Welcome to our new-look magazine, Life at Your Leisure (formerly Escape) – another insight into our getaways and offers across our portfolio of hotels in the UK.

Looking back over a successful spring and summer, it was fantastic to see the nation fully open post-lockdown and once again showcasing staycations in all their glory. Mother’s Day, afternoon tea launches, and jubilee celebrations were just some of the reasons to tempt our guests to visit, dine or stay. Our coastal sites baked in the British sunshine, welcoming guests for fests of BBQs and fresh British fish and chips.

Our Mill Hotel in Sudbury unveiled its beautiful, revamped terrace overlooking the water meadows, along with a newly refurbished Meadow Suite and refreshed restaurant. Meanwhile, our Duke’s Head Hotel in King’s Lynn now offers a fantastic new bridal suite, and our Dragonfly Hotel Peterborough has an amazing new bifold door, allowing panoramic views across the boating lake, as part of a refurbishment scheme. Work has also begun on transforming Great Hallingbury Manor in Bishop’s Stortford... watch this space!

As we all feel the squeeze of increasing costs and challenges in the economy, we have been pleased to be able to keep increases to a minimum and continue to welcome and delight our guests.

We’ll be launching our Autumn-Winter menus, with our Head Chef team bringing back some seasonal favourites. Our Christmas events and packages are already available, and we’re already busy preparing for the festive season. We’re thrilled to announce the opening of the new terrace at The Mill, offering an idyllic place to sit and unwind in the sunshine.

A substantial amount of work has been carried out to make the terrace the perfect place to take in the fine views of the water meadows from our Sudbury hotel.

A new sofa area offers supreme comfort with brand-new sofa cushions and throws, surrounded by beautiful fairy lighting and an array of stunning hanging floral arrangements.

An Instagram-worthy green foliage wall provides not only a gorgeous backdrop for you and your friends to take a couple of great shots, but also a wonderful setting for our line-up of live musicians.

Having kicked off over the summer, The Mill will host acts as often as possible –weather dependent, of course (we are in England after all)!

It’s dog friendly, a sun trap in the summer, has heaters in the winter, and is the perfect stop before or after a walk in the meadows. What more could anyone want?

Meanwhile, the upstairs bar has been refurbished and boasts brand-new fluorescent signage, its own miniature green wall and floral edges. It will serve the same great tasting range of draught beers on offer in our main bar, cocktails handcrafted by our team, crisp white wines, fruity reds and an excellent selection of spirits, including some wonderful local gins from Nethergate Brewery & Distillery and The Suffolk Distillery.

While being a great place for music, sunshine and drinks, The Mill also provides a fantastic setting to enjoy our menu, whether you’re after a small snack, salad, sandwich or three-course meal, there’s something for everyone.

We’d heartily recommend our Maldon Rock Oysters, paired with a cold, crisp bottle of Cloudy Bay Sauvignon Blanc from New Zealand.

We celebrated the initial launch of the terrace on the April bank holiday weekend with a barbecue, live music and an ale bar provided by Nethergate, which was a resounding success with some great feedback.

And we have followed up by doing even more – repainting the area surrounding the

newly implemented sofa seating, adding new flower arrangements, more lighting, and some beautiful new furniture and deck chairs, courtesy of our friends at Franklin & Sons, to match the parasols they provided, along with new patio heaters (for those unpredictable British summer days).

Now the only thing missing from our terrace is... YOU! So, please come and join us – we can’t wait to welcome you to our little slice of Suffolk.

e award is presented to a business that is recognised as excelling for King’s Lynn, ‘championing’ its attributes and heritage, and that acts as an ambassador to create more opportunities for prosperity around the local area. e award itself is handcra ed using wood grown on Sandringham Estate, highlighting the richness of local resources as well as people.

Other collaborations over the course of the year have included a relationship with the local Queen Elizabeth Hospital throughout the Covid-19 crisis support period and King’s Lynn Football Club, which the club has proudly supported throughout its 2021/2022 campaign.

Since 2021, the hotel has worked closely with local radio station, Radio West Norfolk, and sponsored the charity of the month. It also o ers bespoke charity ball packages.

‘I would love to live on a Nordic island – the smaller the better!’

From climbing Mount Everest and rowing across the Atlantic, to racing across Antarctica to the South Pole and crossing the deserts of the Empty Quarter in the Middle East, adventurer Ben Fogle embraces any challenge thrown his way.

