TO MAKE THE PALATE SWOON
R ASPBERRY CREAM CHEESE DESSERT CRUST • 2 cups graham cracker crumbs, crushed • 4 Tablespoons butter, melted • 2 Tablespoons sugar FILLING: • 12 ounces cream cheese, softened • 1 teaspoon vanilla extract • 1/2 cup sugar • 2 teaspoons lemon juice • 1 cup heavy whipping cream • 1 cup fresh or frozen raspberries • Optional: Whipped cream & additional raspberries DIRECTIONS 1. Preheat oven to 375° degrees. Spray bottom of 8x8 or 9x9 inch pan with non-stick cooking spray. Set aside. 2. Mix together graham cracker crumbs, sugar, and melted butter. Press into bottom of pan. Bake for 8-10 minutes, until edges are lightly browned. Cool completely. 3. With electric mixer beat softened cream cheese until light and fluffy. Add vanilla extract, sugar, and lemon juice, mix well. Set aside. 4. In separate bowl beat whipping cream with electric mixer until soft peaks form. Gently fold whipped cream into cream cheese mixture. 5. In small bowl, add raspberries and mash. Gently fold the mashed berries into the cream cheese mixture. If the raspberries are not sweet add some sugar or raspberry jam to sweeten. 6. Fold whipped cream into the raspberry cream cheese mixture. 7. Pour filling on top of crust. Refrigerate a minimum of 4 hours. 8. Optional: Top with whipped cream & additional raspberries

ONE OF THE BEST DESSERTS EVER CRUST • 1/2 cup butter, soft (margarine works very well) • 3 teaspoons sugar • 1 cup flour • 1 cup pecans, coarsely chopped FILLING • 8 ounces cream cheese, soft • 1 cup powdered sugar • 2 cups whipped cream
TOPPING • 1 (106 g) package chocolate instant pudding, 4 serving size • 1 (106 g) package instant vanilla pudding, 4 serving size • 2 cups milk • 1 1/2 cups whipped cream • 1 chocolate bar, grated DIRECTIONS 1. Beat together the butter and sugar. Blend in flour, then stir in the chopped pecans. 2. Press mixture into a 9 x 13 pan. Bake for 25 minutes at 350*. Cool. 3. Combine cream cheese, and icing sugar. Add 2 cups whipped cream. 4. Pour this mixture over the crust. 5. Combine both pudding mixes with the milk. Pour over cheese mixture. 6. Ice with 1-1/2 cups whipped cream and sprinkle with grated chocolate. 7. Chill for at least 4 hours before serving.

“I wanted to specialize in seltzer. I wanted to do something new and fun that hadn’t been done yet but was similar enough to beer that we could execute it to the highest quality possible.” Old Towne Arvada is home to Colorado’s first independent hard seltzer company, appropriately named Elevated Seltzer — fitting for the 5280 region. Brothers Warren and Hunter Wood founded the groundbreaking seltzery after growing up in the craft beer business. Twenty years ago, their parents opened Grand Lake Brewing Company near the edge of Rocky Mountain National Park. When older, the boys worked for the brewery, eventually doing everything required to keep a business running. “Being a part of the craft beer industry has been one of the most enjoyable things in my life and the foundation to my current status,” says Warren, who is the chief marketing officer of Elevated Seltzer. “Since our family opened Grand Lake Brewing in 2002, I have been a part of every aspect and operation. This includes: restaurant start-up, brewing, packaging, bottling, selling, promoting and distributing our products.” When it came time to retire, their parents offered to hand over the brewery — however, Hunter had something else in mind. “I wanted to specialize in seltzer,” Hunter says, who functions as the CEO, overseeing distribution, brewing and operations. “I wanted to do something new and fun that hadn’t been done yet but was similar enough to beer that we could execute it to the highest quality possible.” With a combined comprehensive experience, the Wood brothers established Elevated Seltzer in Old Towne Arvada in 2019 — impeccable timing considering the meteoric rise of spiked seltzers in the last few years, with big brands like High Noon, White Claw and Vizzy. Currently, Elevated Seltzer distributes across the Centennial State and in some areas down in the Sunshine State, and with plans to break further ground within 