That’s a similar mantra to one I say to myself nearly every morning as I make the bed. It’s also what our cover star Troy Aikman says is a saying they have at EIGHT, the beer he launched that is one you can feel good about, in part because it’s made with organic grains, has no sugar and clocks in at 90 calories a can. In our interview the former Dallas Cowboys quarterback he also shares insight on his daily routine for mental and physical wellness, being a dad to daughters and why EIGHT had to be based in Austin. The rest of the issue is filled with men (and restaurants) in Austin doing amazing things. Dmitri Julius is Chief People Officer at ICON, a company 3D printing houses and revolutionizing homebuilding, which has huge implications for housing those without homes in Austin – and potentially outer space! BLOOMING IN BUSINESS TROY AIKMAN YOU’VE SAID YOU’RE A BETTER FATHER, FRIEND, AND ATHLETE WHEN YOU ARE EATING AND DRINKING WELL. WHAT WOULD BE AN IDEAL DAY FOR YOU TO FUEL UP. BREAKFAST, LUNCH AND DINNER – AND DON’T FORGET TREATS! My diet consists of mostly organic fruits and vegetables, along with some protein: grass-fed beef or pasture-raised chicken, usually. I drink a protein smoothie every afternoon, and I do take a few supplements like magnesium, nitric oxide, Omega 3 and Vitamin D to ensure I’m getting all my recommended nutrients. Regarding treats... I’ll be honest, I don’t have a regular or go-to ‘cheat meal’. Occasionally, I’ll grab a slice of pizza, some Texas barbecue but I’m pretty disciplined. Of course, my favorite treat is an ice-cold EIGHT at the end of a hard day.

I believe in physical exercise to reduce stress and support longevity, and I practice good nutrition and clean eating to maintain my lifestyle. I start every day with 20-30 minutes of meditation, and I try to end each day by reading something that inspires me. I also strongly believe that there’s nothing that’s quite as good for your emotional well-being as connecting with friends and family over a beer. Life is about balance, and the sacrifices we make for success shouldn’t compromise our enjoyment of it. That’s why we launched EIGHT.

out to build a beer that measures up to the same standards we hold ourselves to in every other aspect of our lives, we went straight to the best minds in brewing, partnering with the distinguished Food Science and Technology Department and Oregon State University to develop our formula. That process took two years, and lots of trial and error, as we dialed things in. We’re extremely proud of the final result. EIGHT is brewed with organic grains, antioxidant- rich Hallertau Taurus hops, no adjuncts, and no sugars. It tastes amazing, yet clocks in at just 90 calories and 2.6 grams of carbs. That’s what we mean by no shortcuts and no excuses.

I’ve always been a very active, involved dad. It’s been one of the hardest jobs of my life, but of course it’s also the most rewarding. Over the years, we’ve had countless conversations about life lessons, but two themes always seem to stand out: first, that the key to succeeding at pretty much anything is the willingness to out-work anyone else. That’s been a hallmark of every success I’ve ever had. Second, I’ve always emphasized the importance of selecting and supporting good teammates. No matter how hard you work, when all is said and done, the team around you will probably be the number one

IF YOU COULD CREATE A PERFECT NIGHT OUT IN AUSTIN, WHAT WOULD IT BE AND WHERE WOULD YOU GO – AND WITH WHOM? A run on the trail alongside Lady Bird Lake, dinner with my girls, and an ice-cold EIGHT with a few buddies.

FAVORITE BOOK? I have a lot of favorites, but a few years ago, I read The Untethered Soul, by Michael Singer, and it had a pretty profound impact on my outlook on life. I also enjoy biographies of great leaders, from both sports and outside athletics.

LAST SHOW YOU BINGED? Honestly, I don’t spend a lot of time on the couch, but I do spend hours watching film in

preparation for each week’s broadcast during the season. Does that count?

FAVORITE PLACE TO TRAVEL? I have a home in Montecito, California so I visit regularly and have always found it restorative.

GO-TO MEAL TO COOK? Filet, sweet potatoes & Brussel sprouts.