He is an award-winning broadcaster and author, notching up nine Sunday Times best-selling books, and has presented numerous programmes for the BBC, ITV, Discovery and Channel 5, including the hit series, New Lives in the Wild.

Ben is also patron of the United Nations and Red Cross, a fellow of the Royal Geographic Society, and ambassador for the World Wildlife Fund for Nature (WWF), Tusk and Hearing Dogs for the Deaf.

Since he sprung up on our screens more than 20 years ago in the BBC show Castaway, in which a group of people were filmed spending a year in the remote Outer Hebrides while creating a community, Ben’s life has been non-stop. We catch up with the married father-of-two as he contemplates a quieter life in the future somewhere faraway...

What is your essential travelling companion/accessory on your journeys?

I always travel with a wax Barbour jacket. Perfect for any weather. I have used one for my whole life. I usually travel with a lightweight wax so that I can use it both in hot and cold places. I have had my favourite Barbour for more than 30 years. They will last a lifetime.

What has been your favourite place abroad to visit, both as a tourist for leisure and as an adventurer, and why? There are so many, but I love the Nordic nations. Finland and Norway are particular favourites. I hope to find an island somewhere up north where I can build a little cabin. I love the people, the food and the lifestyle. They embrace the outdoors and celebrate nature.

And in the UK?

I have a soft spot for the Outer Hebrides. I spent a year living on the island of Taransay for the BBC show Castaway and I have been obsessed ever since. I spent a month filming on the islands last year for a BBC series and have just returned from a two-week journey to St Kilda for my new C5 show, Lost Worlds.

You’ve met some extraordinary people living in some amazing places around the world – which experience or story has impacted you most?

There are so many. I loved meeting the Long family in New Zealand’s South Island. They were one of the first remote families I ever spent time with and I revisited them just before lockdown. They live off Milford Sound and are only accessible by helicopter or by walking along the coast for a few days. I also loved the Lall family in the Indian Himalayas. Steve Lall had been an airforce pilot before moving to a remote hill farm. He remains one of the most charismatic people I have ever met.

Do you see yourself living off-grid one day and, if so, where? Please paint the scene. I would love to live on a Nordic island. The smaller the better. A bare rock in the North Sea. There are no trees. Just a lump of rock in an island archipelago with a small wooden cabin with steps

down to the water. I’d have a little wooden canoe to paddle between islands and collect firewood from elsewhere. I’d catch fish and contemplate life, the universe and happiness.

If you could take only one luxury item to a desert island, what would it be? My family. They are my everything. I travel a great deal so I’m often apart. An island life would only really be enjoyable with others. I’d love to teach them skills and share some of my own experiences over the years.

Did you ever think your life would pan out the way it has and what’s your secret to success?

I never intended to do what I do. It was luck that brought me here, and a little hard work. Nothing in life is guaranteed, but if you seize an opportunity, you can turn it into something special. I always wanted to be a vet but wasn’t academic enough, but I’ve been able to make an interesting career nonetheless.

What’s the biggest lesson life has taught you?

To be open-minded and tolerant. To not live an echo chamber where people share your opinions. It is so important to listen to others. Value diversity and range of opinions. Travel is one of the best ways to expand the mind.

If you could give your younger self one piece of advice, what would that be?

To be confident in myself. I always lacked trust in my decision making and had little self-esteem.

I always wanted to blend in, but I would encourage myself to be a shepherd not a sheep.

What’s coming up for you and what are you looking forward to most?

There is another series of New Lives in the Wild coming, with locations including the US, Australia and Italy as well as a brand new series called Lost Worlds, with locations as diverse as Cyprus, Detroit and St Kilda.

“You may have heard that a calm haven can help you to relax, and this is because of the behavioural science behind sleep. When we’re looking to sleep, our nervous system needs to wind down, and if our mind is trying to send signals to calm and relax, but we are distracted by other things in the room around us, it makes it that bit harder for our bodies to wind down.

the perfect first step to create a bedroom that’s free from disorder. Take any unwanted items to a charity shop, or recycle, if possible, then pack away the items you’ve decided to keep. When you’re packing your things away, consider the seasons; in warmer weather, winter knits and boots can go into storage.

