Cooking Knife Skills Julienne, chiffonade, brunoise, chop, slice, dice, mince... Learn different knife cuts as well as parts of a knife, knife grips, which knife for which task, how to care for your knives and most importantly how to keep your knives razor sharp. This class will revolutionize the way you use your most important kitchen tool. Bring an apron (optional) and a knife to sharpen. Culinary Geographic: The Melting Pot

Not a fondue class but a flavorful history of American cooking! We’ll learn to create eclectic menus showcasing American cuisine drawn from multiple cultures. Explore American-Italian inspired seafood soup with flatbread and baked ziti casserole. Try your hand at Tex-Mex tortilla and pulled chicken layered casserole. Have the opportunity to make Cajun/Creole items with French influenced sauces along with gumbo, jambalaya and dirty rice. We’ll also have opportunity to discover the world’s best buttermilk pan-fried chicken with biscuits and collard greens. Maybe we’ll even squeeze in a fondue. Bring an apron and your appetite as each class includes an evening meal. Learn how these cultures inspired many of today’s popular fusion dishes. We’ll delve into cooking Creole, Cajun and Mexican foods and get a taste for how they influenced some of America’s culinary beginnings. Delve into cooking gumbo, jambalaya, home-made salsas, posole, Tamales, Tex-mex and master easy-to-make and hearty food that celebrate America’s melting pot. Join award-winning Sugar Artist and Food Network Competitor, Michele Sweeney, for a fun-filled class on the basics of cake making from start to finish. In this hands-on beginner class, you will learn to bake the perfect cake, make different types of butter cream, receive step-by-step guidance in piping techniques and experience the excitement of making your cake a work of art. Discover how easy it is to create the perfect dessert for any occasion in a collaborative and supportive environment. A $50 materials fee is due to the instructor on first day of class.
