Pour in the vinegar, stock, sugar and soy sauce. Bring to a boil over high heat and then reduce to a simmer and cover. Simmer for 45 minutes, or until the squid is fork-tender. Just before serving, add the minced red chiles and parsley. Eat alone or serve over garlic rice with a fried egg.
