I hope this letter finds you sooner, rather than later, as we have some great summer ideas for you! Most of us enjoy the activities that winter has to offer, but just about all of us enjoy one thing or another about our summer weather!
My home state of Indiana is extremely humid, and the heat can be unenjoyable unless you're on the water. In comparison, Colorado just has the perfect summer feel. It's hot here in the summer but not too humid.
Take these warm summer months and try a new hiking trail, picnic at the park, get out on your bicycle or motorcycle, and enjoy the fresh air. Go for a walk; enjoy the endless outdoor patios our community has to offer serving food and drinks, or turn up the heat and fire up your grill.
Regardless of how you choose to spend it, enjoy the weather while it’s here. Soak up the sun, and have a great day; because today is a great day to have a great day!

Mojito Mocktail
AN ALCOHOL-FREE SUMMER DRINK TO BEAT THE HEAT

This refreshing Mojito Mocktail gives you all the flavors you love, but it’s booze-free! With its light, bright fragrance, you won’t even miss the rum.
INGREDIENTS
• 1/2 lime cut into 4 wedges
• 2 tablespoons sugar (substitute honey or agave syrup)
• 10 fresh mint leaves plus more for garnish
• 1 cup ice cubes
• 1/2 cup club soda
DIRECTIONS
1. In a sturdy glass, place mint leaves and 1 lime wedge in the bottom. Use a muddler or wooden spoon to crush the mint and lime, releasing the mint oils and lime juice. The smell will be magical and enticing.
2. Add 2 more lime wedges to the glass along with the sugar and then muddle the mixture a second time. Do not strain the concoction. Keep it all in the glass.
3. Fill the glass almost to the top with ice. Add club soda and more sugar to taste if desired. Garnish with mint leaves and the remaining lime wedge.
4. Enjoy this great, alcohol-free mocktail with friends while celebrating the summer season. Cheers!

Summer Berry Salad

Ingredients
• 1/4 medium sized red onion, sliced
• 4 loosely packed cups of arugula leaves (or other greens/spinach)
• 1 1/2 cups of berries including sliced strawberries, blueberries and raspberries
• 3 ounces of goat cheese crumbled
• 1/2 cup walnuts (roughly diced)
• 1-2 tablespoons of balsamic vinegar
• 2-3 tablespoons of olive oil
• a couple shakes of salt and pepper to taste
Directions
• Mix the balsamic vinegar with the olive oil, salt, and pepper. This is easiest in a small container with a lid so you can shake the dressing until blended.
• Toss the onions, arugula, berries, and dressing until the salad elements are coated.
• Top with crumbled goat cheese and diced walnuts.
Options
You can choose to use only one type of berry in this salad. Feta cheese can be used in place of goat cheese if you like, and just about any nut will make this salad interesting and special, such as sliced almonds, pecans, or sunflower seeds. Just keep the ingredients fresh, light, and summer-focused, and the salad is bound to be a crowd-pleaser.

Strawberries and goat cheese are a tasty combination, and when you add the refreshing bite of arugula and balsamic vinegar as well as additional berries and nuts, it leads to a truly great salad to share with friends and family this summer.

A Passion for Locomotives
THE COLORADO RAILROAD MUSEUM IN GOLDEN

When your kids are young, much of your life revolves around them, and you're always looking for fun things to do as a family. Dr. Michael Berger of Berger Orthodontics is the father of two: Max is about to turn three and Gemma is two months old. Dr. Berger and his wife, Dr. Crystal Kim, are committed to doing lots of fun things in the community.
Dr. Berger and his family moved to Arvada in 2020. “Colorado has been a fun place to raise a family. There are so many great activities and places to visit that children enjoy.”
The family enjoys visiting the local aquarium, as well as hiking, skiing, and going to see live concerts. At this stage, though, things kind of revolve around Max, and he's into trains!
One of the family's favorite places to go is the Colorado Railroad Museum in Golden. They have a membership, giving them admission year-round, free train rides most days, and special ride access on member appreciation days. “Max just can't get enough of it!” says Dr. Berger.

“They have a really cool garden train set with steam and electric trains that run throughout a miniature city filled with bonsai trees.”
Dr. Berger often shares information about local activities with his patients. “I enjoy talking with parents about fun activities they do with their kids in the area, and I share the things Max enjoys. I actually learned about the train museum from my patients. During these early years in our kids’ lives, we want to build strong family bonds and make memories with them.”
Deputy Director Robert Kramer from the Colorado Railroad Museum says their main goal is to preserve and restore Colorado Railroad history. “The state wouldn't be what it is without the railroads. It dictated what areas developed and which communities became ghost towns.”
About 100,000 people visit the museum each year. It's a top-ten Denver area place to visit, and people come for lots
of reasons, from families riding the trains to researchers and model train developers using the museum's extensive archive of historical information.
A lot of schools do field trips to the museum, and the organization also brings the stories of the railroad into classrooms. The museum has 16 staff members and more than 300 volunteers, so it's a strong community effort.
There are so many fascinating, historical stories, such as the Orphan Train Robert explained to us. In the 19th century on the East Coast, groups of orphans were placed on trains, and throughout all the stops westward, the children were offered to families who wanted to adopt. Robert suspects his grandfather was on one of those trains. “He was orphaned in New York in 1885 and then adopted in Indiana, which is odd for that period, otherwise.”
The Colorado Train Museum is mostly an outdoor attraction with dozens of static trains. They also have three operational

