LIFESTYLE LETTER
Shuck Yeah, Austin! Austin has always had its culinary obsessions. Breakfast tacos. Barbecue. Margaritas. But oysters? Somewhere along the way, our landlocked city fell hard for the briny little bivalves. This month, we dive into Austin’s growing oyster culture and meet some of the people helping turn what was once an occasional indulgence into a bona fide local love affair. And really, that spirit of discovery runs throughout this issue. Because dining in Austin has never been just about what’s on the plate or in the glass. It’s about the people behind it. The coffee roasters who obsess over every bean. The distillers turning Texas grain into something worth savoring. The bartenders creating a cocktail around a story, a memory, or even the passage of time. And the restaurateurs and entrepreneurs dreaming up the next place we’ll all want to try. So consider this issue your invitation to explore, taste something new, and raise a glass to Austin’s ever-evolving food scene. Bon appetit!

A short drive from Austin leads to Milam & Greene, where award-winning whiskey, Hill Country hospitality, and two remarkable women redefine Texas spirits.
Owner Marsha Milam and Master Distiller Marlene Holmes

WHERE TEX AS WHISKEY FINDS ITS SOUL About an hour west of Austin, something changes. The traffic fades. The rolling hills open up. The pace slows. And somewhere west of Dripping Springs, visitors often do exactly what Milam & Greene Whiskey owner Marsha Milam hopes they will. “They exhale,” she says. “When you hit the Hill Country, you relax.” That feeling is exactly why Blanco became home for one of Texas’ most acclaimed craft distilleries. Milam wasn’t searching for wine country grandeur or a flashy destination. She wanted a few acres, beautiful oak trees, an existing building and enough room to create something special. Blanco checked every box. Today, that quiet stretch of Hill Country welcomes visitors looking for more than a whiskey tasting. Historic downtown, the Blanco River, locally owned restaurants and an easygoing pace make it just as appealing for couples looking for a Saturday escape as it is for devoted whiskey enthusiasts. Spend a few hours wandering the town square before settling onto Milam & Greene’s patio with a guided tasting, and it’s easy to understand why so many visitors make the return trip.
“It’s a hidden gem,” Master Distiller Marlene Holmes says. “You could fill your whole day right there in Blanco.” What happens inside the distillery is equally distinctive. After nearly three decades at Kentucky’s legendary Jim Beam Distillery, Holmes came to Texas eager to build something entirely new. The move allowed her to combine generations of traditional whiskey-making with an environment unlike anywhere else. The Texas climate, she explains, transforms every barrel. “We don’t fight the climate,” Holmes says. “We work with it.” Long stretches of warm weather push whiskey deep into the oak before drawing it back out again, creating richer caramel notes, bold spice and an unmistakable Texas character. The team affectionately calls the process “Texification.” Holmes has even participated
in climate experiments that aged identical whiskey in Kentucky and Texas, demonstrating just how dramatically geography alone can shape the final flavor. The same thing, Milam jokes, happens to the people who move here. “You come to Texas with whatever stereotypes you have,” she says. “Then the next thing you know, you own 18 pairs of cowboy boots.” For first-time visitors, Holmes encourages slowing down during a tasting. Whiskey, she says, reveals itself gradually. “Let it open up a little,” she says. “Take a small sip.” Every palate is different, which is why the tasting experience isn’t one-size-fits-all. Beginners are often introduced to Milam & Greene’s approachable Provisions bourbon, while experienced enthusiasts may gravitate toward higher-proof expressions or the award-winning Port Finished Rye. “You never know,” Holmes says. “Sometimes the person who says they aren’t a whiskey drinker ends up loving our boldest bourbon.” That willingness to challenge expectations has helped earn Milam & Greene some of the industry’s highest honors despite remaining a relatively small operation. Holmes describes the team as “knob turners,” relying on craftsmanship instead of heavy automation and

checking barrels regularly rather than rushing the aging process. It’s also a partnership built on mutual trust. Milam credits Holmes with elevating every aspect of the whiskey, while Holmes says Milam’s confidence encouraged her to step beyond production and become one of the brand’s most recognizable ambassadors. “She changed my life,” Holmes says simply. Spend a day in Blanco, and you’ll leave with more than a favorite bottle. You’ll discover a place where tradition meets innovation, where award-winning whiskey reflects the Texas landscape itself, and where slowing down is part of the experience. For Austinites looking for their next Hill Country adventure, Milam & Greene proves that sometimes the best destinations are waiting just beyond the city limits.

