ELIZABETH BUTTON LEADS ASHEVILLE INDEPENDENT RESTAURANT ASSOCIATION Beginning this January, Director of Operations of Heirloom Hospitality Group (the masterminds behind Cúrate and Nightbell), Elizabeth Button, became Chair of the AIR (Asheville Independent Restaurant Association) Board of Directors, a role in which she will be the voice of hundreds of local chefs and restaurateurs. Daughter Katie Button inspired Elizabeth to reenter the restaurant game after years in the catering business; she enrolled in management courses at the International Culinary Institute before relocating to Asheville in 2009 to help open award-winning, family-run Cúrate. CORDON BLEU INGREDIENTS + 1 6 oz chicken breast, trimmed and butterflied + 3 pieces thinly sliced proscuitto + 1 slice Gruyere cheese, cut into 4 even strips + 1 cup breadcrumbs PROCEDURE After trimming and butterflying the chicken breast, lay it out on your cutting board. Place your proscuitto and Gruyere cheese on the side of the chicken breast closest to you. Begin rolling the chicken away from you with the proscuitto and Gruyere staying in place in the middle of the chicken breast. Once you have rolled the chicken breast, place in the breadcrumbs and coat every side of the chicken. Melt butter in a sauté pan, and place the Cordon Bleu in the pan and sear for 1-2 minutes until it begins to brown. Flip and place in a 375 degree oven and bake for 5 minutes. Flip once again and bake for another 5 minutes. Allow to rest for a few minutes before slicing to ensure that the Gruyere stays inside the chicken.

LEMON BUTTER SAUCE INGREDIENTS + 2 c white wine + 1 lemon, halved + 1/4 yellow onion, chopped + 2 garlic cloves, chopped + 3 sprigs of fresh thyme + 1 bay leaf

+ 1/4 c heavy cream + 2 T lemon juice + 1/2 lb butter, cubed PROCEDURE Place all ingredients except cream, lemon juice and butter in a sauce pot and bring to a boil. Reduce down to 1/2 cup. Add cream and lemon, and when you are ready to serve the Cordon Bleu, slowly add the butter a cube at

Davis’ proclamation takes shape in his own paintings, many of which are astute observations of the South, both her people and her places. His landscapes—waterfalls both epic and delicate in their scope, revelatory mountainscapes—are sweet escapes for the eyes, but it’s his work threaded with figures and narratives that tell the story of the South, stories he’s privy to given the unique perspective of his European heritage.

“What I’ve done through my career is work toward a point where I’m able to pursue all the different subjects I’m interested in,” he says of his vast range of work. “So I have a wide range of subjects and ways of handling things, and I’ve methodically worked toward having that freedom. One of the great things about Blue Spiral and the other galleries I show with is that they

Though his landscapes are breathtaking, the narrative pieces also have his heart these days. “I’d always been interested in the history [of the South]. The Greenville Museum of Art had bought an interior of mine—this was about eight years ago—and they expressed an interest in the fact I was doing paintings based on these Appalachian ballads, so they showed those and that got the ball rolling. I’ve picked up other narratives since then,” he explains. “There’s lots of projects for me to paint for a years to come.”

Like a series he’s currently working on in conjunction with African-American poet Glenis Redmond that dives into a slave legend about mermaids in the Low Country. “I think the dark side of the South’s history actually keeps all these stories alive,” Davis notes. "The landscapes I do speak for themselves, but the narrative work is more evangelical, and to get the word out I do enjoy the process of introducing people to these tales." With the careful stroke of his paintbrush, sometimes aided by vocal tread of his words, Davis depicts the overlooked stories of the South and reinvigorates those narratives for generations to come.

MARQUE GRITTA When Marque Gritta’s wife (painter Linda Gritta, whom we profiled in our October 2017 issue) asked him what experiential gift he’d like for Christmas three years ago, he first suggested a month-long trip to Thailand to learn Thai cooking. “She said ‘Ok, what else?’” Gritta remembers with a grin. “I said, 'Well, I've always wanted to learn how to throw a pot.' So she bought me a six week class with Lori [Theriault] to get on the wheel and learn how to throw a pot. And, well, I fell right down the rabbit hole.”

Gritta’s progressed through every level of course offered at The Village Potters; he’s now refining his style—and artistic future—in the incubator studios.

Though he’s currently a sought-after local massage therapist, he can already envision the potential of his pottery: “I'm committed to being an artist in my life, and I always have been in one way or another. So I look at this as being something that would be a supplement to retirement and a way for me to be able to express my artistic nature and be able to create something."

Balancing commissions and artistic collaborations with Linda (he shapes the pots, she adds intricate surface designs with a wax resist), as well as dabbling with sculpture, Gritta’s already got his hands full—literally.

“If you have any interest at all in clay, there's a real grounding, earthy, experience that happens putting your hand in the dirt,” he continues. “One of the critical things to being on the wheel is having a good teacher, and that's what I found here: people who have years and years of experience, and a really beautiful way of being able to share that knowledge with people.”
