Foodie: a person who has an ardent or refined interest in food, and who eats food not only out of hunger, but also as a hobby. i.e., a person who enjoys food for pleasure. At first thought I wouldn’t call myself a foodie. What pops to mind is artfully presented, very small portions of food. Don’t get me wrong, a 10-course meal here and there feels adventurous and special, but not usually what I’m craving nor something I have the time for. But when foodie is defined as “a person who enjoys food for pleasure,” that is something I (and I’m sure most of us) can relate to! I’ve always loved dining in Seattle’s creative and delicious restaurants, and it’s exciting to see more options pop up on the Eastside. That said, I’m still waiting for that perfect brunch spot – the opportunity is ripe! What are some of your favorites? The late Carmine Smeraldo’s legacy is alive and thriving in Bellevue through the restaurant owned by his sons, Carmine Jr. (called “C.J.”), 31, and Phillip, 29. The pair took over their father’s business — Il Terrazzo Carmine in Pioneer Square — in 2012 when he died suddenly of a stroke. The brothers have continued the restaurant’s success with the help of their loyal community and started to define a legacy of their own. The roots of their story are grounded in their father’s. Carmine was born into poverty in Naples, Italy in 1942 as the last of seven kids, in the midst of World War II. At the tender age of 19, Carmine moved to Canada. He accepted entry-level jobs including janitorial work to make ends meet, and practiced English in night school. When he began working in restaurants in Vancouver, he met Italian-Canadian chef Umberto Menghi. This chance meeting would prove to be life-changing for Carmine. “Umberto was one of the three premier Italian chefs in the entire country,” says C.J. “Before the internet, you didn’t get famous because of news articles, blog posts, and Instagram — you got famous

because of cookbooks, television shows, and word of mouth. Umberto was a big deal in Canada, and my dad really looked up to him.” Carmine worked closely with Umberto and considered him a mentor. “Eventually my dad wanted a little piece of the pie. It didn’t work out for him with Umberto, but they remained friends over the years,” says C.J. In 1984, Carmine opened Il Terrazzo Carmine in Seattle. His dedication to excellence in dining drove him to run a successful business alongside his wife and bring their sons to work at the restaurant as teenagers. When the patriarch of the family passed away, both sons stepped in to help keep the business afloat. Their mother suggested that C.J. take a job at Canlis to learn what he could from new mentors in light of
his father’s passing. The owners graciously took him under their wing. “That place was nothing short of incredible,” he says. “They allowed me to pop around and do different things in the restaurant…I spent a lot of time shadowing the floor manager, which was very helpful.” He worked at Canlis for nearly a year, soaking in as much knowledge as possible. After that, he and Phillip opened Carmine’s in Bellevue. Now, both of their restaurants are packed with reservations and loyal customers — many of them remembering the service they once received from the late Carmine himself and appreciating what’s been passed to the next generation. Some of the best advice for running a restaurant, C.J. says, came from his mother. “Open your eyes. When you walk in the restaurant…Take pride in what you’re doing.”

Few things warm the soul like the aroma of roasted chicken. This dish is inspired by my passion for simple comfort food elevated by vibrant flavors and rustic dining. Ras el Hanout is a blend of aromatic spices that embodies the history of the spice trade, and every cook from Morocco to Tunisia has their own traditional recipe which adjusts from sweet to spicy.