FAVORITE SNACK? To be honest, I’m not much of a snacker. I try to stay disciplined, and while I know that people like to talk about their weekly ‘cheat meals’, for me, that more of a once-amonth occasion.

FAVORITE THING TO DO IF YOU HAVE AN HOUR TO YOURSELF? I like to spend a lot of time reading, usually non-fiction, though not always. I like books that inspire me to think about things differently, or that profile people from whom I know I can learn something new.

Magical SUSHI BY SCRATCH IS AN EXPERIENCE TO BE SAVORED

If you’ve been fortunate to secure a reservation (available the first of every month via Tock), your Sushi by Scratch experience begins as you drive down the gorgeous road leading to the Hyatt Lost Pines Resort in Cedar Creek. Once you arrive and check in you’re given a welcome cocktail with a burst of flavors sure to wake up your palette. Next, you’re escorted in a group of ten to a speakeasy-like room where your name will direct you were to sit. From there, sit back and watch the chefs expertly prepare a 17-course Omasake you have to taste to believe. Flavors from each bite will dance on your tongue and the unique preparation will continually surprises your taste buds. The edible art, that’s as beautiful as it is delicious, ranges from toro to wagu and sake and/or cocktail pairings are offered for an additional charge. After dinner, revel in the magic of the meal a bit longer digesting with a walk around the resort’s grounds. You’ve probably heard of ICON, the company 3D printing houses! Or, as their Chief People Officer Dmitri Julius explained it, “ICON is an advanced construction technologies company dedicated to revolutionizing homebuilding.” We chatted with him about the role of a CPO and how ICON is changing the world – and beyond! WHAT IS THE ROLE OF A CHIEF PEOPLE OFFICER? The role of the Chief People Officer, by definition, is the strategic leader for our most important asset, our People. That entails everything from Talent Acquisition strategy, retention, and training, to Diversity, Inclusion, and equity planning. It is a wide-ranging HR leadership role, and I love the impact I’m afforded in this role. The responsibility of shaping the company through People is a tremendous responsibility and I try to honor that every day. I’ve watched this team grow from 35 people when I began to over 350 in about a year’s time.

YOU HAVE DEGREES IN BIOLOGY AND MILITARY SCIENCE AND YOU’RE CURRENTLY COMPLETING YOUR MASTERS OF EDUCATION IN SPORTS MANAGEMENT AND A PHD IN CLINICAL PSYCHOLOGY. THAT’S A DIVERSE KNOWLEDGE BASE. WHAT’S YOUR DREAM JOB? Honestly the one I have now. I have the opportunity to impact the world we live in everyday, focus on individuals from communities like the one where I’m from which was low SES, work with incredibly smart people, and shape the future of humanity. It’s very humbling and I’m grateful everyday. In the future, I would love to work with veterans dealing with invisible wounds. I’ve been there and I want them to know they are respected, loved, supported, and represented. WHAT DREW YOU TO ICON? My interest in the built environment started as a kid when I had the opportunity to travel as part of military parents and then when I, myself, became a service

member. I have always been fascinated by the intersectionality between households, neighborhoods and infrastructure. The ideas around how people interact with each other globally and create community. Shelter, being one of our basic needs, is something that can have a significant impact on how we live our lives, especially if we don’t have access to it. I wanted to do something in my career that made a positive impact on the relationship between houses and what makes homes a community. Post-service in the United States Marine Corp, I had the opportunity to meet like-minded philanthropic founders in the home space at a company called TreeHouse, where we explored ways we could improve people’s homes for humans to thrive. It was an incredible opportunity to study alongside Co-Founders Jason Ballard and Evan Loomis at a previous venture. This venture took those same learnings around incremental home improvements and re-imagined a better CONTINUED >