“Try reducing visual stimuli too; find a place to store items which are usually left out. This could be inside an ornamental box or ottoman, or through the simple addition of a washing basket for your clothes.

“For the ultimate night’s sleep, make sure your room is cool, quiet and dark –around 16-18°C is ideal. Bright light at night isn’t helpful when it comes to sleep, but did you know, bright sunlight in the morning is your sleep friend? Light in the morning helps to set your internal sleep system in motion and therefore regulate the night-time sleep cycle.”

Save waking activities, such as watching TV, for outside the bedroom and be sure to avoid napping during the day.”

“So that covers the don’ts – but what about the dos? While exercising before bed could mean you struggle to drop off, exercise during the day will help you get a good night’s sleep. When evening arrives, start to dim the lights two to three hours before bedtime; this tells your brain to produce melatonin, which brings on sleep. If you can, start to try and wind down 90 minutes before bed – a warm bath or reading a book can help relax your mind and body. Going to bed at a regular time will help too, as your body gets into the habit of knowing when to sleep.”

We all know a well-balanced diet is essential for physical health and weight management, but did you know it is also extremely important for our mental health and optimal brain function?

Poor nutrition o en contributes to low mood and exacerbates stress. On the ip side, a healthy diet that incorporates ‘brain-boosting’ foods can go a long way to reducing stress, enhancing brain power and cognitive function.

Foods can help tame stress and also a ect our brain chemicals, which in uence our mood and behaviour in many ways. Comfort foods (and no, I don’t mean that tub of Ben and Jerry’s sitting in the freezer!) – particularly healthy wholegrain carbohydrates – boost levels of serotonin, a chemical produced by the brain that induces calmness.

Other foods are able to decrease levels of the stress hormones, cortisol and adrenaline. Some can even protect against the long-term harmful e ects of stress caused by adrenal gland exhaustion, while others can boost brain health and prevent against cognitive decline and conditions including dementia and Alzheimer’s disease.

Complex carbs

All carbohydrates prompt the brain to make more serotonin. For a steady supply of this feel-good hormone without the weight gain, stick to eating complex carbohydrates, such as brown rice, wholegrain bread, whole-wheat pasta and porridge oats. ese wholegrain carbs have been shown to boost concentration and focus. is is because our brains need glucose as its main source of energy. And low GI wholegrain carbs provide this in a slow steady stream, allowing you to stay mentally alert throughout the day. at’s why when people cut out carbs altogether, they o en nd it di cult to concentrate and get a sort of ‘brain fog’ – so healthy wholegrain carbs are a must!

is is high in omega-3 essential fatty acids (EFAs), which cannot be made by the body and are needed for brain health. Omega-3s have been shown to prevent surges of stress hormones, and protect against memory loss, dementia and Alzheimer’s disease. Aim for two portions of oily sh a week such as salmon, mackerel and sardines. If you are vegan or vegetarian or don’t eat sh, good sources of omega-3 are walnuts, chia seeds and axseeds.

Eggsesehave been shown to delay brain shrinkage due to their high levels of B Vitamins (B6, B12 and folic acid), and choline.

BlueberriesBlueberrieshavebeen shown to boost short-term memory due to their high levels of antioxidants. ey are also a rich source of Vitamin C, which has been shown to be very important for brain health, in particular mental health and helping to reduce levels of stress and anxiety. Other good sources of vitamin C are blackcurrants, red pepper, oranges, kiwi fruit and broccoli.

TomatoesTomatoescontain a powerful antioxidant called lycopene, which has been shown to prevent memory loss and Alzheimer’s disease. Cooked tomatoes actually have the highest level of lycopene –found in tinned tomatoes, pasta sauce and even ketchup! Just make sure to buy a reduced sugar one.

ThisSpinachwonder-leaf is full of so much goodness (too many vitamins and minerals to list here) – it’s even a good source of protein! In terms of stress nutrition, dark green leafy vegetables such as spinach are a rich source of magnesium. Too little magnesium can trigger headaches and fatigue, compounding the effects of stress. One cup of spinach provides 40 per cent of your daily intake, so try substituting it for lettuce in salads and on sandwiches to boost your magnesium stores.

Dried apricots

This is another food rich in magnesium. As well as being an essential nutrient, magnesium is a natural stress-buster and a muscle relaxant as well.

another great brain food – almonds in particular are rich in vitamin E, which has been shown to aid brain health and cognitive function. They are also packed full of B vitamins, which make you more resilient during bouts of stress. Aim for about 20 almonds every day or try some almond butter.

