One of the best sandwiches I ever had was a bacon butty in Southampton, England. Now, this isn't gourmet faire. It's fried up back bacon on a toasted, buttered white roll. But, like most memorable meals, what adds to the flavor is the company. I was working at an ad agency and on my first day, the boss bought lunch for everyone in the office. One of the guys ran down the street to the local cafe and brought back a paper bag already showing grease marks from its contents. Together, we spread out our squares of white butcher paper and ate our sandwiches. I immediately felt like one of the team. One of the writers insisted on dousing his butty with HP Sauce, a British brown sauce, the main ingredients of which are tomatoes and tamarind extract. The graphic designer was all about mayo. The boss preferred his naked, no condiments. I got the skinny on the clients and campaigns we were working on, not over a boardroom table, but across desks and a greasy bacon sandwich. I loved that job. And, that sandwich. Our publisher, Jim and his wife Darce (pictured here) traveled to Greece this summer on a cruise and experienced some of the best food ever. Yes, it was all about the Mediterranean seafood, but also about the meals overlooking that azure sea with old and new friends. Enjoy this issue and devour it, from cover to cover. All my best,

Chef Sean Brock has packed many lives worth of experience into his 44 years. He is a multiple James Beard award winner, two time New York Times best-selling cookbook author, a host of one television show (season two of Mind of a Chef, produced by Anthony Bourdain), and subject of another (Netflix’s Chef’s Table). After decades of non-stop cheffing, Sean pumped the brakes to give himself some time and space to breathe. That place of zen manifested in the form of his flagship restaurant Audrey in East Nashville. Though he currently resides in Nashville, he has strong ties to Atlanta with his restaurant Minero, which opened in Ponce City Market in 2015. So, if you’ve tried Minero’s house ground corn tortilla tacos and thought, “I wonder what else Chef Brock is cooking up?” You could have your answer in just under 4 hours, when you could be in Nashville dining on Audrey’s Pokeweed & Bear Creek Beef “welcome snack”, with Greasy Beans, Lion’s Mane Mushroom and Jimmy Red Corn for your main course. Sean’s passions and influences reflect in the dishes on Audrey’s menu: growing up in the rural South, Appalachian cuisine, a love of Japanese culture, and the traditions impressed on him by his grandmother, who is also the restaurant’s namesake. The restaurant works with organic, biodynamic, and sustainable producers to provide all food and beverage choices. The unique, seasonal ingredients make for an exciting culinary adventure. Audrey is more than just a restaurant. It is the setting for Sean Brock’s food chemistry lab… literally. Behind a wall of windows, a state-of-the-art, food-focused research and development lab is chock full of equipment that does incredible things to bring out the most bombastic flavors

in food. To be able to meet Chef Brock in this environment is to see him in completely in his element: surrounded by dehydrators, liquefiers, extractors, and food experiments in different stages of completion. It’s an absolute thrill. When he talks about the processes he employs to get to a particular food-state, you can’t help but feel just as excited as he is. Audrey’s Bar concept is a Southern-style cocktail omakase where “the point is the produce,” says bar director Jon Howard. The staff concocts five new drinks each night, utilizing fresh, seasonal produce that is sourced locally that morning. With a focus on ingredients first, spirits second, each has just three components and is made by hand without the use of any modern machinery. The cocktail menu changes every day based on what the team finds at the market. A trio of cocktails could include: Oloroso Sherry, freeze dried lemon verbena and citrus; Oro Blanco (a relative of the grapefruit), gin and tomato sweetener; or carrot, scotch and Rex Union Curaçao - all mind-blowingly cool in presentation with flavors like nothing else you’ve sipped. Life in a commercial kitchen is not easy. Days and nights are long. Stress is high. Sean places a huge importance on education, personal development and wellbeing. Employees have the use of dedicated classroom and research spaces filled with his book collection, mentorship programs, a podcast recording studio, an on-site wellness room and more all within the Audrey compound. Sean says, “Audrey is the restaurant I want to retire in, I plan to take a minimalistic approach to exploring the future of Southern food and working towards creating a healthier workspace.” AudreyNashville.com