way to build a house, thus launching the construction technology startup, ICON, in 2018, a team I was honored to join. WHAT MAKES AUSTIN A GOOD PLACE FOR ICON TO BE BASED? Austin is such a logical choice for technological advancement and organization building. You have a highly trained and capable workforce surrounded on all sides by top flight universities producing leaders in everything from stem-education, bio-engineering, construction leadership, hardware engineering, robotics and everything else under the sun. The availability and abundance of land for growth as well as a youthful & inquisitive employee base has been met by venture capital and investment in growth. That perfect storm has led to the sort of innovation that companies like ours and others are seeing. That is made evident by the fact that the majority of our staff is from the state of Texas and/or did not relocate from out of state. There’s no place in the world quite like Austin Texas! IS ICON’S PRIMARY MISSION TO PROVIDE AFFORDABLE HOUSING OPTIONS? At ICON we are re-imagining the homebuilding industry to help solve some of the most pressing global challenges of adequate shelter. Shelter is a basic human need. Over 1 billion people in the world live without adequate housing. Homelessness is a problem in cities globally and the average home is far too expensive and inferior for the average person to buy and afford to live in it. The problem will not be solved if we continue to build the way we have been. Traditional homebuilding hasn’t changed in the past 1,000 years and therefore we are on the cusp of a paradigm shift. We have reimagined the future by putting advanced robotics in service to humanity. We have teamed up with world-class architects and partners on this shared mission that will not only create a more sustainable and beautiful world on earth but will also help us become a spacefaring civilization. ICON WAS AWARDED A RESEARCH CONTRACT THROUGH THE AIR FORCE, WHICH INCLUDED FUNDING FROM NASA TO BEGIN RESEARCH AND DEVELOPMENT OF AN OFF-WORLD CONSTRUCTION SYSTEM PLANNED TO SUPPORT FUTURE EXPLORATION OF THE MOON AND BEYOND. DOES THAT MEAN YOU’VE LITERALLY BEEN HIRED TO CONSTRUCT THE FIRST COMMUNITIES ON THE MOON – AND POSSIBLY MARS? The funding from NASA helped launch ICON’s “Project Olympus” to begin research and development of a space-based construction system to support future exploration of the Moon, designed by BIG-Bjarke Ingels Group…I believe the very same technology that’s going to allow us to address our housing challenges on Earth are the very things that are going to allow us to venture off to a new world.

Whether it’s for health reasons, because everything (including that sloppy night out) is captured on social media, or because there are so many fun non-alcoholic options on the market (hello Austin-based Kin Euphorics), people are drinking less alcohol than they once did and it’s become almost trendy to be a teetotaler. As a result, the non-alcoholic beverage space is growing exponentially and ‘dry bars’ have popped up around the country – like Sans Bar in Austin that opened as a series of pop ups in 2017. We chatted with San’s Bar owner Chris Marshall and he shared a couple of recipes that would make for a pretty and refreshing addition to any summer barbecue. HOW DID YOU COME UP WITH THE IDEA TO OPEN SANS BAR? I was working as a substance use counselor when I realized so many clients and friends wanted to still be social but didn’t want to


be surrounded by alcohol. I wanted to offer a space where with good drinks and an opportunity for adults to authentically connect sans alcohol. HAS THE RESPONSE BEEN BIGGER OR ON PAR WITH WHAT YOU THOUGHT IT WOULD BE? When we started, we understood we were disrupting the typical Austin nightlife scene and anticipated that it would take a few years for folks to recognize that our mission was more than a fad. Each weekend, we see 5-6 people come in who are just curious about what an alcohol-free bar looks like. HOW MANY DRINK OPTIONS DO YOU OFFER? We currently offer over 10 zero proof cocktails, 6 beers and 5 wine options. WHAT ARE YOUR MOST POPULAR MOCK-TAILS, IN ADDITION TO THE WATERMELON & MINT NOJITO AND SUMMBER BERRY SMASH? A crowd favorite lately has been The Slow Burn. It features local brand Tenneyson, ginger beer, and a housemade rosemary simple syrup. Another great zero proof cocktail is the Blueberry Mint Julep which features Austin’s only NA bourbon Kentucky 74, muddled blueberries, and a distilled botanical called Amethyst.