steam locomotives, a couple of big working diesels, and three galloping geese—which were old cars and trucks converted to rail service. On Thrilling Thursdays , the museum has reenactors on site to help you experience the time period of the locomotives.
One of the biggest attractions happens over three weekends in September and is called Day Out with Thomas . “It's the closest thing to Woodstock for toddlers that I've ever seen,” says Robert. “When the kids see Thomas as a
real entity that interacts with them, the kids just lose their minds. They scream like the Beatles are in town!”
“I think doing all these fun activities sparks the imagination,” says Dr. Berger. “It's such an important part of childhood. Colorado features a lot of great outdoor activities, and we want to continue to explore our beautiful state.”

SUMMERTIME FAMILY FUN ZONE
The Gaylord Rockies Resort is a mecca of activity for summertime fun. For families or vacationers looking for a wide variety of things to do, it's a wonderful, central location with tons of options for all ages.
The resort in Aurora opened in 2018 as Colorado’s largest combined resort and convention center, and it's just ten minutes from the Denver International Airport. “The resort was the fifth Gaylord Hotels property and one of the largest resorts in the world to debut under the Marriott International brand in 2018,” says Public Relations Manager Andrea Lawley. The resort features Animal Encounters which provide up-close interactions with a variety of incredible creatures. Guests can also take a virtual safari through the Wildlife Rescue —an augmented reality experience presented by bubly™. Twelve endangered animals are hidden throughout the resort, and
people can use a smartphone and a free app to enjoy the experience. Andrea says, “Guests search for the tracking markers to find the hidden animals, learn facts about them, and see them come to life with the magic of augmented reality (AR).”
Dining is a big part of every vacation, and the Gaylord Rockies Resort makes sure guests' culinary experiences are unique and memorable. Wine and beer dinners are available along with Old Hickory Master Cocktail Classes . Participants learn from master cocktail artisans, as well as local brand experts. The hour-long course begins with an overview of spirits followed by crafting two cocktails with the help of master bartenders. Cocktail classes are every Saturday at 3:00 PM and are $40 per person. The Gaylord Rockies works with various Colorado breweries to put on beer dinners, including Dry Dock and Odell.

Butterfly PAVILION
Butterfly Pavilion (BP) is a colorful, fascinating zoo that exists to foster an appreciation for invertebrates (animals without backbones). The nonprofit in Westminster educates the public about the importance of protecting invertebrates and their threatened habitats, while also conducting research.
Started by the Rocky Mountain Butterfly Consortium, Butterfly Pavilion sits on an eleven-acre site that was provided by the City of Westminster. It is the first stand-alone Association of Zoos and Aquariums-accredited nonprofit invertebrate zoo in the world and a leader in the field. They strive to provide a hands-on, direct experience for people of all ages.
Wings of the Tropics is the largest exhibit and the biggest draw. Community Programs Manager Alyce Todd says people come to see the butterflies, which are all tropical—mainly from South and Central America and Southeast Asia. Then guests discover the zoo also has aquatic animals, spiders, beetles, and much more. In the conservatory, you’ll see butterflies you wouldn't see in Colorado naturally. “I think people are most surprised by the access and being able to see the butterflies up close,” says Alyce. “They're flying animals that move quickly, so we give you an opportunity in a concentrated space to see them in action."

The zoo has butterfly feeding stations spread throughout the conservatory. The butterflies need a lot of food around to survive. Alyce says there are 80 species of butterflies there at any given time. “They vary dramatically in size and color. One of the things I find incredible is the wings can look different when they are closed or open. It's part of their camouflage that keeps them safe.” BP houses more than 5,000 animals.
Butterfly Pavilion is a self-guided zoo you can go through as quickly or slowly as desired, and people are always around if you have questions. During the school year, a lot of classes visit for field trips.
Visiting the Survival Exhibit to hold Rosie the Chilean Rose Hair Tarantula is considered a right of passage in the greater Denver area. “We have several Rosies,” says Alyce. “They can live up to 30 years, and we have several we can rotate throughout the day to interact with the public. We put each tarantula through a testing process to make sure they'll be comfortable being handled, and we have a breeding program that allows us to ensure we can help sustain populations.” Alyce says they’re not as intimidating as people might think.
The Water's Edge Exhibit includes underwater invertebrates which mostly live in saltwater. There's an interactive touch area with all sorts of crabs and other animals. “Being in a landlocked state, we're not exposed to sea creatures as often,” says Alyce. “So having that face-to-face, hands-on experience and actually touching them brings a world view to folks who normally might not be able to experience that.”
Pollinators, such as bees, are another major focus of Butterfly Pavilion which is a leader in pollinator conservation. The zoo provides education on beekeeping including both classroom lectures and outdoor, hands-on training. At the end of the classes, people have the know-how to operate and maintain their own hives at home.
One out of every three bites of food you have comes as the result of pollinators. With declines in global insect populations, BP’s mission is critical today. Invertebrates are everywhere, and they live wherever people live.
Butterfly Pavilion is also available for private parties, weddings, and evening corporate events. Alyce says the animals behave differently at night, leading to memorable experiences.