2022. “Elevated Seltzer provides a taproom where guests can drink lower calorie options in our seltzers, while friends can still have a beer, cocktail or wine.” “We distribute throughout the state — along with the Orlando, Tampa and Jacksonville regions of Florida. We’ve been in CO for two years now and plan to cover 95% of the state in the coming months. As for Florida, we just started distribution four months ago so we still have a lot of growth to capitalize on — and so far, it’s been going great.” Elevated currently cans eight different seltzer styles: Lemon-Lime Cucumber, Cherry-Lime, Acai, Pina Colada, Mango, Mixed-Berry, Pomegranate-Apple and Grapefruit. These are all sold in six-packs as well as 12-pack varieties. With high-quality sugar, the brothers make a sugar brew that’s passed through a dual filter to clean and clarify — and they work with 100% non-GMO fruit extract for flavoring. Their tasting room also creates craft cocktails, with most in-house concoctions utilizing their seltzers for added fizz and flavor. “I’m a big fan of our New Fashioned,” says Warren. “I love Old Fashioneds, and what I’ve done with all the cocktails is take what you know and love and twist it up.” Elevated’s New Fashioned is Greenbar bourbon, bitters, orange zest and cherry lime seltzer. “Also, the Paloma Broke My Heart is one of my favorites; I love that one,” he adds — a drink built with Greenbar tequila, lime juice, simple syrup, mint and grapefruit seltzer. The food menu is accessible pub fare, offering wings, pizza, poutine, pretzels, sandwiches and more. “I highly recommend the pinwheels, if you’re coming in for your first time or haven’t tried them yet,” says Warren. “They’re outstanding. They are dang good.” On the menu, the item is listed as Life Changing Pinwheels, consisting of various, fresh ingredients rolled in pizza dough — with varieties such as buffalo chicken, jalapeño popper, pepperoni, pesto and more. “Elevated Seltzer provides a taproom where guests can drink lower calorie options in our seltzers while friends can still have a beer, cocktail or wine,” says Hunter. “With Elevated, we were able to create a brand and product that I am truly passionate about and enjoy sharing with everyone.”

Cruise ships sail to worldwide destinations where couples can rediscover their sense of wonder. Tropical ports of call and exotic locations are usually near the top of these lists. Ira and I fell in love with Japanese history and culture during a 2015 visit to Nagasaki. Fascinated by what we discovered, we researched future Japanese itineraries. To sample coastal towns, we chose a 2019 Celebrity Cruises’ 14-day immersive Japanese cruise. During this two-week period, we circled Japan. Since we had limited time in each port, we selected shore excursions designed to maximize our land experiences while simultaneously including sufficient time aboard to take advantage of cruising perks. To provide a sampling of our memorable experience, I am highlighting our key land experiences along with a taste of our Suite Class experience.
YOKOHAMA (TOKYO) By arriving a couple of days early, we were able to explore Japanese culture and history in Tokyo and Yokohama. During a guided tour of the Edo-Tokyo Museum and the Tokyo SkyTree Observatory, we compared early history with modern life. A rickshaw ride through the streets of Tokyo and an Amezaiku workshop offered glimpses into the past. To learn more about our visit to Tokyo, read Tour Tokyo in Comfort and Style. Prior to embarking on the cruise, we walked around the harbor area. Unlike many other ports of call that are not pedestrian friendly, Yokohama, Japan’s
second-largest city, is easily maneuvered by foot and public transportation. We came across several diagrams and pictures informing visitors of the city’s transformation from a fishing village into a vibrant port. These changes occurred after Japan emerged from its isolation in the last half of the 19th century. In Tokyo, our visit to the Edo-Tokyo Museum had educated us about the impact of Commodore Matthew Perry’s visit to Japan. Now, we saw first-hand how foreign trade had molded Yokohama.