With the addition of Hermes on South Congress, Music Lane is starting to resemble Rodeo Drive – and people are here for it. Just over 150 Austinties were treated to a sneak peak of the Parisian fashion house’s third Texas location with a cocktail party at the store the evening before it opened to the public. Following cocktails guests where shuttled to a sit-down dinner at Brazos Hall where Hermes USA CEO Robert Chavez welcomed the crowd and made remarks about returning to his home state, followed by a toast by Florian Craen of Hermes International. For nearly four decades, beloved elementary school P.E. teacher Jim DeLine has been helping generations of young Austinites to focus on the right things, fulfil their potential and be resilient enough to recover from the things that knock them down. Retiring from his place at Highland Park Elementary this summer, the sports advocate who has coached teams of archers from five Austin public schools to victory at the State Archery Championships for the last five years, shares the motivational messages he’s been delivering to children for decades… words we could all do with remembering when life is getting us down.

Championships are forged with 1,000 little victories, each born of insight and purpose. Regardless of skill, regardless of ability, people can all contribute something to the end goal – in a tournament, in a project, in a school, at work. And it starts with showing up and making a commitment to learn and improve – that’s the first victory.


What makes a winner? “Winning isn’t just about finishing in the top spot. That should be a goal but I want kids to think about whether they helped a teammate, were professional, used manners and represented their school well. Those are all things that you can check off as wins.” — Jim DeLine

The most important step is the one you are on. Be present. Be aware. Make sure your head is where your feet are. Don’t get ahead of yourself. Stay humble. Keep working on where you are. I tell the kids a dream without a plan is just a wish. You have to put the work in, day by day, step by step. Be ridiculously faithful to the little things. The devil is in the details. Mindfulness is one of the things I talk a lot about with the kids. Use your brain, think about your actions. We have an archery team acronym, T.E.A.M. T is for tournament scores – and success in anything you do is important, but only 25% of what I want the kids to learn. E is for effort, A is for attitude, and M is for mindfulness. This acronym works for life. I hope these elementary kids take the lessons they have heard shooting bows and arrows with them forever. Comparison is the thief of joy. I give my archers a personal example of this when they start looking at everyone else’s scores around the middle of the season. I used to be a very accomplished classical guitar player… and then I went and saw the LA Guitar Quartet in concert and they

were so good I actually felt depressed and put my guitar down. For good. This was 25 years ago. I thought no matter how much I loved to play and how much I practiced, I’d never sound like that, so what was the point? And likewise, when the kids worry about their scores all their happiness and resolve disappears and is replaced with despair, frustration, doubt and jealousy. I tell them it’s okay to recognise what is going on around you, but the minute you compare yourself to others, you lose more than just the game. You lose the fun - and what’s the point in that? We are all we got. We are all we need! As one of my parent archery coaches Jason reminds the kids, “Rock stars stand alone. Rock solid wins together.” Being able to really look at the people around you – your classmates, your friends, your colleagues - and say “I got your back, in good or bad times” means the world. We’re going to rejoice together or we’re going to commiserate together… we can do anything with the people we have. When we fall, we fall forward. When we look up, we lift up. When we rise, we rise together. Together. Teamwork and trust are two things that we should always value.

What did you miss most about Austin when you went to Los Angeles to work at Univision? The quality of life and family-friendly atmosphere of Austin.

How do you think Austin’s changed? Austin has always been a very international city, but now it appears that Austin has leapfrogged into a city with global implications. Austin culture, the arts, the restaurants and the music, have made it a tastemaker.

Why should people tune in? More local content highlighting some of the best that Austin has to offer in arts, culture, cuisine, and music (beyond ACL). The new facility has a new state-of-theart studio space that will be the new home for music performances, shows like Overheard with Evan Smith and new productions that we will announce soon.

What excites you most about your job? The opportunities to create social impact in Austin and the region. Austin PBS is a mission-driven media company that has the ability to reach millions of people in central Texas by virtue of its broadcast signal, cable coverage, and streaming platforms. The

OVER THE LAST DECADE, IDEAS AROUND MASCULINITY HAVE MASSIVELY CHANGED. THE LONE WOLF MENTALITY IS LOSING TRACTION IN TODAY’S SOCIETY.