Dark chocolate!

This contains two compounds that can lower stress levels – anandamide, which binds to receptors in the brain that produce feelings of euphoria, and phenylethylamine (PEA), a substance naturally found in our nervous systems that is released throughout the brain when we ‘fall in love’. It’s also shown to be extremely protective against Alzheimer’s disease. Furthermore, the flavonols found in cocoa improve circulation and increase blood flow to the brain, helping you think and see more clearly.

Please note, however, that you will only benefit from chocolate that has 70 per cent cocoa content or above. Eat up to 30g of good-quality dark chocolate every day for a dose of feel-good compounds. As part of a healthy diet, this should not compromise your weight either!

Embrace that gut feeling

Gut health has recently become a hot topic, and it’s not just for digestive health as many might think. Scientists have discovered that the microbes in your gut are engaged in constant communication with your brain, and that can affect your emotions, moods, and behaviour in major ways.

The gut’s ‘enteric nervous system’ is where your microbes send signals directly to your brain – and lots of them! So if your gut health is in poor form, this can influence your mood negatively. These gut microbes also

play a key role in serotonin production (responsible for mood regulation, appetite, sleep), so if they are not working properly, this could lead to insufficient levels of serotonin, resulting in a lower mood, or even anxiety and depression.

Better brain health

Maintaining a ‘happy’, healthy gut is one huge step in the right direction to feeling more positive and less anxious. The best way to do this is to eat a healthy wholesome diet, and as many fibrous fruits and vegetables as possible. Pears, raspberries, carrots, beetroot, artichokes, Brussel sprouts and avocados, as well as beans and pulses, nuts, chia seeds and flaxseeds are all good sources of fibre. Look to include fermented foods, such as sauerkraut, kimchi and kefir in your diet too. Plus, consider taking a good quality probiotic.

By being more mindful and strategic with your nutrition, supporting your gut health, and incorporating these stress-busting superfoods and brain-boosting ingredients, you’ll feel happier, healthier and more resilient when it comes to stress. All by the power of nutrition!

Yoga from your hotel room bed

This yoga sequence is designed to counteract the effects of travel and be done in any hotel room you land in because you can do it right on the bed –no yoga mat required!

Cat & Cow

Start by coming into tabletop on hands and knees with hands under shoulders and knees under hips with a neutral spine. The bed should give good cushioning to knees, especially if you are stiff from travelling. Moving with your breath, take some cat & cow stretches – on your inhale drop your belly down towards the bed and lift your gaze, on your exhale slowly drop chin to chest and round through the spine. Repeat for 10 or so rounds, focussing on slow, mindful movement through the entire length of the spine to promote mobility in the spine.

shoulder blades down and chest facing up to the ceiling to isolate the twist. You may like to use the left hand to guide the knee or use a pillow under the knee to prop it up if it’s not reaching the mattress. Take a few rounds of breath before coming back to centre, extending the right leg and repeating the last two poses on the other side.

Wide legged child’s pose

Bring your big toes together behind you and sink your bottom back towards your heels with your forehead down to the bed or onto a folded pillow. Think about really stretching the crown of the head forward, lengthening through the lower back and creeping the fingertips forward to stretch into the shoulders. This is a calming pose that will gently stretch through the hips and back, alleviating any tension that may have accumulated from sitting awkwardly during travel. Relax into the pose and stay as long as you like, noticing your breath and the calming effect of your forehead resting on the bed or pillow.

Bedroom bath

Baths have been springing up outside in gardens, by the side of pools and the trend that has really taken off is to place a freestanding bath in the bedroom, observes Barrie Cutchie, Design Director at luxury bathroom specialist, BC Designs (bcdesigns.co.uk).

Offering a sense of pure luxury and grandeur, could the traditional ensuite be a thing of the past, replaced by the ultimate open-plan living space between bedroom and bathroom?

“One area that is essential to making the trend work is space,” cautions Barry. “If you don’t have space to build an ensuite, your room probably isn’t big enough to hold a bathtub. A bathtub in the bedroom is not an option for space-limited living; it works best as an indulgent feature to add interest to an already grand room.