BOARDING CELEBRITY MILLENNIUM After boarding the Millennium, we were offered an upgrade to The Retreat, a suite class experience. Our butler, Ramir, extended his first-class expertise and assistance. After Ramir left our cabin, I turned to Ira and said, “This is truly sweet! I can’t wait for 14-days of pampering.” Suite class amenities catapult a passenger’s experience into an incredible level of luxurious extra perks. On a cruise ship, I often feel overwhelmed by the volume of people. On the Millennium, our Suite Class designation gave us access to private areas—the Luminae Restaurant, an indoor lounge called The Retreat, and an outdoor sundeck. These exclusive gathering places minimized our daily interactions with others and offered spectacular culinary treats and non-stop beverage service. The service we received was comparable to a 5-star boutique hotel. Priority status was extended during custom procedures and when entering and exiting the ship. SHIMIZU A cable car ride to Kunozan Toshugu took us to the 17th-century shrine with more than a dozen buildings and an assortment of statues. This early Edo period architecture was painted in a bright red lacquer and decorated with colorful patterns. Each set of buildings was reached by climbing up a series of steep steps. At the top, we paused in front of the Tokugawa’s mausoleum. He was the first shogun of the Edo Period. On the way back to the port, we walked through a narrow pine forest leading to a rocky beach. A sunny day offered incredible views of Mt. Fuji and photo opportunities.
KOBE (2 DAYS) Entering Kobe Port Ira and I were invited to be on the Bridge with Captain Theodoros Zakkas when we entered the port. We have a collection of still shots as the captain maneuvered the enormous ship into the harbor. Champagne, mimosas, and a cake in the shape of a book and bearing the title of my book, May This Be the Best Year of Your Life, were added perks. Kobe and Kyoto Due to my extensive background and interest in Jewish history, we had a private tour of Jewish Kobe. Takayoshi Iwata, a retired professor, and the leading authority on Kobe’s Jewish history, met us at the terminal and then offered a half-day tour. To learn more about this tour read “Exploring Japan’s Jewish History.” The following day, we joined dozens of passengers for a Celebrity Shore excursion featuring a ride on the Shinkansen (bullet train) to Kyoto. For more than 1,000 years, Kyoto had been the Imperial Capital. In Kyoto, we divided our time between two UNESCO World Heritage Sites— the Kiyomizu-Dera Temple (Pure Water Temple) and the Kinkakuji Temple (Golden Temple), and had a Japanese lunch at the Fortune Garden, a restaurant dating back to the 1920s. To reach the Kyomizu-Dera Temple, visitors walk on a narrow street lined with restaurants and small shops. After entering this spiritual place, we were guided through the forested grounds filled with almost three dozen points of interest. At select locations, we had panoramic views of the city, as well as many of the temple’s structures. Some of our fellow passengers chose to indulge in the ritual of drinking water from a slowing stream of water to gain the good fortune of longevity, success at school, or a successful love life. The Kinkakuji Temple is frequently listed as one of the top places to see because visitors are guaranteed to walk away with amazing images. Unfortunately, little more can be obtained from this overcrowded tourist attraction.

The Kochi Castle and the Ryugado Cave were the highlights for our stop in Kochi. The castle transported us back in time to the Edo Period. We climbed up six floors

inside the Castle Tower that was rebuilt in 1749. Along the way, Japanese and English signs and exhibits offered useful information. At the top, we had panoramic views of the nearby city. At our own pace, we explored the inside of the cave. Steep metal staircases enabled us to go from one area to the next, where colored lights and signs identified geological formations and archeological finds. After exiting the cave, we followed a trail through a dense forest. Signs adjacent to the pathway identified the indigenous foliage.
HIROSHIMA While docked in Hiroshima, we spent the morning in ShinIwakuni. We admired the construction of the famous Kintai Bridge, a pedestrian five-meter-wide walkway constructed with five archways. When we reached the other side of the bridge, our pictures were enhanced by the autumn colors coupled with the remains of fall cherry blossoms. be seen in the spring and the fall. We eventually broke off from the group so we could visit the Iwakuni Art Museum focusing on Samurai history. This small, uncrowded museum is an historical gem.
