It all started in 1948
OUR STORY Tradition, quality and authenticity are the values that shaped the business Riccardo’s grandfather started over 70 years ago. Today, more than ever, these guiding principles describe what Tonda stands for.
1948 Once upon a time in 1948… Famous pizzas on the beach in Pescara. The roots of our business lie as far back as the middle of last century: Riccardo Ciferni’s grandmother, along with her husband, was selling her pizzas to vacationers on the beach on the Adriatic Sea. Famous for her pizzas, she was also a historical figure.
1958 The first Trieste Pizzeria is opened! Driven by a strong entrepreneurial spirit, Gabriele Ciferni opens his very first restaurant in Pescara, the “Trieste Pizzeria” in 1958. Not much later, he creates the first pizzetta: a pizza of an unconventional, easily recognizable size and a unique taste that has become synonymous with Italian high-quality food over the years.
The 1960s A pioneering concept in modern franchising. Vincenza and Gabriele further developed the business to somewhat that can be called the “franchising of former times”. The couple had found a way to ensure the results of the dough baking would be the same in any other location. 13 pizzerias were established. Some businesses established at that time still exist today!
The 1970s to 1990s A period of steady business imposing very high quality. Backed by over 20 years of experience, Riccardo’s parents work on stabilizing their gastronomic business while imposing strict quality standards for any partners. The family sells and distributes the dough to 12 restaurants on the Adriatic coast. No compromises are made to maintain and protect the name and the reputation that have been built up with so much effort.

The new millenium The third generation takes over. The business, already in the third generation, is now completely led by Riccardo. The focus on tradition, quality and authenticity remains unchanged – as the high standards do. Evolution of the pizzetta’s ingredients. Consumers’ awareness and concerns about nutritional aspects lead Riccardo and his wife to adapt their products: their “modern” pizzetta does not contain any animal fats. Furthermore, only extra virgin olive oil and less refined flour are used.
2011 Tonda: the franchise brand is born. The signature food remains the pizzetta and its organic ingredients mainly sourced from the Abruzzo region in Italy.
2014 First restaurant outside Italy! Opening of the first restaurant outside the Italian borders: in Madrid, Spain
2018 First restaurant in Vietnam!

Our fiordilatte mozzarella The most renowned and traditional soft-cheese from Italy, the mozzarella, is mainly produced in the southern part of Italy. For Tonda, we carefully selected a provider from the Abruzzo region, east of Rome. The producer is successfully continuing the business his ancestors initiated over a century ago. To produce 10 kilos of his signature cheese, as many as 70 litres of cow milk is needed. Milk that is provided by cows breeding in the pure and healthy environment of the Abruzzo region. Thus, both freshness and a great natural taste are guaranteed from the very beginning.

Our “Tonda sausage” A traditional local salsicce For some of our dishes, we use a sausage specially made for us. We are proud to source it from a traditional butchery also located in the Abruzzo region, Italy. Our supplier is passionate about keeping up with his family tradition: the production of typical, local products that are tasty, yet healthy. For Tonda, he makes a special salsicce with a unique taste for our pizzette and other dishes – without any preservatives or colouring agents. As for all his other products, our supplier pays much attention to the accurate amounts of salt and pepper.
Our extra virgin olive oil We use only Italian extra virgin olive oil from the Abruzzo region to season our pizzette. This region with its very favourable microclimate is home to a huge quantity of olives. The main characteristic of our supplier, located between the Adriatic Sea and National Parks, is a constant and untiring production of high-quality oil for many decades already.
Our tomatoes The artisans from where we supply our tomato products know a great deal about the culture and production of tomatoes. The company dates back to 1958 and has maintained the values of a local, high-quality production. Using their certified organic products is key to the preparation of our dishes. The all-year-round sun in Vasto in the Abruzzo region offers the ideal ingredient to grow tasty and high-quality fruits. The best tomatoes are carefully selected and picked. The natural further processing of the harvest ensures a great taste and consistency. To be enjoyed on our pizzette and in other dishes we passionately prepare for you!
