PAN SEARED BLACK BASS WITH SQUID INK BUCATINI, BEET-BALSAMIC PAINT, GOAT CHEESE AND PISTACHIO BLACK BASS 4 each, 6 oz black bass fillet, skin on 2 oz olive oil salt and pepper Heat pan on high until very hot. Add oil. Gently put fish in pan, skin side down. Use a metal spatula and push down on fish to flatten. Remove spatula after one minute. Turn heat to medium. Cook until skin turns golden brown. Place pan in 375° oven to finish cooking, about 3-5 minutes. Remove pan from oven. With metal spatula, turn fish onto flesh side for moment, then plate. BEET-BALSAMIC PAINT 2 large red beets, peeled, diced 2 shallots, chopped 4 oz balsamic vinegar 1 T olive oil Peel and dice beets. Rough chop shallots. Sweat shallots in a small pot with oil while stirring, 3-5 minutes. Add beets. Cook 5 minutes, stirring occasionally. Add balsamic vinegar and enough water to cover beets by 2 inches. Simmer until beets are tender. Strain beets and reserve the liquid. Place beets in a blender. Blend and slowly add reserved liquid to the proper consistency. Reserve paint. PASTA SAUCE 8 oz goat cheese 6 T extra virgin olive oil ½ c pistachios, roasted, unsalted salt and pepper In a cold pan, add oil, goat cheese and pistachio. Place pan on medium heat for a moment. Cook your bucatini according to manufacturer’s directions. When pasta is al dente, place in pan and toss thoroughly. Add salt and pepper to taste. Brush a stroke of the beet-balsamic paint onto the four plates at an angle. Twirl pasta on carving fork and lay flat on the plate, at an angle to the paint. Lean the black bass against the pasta twirl. Garnish with more pistachios.

01 | YOSEMITE NATIONAL PARK, CALIFORNIA 01

We rolled into the park at sunrise. The light cut through mist and immense, jagged granite formations into the valley. That's when I realized what all the hype was about; I was half expecting to see a group of dinosaurs grazing in the fields. We never found those dinosaurs, but we did have a dangerously close encounter with a bobcat. We found a gorgeous swimming hole along a river, tucked away from the crowds. This image was taken after returning from that swimming hole.

02 | SAN FRANSISCO, CALIFORNIA My partner, Abby, and I parted ways in San Fransisco so that she could visit a friend by train. With the two pups, I spent the day exploring the architectural and natural beauty of San Fransisco. This image was actually taken from on top of my

van, parked in the very place that I slept those few nights. To the left was the city, and to the right was the Golden Gate Bridge. At night, the lights from the bridge and city lit up the night sky.

03 | NORTHERN CALIFORNIA COAST This secret little gem was found off Highway 1 north of San Fransisco. We had the entire place to ourselves, and it was hands down one of the most beautiful beaches I’ve ever been on. This was taken

from the top of a lonely rock formation on the beach that we climbed up to watch the sunset. Everything was golden: the sand, the cliffs, the sunset, even the water seemed to glow. Now I know why it’s called the "Golden Coast."

04 04 | HUMBOLT, CALIFORNIA This was a private bay we found on a hike along the coast of Northern California. The way the mist laid so gently on the dark water. The rocks behind me were covered in this lime green moss. I love the simplicity of this image, the unknown. The vulnerability in her pose also strikes me. I’m a sucker for mist.

05 | GREAT SAND DUNES NATIONAL PARK, COLORADO 05

As you’re driving along, astounded by the Rocky Mountains, you start to see the desert up against the mountains. The closer you get, the larger this “little” desert grows. There were people going straight to the top of the dunes, where the view spanned for miles, but we broke off the route to explore these gorgeous folds of untouched sand. The sun was hot and the wind wicked. I think this was the dog’s favorite place, though. They ran wild.

06 | SALIDA, COLORADO This was taken from our campsite, somewhere on a mountain overlooking the town of Salida. The town reminded me a lot of Asheville.

We checked out a little blues festival and then headed to this camp spot. The sunset was epic; a storm had just rolled through, and there were black clouds over all the whispy, white ones. The jagged shape of the mountain tops cut the light into beams. That night the coyotes came. At first the howls were pretty far, but they kept getting closer and closer. We rushed the dogs into the van and jumped in ourselves.

07 | ZION NATIONAL PARK, UTAH We drove through Zion for sunset with plans to come back the next day to really explore the park. We woke up the next morning and a wildfire had blown so much smoke into the Park that you couldn’t see 100

yards in front of you, and breathing was tricky. The little time we did spend in the park was incredible. The winding roads through the mountains to get to this low spot were nothing short of mind-blowing.

08 | OUTSIDE ZION NATIONAL PARK, UTAH This is where we stayed after we visited Zion. I love the tones and texture in this image—the reds, oranges,and yellows (and yes, Goldie back there as well). You can see Abby getting some food ready in the van. The layers in these formations still blow my mind. The time and natural events that took place to create those layers, now revealed in the

Hanji is traditional handmade paper from Korea, made from the inner bark of Paper Mulberry. Hanji is extremely durable, capable of being stretched, feathered, gathered, and twisted. WE HEAR APPROXIMATE ESTIMATES ALL THE TIME OF ASHEVILLE'S GROWTH, INESTIMABLE DEFINITIONS FULL OF VAGUE MODIFIERS LIKE "DOUBLE" AND "TIMES." We all know Asheville's growing—anyone who's been here more than a few months can attest to the expanding crowds of pedestrians on Broadway and bellying up to our beer bars—but how? What do those numbers actually look like in 2018? We tapped the Chamber of Commerce to share the stats, facts and figures on Asheville's latest growth. The numbers aren't necessarily surprising, but they are steady, and projections (spurred by nods by "best of" city lists around the world) predict it's only the beginning. + Asheville Metro (Buncombe, Haywood, Henderson and Madison Counties) Population in 2017: 456,420. » The highest percentage population? Folks 65 to 69; there are 33,084 of people in that age group in the area. » Another powerhouse pop'? Millennials. Estimates put the number at 80,033 "millennials," aged 20-34, in the Asheville Metro area. + Asheville is way below the national average on both violent crime and property crime. + In 2012, the region offered 167,794 jobs. In 2017? 186,003. That's a growth of more than 18,000 jobs in just 5 years. » The largest employment sector in the Asheville area is Health Care and Social Assistance, employing 33,027 locals. » That sector also added the most jobs over the last five years, growing by 4,577 or 16%. + Small biz is big in Asheville: 96% of establishments in the Asheville Metro have fewer than 50 employees. + In 2015, the median household income was estimated at $44,826. That's projected to grow to over $50,000 this year. + Asheville's cost of living is below the national average. + Asheville's growth is literal, too. Construction sector jobs in the Asheville area rose 14% from 2013-2015 for notable projects like the Mission Hospital tower and A-B Technical Community College's Ferguson Center.
