Every October, I gather my favorite people for my favorite fall tradition: Souptober. When the first breath of autumn finally reaches Texas, I set the date and ask everyone to send me their recipes.
The evening of Souptober, my friends arrive wearing oven mitts, arms laden with Roasted Tomato Soup, Green Chicken Chili, Lobster Bisque, and all manner of aromatic pots. Every countertop is covered with crockpots, Dutch ovens and stockpots. We sip wine and set to work sampling the soups, exclaiming over one another’s delicious creations. At the end of the evening, every guest goes home with leftovers for the week and a dozen new recipes to keep them warm through the cooler evenings.
SHANNON'S CREAM OF MUSHROOM SOUP
INGREDIENTS
• 16 oz white mushrooms
• 1/2 white onion, chopped
• 6 cups chicken stock
• 1 teaspoon dried parsley
• 1 teaspoon lemon juice
• 4 egg yolks
• 5 tablespoons butter
• 3 tablespoons flour
• 2 bay leaves
• pinch of thyme
• 1 teaspoon salt
• 1/2 cup heavy cream
Souptober is a time to savor soup and friendship. Here’s one of my favorites from my friend Shannon to get you started... CONTINUED

Remove stems from mushrooms and set aside for later use. Thinly slice mushroom caps and set aside separately. Heat 3 tablespoons butter in a nonstick skillet or Dutch oven over medium heat. Add onion and reduce heat to medium-low. Sauté until tender and translucent, but do not brown. Add flour and stir for 3 minutes, until flour and onion are well combined. Turn off heat.
Add chicken stock, parsley, bay leaves, and mushroom stems. Simmer over low heat, partially covered, for 30 minutes.
Meanwhile, sauté the mushroom slices. Melt 2 tablespoons of butter until bubbly. Add mushroom slices and season with salt and lemon juice.
Stir to mix well. Cover and simmer over low heat for 5 minutes.
When the broth is done, place a colander over the pot containing the sautéed mushrooms. Pour the broth (containing the mushroom stems and onion) through the colander into the pot with the sautéed mushrooms. Discard the mushroom stems and onion. Simmer over low heat for another 10 minutes.
Combine egg yolks and heavy cream in a small bowl and beat until well mixed. Slowly add to broth. Add more salt and cream, if necessary. Heat over very low heat another 5 minutes, but do not bring to a simmer. Garnish with chopped parsley and croutons.

For Jason Hernandez, standing at the crossroads of Greenville Road and Murray Street in East McKinney is a full circle moment. When he was growing up here, the store on this high-profile corner was a place to be avoided. Now, thanks to his unwavering dedication, children who used to tread by hesitantly now walk up to “La Tiendita” with beaming smiles. Hernandez is breathing life into the heart of East McKinney, shaping it into the vibrant and thriving neighborhood it was always destined to be.
Gone are the days of the corner store being a place to avoid. He’s cleared the shelves and replaced the remnants of the past with a fresh vision. Junk food, lotto tickets, and cigarettes? They're out. Instead, there’s produce and other healthy options generously provided from local farmers, grocery stores, and supporters. Worried you can’t afford it? No problem. Hernandez is working to provide subsidized options so everyone can afford the good stuff.
Hernandez is brimming with ideas for the store: a small café, an outside gathering area, and free Wi-Fi so students can grab a healthy snack after school
then hang out at the tables to study. "Honestly, I'm no expert on running a store, but with help from the community I’m learning the ropes. Ultimately, my goal is to do something good for the hood,” he beams.

In the program, high school students will learn the art of business as they embark on a journey of empowerment, guiding them away from adversity and towards a brighter future. ATLAST interns will be shaped by more powerful forces and have more opportunities than Hernandez did when he was growing up in East McKinney.

