adies and gentlemen, summer is officially upon us.
With our Second Annual Outdoor Adventure Issue, our goal was to impart knowledge from local experts on everything outdoors. From hiking some of our great trails to going down some of our local waterways, and even "glamping," we wanted a little something for everyone.
As thankful as we are for the infinite adventures offered by our mountains, we're even more thankful for great friends and great food (prepared by one of those great friends!). ’Tis the season for cookouts, and we had an incredible opportunity to host an amazing meal for our friends and their families (thank you to Mike Romero and Southcliff for hosting and Chef Ricardo Carrasco for the phenomenal cooking!). We hope you can find some new adventures of your own in these pages. And of course… wear sunscreen!

A TASTE OF “T MONTERREY
o break bread with your family and friends is almost a religious experience,” says Ricardo Carrasco. The lawyer-turned-restau-
rateur is no stranger to the smoke of a grill and the shrill cries of sun-bathed children, or the taste of a cold beer and hot carne asada.
ARTICLE WESLEY BROWN PHOTOGRAPHY CARR ELLIOTT
“Monterrey is like that capital of the carne asada, every Sunday all the family gets together around the grill,” he says. Monterrey is where Carrasco found his calling. It was there that the flavors of the region and the integrity of the ingredients drew him into a business he wasn’t expecting, where he decided to abandon his initial calling as a lawyer and follow his passion for restaurants and food. Carrasco went on to open five restaurants in the Monterrey area, from a small local’s bar to a concept that focused on mezcal. “Monterrey is a city that holds the richest county in Latino America, and there was always competition for who has the best flavor, the newest trend and the coolest spot,” he says of his experiences opening restaurants in the city. “I loved it!” Despite his ranging styles, there were always consistencies: “There was no need to say that it was non-GMO or made from scratch, because that was the only way to do it,” he notes. “Our concept was that of ‘comida artisanal,’ meaning everything is made by hand with no artificial flavors or additives, and without the use of machines.” Carrasco remembers visiting the locals, ranchos and fishermen’s wives around the region, tasting and learning the traditional and authentic flavors of Mexico. These are concepts and values he’ll bring to his new Asheville restaurant, Polanco. Housed in a historic 1919 building downtown, the new authentic Mexican restaurant will appeal to all Asheville’s palates as “a cool place where all types of dietary needs can co-exist. CONTINUED >

We are dividing the kitchen in two with a vegan/vegetarian side and an omnivorous on the other,” he explains. “You can enjoy a great tomahawk with your vegan friend that can have an empanada made out of vegan cheese and flor de Calabaza.” Carrasco has been involved in every step of Polanco’s creation, as he has been with all his endeavors. “To me, being a restauranteur is more than just being a chef or being an investor,” he says. “It’s about a drive and passion towards creating and implementing a concept. From the first building bricks, to ordering materials, aligning staff and projects, you become a bit of an architect, construction worker, etcetera.” In the end, though, it all comes back to his passion for good food, good company, and good drinks, all things we love to enjoy in the form of a classic summertime cookout. “When you cook out in Mexico, 90% of the time you make it with charcoals and the tequila and beers are never missing,” Carrasco says of his cook-outs. “I think the simple fact that you have someone to enjoy some of the simplest pleasures of life like eating is what makes life worth it.” www.polancorestaurant.com 828-575-2576 10 North Market Street facebook.com/polancoasheville instagram.com/polancoasheville/
TOMATILLO SALSA Tomatillo salsa is the most classic salsa of any taqueria in Mexico. Our variation is very healthy because we don't use oil, only fresh-charred ingredients. Preparation is easy, but the most important part is finding the freshest, ripe ingredients. Locate fresh, ripe tomatillos (usually they're larger) and make sure there are no white or yellow tones on them. Stickiness is common and doesn't affect the flavor. Peel about eight tomatillos and slice them into two to three slices apiece, depending on the size. Remove the top portion and discard. When cooking on the grill, you can charbroil the tomatillo or cook it in the kitchen on a pan and wait for it to caramelize and char a little on both sides. Charbroil the tomatoes and then repeat with two garlic cloves, half of a white onion and one serrano pepper. For a milder version of this recipe, remove the seeds inside the peppers. Once everything is charred place in a blender. Add half an avocado and a fourth of a bunch of cilantro. Loosely chop cilantro until you reach the firmest part of the stem and then throw away. Add salt and pepper to taste, blend and serve.