Kung Fu Kitty Blend is a smooth and balanced espresso blend crafted specifically for Neon Belly.
There’s a bright pink coffee shop on Burnet Road where the latte tastes like baklava, the sourdough might come stuffed with pepperoni and mozzarella, and cartoon cats with martial arts skills are part of the décor. Welcome to Neon Belly Coffee & Bakery, where owners Kat Wainwright and Tony Latto have created a neighborhood gathering place that is intentionally colorful, decidedly unconventional, and deeply personal. The idea took shape after the pandemic, when Latto, a longtime designer with a serious love of coffee, began thinking about creating a place where people could reconnect face to face. Wainwright, a real estate broker with a growing passion for baking, brought another ingredient to the mix. Together, they created what Wainwright calls a “love letter” to the city she has considered home for decades. “I have such a deep, deep love for the greater Austin area,” she says. “This is absolutely home.” Even the name tells part of their story. Neon Belly is a playful riff on “knee on belly,” a jiu-jitsu position and a nod to Latto’s longtime involvement in the sport. The cats scattered throughout the branding are a wink at Kat, despite her insistence that she is actually a dog person. Their daughters, two of whom are designers, also contributed to the shop’s CONTINUED >

look, including the Kung Fu Kitty featured on Neon Belly’s signature coffee blend. The family wanted the shop to feel different from the beginning. “We wanted to look different, feel different,” Wainwright says. Rather than follow an established coffee-shop formula, they embraced bright colors, neon, and playful details designed to bring a little joy through the door. But personality only gets you so far without good coffee. Neon Belly works with local roasters including Creature Coffee, Flora Coffee, and Armadillo Coffee Co., which collaborated with the couple to develop the Kung Fu Kitty blend. Supporting fellow Austin businesses is intentional, Wainwright says, whether they’re sourcing coffee or something else for the shop. Then there’s the bakery. Wainwright’s interest in baking developed partly from a desire to slow down after years spent working behind a computer. At Neon Belly, that passion has grown into a menu of cookies, cakes, sourdough and rotating creations, with contributions from young bakers Wainwright has mentored through Austin Community College’s culinary program. Most treats are intentionally individual-sized. Mini sourdough loaves and small cakes allow customers to indulge without committing to an entire loaf or full-size dessert. First-timers looking for the quintessential Neon Belly order should start with the shop’s best-selling
baklava latte, inspired by Latto’s Greek heritage and flavored with pistachio, honey, and cinnamon. Pair it with the pepperoni sourdough, served with marinara, or grab a chocolate chip cookie — if they haven’t already sold out. But coffee and baked goods are only part of what Wainwright and Latto wanted to build. Before Neon Belly even opened, the couple joined the Pillow Elementary PTA and neighborhood association, supported Burnet Middle School, and sponsored McCallum High School cheerleaders. The shop now hosts an artisan market on the first Sunday of each month through the end of the year, bringing local makers into the space and strengthening the neighborhood connections its owners envisioned from the start. The response has exceeded their expectations. Wainwright says neighbors who watched the long-vacant space transform arrived as soon as the doors finally opened in November 2025 and have kept coming. For her, that connection is ultimately what distinguishes Neon Belly. “Come to Neon Belly if you’re looking for community,” she says. “It doesn’t matter if you’re an absolute first-timer walking in. You’re my friend now.” And if you’re still wondering about the unusual name? Their tagline offers one final wink: “If you know, you know.” Neon Belly is located at 8312 Burnet Rd, Unit 101, 78757.

Austin's growing appetite for oysters says as much about the city's evolving palate as it does the seafood itself.
A medley of seafood options: white fish salad, oysters, shrimp cocktail. Image by Matt Conant.
Pearls of Progress
There was a time when Austin’s culinary identity could be summed up in three words: tacos, barbecue, and Tex-Mex. Those staples still define the city, but on any given evening, another scene is unfolding. Diners crowd around raw bars, martinis in hand, while trays of glistening oysters arrive over crushed ice. Before the first shell is lifted, phones come out for photos. Then come the questions: Which coast is this one from? Why does this oyster taste sweeter than the last? What’s the difference between Maine and Massachusetts?