When Gregory and Kim Casale took ownership of Allen’s beloved Elke’s Market Cafe, they exercised the utmost care in transitioning Elke’s into what it is today.
“When you buy a successful restaurant,” says Gregory, a 1994 Culinary Institute of America graduate and former corporate chef, “The last thing you want to do is change it.”
“We still use Elke’s handwritten recipes,” adds Kim.
Allen’s devotion to Elke’s is what helped the Casales make the decision to purchase it in August of 2020 – a surprising time to venture into restaurant ownership.
“People ask me all the time, ‘Why did you buy it in the middle of COVID?’” says Gregory. “And our sense was that if Elke’s made it through the lockdown, it’s a strong business.”
Over the past few years, Gregory and Kim have made subtle changes to make Elke’s their own. From fresh paint and new artwork to artisanal sodas made with real sugar, there’s a lot to love about the updated Elke’s.
“There are a lot of additions we’re really proud of,” shares Kim, “I would say our wine program is one that is really important to us.”

Early on, the couple owned a fine dining restaurant in Scottsdale, Arizona called Gregory’s World Bistro. Kim ran the wine program at Gregory’s and later sold fine wines to restaurants in their area. They knew they wanted to put Kim’s expertise to work at Elke’s, too.
“I’m also a Certified Wine Educator,” adds Kim. “I enjoy educating people about wine. It’s fun. And at the end of the day, it’s still just wine – I could be super snobby, but I really enjoy finding wines that people like to drink that fit their palettes and their budgets.”
When they first formed the wine club in November of 2020, members would pick up their bottles on a specified date after enjoying a tasting. Over time, the wine program has expanded to include multiple tastings a month.
Given Gregory’s fine dining background, Elke’s now offers one special meal on wine tasting nights. Guests can enjoy the exclusive offering or order off the regular menu.
Elke’s Wine Club members enjoy monthly tastings and significant discounts on bottles of wine. Non-members may attend wine tastings for $10 per person. Public art also helps us to memorialize individuals and events that are significant to Allen’s history. Additionally, it benefits Allen economically by serving as a desirable destination for employers and families. Each of these features is vital to continuing Allen’s Public Art Master Plan, which is the outline that each new artwork follows. The commissioning of each piece can take a year or more to come to fruition, and the process is undoubtedly community-driven. The commissioning of art in Allen is done by the Public Art Committee, which consists of seven community members who take the best interests of the community to heart when selecting Allen’s public art.

The public is welcome to attend the Public Art Committee meetings, and the funds for Allen’s public art are approved in a bond election every 8–10 years. The Key to a Successful Wine and Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.
Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another.
Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste.
For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue.
While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa.
Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with.

INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ALI MOHAMMED

The phrase "work hard, play hard" is an understatement for Ali Mohammad.
Ali is a senior this year and wants to put his best foot forward in all aspects of his life.
“As someone who is in charge of the school events, my biggest goal for the school year is to make sure everyone has an amazing time for their last year of high school,” Ali expresses. "As for my future goals, I hope to one day become a social entrepreneur, so I can help others while also providing for my family.”
Ali is an intern at Rice University, and he works with professors who specialize in AI.
“What I love most about my internship is the access I have to industry professionals,” Ali shares. “If I ever need any help with AP calculus, I’ll know who to call!”
Ali used his engineering abilities to increase accessibility for disabled youth. He and his team modified and rewired drivable toy cars to be operated by children paralyzed from the waist down.
In his free time, Ali enjoys dirt-biking and martial arts. “Martial arts is important to me because it helps me connect with my friends as well as keep me fit and healthy,” Ali mentions. “I also find great joy in taking and editing pictures. From Thailand to Dubai, I’ve captured thousands of photos of me to look back at and remember.”
The best advice Ali has received is to leverage every opportunity he has and to never take anything for granted.
“True change occurs when you are honest about your short-comings and weaknesses,” Ali states.
His father, Abdul, mentions that Ali has always dreamt big, and Abdul wants Ali to always remember his visions and ambitions: “Visualizing your dreams can help you get through the toughest of times.”
