 tsp. baking powder • 1/4 cup warm milk • 1/2 Tbs. canola oil DIRECTIONS 1. In a small bowl, sprinkle the yeast over warm water until bubbles begin to form and the mixture becomes frothy.

2. In a large mixing bowl, whisk together the flour, sugar, and baking powder, make a well in the middle and add the active yeast, milk, and oil. With a large fork, combine the ingredients until a shaggy dough starts to form. Then with your hand, start kneading the dough until it becomes smooth, about 5-10 minutes. 3. Place the dough in a large lightly oiled bowl, cover with plastic and place in a warm area for about 40 minutes to 1 hr. The dough will double in volume. 4. In the meantime, make whatever filling you want to use. You’ll only need about 1 cup of filling mixture for this size of recipe. Make sure that your mixture is cooled before forming the buns. 5. On a clean, lightly floured surface, roll the dough into a long cylinder and cut into 6 equal parts and roll each into a ball. Flatten each ball into 4-inch circles, leaving the center a bit thicker then the edges. Put a heaping tablespoon of filling in the center of the dough and bring the edges to the middle pinching to seal. 6. Arrange the buns on a parchment lined baking sheet and cover them with a clean cloth. Allow the buns to rest for 10 minutes. 7. In the meantime, fill a steamer, bamboo or stainless, with a couple inches of water and bring to a boil. Place the buns on individual parchment rounds and place into the steamer. Be careful not to overcrowd the steamer, steaming in batches is necessary. Steam the buns for 12-15 minutes in the covered pot. Remove the buns from the steamer and serve warm.

While we all know the basics for optimum physical health — eating healthy, getting enough rest, staying hydrated and regular exercise — emotional and mental wellness should not be overlooked. Unfortunately, many people experience anxiety and depression more often this time of year with shorter daylight hours and the stress of the holiday season. Over a year ago, Evolve Health opened their Bend clinic offering cutting edge treatment options for patients with chronic illnesses, mental health issues, along with therapies that address overall health and wellness. According to Evolve Health Clinic Director Allison Jones, MN, FNP, “Our first clinic opened in Portland about four years ago and we had a couple of patients from Bend driving over 1-2 times per week for treatment. We saw a need here.” Evolve Health provides IV therapy options including IV Ketamine, IV Hydration therapy and intranasal Spravato (esketamine). The Evolve team focuses on emotional wellness and the treatment of a variety of mental health diagnoses, including anxiety and depression, for patients who have had very minimal or temporary success with other allopathic treatments, including antidepressants and psychotherapy. “This is not a quick fix or silver bullet,” explains Jones. “If antidepressants and therapy work, that may be a great option. But, if that doesn’t work, and people are in

a really dark place and cannot function in daily life the way they want to, then this is a really good option, and we often see people turn around very quickly.” Typical IV Ketamine treatment is 4-6 infusions in a three-week window, then spacing them further apart. With Spravato (esketamine) intranasal therapy, patients have to commit to treatments twice a week for four weeks, then once a week for four weeks. Treatment schedules thereafter will vary with each patient. Behind the spa-like setting with clean, comfortable, private rooms, is a medical clinic that offers a safe environment and close, continual observation by clinical providers. A medical diagnosis from a primary care provider or psychiatric provider and a referral are necessary for most treatment options offered at Evolve Health. “We take referrals for treatment, but we do accept self-referrals as well because we have psychiatric mental health nurse practitioners on staff,” Jones states. Along with IV Ketamine and Spravato nasal spray treatments, Evolve Health also offers IV Hydration therapy. This therapy option offers a unique blend of fluids, electrolytes, vitamins and anti-oxidants, to enhance wellness and treat a wide range of chronic illnesses, exhaustion and stress.

Evolve Health’s patients come from all walks of life, from a variety of demographics. “Ketamine can be used to treat depression, anxiety, PTSD, eating disorders, and bipolar disorder, among other mental health conditions, including end-of-life emotional concerns,” explains Jones. “Across the board, mental health is underserved,” says Jones. “There are just not enough resources.
