Let’s Celebrate! Celebration always brings hopes for the future, and grateful feelings for those years that have passed, and led us to become better people. This month, Let’s eat! Magazine turns 5, and we feel truly blessed to reach this milestone in our culinary journey, along with you our lovely readers. We are constantly astounded by the exciting new culinary trends that hit the island, and the way the industry continues to evolve thanks to innovative people who are passionate about food. We also love sharing our experiences with you each month. To mark our 5th anniversary issue we are celebrating with a fabulous event, the BIG FEAST! A delicious day of fabulous food, refreshments, live culinary performances and entertainment that will take place at Beachwalk Shopping Center Kuta, on 23rd August. You can look forward to watching some of Bali’s most talented chefs in action, including the preparation of Indonesia’s biggest Paella – by the legendary team at El Kabron. As if our 5th anniversary isn’t reason enough for a big celebration, we are also proudly launching Let’s eat! A well seasoned travel writer, Alison spent years exploring the world before arriving in Bali, where she quickly succumbed to the island’s exotic charms. Trading her nomadic journeys for adventures of a culinary kind, she happily spends her time writing about restaurants and working on her first novel.

Menur shares her time between Manado and Bali and admits she still hasn’t had the guts to try Manadonese Paniki – a dish made from bats, but she promises to write about it when she has. Dine in the Wild Bali Zoo played host to a wonderful evening of good food, and a successful auction to save Bali’s rescued animals. Wonderfully 31 To celebrate its 31st anniversary, Nusa Dua Beach Hotel & Spa staged several community events, including a visit to a local orphanage and the planting of 1,000 mangrove trees at Serangan Island. Collaborating with The John Fawcett Foundation - a social organisation with a focus of sight restoration and blindness prevention - eye exams were successfully held at schools in Karangasem. Two Cheers for Bali Once again, two members of The Indonesian Sommelier Association – Bali Chapter, have victoriously landed the top spots in the National Sommelier Competition in Jakarta. The long drive is an adventure in itself. Small rustic signs are pointing us in the direction, up and down the road, passing small villages, roosters and rice fields. Undoubtedly Karangasem’s best culinary secret, Bali Asli welcomes us into its abode with a fragrant aroma of heated coconut oil. It’s a tell tale sign that we are in for a Balinese treat. After being ushered to a seat on a wooden bench by the waiter, we sip our welcome drink in awe. The highest mountain in Bali is right in front of us, face to face in all its glory. How better to celebrate our 5th birthday than with food, and so we bring you THE BIG FEAST, a fabulous day of wining, dining, music life performances taking place at Beachwalk Shopping Center Kuta Bali on August 23. Expect live cooking stations and demonstrations; wine tasting; food sampling; and local artisan produce. Chef Marc Torices of El Kabron will also be stirring up the biggest paella ever made in Indonesia, so make sure to come hungry! The main area is free, but you can expect a whole lot of goodies when you upgrade to a VIP pass. We have also joined forces with some of our favourite venues on the island to host a number of pre-Big Feast events, taking place around the island, from Kuta to Seminyak, Sanur and Ubud. Taking dessert to a whole new level, Chef Frederic Boulay of Sakala prepares sublime creations that will blow your mind and your taste buds away. Rising gracefully from the white sandy seafront, Sakala – which translates loosely as ‘all’ in Hindu – brings a dash of distinction to Tanjung Benoa. During the day it is a stylish, yet casual beach club; but as darkness descends it transforms into an elegant fine dining venue. Feast under the starlight amidst flaming torches, or head into the lavish AC interior with its striking floor tiles, exotic lamps and stunning glass bar that gleams like crystal. Whenever I dine at Sakala I feel humbled by the extraordinary talent of Executive Chef Frederic Boulay, and today is no exception. Hailing from Quebec, Boulay is a true innovator, taking classic French culinary ideas, to which he applies modern techniques and new ingredients he has discovered along the way. His impressive bio includes stints at a number of Michelin star properties. Joining me for an afternoon of divine desserts, Boulay is, as always, bubbling over with passion and enthusiasm for his craft. He tells me, “A really amazing dinner must finish perfectly. It must end on a high note… with a beautiful crazy dessert.” I am in total agreement, and each of the dishes we devour – created alongside his exceptionally talented Executive Pastry Chef, Adi Suryadi – strikes a chord.

We start with a delicately perfumed individual Tarte Tatin, with a crispy pastry base topped with the softest almond sponge, tender apple slices and a drizzle of warm caramel sauce. The Balinese vanilla ice cream, apple sorbet and slightly sour Grillotes cherries transports this classic French delight into another dimension. The next delicacy named - Distinction, turns a classic lemon pie into a modernist work of art. “This is one of my favourite desserts ever,” says Boulay with a smile. Well-named, the flavour is truly distinct; the tart, tangy lemon mousse making a sharp contrast to sweet almond paste, pistachio ‘pain de genes’ (almond cake) and Breton sable. The sticky

chewy meringue flambee provides a grandiose finishing touch. “It took me years to achieve the perfect equilibrium for this dessert,” says Boulay as he sets down a Bounty. And it shows! This is sheer heaven – a handcrafted chocolate bar, concealing layers of crispy chocolate hazelnut, coconut cream, pure Valrhona chocolate mousse and moist almond cake. A banana chip and brittle tuille served on the side add a satisfying crunch. The Oasis represents a shift in direction, a fruit salad like no other, with a myriad of exotic textures and Chocolate

flavours. Fabulous homemade sorbets of salak (snake fruit) and mango are served with the ripest, sweetest mandarin, mango and mangosteen to create a very refined taste of the tropics. Poached salak imbued with spices, and delicate honey yoghurt spheres, complete the dish. Chocolate is described on the menu as Valrhona Grand Cru chocolate 70% bitter, in contrasts and textures. This translates as seven dainty chocolate delights, ranging from a classic opera, to chocolate crème brulee, a delightfully smooth brownie, a slice of delicious cheesecake stuffed with chocolate and caramel, and a homemade Ferrero Rocher. Day and Night Set in the fashionable street of Petitenget with beach clubs and swanky hotels as its neighbours, Olive is a wonderful way to start, or end the day. An all day dining bar and restaurant, it offers a hearty selection of international dishes in a casually chic atmosphere. A Soothing red brick wall and wooden furniture on a shady terrace is truly a welcome respite from the blindingly bright morning in Seminyak. We decided to start the day with a good breakfast, and Olive seems to be right choice to do so. Historical Lyon Le Vieux Lyon (the old Lyon district) is one of the main points of interest in Lyon, the third largest city in France which stretches between two small mountains; Colline de Fourviere and Colline de Lacroixrousse. Quenelle de Brochet Sauce Nantua is a traditional specialty of the region and is available in many cafes in this atmospheric district Le Vieux Lyon offers lots of opportunities for walking and enjoying the scenery of the old Renaissance buildings surrounding Cathedrale St. Jean, which dates back to the 11th century. Roads paved with old stones are strictly for pedestrians or “pieton” in French, so you hardly see cars in between the narrow alleys that separate one historical building from another. Every building in the Old Lyon district was built hundreds of years ago, with ivory-coloured stone foundations, grand entrances and big heavy doors. In this area, life starts at 11am when all the shops, cafes and restaurants start opening their doors to regular customers, students, and tourists in search of European exoticism. “Bouchon” is a type of restaurant that can be found in Lyon, serving local specialties. Les Chandelles is one of the many “bouchons” that we stopped by to have lunch ‘a la Lyon.’