SADDLE-UP TRAIL RIDES OFFERS OUR KIND OF RIDE
ARTICLE EMILY GLASER PHOTOGRAPHY CARR ELLIOTT

here’s something inherently romantic about horseback riding. The sway of the saddle and the cadenced clop of hooves make for a quiet lullaby that helps you relax into nature. But there’s something decidedly unromantic about “around the
barn” type horseback riding businesses where riders take a laggard jaunt around a dusty loop and miss the magic of the sport. Saddle-Up Trail Rides is not one such company. First of all, owners Michael and Juanita Cate are horse people. Ask Juanita what she loves most about her job and her response is emphatic and immediate: “Of course, having the horses.” As a native of Henderson County, Juanita grew up riding the trails that thread through the mountains.

crossings—two to seven of them, in fact—and more varied terrain. The season and permits run from April 1 through December 18, offering horseback glimpses at the changing of all the seasons. These aren’t prescheduled rides with trails of tourists, but completely personalized excursions. The Cates keep the groups small, from five to six, and they don’t always saddle up different families or couples at the same time. “It’s more personal than it would be in huge groups with people you’ve never seen and probably never will again,” Juanita points out. Each family receives a distinct experience that’s completely catered to them. That unique experience isn’t just shaped by the trails, but by the horse as well. “Everybody’s favorite right now is probably Those are the same trails she and Michael take guests on

by the touch of man and haven’t been carved to gullies by the trampling feet of dozens of horses. Another unique aspect of Saddle-Up is their mobility. “Because of the area that we can utilize, because we are mobile, we can use more trails than most companies,” Juanita explains. “Most are stationary, and just offer ‘around the barn’ rides. These are real mountain trails, trails I grew up riding when I was younger, and this is true mountain trail riding. It seems to bring our customers back, because that’s what makes us different from everybody else—a different array of trails.” The trails they utilize vary from day to day (again, this is not a stagnant, well-worn loop). On their one-hour rides, the Cates take customers on a “dry” trail, meaning they don’t cross water on the trip. Depending on that day’s trail, riders might meander along a river or catch glimpses of those breathtaking mountain views. They also offer two hour rides, longer excursions with river

Though the ladies love the patterned ponies, the gentlemen tend to go for the solid colored horses like Moonshine (though Juanita admits Moonshine’s popularity might have something to do with her name). Perhaps what makes Saddle-Up most special is the genuineness of the experience. These are real mountain trails that true horse people like the Cates have been riding for years. For a unique excursion into our wilderness, do as the Cates do and saddle up. hile exploring the quiet backcountry of upstate South Carolina in 1970,
where a slow-rolling tractor loaded down with apples was the main sighting along lonely Highway 76, Jim and Jeanette Greiner found the place they were looking for. But they had no idea they would also launch a vacation family tradition in the southeast that now boasts over half a million participants annually on over a dozen popular whitewater rafting rivers, generating hundreds of millions in tourism dollars to area communities. After numerous years of traveling and camp-
ing across the Blue Ridge and Appalachians, the Greiners had an idea that they could start a whitewater rafting business in the Carolinas, much like a rafting pioneer they befriended in West Virginia.

yle Ellison may have the longest commute in Asheville. At one end—roughly 4,500 miles from the Land of
the Sky—is the Hawaiian island of Maui, his original home, where he works as a travel writer and competes on the professional stand up paddleboarding (SUP) circuit. At the other is Wai Mauna Asheville SUP Tours, the business he founded in 2015 to share his passion for the watersport with visitors to the French Broad River. “When I first came to Asheville, it felt like Hawaii did twelve years ago. You could go down by the river and find people who had never seen a stand up paddleboard before,” recounts Ellison, who lived in Asheville for two years before relocating back to Maui—where he still flies from every six weeks during Asheville's summer paddling season.. “People had been tubing for years and were looking for something new, so it seemed to me that SUP was ready to take off here—and they always say to do what you love!” SUP’s roots actually trail back to 1960s Hawaii, when the surf instructors, or “beach boys,” of Waikiki would stand on their surfboards and paddle into the ocean to take souvenir photographs of their students. The practice became popular on the islands again in the early 2000s among surfers looking for a way to train when the waves were uncooperative, and SUP soon grew into a full-fledged watersport of its own. Ellison, who has also worked professionally as a scuba diver, sea kayaker and catamaran sailor, says he fell in love with SUP’s unique perspective on the water. “There’s this kind of magic carpet ride feeling: you’re literally standing on top of water without getting wet and cruising along,” he explains. “And because you’re in a standing position, you can see both down into the water and 360 degrees around you.” That extra visibility is key for the guided tours Wai Mauna features as its signature offering. The company’s instructors