Catering experts Chef Kyle and Hannah Williams, owners of Savor & Swirl culinary company, create an outdoor dinner party with chef-driven perennial dishes served in beautiful seasonal settings. For this alfresco dinner party, Chef Kyle draws on his favorite recipes updated for a modern palate and paired with wine selections to complement the bountiful feast.
Insider Tips for Hosting:
• Build a menu around the season. Start with what produce is available locally based on the season for the most authentic meal experience. For instance, Chef Kyle says “In November, people crave turkey, sage stuffing and cranberry sauce,” but that meal served in the heat of Summer wouldn’t hit the same. In-season fruits and vegetables will always be of highest quality and best taste.
• Always greet guests with a beverage and appetizers. “Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says.

• Draw inspiration from the season’s colors and temperatures. For Spring and Summer, think flowers, fresh herbs and linens. For Fall, think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.” For Winter, head indoors to create a cozy environment for guests to connect.
• “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. For fall, I like richer, jewel-toned florals to mix and match and keep whimsical. I vary glass vases with bur - nished brass for warm fall vibes.”
• An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.”
• Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us. Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing. When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.”
• To build confidence as a host, start small and practice. “Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. People will love it!”
• As fun as it is to dine outside, always have an indoors back-up plan. “We’ve had to bring it indoors before,” Hannah says. “It’s still fun.” Insider Tips for Hosting: “Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.”

Fresh Roasted Brussels Sprouts & Hardwood Smoked Bacon
Yield: 6 servings
• 4 cups Brussels sprouts, raw, halved
• 1-2 tablespoons olive oil
• ¼ cup yellow onion, sliced
• 1 tablespoon garlic, sliced thin
• 1-2 cups bacon, smoked, thick cut, large dice
• Salt, pepper to taste
• 2 tablespoons real butter, unsalted
• Optional garnish: 1 tablespoon parsley, chopped
METHOD OF PREPARATION:
1. Preheat oven to 400 °F for convection setting, (425 °F conventional).
2. In mixing bowl, add oil and cut raw Brussels sprouts. Season with salt and pepper.
3. Place seasoned sprouts on baking sheet and bake in oven until done, about 20-40 minutes (soft yet still with good texture and crispy edges with some dark brown color). Remove from oven.
4. Place large sauté pan on medium heat and render bacon. Add a splash of olive oil to get it going, if needed. Cook until bacon is crispy and golden brown, 5-10 minutes.
5. Add onions to pan and cook until soft, 5-8 minutes.
6. Turn heat to high and add garlic and butter and cook for 1 minute.
7. Add roasted Brussels sprouts to pan and toss all together. Season to taste with salt and pepper.
8. For optional garnishes, add fresh chopped parsley.
9. Serve and enjoy!
CHEF NOTES:
• If Brussels sprouts are large, cut in quarters.
• Rendering bacon means extracting the bacon fat which adds a lot of flavor to the dish.
Heirloom Root Vegetable Hash
Yield: 6-10 servings
• 2 cups heirloom carrot, cubed
• 2 cups heirloom rutabaga, peeled, cubed
• 2 cups heirloom parsnip, cubed
• 1 cup heirloom turnip, cubed
• 2 cups heirloom marble potatoes, halved
• 3 tablespoons rosemary, fresh, de-stemmed, chopped
• 1 tablespoon thyme, fresh, de-stemmed, chopped
• 4 tablespoons extra virgin olive oil
• Salt – to taste
• Pepper – to taste
• Optional garnish: 1 tablespoon parsley, chopped
METHOD OF PREPARATION:
1. Pre-heat oven to 400°F on convection setting (425°F conventional).
2. In mixing bowl, add oil and raw cut vegetables. Season to taste with salt and pepper.
3. Place seasoned vegetables on oiled baking sheet and bake in oven until they are caramelized and tender, about 30-60 minutes. Will be soft yet still with good texture and crispy edges with some lightly charred areas.
4. Remove from oven once finished cooking.
5. Garnish with fresh chopped parsley.
6. Enjoy.