Roll with it

“It also significantly matters when it comes to the star of the show – the bath. It will be hard to create the look with a low to mid-market product. If you’re going to have a bathtub at the end of the bed, it’s got to be a feature, it’s got to have presence and make a statement. Cast iron, claw-footed, roll-top baths are ideal.”

“A bath in a bedroom is an experience and gives the room a real sense of luxury and is lovely for relaxing, taking time to unwind,” explains Barry. “However, when it comes to family living and splashing children, a separate bathtub in a family bathroom is most likely a must. From library snugs to massage rooms to ‘rage’ rooms (online searches for the latter have gone up by 150 per cent in the last two years, according to Pinterest), they offer a happy, calming space away from the madding crowd –including other household members.

“Whether you need to vent some frustration in a rage room or create a calming, creative space to unwind, emotional escape rooms are the next trend taking the wellness world by storm,” observes Sarah Hastings, Digital and Marketing Manager at RW4Y (roofwindows4u.co.uk).

“As more of us work from home, creating these designated spaces can help us to establish better work-life boundaries and in turn benefit our mental health. You might build a new space like a loft conversion or repurpose what you already have, but whatever the size or layout, emotional escape rooms allow us to decompress and do the things that make us happy.”

Karen Bell, Creative Director at David Salisbury (davidsalisbury.com), a company specialising in the design and manufacture of bespoke orangeries, conservatories and oak-framed extensions, says that demand for emotional escape rooms has been triggered by global events.

“Having lived through two years of a pandemic, only to be faced with

more uncertain news around the world, it makes sense that homeowners have been looking to create an emotional escape room, a designated part of the home for self-care. This could look different from home to home, from cosy furniture and built-in bookcases to aromatherapy-focused spaces with candles and oil diffusers.”

The natural light offered by an extension such as an orangery or conservatory, along with the natural link between house and garden, makes them the ideal setting for an emotional escape room. “You’re far enough away from the rest of the home to enjoy some privacy, whilst being able to enjoy all the modern comforts to help you create your own bespoke at-home sanctuary,” adds Karen.

Over the past couple of years, more than ever, our furry friends have provided vital companionship and mental support, and a study by vet charity PDSA (pdsa.org.uk) reveals that almost 90 per cent of UK pet owners feel mentally healthier thanks to their pets.

Research shows that 2022 is the year pet lovers have been giving back to their four-legged family members, with Pinterest Predicts revealing that searches for ‘luxury dog room’ are up 115 per cent.

Embracing our pets and ensuring a home is designed to suit their needs

is important, but with research from PDSA showing that the basic lifetime cost of owning a dog could range from around £20,000-£30,000, there are other ways to make your home pup-friendly without breaking the bank.

With the cost of living increasing, our pets won’t necessarily appreciate or notice when owners fork out on expensive renovations. Few places on earth offer better conditions to witness a limitless starry night sky than Northern Norway. But to hit the jackpot and experience the spectacular Northern Lights, also known as the aurora borealis, you’d probably need a few tips from the locals.

When Visit Norway (visitnorway.com), the country’s official tourism board, interviewed people in major European cities about their relationship with starry skies, four in five missed seeing a night sky full of stars from where they live, while three in four have never seen the Northern Lights.

Paal Brekke, solar physicist and senior advisor at the Norwegian Space Agency, explains that those living in or close to urban areas in Europe will never see the full extent of our galaxy, The Milky Way, nor the Northern Lights unless they travel to places unaffected by artificial lights. That’s because particles and moisture reflect artificial lights from buildings and streetlights in the air layers above us.

Outside the northernmost countries of Europe, it’s almost impossible to find places that are dark enough to get a fully-fledged experience of the

night sky – and to see the Northern Lights. Sometimes, they can be visible all the way down to southern France and northern Italy, but this may only happen a couple of times every decade.

According to Paal, the Northern Lights would have been visible to many more Europeans, and far more frequently, had it not been for light pollution. But in northern parts of Norway, you can easily get to large, dark areas surrounded by forests and mountains, with minimal light pollution and the elongated dark coast, amplifying the darkness. It’s simply a mecca of experiencing the Northern Lights in all its glory.

But where in Norway do you have the best chance of seeing one of earth’s most spectacular light phenomena? Here are some of the best viewpoints...