lead private trips down the French Broad through the River Arts District and Biltmore Estate, sharing insights into local stories, wildlife and geography along the way. Ellison, a self-described “closet history buff,” says much of the knowledge he teaches his guides came from attending meetings of the nonprofit conservation group RiverLink. “We tell people that the history of the river parallels the history of Asheville itself,” he says. “Back in the ‘50s and ‘60s, when Asheville was pretty depressed economically, the local saying about the French Broad was that ‘it’s too thick to drink and too thin to plow.’” But as local organizations began to pay more attention to the state of the river and led restoration efforts, Asheville experienced a surge of vitality through increased tourism and new residents. Wai Mauna continually supports the French Broad through its sustainability program: portions of proceeds from every paddler are directly donated to RiverLink, and the company’s staff regularly pitch in on cleanups. Even the paddleboards themselves play a role. “They’re great craft for river cleanup — I’ve anchored a board in the middle of the river and stacked five tires on it that we’ve pried off the bottom,” says Ellison. In addition to guided tours, Wai Mauna offers personalized lessons, board rentals and a six-person, 17-foot inflatable SUP raft. The company even hand-delivers boards, complete with a complimentary intro lesson, to renters within 50 miles of Asheville. “We’re like a paddleboarding food truck!” Ellison laughs. All of these services come with a healthy dose of what Ellison calls “aloha spirit,” a sense of casual welcoming drawn from his Hawaiian home. “We treat every customer like a friend from out of town we’re taking out on the river,” he says. “We want you to feel like you’re on a vacation, like you’re somewhere you can really tap out and relax.” WaiMaunaAshevilleSUPTours.com | info@waimaunaashevillesuptours.com | 828-808-9038
HOW TO SUP SUP offers a great way to see the French Broad River, as well as an accessible water-based workout. Kyle Ellison offers his four top tips for getting started. 1. Keep a little bend in your knees. You don’t want to be super stiff and rigid on the board. 2. Hold the paddle with the angle facing away from you. Almost everyone holds the paddle backwards when they start out! 3. Put the entire paddle blade in the water so you generate enough momentum with your stroke. Tell the river where you want to go. 4. Relax and enjoy yourself — you’re out there to have fun!

O
ur mountains are beautiful, and they offer endless escapes and adventures. But on the other side of the world, bathed in fresh
and vibrant shades of green, are a different set of mountains that harbor a whole new side of adventure. Set in a string of paradisiacal isles, Maui is the second largest of the Hawaiian islands, offering 727 square miles of idyllic escape. Folks like to call it the Valley Isle, and with good reason; the island’s soaring mountains and scooped plateaus play in perfect harmony, stunning sights that stunt our own Carolina peaks. The winding paths, dense forests and sheer waterfalls make for an outdoorsman’s paradise, while pristine beaches gift moments of relaxed respite. Pack your bags (don’t forget your raincoat) and cross the continent for a holiday that’s part relaxed, part adventure, and all outdoors.

Parting Thoughts
Take to the Trails O
ur mountains are stunning, especially in their vastness. The trails that weave in and out of
those dense forests can seem a knotted mass, which is why The Pisgah Field School is
such a great local resource. Through tours, guided hikes and workshops in the Pisgah National Forest, DuPont State Forest and Brevard, the Field School helps locals and tourists alike attune themselves to the land. The best part? The profits from those tours and hikes cycle back into free education programming and hikes for our underserved communities. Adam DeWitte, Director of Education at The Pisgah Field School, picked out some of his favorite hikes to fill your summertime outdoors queue, best enjoyed with one of the Field School's knowledgeable guides (just make sure to pre-register at pisgahfieldschool.org). • Big Rock Trail in DuPont State Forest – Take a hike atop a “high elevation granitic dome” deep
within DuPont State Forest and experience the beauty of a unique eco-system normally found along the coastal plain! • Rooster Tail Falls – This hidden gem boasts two separate water features and its very own “natural viewing rock” that puts you in the middle of the action. It’s a popular swim spot for river otters as well as PFS participants. • Bridal Veil Falls – One of DuPont’s most beautiful attractions and pop culture icons (you’ll remember it from Last of the Mohicans), this waterfall allows you to scramble behind and get a view of nature that you’ll never forget. • No Name Falls – Another hidden waterfall in Pisgah, this as-yet-to-be-named beauty is surrounded by emerald moss, the meandering Looking Glass Creek, and scenery that you’ll swear is from a book. It’s also one of the best falls to get your feet wet. • The Pisgah Arch – The arch was built in the 20’s to inspire and welcome visitors to Pisgah National Forest. The remaining pillars are still here, and rumor has it that the eagle atop the arch is hiding and waiting to be rediscovered.
