The Viceroy Indian Restaurant, Golden Hil Lane, Leyland THE VICEROY Restaurant has been delighting discerning diners - that’s lovers of Indian cuisine - since the summer of 1987. A viceroy represents royalty, ruling for them in another country. Which is appropriate for, when it comes to an exotic, quality, dining experience, the Viceroy ‘rules’ as far as our family is concerned. Once again, Leyland’s leading authentic Asian outlet did us proud! In recent times, our favourite local ‘Indian’ underwent a stunning refurbishment. The décor and fittings are impressively bright, ultra-modern and classy. The great news, though, is the food and service is just as good as ever. No change needed there - and the establishment’s well deserved reputation for top quality Asian cuisine continues to grow. We often opt for a Viceroy take-away, but it had been some time since we took advantage of the award-winning restaurant itself. The lighting, furniture and ambience might be subtly different, but the welcome is as warm as it ever was. The reception area is suitable well-appointed. Whether relaxing over an aperitif and menu–perusing, or waiting for a freshly-prepared take-away order, it’s a most comfortable spot to anticipate and savour the delights to come. Restaurant owner Malique has been a familiar, friendly figure at the Vicery forefront for as long as we can remember. And you couldn't wish for a more helpful guide when confronted with the most comprehensive, compelling menus. The menu surely has something for everyone

and choosing is always difficult. But to ensure everything is covered, there’s even more: ‘if your personal favourite dish is not on our menu, then please enquire….our chef will be more than happy to fulfil your heart’s desire!’ ‘Nuff said.’ From light crisp poppadums supported by the inevitable chutneys tray and the obligatory Cobra beer - ‘we only do pints’ says Malique - we moved swiftly into our starters, each sporting an imaginative side salad. My co-reviewer kicked off with her timehonoured favourite King Prawn Puri and declared the portion of lightly spiced seafood, which came on a light base of unleavened bread, an outstanding choice. For me too it was a ‘return’ to old familiar ground, as I opted for the Chicken Tikka. It did exactly what it ‘says on the tin’ - diced boneless chicken marinated in yoghurt with herbs and spices then barbecued over a flaming clay oven. What more do you need to know, delicious as ever! Wine is not usually our drink of choice with curry, but in the interest of research, we opted for a bottle of house white - a dry French - which proved an ideal match for the spicy food, and reasonably priced too. So to the recommended Manager’s ‘Mains’ and what a fine job he did, based on a few gentle pointers as to what genuinely tickled our taste-buds. With pilau rice and ‘fluffy’ naan bread to compliment, naturally! Across the table, it was declared time to revive another ‘old favourite,’ but this was assuredly on a different level. From the

‘...piping hot, packed with exciting flavours…’ Chef’s Specialities list, there appeared a Viceroy Biryani. A succulent mix of king prawn, lamb and chicken tikka, cooked in an exotic mix of spices with peas and saffron rice - topped with an omelette and served with continental salad and medium curry sauce. Phew! An all-round delight. The spicy ingredients might be the Chef’s secret but the overall effect, taste-wise, was stunning and satisfying. Wow, wonderful, ‘I couldn’t eat another thing’was the declaration. One more happy Viceroy customer with the cleanest of plates. Sticking with the Chef’s Speciailities list and Malique’s guidance, I opted for the Viceroy Thawa. Research tells me that Thawa is ’The King of curries,’ the holy grail that you must try at least once in your lifetime which also is like riding a unicorn so magical and an exquisite experience. Who knew? A shimmering plate, piping hot and packed with exciting flavours arrived. Upon deconstructing (that’s eating) the dish I discovered a carnivore foodie’s treasure trove - chicken and lamb tikka, garlic chicken and lamb chops, snuggling in a spicy, and herby, sauce of medium strength. Garnished with fried peppers and onions.

Some serious fork-swapping ensued as we tried each other’s dishes, reaching a collective verdict - the quality, taste and Viceroy value is as exceptional as ever. The food was fantastic and the service equally impressive. Indeed, the staff looked after us admirably throughout the meal. Coffee crowned an excellent dining experience, the dessert menu went untouched - some might say we were replete - in truth we were ‘stuffed.’ Needless to say, there are several desserts to choose from, along with English dishes and an extensive drinks selection. There are also Special Meal Deals and Takeaway Offers, including free bottle beers on certain orders (see Page 84). For many years, the Viceroy has consistently received honours from ‘Tandoori Good Food Guide, ‘The good Curry Guide’ and ‘Curry Club.’ Give them a try and you will quickly realise why!