CRUISING ON THE MILLENNIUM With a 16-hour time difference, jet lag was inevitable. Attempting to remain active could not forestall the need for rest and relaxation. Suite Class offered places to unwind and spend time together. When the weather cooperated, we sought out the outdoor deck. Sometimes inclement weather made us head inside to The Retreat. Dining in the Luminae was an added perk. Chefs prepared the special menu options in their own designated space. Our knowledgeable and personable waiters offered useful information about unfamiliar dishes. KAGOSHIMA A short ferry ride to an island followed by a motor coach ride took us to the Arimura Lava Observatory, where we witnessed Sakurajima in all her glory. White clouds of volcanic gas and ash spewed out from her top. Mt. Sakurajima, the most active Japanese volcano, is in the Kirishima-Kinkowan National Park. We trekked on well-marked lava and ash-covered trails surrounded by vegetation. Warning signs along our route pointed to the nearest evacuation shelters and other signs identified nearby landmarks. Even though it has been decades since the last major eruption, our guide reminded us that volcanoes can be unpredictable.

HAKODATE Our journey to Onuma National Park was met with freezing temperatures and brisk winds as we explored one of Japan’s natural treasures. Our nature guide led us along barren tree-lined paths offering spectacular views of a three-lake ecosystem. This area was initially created by a volcanic eruption and is known to attract cooper swans, mallard ducks, and white geese. More than 100 small islands dot these lakes. Disappointingly, the allotted time for our adventure was less than two hours. This short visit singles out one of the disadvantages of shore excursions— too little time at places worth exploring.
AOMORI Our arrival in Aomori was delayed. The harbormaster closed the port for two hours due to treacherous waters. When we eventually disembarked, we were greeted by snowflakes. Since our shore excursion had been cancelled, we were on our own to explore the port. At the nearby Nebuta Museum Wa Rasse, we were introduced to Nebuta Matsuri history. For centuries, this August festival has been associated with colorful floats.

YOKOHAMA (TOKYO) From the port, we took a long taxi ride to Tokyo to see the highly acclaimed Mori Building Digital Art Museum and the Mori Museum in the Roppongi Hills Mori Tower. Our senses were ignited by the digital artwork and the musical tones featured throughout 10,000 square meters of imaginative space. Before traveling to the airport, the next day, we braved a torrential rainstorm so that we could visit the Hikawa Maru, a maritime museum showcasing a cargo-passenger ship built in the 1930s. In the pre-World War II era, this vessel was considered a state-of-the-art ship and, during its time at sea, carried more than 25,000 passengers. The decks were arranged by classes, and each class had its own dining room and public areas. While modern-day ships offer different price points, most amenities are shared by everyone. Most modern-day cruisers are unable to relate to the disparity in service. Having just disembarked from a Suite Class cruise experience, I simply chuckled. Our list of top five romantic adventures includes this Japanese sailing. This intensive itinerary along with The Retreat experience offer a perfect balance between captivating sightseeing and comforting relaxation. While in Tokyo, the Traveling Bornsteins were hosted by the Tobu Railway Co. Ltd. Meet the Nex t G enerat ion of Mossholder’s Flora l The next generation of an Arvada flower shop is putting poetry into petals
There’s few better ways to brighten someone’s day — or illuminate either their work or living space — than with an eye-catching, flower arrangement. Unfortunately, it’s very difficult to create the elaborate floral presentation that you may see in magazines, other media or on Pinterest. Constructing even a basic floral arrangement pleasing to the eye is not as easy as it may seem, which is why there are florists who work professionally to build beautiful botanical works. Family-owned and operated, Mossholder’s Floral has served the Arvada area for nearly four decades. Originally, established by Kelly Mossholder, her daughter and son-in-law — Amanda Mossholder and Chris Norwood, respectively — are now partners in the business, committed to offering the finest floral arrangements and gifts. “Kelly entrusted us to talk about the beauty of the business,” says Norwood. “I grew up in the flower shop; I’ve been playing with flowers my whole life,” says floral designer Amanda Mossholder. “However, when I went off the art school, I was not going do anything even remotely close to floral design — I didn’t want anything to do with it. Mossholder, with pink hair, eccentric glasses and an easy laugh, attended Rocky Mountain College of Art and Design — a four-year, accredited school — where she engaged in painting, sculpture, welding, and a little bit of everything. “The funny thing about welding is it’s a lot easier than men make it seem. Grouchy old men want to make you feel like you’re not going to be able to.” “One year, my Christmas gift to Amanda was a belt sander,” admits Norwood, who is both Amanda’s life and business partner. Amanda describes him as a gopher, as someone who does a little of everything. “Kelly, Amanda’s mom, started out specializing in weddings, initially,” Norwood adds, who is both Amanda’s life and business partner. Amanda describes him as a gopher, as someone who does a little of everything. “Kelly initially had a retail space, but overtime, the business just naturally grew into mostly online ordering,” he continues. “The retail aspect became mostly unnecessary; it was more trouble than it was worth. Now we just have a small, messy workshop in a house where we take orders, produce art and send it out on a daily basis.”

