agers, ales and pilsners, oh my! With 26—or wait is it 27? No, 28 breweries... well probably more than that by the time you read this... Regardless of the number, we find ourselves in the enviable position of having the most breweries per capita in these great United States! So in honor of our 2nd Annual Caps & Corks issue, we decided to talk with a few of the people who are contributing to our deliciously sudsy economy, as well as some who are helping guide that very economy forward. We welcome both the creativity and entrepreneurial drive shown in the hard working brewers in this town, and especially appreciate their tasty concoctions. And what goes oh-so-nicely with a cold beer? Why, a great hamburger, of course! So we talked the good people at Rankin Vault—who have many Battle of the Burger distinctions to their name—into giving us some tips on the perfect burger. But let's not forget the Corks side of this issue. We talked with some of the nicest and most knowledgeable fellas in town at Vaso de Vino about, well, vino. As always, enjoy this issue responsibly! You’re downtown. It’s late. And you need to eat. This isn’t the time for artfully plated hors d’oeuvres or delicate entrees. This is the time for good, old fashioned red meat and fried potatoes. This is the time, as many Ashevillians know, for The Vault Burger. This meaty creation took home the title at the first ever WNC Battle of the Burger (which garnered the burger a spot in the World Food Championship in Las Vegas), as well as the People’s Choice Award every year since. It’s the Americana classic elevated, but also approachable for a late night chow down. And it’s the inspired creation of Chef Scott Wallace. Wallace got his start in the dish pit of a Columbia, South Carolina casual fine dining restaurant. “I was fascinated watching the line cooks work from my very first day," he says, and it was that fascination that drove him up through the ranks of the city’s staples to Executive Chef of the beloved Mr. Friendly’s. “It was this [position’s] freedom that allowed me to teach myself how to make everything from Oysters Rockefeller, to Pad Thai, to the perfect risotto, to the perfect sushi rice, to the perfect steak and everything in between,” he remembers. When Wallace was ready for a change, he headed north to Asheville to work in the then-new Admiral, followed by a shift into the position of Chef and Manager at The Vault. “My focus shifted towards making the best bar food anyone could ever hope to encounter,” Wallace says of his position at the late night hangout. “This was a fun change of pace for me, and the Vault Burger was born as a result. Burgers can be simple comfort food, but it just so happened that at the same time there was a new reverence emerging in the culinary world for burgers in general.” Wallace combined juicy, Hickory Nut Gap grass-fed beef, crispy Heritage Farm bacon, melty white cheddar cheese, fresh arugula and red onion tossed with his simple vinaigrette, topped it all with Sriracha mayo, and a star was born. ers from hugely disparate breweries to talk about their industry and its impact on our community. BEER BY NUMBER The Chamber of Commerce conducted a contribution analysis of Asheville’s craft beer industry. “If the industry went away, there would be a considerable ripple effect,” Heidi Reiber, Director of Research, told our brewers. • At the time of the study, the local brewery industry had grown in employment by 754% in just 5 years. Now that percentage is closer to 1000%. • Over 2,500 jobs are created and supported by the brewery industry in Asheville, producing $111 million in labor income. • The total output or production of the industry was estimated at a whopping $934 million. • There are more than 40 brewery businesses in the Asheville area.

rom eggshell white to deep ocean blue, there's a rainbow of cheeses out there—not just in the world, but in our own backyard.
The WNC Cheese Trail connects eaters with makers, tracing a dotted line across our mountains that outlines and allies the farmsteads and artisan cheese producers that call Appalachia home. Eaters can tour many of these creameries for a firsthand look (and taste) of the art. The cheeses produced in our mountains are as varied as the hills that rise here, but they all share a common element: they pair particularly well with wine. We tapped Katie Moore, Executive Director of the WNC Cheese Trail, to help us pair some of our local favorites

In this pairing the French Pinot Noir has a light fruitiness that is enhanced by the earthy flavors found in the Frenchinspired, aged sheep-milk cheese. The natural rind lets this cheese be slightly dry and salty, which helps the pairing flavors linger. If you want to make the pairing totally local, try it with 2014 Five Twenty-Nine from Addison Farms Vineyard!

It has a pale yellow straw color, tropical notes, fruity, soft and creamy and a nice balanced acidity. 2016 Campo de Borgia Aragus Rose 100% Garnacha with pink strawberry hues, fruity aromas and well-balanced with passion fruit and solid acidity. 2015 Finca Manzanos Joven 70% Tempranillo, 30% Garnacha. The vines are 50 years old and it has a cherry red color, fresh raspberry aromas and is elegant with velvety tannins. 2011 Prado Rey Cuvee Premium From Ribera Del Duero, this is a blend of Tinto Fino, Cab and Merlot. This wine gets 12 months in oak and then another 24 months after being baked. It has a unique softness with hints of vanilla and cinnamon. It is round, fleshy and velvety. 2011 Prado Rey Roble Crianza Mostly Tempranillo with a touch of Cabernet and Merlot. It has big mouth feel of blackberry, cherry, balsamic and vanilla. It's a round and fatty wine with pleasant tannins, highly cellerable and well-priced to stock up on. 2009 Prado Rey Roble Reserva This single vineyard Tempranillo from Castilla Y Leon is a big finisher.