WidelyTromsøregarded as one of the world’s best places to see the Northern Lights, the planet’s northernmost student city lives up to its nickname, the ‘Paris of the North’. All year round, there’s always a concert or festival to attend giving the experience added wow-factor. If you are in Tromsø for a

period of five or more days during the winter season, you have a pretty decent chance of seeing them.

‘The world’s our oyster!’

Mersea Island, near Colchester, Essex, is world-renowned for its oysters. We chat with eighth-generation farmer Tom Haward, of Richard Haward’s Oysters, whose family have been cultivating these shelled delights for more than 250 years.

Tell us about your family history.

The Haward family have been cultivating oysters on Mersea Island since at least 1769. My fifth great grandfather, William Haward, cultivated oysters on oyster beds leased from the Lord of the Manor and sold them into London. Seven generations later, my family are still growing oysters and still selling them into London. I walk across the same bit of mud my ancestors walked across, collecting oysters in almost the same way… even though the world has altered so much since the 1700s, if William Haward saw how we do things, he wouldn’t see too many differences.

Which type of oysters do you cultivate?

We mainly farm ‘rock’ oysters, which spawn wild on our beds and in the River Blackwater, which feeds into the creeks where our oyster beds are. We

have 15 acres that we use to farm our oysters. Rock oysters became the main type of oyster to be farmed and sold in this country over the past twenty years as they are more abundant than ‘native’ oysters and much easier and costeffective to produce. The native oyster is almost extinct in the UK, so it’s a rare and very expensive product.

Native oysters were allegedly discovered by the Romans and made Mersea (and Colchester) famous for them. Climate change, overfishing and disease has not been kind to native oysters, so they only make up about one per cent of our business now. They’re what many generations of Haward oystermen produced, so are integral to my family’s legacy… we try to keep producing a small number each year in honour of their history. It’s not easy though!

Why is Mersea such a great place for oysters and what makes them so tasty?

The marshland is so vibrant with its grasses and flowers; as the tide goes in and out, the water absorbs those beautiful flavours, making our oysters unique in flavour.

Also, where our oysters grow, the creeks bottleneck, making all the nutrients in the sea massively concentrated and therefore the oysters can guzzle huge amounts of goodness.

Oysters are like grapes; they taste of the environment they grow in. One oyster filters approximately 100 litres of water per day. The muddy marshland gives our oysters a really punchy, creamy flavour that has a long finish on the palate. It makes them tremendously addictive.

How many oysters do you produce and where do most of them end up?

Since Brexit, our market is only UK based. Even so, there is huge demand for oysters and we sell to Billingsgate Market, London and UK-wide restaurants, and through our retail unit at Borough Market. We currently sell 1.5 million oysters every year. We’re struggling to keep up with demand at the moment!

Describe the farm to plate process?

Our oysters spawn naturally on our oyster beds producing millions of babies. These take around three years to reach maturity. To fill that gap, we also cultivate by moving larger oysters from deeper waters where the nutrients are not as prolific and put them on our beds, so the meat can plump up and also absorb the flavours of the surrounding marshland. We then do a mixture of handpicking our oysters at low tide, when the nets are exposed, and dredging oysters with our boat.

Once we come ashore, we wash the oysters, grade them by weight using a machine, and then put them into our depuration tanks for 42 hours. Depuration tanks have seawater (the same water the oysters have been growing in) pumped through UV lights. The oysters then filter this UV-treated water which purifies the product.

The UV kills any potentially harmful bacteria and ensures our oysters are safe to eat. After 42 hours, the oysters are packed into boxes and sent via refrigerated vans around the UK.

How hard is the job?

If you’re an oyster farmer, you don’t

need to waste money on a gym membership. We each lift around two to four tonnes a day, so it makes you strong. Handpicking is tough on the legs and back, and washing and grading oysters takes a lot of lifting trays and nets. It’s a wonderful job in its physicality and being so engaged with nature, but it can be brutal too.

What’s the secret to your company’s success?

Keeping things as simple as possible. I think that applies to any business in general; the more complicated you make it, the more chances of something going wrong. We try to grow a superior product and get it to our customers as quickly as possible, so they experience it at its best. The quality will keep people coming back and telling others about it. Also, a company is only as good as the people within it. We have a wonderful team who work tirelessly and who I rely on so much for their advice and expertise. Without them, we wouldn’t have a business.

How many more generations of Hawards will there be farming Mersea oysters?