C HE F ’S SE LE CT ION | FOOD + BE VE RAGE
What began as backyard raw bar pop-ups during the pandemic, when restaurants were closed and people were craving connection, grew into a business for Yancy and his wife, bringing the raw bar experience directly to backyards across Austin. The concept struck a chord almost immediately, eventually leading to appearances at Formula 1, Luck Reunion and countless private events before finding a permanent home on East Cesar Chavez Street. Along the way, one question kept surfacing from guests: “Where’s the restaurant?” Today, Austin Oyster Co. sources oysters through long-standing relationships with farmers across New England, including its own small oyster farm on the New Meadows River near Brunswick, Maine. Every oyster carries a story, from the waters where it was grown to the people who harvested it. CONTINUED >

Twenty years ago, that conversation would have been rare in Austin. Today, it’s becoming part of the city’s dining culture. That evolution is fueling the success of a new generation of oyster-focused restaurants, including Skipjack Oysters, Austin Oyster Co. and Bill’s Oyster. While each offers its own distinct atmosphere and philosophy, all three are witnessing the same shift: Diners are no longer ordering oysters simply because they’re trendy. They’re ordering them because they’re curious. “I think people like to be taught about oysters,” says Executive Chef Joshua Carbajal of Bill’s Oyster. That curiosity has transformed what was once considered an intimidating delicacy into one of Austin’s most interactive dining experiences. Guests ask about salinity, sustainability and seasonality. They compare East Coast oysters to Gulf varieties. They return to see what’s new, knowing menus rotate regularly based on harvests and availability. That appetite shows up in the numbers, too — Bill’s sold nearly 900 oysters on National Oyster Day. For Brendan Yancy, founder of Austin Oyster Co., that appetite for discovery has been years in the making.

"IT'S NOT JUST ABOUT PUTTING OYSTERS ON PEOPLE'S PLATES. IT'S ABOUT TELLING THAT STORY... WHERE THEY CAME FROM, WHO FARMED THEM. GUESTS DON'T JUST WANT GREAT SEAFOOD ANYMORE. THEY WANT TO UNDERSTAND WHAT'S ON THE SHELL." - BRENDAN YANCY

“It’s not just about putting oysters on people’s plates,” Yancy says. “It’s about telling that story.” That same philosophy shapes the experience at Skipjack Oysters, where Executive Chef Josh Melton has turned the restaurant’s raw bar into its centerpiece. Rather than simply delivering a platter, shuckers walk guests through flavor profiles, origins and pairings, creating an experience that feels more like a conversation than a transaction. “People are asking more questions,” Melton says. “There’s more foodies around.” Those questions reflect something larger happening across Austin. As the city has grown into an internationally recognized dining destination, so have the expectations of its diners. Michelin recognition, an influx of residents from both coasts, and an ever-expanding restaurant scene have created an audience eager to explore beyond familiar favorites. Oysters, with their remarkable variety and sense of place, have become the perfect vehicle for that exploration. Behind every shell lies a surprising amount of craftsmanship. Unlike wine, where terroir shapes every bottle, oysters reflect the waters where they’re grown. Salinity, tides, water temperature, and even algae all influence flavor, giving each region its own distinct character. Relationships with oyster farmers, careful sourcing, sustainable harvesting practices and constant communication with suppliers all influence what ultimately lands on the menu. Weather patterns in Canada, water temperatures in Maine, and storms in the Gulf can change a raw bar’s offerings overnight. The result is a menu that’s never static and a product that rewards both chefs and guests for paying attention. For Carbajal, introducing someone to oysters for the very first time remains one of the most rewarding

parts of the job. He often begins newcomers with small, sweet Prince Edward Island varieties before gradually encouraging them to venture into more complex flavor profiles. Melton takes a similar approach, starting first-timers with a mild, petite oyster and a light mignonette, believing the right introduction can turn skeptics into enthusiasts. Yancy sees something even bigger. For him, Austin’s embrace of oyster culture reflects the same adventurous spirit that has long defined the city itself: a willingness to support passionate people, embrace new ideas and celebrate artistry wherever it’s found. Austin isn’t replacing tacos and barbecue with oysters anytime soon, nor should it. The city’s culinary identity has always been rooted in comfort, community and bold flavors. But its newest fascination says something meaningful about where Austin is headed. More than a passing trend, oysters represent a city that’s become increasingly curious, adventurous and appreciative of the culinary mastery behind every meal.

