February February is the iciest month of the year and nearly everyone wants to eat warming, comfort food. Warming winter vegetables like squash and sprouts are still in abundance this month, as are apples, pears and juicy oranges - delicious in baked desserts. This month, why not try this recipe – it is a twist on an old favourite – cottage pie! This is a healthy low fat option using carrot and turnip. Low fat carrot and turnip cottage pie (4 servings) (ready in 50 mins)

Ingredients        

6-8 medium potatoes, peeled and halved 4 medium carrots, chopped ½ turnip, chopped 1 onion, chopped 500g extra lean beef mince 1 beef stock cube ½ teaspoon salt ½ teaspoon pepper

Instructions 

Get out 2 pans a large and a small. Put a few pieces of carrot and turnip in the small pan and the rest in the large pan. Add onion to the large pan.

Put the mince in the large pan and add water to both pans.

Put both pans on the hot plates and cook, stirring regularly, so it does not burn.

Boil the potatoes for about 20 minutes until soft.

Add the stock, salt and pepper in the large meat pan.

Turn off the heat of the hot plate that the turnip and carrots are in.

Once the meat and vegetables are cooked place in a baking dish.

Once the potatoes are soft, drain the water and mash.

Place the mashed potato on top of the meat and vegetables.

Bake in the oven until it goes brown.

Add carrots and turnip on top for decoration and serve.

What to sow this month? If the weather is good you can do some early sowing outdoors although best under cloche unless it is particularly mild. Broad beans and early peas to be ready for harvest in May and June can go in as can Jerusalem Artichokes. Shallots should, if possible, go out early but they really do benefit from protection, fleece or cloche until they have got going as will turnips and spinach. 16/06/2013