My fiancée Gemma and I have a little girl called Autumn. She’s just over a year and loves being on the water already. We have been taking her out on the boat since she was four weeks old. It would be wonderful if she wanted to carry on the legacy and be ninth generation. The business is thriving, and we have worked so hard to create something for many more generations to come. I’m hopeful that will happen.

With climate change high on everyone’s agenda, it is essential that we all play our part in driving the change we want to see in the world.

A er reviewing data from the Sustainable Rice Platform (SRP), which estimates 10 per cent of global, man-made methane emissions are the result of rice production, the Laila brand was inspired to embark on its own sustainability journey and trailblaze a shi towards more eco-conscious rice.

Laila is launching the UK’s rst ever carbon neutral rice – possibly even a world rst – this autumn, with the UK’s No.1 dry rice brand expecting major retailers to roll out listings for the new range from October 2022.

specialist, My Carbon, to run a full lifecycle analysis across di erent rice grains within its business which revealed, on average, 5kg of carbon is generated in the creation of just 1kg of rice.

Surya Foods has pledged to work with both the Sustainable Rice Platform alliance and My Carbon on its carbon neutral certi cation, to drive improvements across rice production and reduce carbon.

Sweeping changes

Laila Xtra, an existing Laila line, has undergone a complete transformation following a detailed life cycle analysis. Its new carbon neutral version introduces carbon reduction in operations, transformation in primary packaging to 100 per cent recyclable, and collaboration with a positive carbon project.

Laila Xtra Extra Long Basmati also has the added benefit of being sustainably sourced (SRP certified).

Harry explains, “There is far more to sustainability than simply ‘fair trade’ or ‘organic’ standards. Sustainable agriculture practices need to be sweeping. For instance, the Sustainable Rice Platform (SRP) was created to cover all aspects of sustainability across the rice supply chain. It sets 41 requirements across social, economic

and environmental criteria – from new wetting techniques to reduced pesticide use. On average, rice farmers who adopt the SRP standard earn 10 per cent better incomes, use 20 per cent less water and cut their personal greenhouse emissions by 50 per cent.

“In 2021, we joined the SRP and we moved to purchase around 10 per cent of our basmati quota from 100 per cent sustainable agriculture. And, by 2030, our aim is to to ensure all our rice is from certified sustainable agriculture, respecting our farmers and respecting the land. We are starting with Laila Xtra, but we intend to roll this ethos out across all our Laila products which are sold in more than 30 countries around the world.”

Earlier this year, Surya Foods implemented clear climate control goals with plans to become carbon neutral by 2035. It has also set itself a target to ensure all its primary, in-house, packaging, is 100 per cent recyclable by 2025.

“We have made a commitment to calculate; remove and reduce carbon emissions from our business on an ongoing basis,” comments Harry. “This is a continuous process and a journey rather than a destination. We shall endeavour each year to remove and reduce carbon emissions across

our supply chain from farm to fork. And those final emissions, that are impossible to remove, we shall offset with positive carbon projects.”

Cost of living

As the cost of living crisis hits, UK shoppers are having to become more savvy and looking to make effective swaps. Switching to dry rice from microwavable or pouch rice is an easy switch – you get the same end result, but dry rice is much cheaper per serving. It is also a good swap for the planet as dry rice involves far less packaging for equivalent product in microwaveable or pouch format.

Harry adds, “We are trying to help demystify cooking dry rice with tips and hints for fantastic rice. We want people to see just how easy it is –literally, boil, sieve, serve. And we also believe the finished result of scratch cooked rice is always superior. We believe more and more shoppers will switch to dry rice in the coming year as they look to maintain their standard of living with savvy swaps.”

Serves Ingredients2 for the rice

150g arborio rice or short grain rice

1 onion

4 cloves garlic

1tsp turmeric

1tsp smoked paprika

500ml chicken stock 50ml white wine

3g Ingredientssaffron for the smoked tomato sauce

¼ onion

2 cloves garlic

1tsp smoked paprika

200g tinned tomatoes

1 chicken breast

75g chorizo

1 red pepper

1 red onion

Chicken & Chorizo Paella

1.MethodFinely dice the onion and garlic, sweat on a medium heat until soft, then add the rice, the spices and saffron and cook for 5 mins before deglazing the pan with white wine.