The Musician Comes Alive Still Austin transforms its bourbon mythology into an immersive destination celebrating whiskey, music, and creativity. The woman gracing Still Austin Whiskey Co.’s flagship bourbon bottle has always been more than a label. With flowing hair that doubles as the strings of her instrument and the voice of a brilliant red summer tanager, The Musician represents the individuality and creative spirit Still Austin sees in its hometown. Now, guests are about to step inside her world. Scheduled to open at the end of September, The Still Austin Quarter is a 15,000-squarefoot hospitality destination that expands the South Austin distillery into an ambitious combination of cocktails, food, live music, and storytelling. “We wondered, what would it be like to go to her house?” co-founder and CEO Christopher Seals says. “What would she serve in her house? What if you were invited for a jam session in her kitchen?” That question became the creative foundation for a space designed in collaboration with Weiss Architecture. The Quarter unfolds through distinct environments, including the Atrium, Vinyl Lounge, and Music Room, each capturing a different chapter in The Musician’s imagined journey. But the expansion also solves a decidedly practical problem: Still Austin has outgrown its home. Seals estimates that roughly 100,000 people visit the distillery annually, drawn not only by whiskey but by the opportunity to

experience a distinctly Austin place. “We’ve just run out of space,” he says. “People love to come and see us and see where their whiskey comes from.” The Quarter gives them considerably more room while widening the invitation beyond whiskey aficionados. Seals envisions it as something of a “living room of Austin, Texas,” where locals and visitors can discover the artists, flavors and creative community that define the city. Perhaps nowhere is that mission clearer than in the Music Room. Rather than competing with Austin’s larger venues, Still Austin hopes to preserve something Seals believes the city is losing: intimate rooms where performers and audiences genuinely connect. Inspired partly by legendary Austin venues such as Liberty Lunch and Steamboat, renowned acoustician Steven Durr engineered the room to support emerging musicians as well as established performers. Still Austin plans to offer artists access to world-class recording

capabilities, creating opportunities that extend beyond the stage. Even the green room reflects that philosophy. When Seals asked Durr what mattered most in creating an exceptional music venue, the acoustician’s answer surprised him: how the musician feels before walking onstage. So performers get a thoughtfully designed private retreat, complete with its own outdoor garden. It all circles back to the artists who have inspired Still Austin from the beginning. the other archetypal Austinites appearing on the distillery’s labels, characters Seals says celebrate the courage to be “fearlessly unique.” That is ultimately what he hopes visitors carry with them. “For all of us, artists or scientists or oddballs or whoever we are,” Seals says, “I hope we will feel the confidence to be our best selves.” And, this being a whiskey distillery, perhaps leave with a bottle, too. A new Distillery Exclusives series will offer special whiskeys available only at Still Austin, giving visitors one more reason to make themselves at home. The Heart Behind the Cup
Barrett's Coffee owner Travis Kizer represents Austin in COFFEE The Universal Language, showcasing a city where community is always brewing. Austin recently earned the title of America’s best coffee city, but Travis Kizer, owner of Barrett’s Coffee, isn’t interested in debating rankings. Instead, he’s focused on the people who make the city’s coffee culture what it is. That quiet authenticity is exactly what made Kizer the perfect choice to represent Austin in Season 2 of COFFEE The Universal Language, the PBS documentary series exploring coffee cultures in cities across the country. When producers first reached out, Kizer had never heard of the series. Later, he learned they had spoken with multiple people throughout Austin’s coffee community before selecting him to tell the city’s story. For someone who has been roasting coffee since 1992 and helping shape Austin’s specialty coffee scene since 1995, the recognition came as an unexpected honor. Over the past three decades, Kizer has watched Austin transform from a city with just a handful of coffee roasters into one with more than 30. “When I started roasting coffee here, I think we were one of three or four people in town,” he says. Ask him what makes Austin worthy of its own documentary episode, and his answer is immediate.

“The people.” Rather than focusing solely on brewing techniques or beans, Kizer believes the city’s coffee culture has always been defined by the people behind the counter and the communities they’ve created. While the craft has evolved dramatically over the years, coffee shops remain gathering places where neighbors become friends and conversations unfold one cup at a time. That philosophy extends far beyond Austin. Barrett’s sources coffee beans from around the world, cultivating longstanding relationships with producers in countries including El Salvador, Honduras, and Mexico while supporting initiatives that give back to coffee-growing communities. One recent project helps fund digital learning centers in Ethiopia, reinforcing Kizer’s belief that coffee has always been about people helping people. The documentary also offers a glimpse into Kizer’s personal life, touching on the sudden loss of his wife two years ago and the support he received from Austin’s coffee community during that difficult chapter. Watching the finished episode felt vulnerable, he admits, but he understands why the filmmakers chose to include it. It’s another example of the connections that coffee can foster.

