In this edition we’ll dive into stories that capture the essence of our culture and the impact we have on the world. We will talk about Becky G’s new album called “Esquinas” and we will also have an exclusive interview with singer JAAYPEREZ.

In addition, you will find facts about what you should know if you have just arrived in Canada, and we will introduce you to a legend that highlights the importance of adaptation and inclusion of Latino culture with Thanksgiving, among many more surprises. LUIS ÁVILA, UN CHEF MEXICANO QUE REVOLUCIONA LA COMIDA EN TORONTO

Luis Ávila es originario de Tuxtepec, Oaxaca, una ciudad pequeña a unas cuantas horas de la capital de este estado mexicano y a unos 15 minutos del estado de Veracruz. Es un chef mexicano que nunca pensó que su verdadera vocación se encontraba en la gastronomía y mucho menos imaginó que sería en Canadá el lugar donde realizaría varias de sus metas profesionales.

“Todo empezó realmente por el deseo, ni siquiera de estudiar gastronomía. Toda esta aventura que empezó aquí en Canadá, inició por mi deseo de querer estudiar medicina cuando cumplí 17 años. Les dije a mis padres si había la posibilidad de poder venirme a estudiar inglés a Canadá.

Mi hermano mayor ya lo había hecho unos años atrás y en el 2012 salió esta oportunidad de venir para acá por nueve meses. En este tiempo como muchos, me encantó la ciudad, me enamoré de este sueño de poder vivir acá, de poder tener una experiencia laboral en un futuro”, cuenta Luis Ávila.

A finales del 2012 regresó a México y empezó a estudiar medicina en la ciudad de Puebla, sin embargo, durante ese primer semestre realmente no sintió que fuera ese su llamado, pero recordaba con gran cariño su estancia en el país de la hoja de maple.

“Ya recordando mi experiencia en Canadá, de realmente entender diferentes culturas, de andar con diferentes personas de otros países y batallar en comunicarnos con una lengua que estábamos aprendiendo, encontramos que el común denominador siempre era la comida. Esto me llevó a entender que había algo muy poderoso en la comida, ahí fue cuando decidí empezar toda la carrera culinaria”, menciona Luis.

Estudió en Canadá y en México, en el 2013 decidió entrar a cursos en Puebla y terminó inscribiéndose en el Instituto Suizo de Gastronomía y Hotelería, y en el 2017 empezó a estudiar desde cero la formación en Canadá.

Luis Avila is from Tuxtepec, Oaxaca, a small city a few hours away from the capital of the Mexican state and about 15 minutes from the state of Veracruz. He is a Mexican chef who never thought his true calling would be in gastronomy, let alone in Canada, where he would achieve several of his professional goals.

“It all really began with a desire, not even to study gastronomy. This whole ad venture that started here in Canada began with my desire to study me dicine when I turned 17. I told my parents if there was a possibility of coming to Canada to study English.

My older brother had done it a few years before, and in 2012, this opportunity to come here for nine months came up. During this time, like many, I fell in love with the city, I fell in love with the dream of being able to live here, of having a work experience in the future,” says Luis Avila.

In late 2012, he returned to Mexico and began studying medicine in the city of Puebla. However, during that first semester, he didn’t truly feel that was his calling. Instead, he fondly remembered his time in the land of the maple leaf.

Recalling my experience in Canada, of truly understanding different cultures, of being with people from various countries and struggling to communicate in a language we were learning, we found that the common denominator was always food. This led me to realize that there was something very powerful in food, and that’s when I decided to embark on a culinary career,” says Luis.

He studied in both Canada and Mexico. In 2013, he decided to take courses in Puebla, Mexico, and ended up enrolling at the Swiss Institute of Gastronomy and Hospitality. In 2017, he started his culinary education from scratch in Canada.

Chotto Matte es un restaurante que ya está posicionado a nivel mundial con locaciones en Toronto, Miami, Londres y próximamente se va abrir en San Francisco. Este restaurante destaca los sabores de la cultura japonés y peruana, ahí Luis Ávila se desempeña como el Head chef y ha podido compartir un poco de la gastronomía mexicana.

“Estaban buscando algún tipo de postre en el cual pudiera representar un poco más allá de lo que es la parte peruana, la parte japonesa.

Querían realmente tener algo más inclusivo para todo lo que es América Latina en general, y me dijeron sabes que estamos buscando una receta de churros, queremos hacer churros, sé que a lo mejor va ser contradictorio con el menú que ofrecemos pero, tu eres mexicano, nos has comentado muchas veces de esta receta que tienes de tu abuela y nos gustaría por lo menos intentar.

Es una receta que realmente la llevo muy presente, la hicimos, les encantó y el día de hoy es una receta que está a nivel global”, platica Ávila.

Para Luis algo muy importante que no deben olvidar los latinos que se dedican al servicio de alimentos y bebidas es nunca perder esa calidad como personas que atrae a la gente.

“Nosotros como latinos en general tenemos una responsabilidad grande de ser cordiales, de ser calurosos, de ser esa persona que te recibe con un abrazo, que te pregunta de tu día, que te quiera hacer plática aunque no te conozca, realmente esas son las cosas que te llevan a realizar metas”, finaliza Luis.