Financial fraudsters are using reforms to target retirees Changes to the pension rules are creating new opportunities for scams. Be cautious of anyone approaching you with advice on how to invest your pension. Almost one in ten pensioners has been targeted by financial fraudsters since their retirement. A nationwide study by MetLife [1] shows that among retired people, 9% say they have been victims of financial scams or targeted by financial scammers since they stopped work. That rises to 14% among retired people in the South West. Vishing scams Recent reported frauds involving retired people have ranged from attempting to gain access to bank or savings accounts through so-called vishing scams, where people are tricked into handing over bank details and cards, to selling bogus investment and pension schemes. The risk of fraud underlines the need for professional financial advice, especially as people retiring this year have greater pension freedoms enabling defined contribution pension savers aged 55 and over to take their funds as cash, subject only to tax rules. Beware of financial fraudsters who take advantage of these new options by tricking people into cashing in their pension and handing over their money for them to invest – you could lose some, if not all, of your pension savings, or end up with a large tax bill.

Ingredients 900g/2lb chuck steak, cubed 500ml/18floz red wine 1 tbsp thyme leaves 1 bay leaf 1 garlic clove, crushed 100g/4oz bacon lardons Oil, for frying 1 onion, sliced 1 carrot. Sliced 25g/1oz plain flour 25g/10z tomato puree 250ml/9fl oz beef stock 300g/10oz button mushrooms 50g/2oz unsalted butter 16 small shallots Freshly chopped parsley, to garnish

Method 1) Marinate the beef in the wine, thyme, bay and garlic for a t least 2 hrs, ideally overnight. Heat oven to 160C/fan 140C/gas 3. Fry the bacon in the oil in a flameproof casserole until crisp. Drain

the beef, reserving the marinade. Add the beef to the pan, brown on all sides, then remove using a slotted spoon. 2) Add the onion and carrot to the pan and fry for 5 mins. Place the beef back in the pan, season and sprinkle with flour. Cook for 2 mins more. Stir in the tomato puree and cook for 4 mins. Add the marinade and stock, cover, then cook in the oven for 2 hrs. 3) Fry the mushrooms in a pan with half the butter until browned. In another pan, do the same with the remaining butter and shallots, cooking them very slowly until they caramelise. 4) Strain the beef sauce into a new pan, bring to the boil and reduce by half, then pour back into the casserole, adding the mushrooms and shallots. It can also locate detachments at the back of the retina which, in many cases are painless but damaging to the eye. There is a charge for an OCT screening, but the benefits are obvious. A fitting tribute….

A STUNNING tribute to South Ribble’s fallen heroes has been officially unveiled. The war memorial in Lostock Hall, which remembers 686 men who died serving their country in the Great War, was dedicated in a moving ceremony on Armistice Day. The service was attended by families of the men and some of Lancashire’s highestranking dignitaries. Led by Mayor of South Ribble Councillor Mary Green, the service included readings by Vice Lord Lieutenant of Lancashire Colonel Alan Jolley and Wellfield High School head girl Chloe Juniper. Wreaths were laid and bugler Darryl Cartwright (Royal British Legion) played The Last Post. The poignant ceremony was closed by the City of Preston Pipes and Drums.

“The service was incredibly humbling,” said Councillor Green. “These men made the ultimate sacrifice for their country and it was wonderful to see civic leaders from across the county coming together and paying their respects. We wanted to create the best memorial ever and I very much hope it becomes a South Ribble landmark.” Standing 40ft tall near to the Stanifield Lane roundabout, the monument serves as a poignant reminder of the ultimate sacrifice that brave men and their families made for our freedom. Although more than 50 separate war memorials exist around the borough, the new monument is the first borough-wide memorial. Research into the names was carried out by local historian Charlie O’Donnell, who has spent 18 months trawling through military records, archives and old photographs to

trace the men. “The sacrifice these men and their families made during the war is absolutely massive. There’s not one family in the borough that wasn’t touched during that period,” said Charlie, of Bamber Bridge. “This will be the first time these men’s names will be gathered all in one place. Local people can see their ancestors being remembered and pass on their stories to the younger generation.” The memorial, designed by South Ribble Borough Council officers in collaboration with design and fabrication company DP Structures in Nelson, was craned into place and welded together on-site earlier this month. It is made of a thick steel alloy with a rusted appearance, with a cut-out silhouette of a soldier with head bowed, a large poppy, and the word ‘remember’ inscribed upon it. Inscribed inside, visible to those standing in the peace garden behind the memorial, are the soldiers’ names, including Bamber Bridge’s Corporal John McNamara, who was awarded the Victoria Cross. The memorial and peace garden will form part of the greater St Catherine’s Park, due to be opened to the public in summer 2016, in a joint project between South Ribble Borough Council and St Catherine’s Hospice. Stephen Greenhalgh, Chief Executive of St Catherine’s Hospice, said: “Over 30 years, St Catherine's Hospice has been inspired by local people for local people. This WW1 memorial project epitomises our remembrance of the ultimate sacrifice that so many made a century ago.”