"Coffee has always been about people helping people. That's true in Austin, and it's true everywhere coffee is grown."
Closer to home, Barrett’s continues finding new ways to serve its customers. The company offers free next-day home delivery of its house-roasted coffee throughout much of Central Texas and has recently expanded its sustainable offerings with Bubb’s Seltzer, a reusable-bottle sparkling water delivery service that revives the old-fashioned milkman model.
As COFFEE The Universal Language began airing in August, Kizer hopes viewers come away with one simple impression. “Austin is an insanely good place to drink coffee.” And after meeting the man chosen to represent it, they just might discover it’s an even better place to find community. Season 2 episodes are available on PBS and Tubi. OCTOB ER 2 0 2 6 | C I TYL I FE STY L E . C O M / AT X

SWEET FIGS, SAVORY PROSCIUTTO, AND CREAMY GOAT CHEESE CREATE AN ELEVATED BITE FOR HALLOWEEN ENTERTAINING.
BITES MADE FOR AFTER DARK ARTICLE BY JULIE ROYCE
FIG & PROSCIUTTO CROSTINI Makes approximately 16
Halloween entertaining doesn’t have to mean candy bowls and novelty treats. For a more sophisticated celebration, take inspiration from the season itself: deep colors, rich flavors, and ingredients that feel right at home on an October evening. These fig and prosciutto crostini deliver all of that in one elegant bite. Crisp toasted baguette provides the base for creamy, tangy goat cheese, while fig preserves and onion jam add layers of sweetness and savory depth. Salty prosciutto balances the richness, fresh thyme lends an earthy note, and sliced figs add a dramatic finishing touch. They’re also ideal party fare. Most of the prep can be handled before
guests arrive, and the finished crostini are substantial enough to pair with cocktails or wine without requiring a sit-down meal. Arrange them on a rustic wood board or dark serving platter and let the jewel-toned figs and ribbons of prosciutto provide the decoration.
Ingredients
• French baguette, cut into 1/2-inch diagonal slices • 2 tablespoons extra-virgin olive oil • 6 ounces goat cheese, softened • 1/3 cup fig preserves • 1/3 cup onion jam • 4 ounces thinly sliced prosciutto • 3 to 4 fresh figs, thinly sliced • Fresh thyme leaves • Freshly cracked black pepper
Make It Moody Set the scene with a palette inspired by the season: deep burgundy, black, warm amber, and touches of natural wood. Add low lighting, simple greenery, and a few miniature pumpkins for an unmistakably Halloween table without overdoing it. Toast the baguette slices earlier in the day, then assemble the crostini just before guests arrive.

Add a small spoonful each of fig preserves and onion jam, then top with a loosely folded ribbon of prosciutto and a fresh fig slice. 3. Finish with thyme leaves and freshly cracked black pepper. Available now through January, the seasonal lineup turns milestones, memories, and little slices of nostalgia into beautifully crafted cocktails designed to be savored. Every drink has a personality. New Beginnings pairs gin, rose and vanilla for a fresh, hopeful start, while Summer Abroad blends vodka, aperitivo and olive into a vacation-worthy escape. Other creations, including Scenic Route and Endless Afternoon, prove that sometimes the best stories begin with a great cocktail. And because making memories is the whole point, Midnight Cowboy adds a few surprises along the way. Your drink might arrive with a Polaroid of you tucked into the presentation, or you could be handed a disposable camera to capture the night one candid snapshot at a time. It’s equal parts cocktail menu and time capsule.

Not drinking? No problem. Zero-proof offerings like First Glance Theory, Pop Culture Moment, and 5 AM Somewhere prove that creativity doesn’t stop with the spirits, delivering layered flavors and thoughtful presentation for every guest at the table. Hidden behind its signature unmarked entrance on East Sixth Street, Midnight Cowboy has long been one of Austin’s favorite destinations for an elevated evening out. Dim lighting, intimate booths and attentive tableside service create the perfect backdrop for date nights, celebrations or simply catching up with friends over exceptional cocktails. Whether you’re raising a glass to a milestone or just to making it through another workweek, Midnight Hour reminds us that the best nights aren’t measured by the clock. They’re measured by the conversations, laughter, and unexpected moments that linger long after the last sip. Reservations are recommended, but unforgettable evenings are entirely up to you.