In contrast to painting, welding and floral arrangements, Norwood’s background spent 15 years in the corporate finance industry, working in both New York and Toronto. However, with meeting Mossholder, thinking of settling down with children and wanting a creative outlet, Norwood worked to become an essential part of the family business. Essentially, the unexpected equation for Mossholder’s Foral is: artist at heart + big city jack-of-all-trades + matriarch. Their unique, small-business staff is dedicated to go the extra mile to make your floral gift perfect. Despite not wanting anything to do with flowers or floral design when an admittedly angsty teen, artist Amanda Mossholder now has this to say: “It’s creative, natural and organic — which is so helpful for mental health, for both the creator and the recipient of the gift. With regard for mental health and its significance, the two of them admitted that they were busier than ever during quaratine says Norwood, “People needed to stay connected and sending flowers was a really big way people achieved and maintained that.” “People were having to miss so many important events, like weddings and funerals, but they would still send flowers out of love,” adds Mossholder. “A floral gift can simply say, ‘I miss you’ with more intention and thought than a text,” continues Norwood. With Valentine’s Day on the way, the Hilton Garden Inn in Arvada is open and ready for couples needing a night away from home. Set in a commercial area — across from a Harkins movie theater, the Arvada 14 — the hotel has warmly decorated rooms with Wi-Fi and flat-screen TVs, plus minifridges, microwaves and coffeemakers. Upgraded rooms have mountain views and room service is available. Only a quarter-mile from Olde Town Arvada, which boasts shopping and unique dining — including The Arvada Tavern, Lady Nomada, and the School House Kitchen and Libations. The hotel’s own casual restaurant, the Garden Grille, offers breakfast, dinner, evening room service, and a full selection of cocktails, beer and wine — while encouraging guests to explore the downtown during lunch hours. Joshua Langley is the director of marketing for Arvada’s Hilton Garden Inn. Originally from North Carolina, he has lived in Colorado for 20 years and has extensive experience in the hotel and hospitality industry, and in various roles: food and beverage director, a convention services manager at the Sheraton in downtown Denver, a director of events, and an area director of sales, handling various properties. “After you’ve been in the business this long you understand what guests’ needs are,” says Langley. “There’s nothing like finishing an event and walking away knowing that you made their night. There’s a lot of pride in providing great service.” By choosing the Hilton Garden Inn, guests can escape the normal routine, take a moment to soak in the hot tub, swim in the indoor pool or even keep on their workout schedule in the hotel’s fitness center. Located only a 10-minute walk from historic Olde Town Arvada, guests can eat at one of the many great restaurants, have a drink at one of the many local breweries and shop at boutique shops. After a full day of Olde Town Arvada, finish the evening with a stroll back to the hotel.
“The hotel is in a very convenient location. Downtown Olde Town Arvada is just a very quaint neighborhood and kind a throwback,” says Langley. “It has lots of options for dining, shopping, barhopping and more — the town has a lot to offer. The hotel has decor that blends in well with Arvada — it is a Hilton Garden Inn, which has a great standard, but they also did a great job making it feel like Arvada.” The Hilton Garden Inn will be offering a romance special from January 17th through the end of March that will include a box of chocolates, a split of champagne and two champagne flutes to take home. Even outside the weeks surrounding Valentine’s Day, the hotel is a great option for a getaway from home. “We all like to get away from home. Even if you live in Arvada, that getting away and going to a fresh clean room with nothing you have to clean up is a relief — we have our housekeepers that come in and do all that for you,” Langley says. “You can come downstairs to grab breakfast — and in the evening, wind down.” “You can make it a staycation as far as looking at it as a time to relax versus being at home where you’re still thinking ‘I’ve got to do dishes. I’ve got laundry to do or I need to walk the dogs,’” Langley continues. “This is a great location to be able to get away and makes a good staycation without having your daily routine in front of you.”