My kitchen staff and myself have really delved into the creative part of us. Really, what we’ve geared this menu towards, is bringing inside the perimeter flavor, outside of the perimeter. In this dish in particular, we have South American influence as well as an Asian twist with the rice wine vinegar as the base for our ‘jicama slaw’ which, honestly, is more of a South American salad than it is a coleslaw... but has the profile of an Asian slaw that resides in South America. I think there’s a certain beauty that

comes with food tasting great and the consumer trying to figure out where each flavor comes from. We all hope to elevate the classic pub food to something that we all crave. We want to take a step towards creating something that is a culmination of our kitchen staff’s culinary knowledge and heart. I am so far from alone when I say that I have put everything into this restaurant and this menu as a whole. We are so excited about the release of our new fall menu, which features a few items created by me and my team. One of our most anticipated dishes is the honey chipotle chicken sandwich, an elevated version and our take on the recent chicken sandwich craze. This mouth watering sandwich features a crispy chicken breast coated in a house made honey chipotle sauce, topped with a jicama slaw, and nestled in between a toasted brioche bun. You can expect to see Cherry Street’s new fall menu when you visit this month!

A perfect example of this is on our new menu. The short rib steak with Mississippi jus and pepperoncini pesto is a play on a traditional Southern dish called Mississippi Pot Roast. I grew up on this classic dish that uses ranch dressing spices, gravy mix, and pepperoncini peppers to make a succulent, savory pot roast. We have taken the same ingredients and created an elevated version using the short rib steak, the same seasonings done as a Mississippi jus, and turning the pepperoncini into pesto. It’s delicious!

FURKIDS ANIMAL RESCUE & SHELTERS CELEBRATES 20 YEARS

2022 has been a monumental year for Furkids Animal Rescue & Shelters, and not just because it is their 20th anniversary of lifesaving work! Furkids, headquartered nearby, is a 501(c)(3) nonprofit charitable organization that operates the largest cagefree, no-kill shelter in the Southeast for rescued cats and Sadie’s Place, a no-kill shelter for dogs. Furkids was founded in 2002 by its CEO, Samantha Shelton, with a mission to rescue homeless animals, and provide them with the best medical care and nurturing environment while working to find them a forever home. On April 9, 2022, Furkids celebrated its 20th anniversary at its amazing destination shelter and headquarters in Cumming. Thanks to the generosity and love of their supporters, Furkids raised over $200,000 of vital funds that night to continue their life-saving efforts. Furkids also launched two major expansion projects this year: a new Community Cat Program, and a new rescue and adoption facility in Cobb County. The Community Cat Program offers TNR resources, education, a monthly low-cost spay/neuter clinic and more. In addition to Furkids’ new East Cobb rescue center, the organization operates 10 different adoption centers and four thrift stores throughout metro Atlanta that support 30% of their operating budget. Furkids believes that adopting a wet-nosed companion into your home is a priceless joy, and the rescue saw incredible impact through adoptions this summer. Warmer months are the busiest time for shelters because of high volume

intakes resulting from increased litters, and fewer adoptions due to people being on vacation. However, Furkids reached a total of 287 cat adoptions in July, thanks to their participation in BISSELL Pet Foundation’s record-setting “Empty the Shelters” event-–the largest adoption event in the nation. This total was a 10% increase compared to Furkids’ 2021 July cat adoption numbers. On average, Furkids saves over 5,000 cats and dogs each year. Once an animal is rescued and vetted, the cat or dog is available for adoption through Furkids.org. Interested adopters can submit an application for any animal and speak directly to an adoption counselor to find their perfect match. Furkids is more than a rescue, it is a destination shelter. Their cat shelter is nestled in the botanical campus of Furkids’ Headquarters in Cumming with picturesque ponds filled with beautiful koi, a soon-to-open special event center for celebrations (ShilohGardens.org) that will bring revenue back to their mission, several cottages for new animal intakes, and even a tiny house for a shelter nightwatchman. It is a shelter like you’ve never seen before! Furkids’ four pillars include adopting, fostering, donating, and volunteering. Anyone who wishes to get involved can visit their website at Furkids.org. ALPHARETTA CITY LIFESTYLE: WHAT MOTIVATED YOU TO OPEN A RESTAURANT? About 8 years ago we discussed opening a business built around the two things we loved: coffee and wine! We knew that it would have to have great food as well. Most people ask us what does “Sulit” mean? It means, “worth it” in the Tagalog language. For us, this new beginning is definitely worth it because this has been a dream of ours that is now a reality. We wanted to create an inviting environment with great customer service that will make customers want to return.

ACL: WHO WOULD YOU LIKE TO SEE IN YOUR RESTAURANT? Our customer is anyone who loves great coffee, an awesome wine selection, great food and pastries, and an inviting atmosphere. We welcome customers who need a place to work on their laptop, a space to conduct a business meeting, a place to go for date night, or someone looking to enjoy a nice night out with family or friends. We feel Sulit has something for everyone!