CHICKEN: Preheat oven to 350. Rub chicken with oil and spices. Add onions, garlic, and ½ of the stock to roasting pan. Roast chicken on top of vegetables for 35-45 minutes. Baste chicken frequently with stock in roasting pan. Remove once fully cooked, add the remaining stock reduce to saucy consistency. COUSCOUS: Bring seasoned vegetable stock to a bowl and pour over couscous in medium bowl. Cover with plastic for 15 minutes. Uncover and fold in the remaining ingredients. CARROTS: Slice the carrots into 1/4” rounds. Simmer in vegetable stock with olive oil, parsley, and mint. Season with salt and pepper. Serve with spinach, chard, or kale sauteed with fresh garlic. WHAT IS THE INSPIRATION BEHIND OPENING FARINE? My wife, Stephanie, and I travel to Western Europe fairly often – both to see my family in Belgium, but also because we truly love the history, cuisine and vibe of the region. When we would travel with my two sons, we had to find restaurants and cafes that would be enticing and satisfying to children’s appetites. And we realized that we gravitated towards a specific type of eating experience – one that was warm, open, casual, and high quality. Farine draws from our collective experiences – a place that recalls the culinary traditions of Western Europe and is close to my roots, but also speaks to the artisanal quality of freshness and craftsmanship.
TELL US ABOUT YOUR WORK HISTORY. It’s a wonderful twist of fate – I actually came to the Eastside, when I was 15, as a foreign exchange student from Belgium and I spent a year at Interlake High School. Years later – after working with Microsoft in places like Cote d’Ivoire and San Francisco – I made my way back here to the Eastside. It’s been rewarding to participate in different cultures around the world, learning how to do business in different countries and regions.

DESCRIBE THE INTERIOR DESIGN STYLE OF THE BELLEVUE LOCATION. Our interior design is centered on inviting our customers into the Farine experience and showcasing the talent of our team. When you enter, there’s a massive bakery window that lets you see our bakers making croissants, baking bread, and finishing our tarts. And you can see into our kitchen window, as our team prepares all of our bistro items like our soups, salads and tartines. My wife focused on the dining and customer spaces, drawing on her childhood experience of living in resorts and hotels. Everywhere we travel, she was always taking notes to understand the combination of function and style. The palette at our Bellevue location includes crisp white countertops balanced with a rich “Farine” blue, and highlights of warmth through the brass accents and wood floors.
FAVORITE THING ON THE MENU? I would have to say the Farine Basket – and of course an espresso!

PASSING THE BATON Chef Bobby Moore Builds on the Legacy of Bis on Main as the New Chef and Owner. TELL US ABOUT YOUR CULINARY WORK EXPERIENCE. My culinary work experience started at age 15 working at an Italian restaurant in Clear Lake, Texas. I moved to Seattle in 1993 and worked in a variety of restaurants while I attended Seattle Culinary Academy. In 2001 I was recruited to join the Barking Frog and in 2008 promoted to Executive Chef. I spent the last 20 years building a destination restaurant experience at Willows Lodge, which would become the heart of fine dining in Woodinville Wine Country. I’m excited for my next chapter with the purchase of Bis on Main and the new Bar Moore. It is a dream come true to own my own restaurant and bar and I’m thrilled to honor the legacy of Bis on Main and be a part of this vibrant downtown Bellevue community.
WHAT DO YOU MOST ENJOY COOKING? I have always loved BBQ, especially with my history of living in Texas. Spending time in Hawaii and the Northwest, I love cooking fish and fresh seafood. I also love making pasta, and Italian and French influences.
HAS RESTAURANT OWNERSHIP ALWAYS BEEN A GOAL? Absolutely. It is every cook’s dream to run their own place. I was so fortunate to call Willows Lodge and Barking Frog home while we raised our young family. It provided me the flexibility to be the kind of Dad I wanted to be, to have a more balanced life, while being a part of an incredible team of staff that is like family to me. My boys are now grown so the timing makes sense to start a new adventure.
WHAT INSPIRES YOU? My family, food, laughter. Sharing a meal, coming together around the table. Joyful people.
ADVICE TO ASPIRING CHEFS? Everything I learned about working in a kitchen I learned as a dishwasher and that is a great place to start. Get to learn the vibe and culture of a kitchen and earn the respect of other cooks to work your way up.

Jungwon Jin and Haesun You, rise each morning, seven days a week, to stock, display and prep the food and goods they purvey as owners and operators of the Medina Market, a.k.a. “The Green Store.” Jay and Ann, as they are known to the Medina community, have been doting on shoppers since 2011. The small scale and small town convenience of their leased corner store location, coupled with their reliable smiles and friendly small talk, has allowed them to form close friendships with their loyal customers, as evidenced by the display of holiday cards and steady supply of hand-delivered garden bouquets crowning the coffee counter. These everyday conversations about food, family and healthy lifestyles led them to introduce two popular Korean dishes to their menu.