2. Start adding the chicken stock slowly (you will only need 300ml for this part) and once added, continue to cook for a further 15 mins stirring constantly, take off the heat and pour the rice in a shallow tray spreading it out evenly so that it slows the cooking process.

3. For the sauce, dice the onion and garlic and cook on a medium heat. Once cooked add the paprika and stir for 2 mins, then add the tinned tomatoes, a pinch of salt and pepper, and cook for 10 mins before putting to one side for later.

4. Dice into equal pieces, the chicken, chorizo, red pepper and red onion. Get a medium size sauté pan or paella pan, drizzle a little oil on a high heat and fry the chicken until coloured on all sides, turn down the heat and add the chorizo, pepper, red onion.

5. Once the peppers have colour, add the rice, give it a mix, and add 100ml chicken stock and bring back to the boil, then turn the heat down and add the smoked tomato sauce, peas and leave to cook for 15 mins.

6. After 15 mins, turn off the heat and allow 5 mins to sit before serving.

130g plain flour 50g cocoa powder

For the toffee crumb 100g sugar 50g and chocolate together, whisk eggs and sugar until thickened.

2. Pour melted chocolate and butter into the whisked eggs and fold together.

3. Slowly add the flour and cocoa to the mix.

4. Line the tin with greaseproof paper and pour half the mix into the tin.

5. Add salt to the caramel and mix in a bowl, pour ¾ of the caramel onto the brownie, then pour the rest of the brownie mix on top, spread gently into all corners.

6. Add the rest of the caramel mix on top and use a skewer to make swirls in the mix.

7. Bake at 155C for 33 mins, once done leave to cool before cutting.

8. For the crumb, add sugar and butter to a pan on medium heat until a light gold colour, then pour into a tray with greaseproof paper, allow to cool, then pulse blitz into a crumb.

WhataHoot is a multi-award-winning distillery in the heart of historic King’s Lynn. Owned and run by husband-and-wife team, Jason and Nicky Crown, we offer a range of locally-inspired gins and vodkas, including Signature Dry Gin, which features the local flavours of Norfolk samphire and lavender.

We also produce Tawny Orange Gin, Navy Strength Gin and Signature V Vodka. In addition, we have a tempting selection of gin-related products, including our unique HootFruit (the garnish game changer!) – dried orange,

lemon, lime, strawberry, raspberry and blueberry.

The WhataHoot Distillery is a 16th century warehouse, packed full of original features, including original beams and exposed brickwork, which has been sympathetically restored and converted to create a home for WhataHoot. Located just off King Street, as well as being the hub of production for WhataHoot products, the distillery houses the ground-floor ‘Pantry’, which is open daily for supplies of WhataHoot products and the bespoke Gin School and Spirit Lounge where visitors can experiment and make their own gins.

In addition, the distillery is available for private hire – perfect for events of any kind, including meetings and drinks receptions. As for the name, WhataHoot was inspired by Jason and Nicky’s life-long love of the barn owls which inhabit the skies of Norfolk, so they took the owl’s calling card as the calling card for the company.

What ingredients are used to make gin – take us through the grain to glass process?

In our Signature Gin, we use 10 botanicals; to be a gin, one of the botanicals must be juniper berries (without these, it wouldn’t be a gin).

We also use English coriander, lemon peel, and orange peel to give it a citrus forward note – the fishing notes in our Signature are our two locally sourced botanicals, which are Norfolk Lavender and samphire.

What’s your most popular gin?

Our most popular gin is our Tawny Orange, which we released in March 2019, but with the recent release of our Raspberry and Pink

Peppercorn in April 2022, that is also proving very popular.

What are the best mixers?

We use Franklin & Sons; this is a British brand which uses sugar beet instead of sugar cane. As 80 per cent of the UK’s sugar beet is produced in East Anglia, it’s great to use this produce. They also have some amazing dual-flavoured tonics, which complement our gins extremely well.

What’s coming up – any exciting launches?

We have a very exciting 2023 planned, so people will have to follow us on our socials and keep an eye on what we’re doing – they won’t be disappointed, that’s for sure!

Add the gin, lemon juice and sugar syrup to an ice-filled shaker

Shake until cold Strain into the rocks glass

Using a bar spoon, slowly pour the Chambord down this so that it creates a layer at the bottom Garnish with a lemon wheel and couple of raspberries Ps. The bramble can be shaken all together rather than having the layering effect
