with Charnock Farm Restaurant and Bar, Leyland
IF your idea of dining out in a barn includes ‘rustic, rural and roughing it,’ then think again and allow Charnock Farm Restaurant
& Bar to transform your thinking. It took months of loving renovation and refurbishment to transform what was an historic barn into a state-of-the-art open plan restaurant, on two levels - with distinctive menus and an extensive wine list to be proud of. Charnock Farm is now well established as a leading light in the region’s dining out choices. Our recent visit underlined their well deserved reputation. On a winter’s evening the bar-reception area is warm and welcoming and from the outset, all the staff we encountered were friendly, attentive and helpful . Here we enjoyed drinks whilst embarking on the inevitable struggle with choice. It was Saturday night, the restaurant was abuzz with happy diners, the function room next door was packed with wedding guests and enhancing the overall ambience - Ian Bailey, top Leyland singer and guitarist was in full flow. It was an idyllic scene about to be complemented by the finest of dining experiences. The menu has changed somewhat since our last visit, but the current choices are, as they say in some circles, ‘right up my street.’ For starters, my wife took the Oriental coastal route, whilst I opted for the Mediterranean influences.
Across the table a sensual Thai Style King Prawn Bisque was declared simply ‘delicious.’ Succulent juicy seafood - big fat prawns - nestling in a spicy broth and accompanied by sesame bread certainly hit the spot. My starter, Italian Style Meatballs in Rich Tomato Sauce sounds plain. It was anything but! Two meaty ’taste bombs’ topped with Buffalo Mozzarella cheese and basil leaves stood proudly in a pool of ‘moreish’ tomato. The whole creation shouted, looked and tasted ‘Italian.’
We both agreed that Charnock Farm could still deliver the highest standards and sat grinning and brimming with anticipation as we awaited our ‘mains.’ All dishes sounded wonderful but I believe we got it right on this occasion. My wife enjoyed Pan Seared Duck Breast with Sweet Potato Chateau and baby vegetables and finished with a Rich Plum Jus. The whole was pleasing on the eye, the constituent parts as it was dis-assembled and consumed were so, so pleasing on the palate, I am reliably informed. Happiness on a platter. I accept that pork belly is not to everyone’s taste, it can be fatty or chewy, a cheaper cut that’s easy to get wrong, but in the hands of a professional, as at Charnock Farm, it’s a long standing favourite and a sure winner with me, that is!

‘...a wine list to match its cuisine...’ So, Braised Pork Belly, with Celeriac and Potato Dauphinoise, Apple and Vanilla Puree and Chantenay Carrots was everything I expected and more. Potato Dauphinoise is the ultimate comfort food in my opinion, the introduction of celeraic took it to another level. And as for Apple and Vanilla Puree, a unique taste but perfect with the pork. Overall, everything thus far had been delicious and a pleasure to experience, with portions just enough to delight and satisfy. Service through out the evening was sensitive and caring but far from overbearing, they are all young, vibrant and local, a cracking team! So, two clean platters paid tribute to culinary classics, but what about the wine? Great food demands great drink, does it not, and Charnock Farm has a wine list to match its cuisine. For duck and pork a sharp, dry white wine seemed a logical choice. We opted for a Parini Pinot Grigio delle Venezie. How does ‘a distinctive nose of wild flowers, with touches of honey and banana, dry but not excessively so, soft, fresh and lively with notes of ripe pear’ sound? Interesting and packed with flavours? Correct! Time for a breather, as ever we might have drawn a line under the meal here as we were truly satisfied, with little room for desserts. But, as avid restaurant review readers well know, we investigatively soldier on - in everyone’s interests, yours and especially ours.

After a reasonable tactical break, we tackled the desserts menu. Perhaps it was nostalgia I had been in this situation in this very restaurant setting before - but a difficult choice was made easy by the inclusion of Sticky Toffee Pudding with Butterscotch Sauce and Vanilla Bean Ice Cream. For me, this is the champion of puds. It was a piping hot, rib-sticking toffee experience, capped off with the cooling contrast of the Vanilla Bean Ice Cream. Magnificent, Chef! Opposite, my claims of delight were matched by the appreciation of a Salted Caramel Chocolate Torte with Caramel Ice Cream. Two distinctive desserts represented sheer indulgence and pleasure, the kitchen had done us proud - again! That said, we did our bit, for not a crumb was wasted, on either dessert dish. For dining pleasure, ambience, service and value Charnock Farm is surely up there with the best in the area. Changes to the pension rules are creating new opportunities for scams. Be cautious of anyone approaching you with advice on how to invest your pension. Almost one in ten pensioners has been targeted by financial fraudsters since their retirement. A nationwide study by MetLife [1] shows that among retired people, 9% say they have been victims of financial scams or targeted by financial scammers since they stopped work. That rises to 14% among retired people in the South West. Vishing scams Recent reported frauds involving retired people have ranged from attempting to gain access to bank or savings accounts through so-called vishing scams, where people are tricked into handing over bank details and cards, to selling bogus investment and pension schemes. The risk of fraud underlines the need for professional financial advice, especially as people retiring this year have greater pension freedoms enabling defined contribution pension savers aged 55 and over to take their funds as cash, subject only to tax rules. Beware of financial fraudsters who take advantage of these new options by tricking people into cashing in their pension and handing over their money for them to invest – you could lose some, if not all, of your pension savings, or end up with a large tax bill.

Serves 4; Preparation time; 5 mins; cooking time: 20 mins Ingredients 4 pork steaks, approx 140g/5oz each, trimmed 1 tbsp oil 2 red-skinned eating apples, cored and each cut into 8 1 onion sliced Small handful fresh sage leaves, torn, or 2 tsp dried 100ml/3½ fl oz chicken or ham stock (from a cube is fine) 2 tsp wholegrain or Dijon mustard

SERVES 2; Preparation time 15 mins; the sea bass fillets. Place Cooking time about 6 mins
Ingredients 1 fennel trimmed and finely sliced (on a mandolin if you have one), green fronds reserved Juice 1 lemon 2 tbsp extra virgin olive oil 1 tsp caster sugar 1 tsp olive oil 2 sea bass fillets, skin on 85g/3oz radishes, trimmed, finely sliced Handful mint, leaves roughly chopped Handful flat-leaf parsley, leaves roughly chopped 1 tbsp capers, rinsed Method 1 Boil a small pan of water, then blanch the fennel for 15 secs. Drain and cool under cold, running water, then drain again and dry. Whisk together the lemon juice, extra virgin olive oil and sugar, then toss half with the fennel. Set the other half of the dressing aside and leave the fennel to marinate while you prepare the rest of the ingredients. 2 Heat the olive oil in a large heavybottomed pan over a medium heat. Season
the fish in the pan, skin-side down, and cook for 4-5 mins until the skin is golden and crisp you might press the fillets with the back of a spatula for the first 30 secs to prevent them from curling. Turn, leave for 30secs to 1 min more, then remove from the heat. 3 Toss the radishes, herbs, capers and reserved fennel fronds into the marinated fennel slices with some seasoning, then pile on to two plates. Carefully place the fish on top, drizzle with the remaining dressing. Serve with roasted new potatoes.

LEYLAND Golf Club Captains Marie Hayes and Tim Pilkington combined their charity efforts throughout 2015 and raised a recordbreaking £19,600 for the Leyland-based Ross Tomlinson Fund. The fund, which has surpassed an incredible £100,000 was set up in the memory of 21 year old Ross, who lost his brave fight against cancer in 2012.