About seven months ago, some dear friends Preston Smiles, Garrian Jones, and Stefanos Sifandos and I got together for a weekly men’s workout, and realized a need to be in community and brotherhood. So we created a company called M Powered Brotherhood, based here in Austin. We currently have over 1k members, host weekly workouts for hundreds of men here, and have an online membership that delivers courses, personal development coaching, and community for men to connect. Here are five ways men can harness their power for good right now! Find a COMMUNITY of men who are “doing the work.” Surrounding yourself with like-minded men who are all striving to be better in the world is crucial to your evolution. Men need to lead, but they also need to be taught. Learning humility and defining the art of leadership are skills we learn through community. Having support and the vulnerability to ask for it are vital tools for the masculine. Too often, we suffer in silence. Being in a community creates a safe space for men to vocalize their emotions be heard and loved. This increases their levels of communication which trickles into all aspects of their lives, creating a positive shift. Think about how many marriages could be saved by simply communicating your needs from a loving place rather than repressed anger. Get rooted in the art of SERVICE. A dear friend of mine, Branden Collinsworth, Nike trainer and founder of Warrior retreats, once told me “I don’t care about how much money you make. Show me your level of service!” If you want to impact your life and others, you

must ask yourself, “how can I serve?” Service is the foundation to all success. Take RESPONSIBILITY for your life. Men love to play the “blame” game. This creates a weakness in our framework. We make excuses for our actions. Learning to step in and simply “own it” builds confidence. It also creates respect amongst your peers. If you are ten minutes late to a scheduled meeting, no one wants to hear that there was heavy traffic on 290. Learn that VULNERABILITY is your superpower. Men are known for holding back their feelings. We know that suppression of emotions leads to an explosion down the road—usually a very unhealthy expression of the masculine. Men get to feel safe and open-hearted with what’s real in their lives. If they are sad, depressed, battling addiction, holding anger… all of it needs a healthy platform to be released. If men suppress feelings and emotions, it builds shame, leading to resentment. Deepen your GRATITUDE. As men, we are prone to having more! More money, more muscles, more more more. Slow down, brother. Take a look around and count those blessings. Spending five minutes a day in deep gratitude for all the current benefits creates a vibration for receiving what life wants to give you. We often look past the miracles we have in our lives and spend countless hours striving to obtain more than we probably need. The key to life is to be humble, not boastful. Gratitude is the attitude! Chef Hammond says the Indomitable Wings are among the most popular items on the menu and “Juicy, crispy with a kick of spice and flavors of Japanese curry, this dish just hits different.” He adds, “This is a fairly advanced recipe for most home cooks but with enough planning and patience, anybody can make these award-winning wings. • 5lbs Chicken Wings Curry Rub • 1tsp Granulated onion • 1tsp Granulated garlic • 1.5 tsp Cayenne pepper • 1tsp Salt • 1tsp Curry powder (S&B brand preferred) • 1tsp Lemon pepper Confit oil • 2 qt Vegetable oil, enough to cover Deep fry • 2 qt Vegetable oil, enough to cover

1. Combine all ingredients of curry rub to start.

2. In a 12 qt pot, combine wings and 2 qts of oil. Bring to a boil over medium heat and have your instant read thermometer ready. Use a wooden spoon or spatula to make sure the wings aren’t sticking to the bottom of the pan. Wings are done at 165 degrees Fahrenheit (~30 mins) but always check the internal temperature of the thickest drummie you can find. 3. Strain confited wings with a slotted spoon or strainer. 4. In an 8qt pot, pour in 2 qts of vegetable oil. Attach a candy thermometer or use your instant read thermometer to check your oil. Heat on medium to medium-low to 350°.

5. Fry wings in 350°F oil. Since the wings are already cooked thoroughly, we’re just looking for a nice, crispy, reddish-brown skin. If cooking from the refrigerator, fryer time is 5 mins. If cooking directly after confit, cook time is only 3 mins. 6. In batches of 10 wings, toss with 2 tsp of curry rub and serve immediately. Garnish with cilantro, lemon and your favorite wing condiment. We serve ours with a yuzu aioli.