Chotto Matte is a restaurant that has already gained worldwide recognition with locations in Toronto, Miami, London, and soon to open in San Francisco. This restaurant highlights the flavors of Japanese and Peruvian culture, where Luis Avila serves as the Head Chef and has been able to showcase some Mexican gastronomy.

“They were looking for some kind of dessert that could represent more than just the Peruvian and Japanese aspects. They really wanted something more inclusive for all of Latin America in general. They told me, ‘We’re looking for a churro recipe. We want to make churros. We know it might be contradictory to the menu we offer, but you’re Mexican, and you’ve told us many times about this recipe from your grandmother, and we would like to at least give it a try,’” Luis shared.

“It’s a recipe that I really hold close to my heart. We made it, they loved it, and today it’s a recipe that is at a global level,” Ávila shared.

For Luis, something very important that Latinos working in the food and beverage industry should never forget is to never lose that quality as individuals that attracts people.

“We, as Latinos in general, have a significant responsibility to be cordial, warm, to be the person who welcomes you with a hug, who asks about your day, who wants to chat with you even if they don’t know you. These are the things that lead you to achieve goals,” concludes Luis.

Octubre, mes de la herencia hispano-Latina en Canadá

Para la comunidad canadiense es de gran importancia honrar las raíces de los antepasados, tanto de pueblos originarios de Canadá como de otros países. Por ello, anualmente, entre los días 15 de septiembre y 15 de octubre, para conmemorar y reconocer los aportes de las personas hispanas a las comunidades dónde residen.

Al ser una celebración compartida también por los Estados Unidos, su fin es rendir homenaje a los canadienses y estadounidenses cuyos ancestros pertenecieran a países hispanos como México, América del Sur, El Caribe, Centroamérica y España.

Los días en los que sucede la celebración no son al azar, se escogieron puesto que comienza con las fechas de independencia de muchos de los países hispanos como Costa Rica, Guatemala, Honduras, El Salvador y Nicaragua el 15 de septiembre, México el 16 y Chile el 18.

Se estima que en Canadá viven medio millón de latinos, número que puede variar según la manera en que se contabilice, y aunque parezca pequeño, pues es un poco más del 1% de la población general, va en crecimiento y es una comunidad muy presente en el país. Por ello este festejo se vuelve tan grande y especial.

Es un mes de convivencia y unión en el que todas las personas hispano-latinas pueden recordar con amor sus raíces y su cultura. Es un festejo masivo organizado principalmente por el Consejo Canadiense para la Herencia Hispana, que desde el año 2014 ha unido a la comunidad para dar a conocer y celebrar los orígenes que nos caracterizan.

Entre las actividades que se pueden encontrar en las festividades realizadas a lo largo del mes son conciertos y shows de música típica, danza regional, desfiles, muestras de cine y demostraciones de artes de varias índoles, como poesía y pintura.

October, Month of Hispanic-Latino Heritage in Canada

For the Canadian community, it is of great importance to honor the roots of ancestors, both from Indigenous peoples of Canada and from other countries. Therefore, annually, between September 15th and October 15th, they commemorate and recognize the contributions of Hispanic individuals to the communities where they reside.

As this celebration is also shared with the United States, its purpose is to pay tribute to Canadians and Americans whose ancestors came from Hispanic countries such as Mexico, South America, the Caribbean, Central America, and Spain.

The dates chosen for this celebration are not random; they were selected because they coincide with the independence dates of many Hispanic countries. For instance, Costa Rica, Guatemala, Honduras, El Salvador, and Nicaragua celebrate their independence on September 15th, Mexico on the 16th, and Chile on the 18th.

It is estimated that half a million Latinos live in Canada, a number that can vary depending on how it is counted. While this may seem small, as it represents just over 1% of the general population, the Latino community is growing and very active in the country. That’s why this celebration becomes so significant and special.

It is a month of togetherness and unity in which all Hispanic people can lovingly remember their roots and culture. It’s a massive celebration primarily organized by the Canadian Council for Hispanic Heritage, which since 2014 has brought the community together to showcase and celebrate the origins that define them.

Among the activities that can be found during the festivities held throughout the month are concerts and shows featuring typical music, regional dances, parades, films, and demonstrations of various arts, such as poetry and painting.

Cuéntanos un poco de ti, ¿Quién es Jaay Perez?

Nací en México en la ciudad de Oaxaca, vine a Canadá a la edad de 5 o 6 años con mi mamá y mi hermano. Crecí y fui a la escuela aquí, aprendí inglés fluido y aquí seguimos.

¿Cuál es tu parte favorita de vivir en Canadá?

La experiencia de poder conocer a gente de diferentes nacionalidades y culturas. Tengo muchos amigos colombianos, venezolanos, ecuatorianos y es una de las cosas que más me gusto porque a pesar de ser de diferentes lugares, aquí todos somos hispanos. También tengo amigos italianos y ha sido muy bonito para mí poder tener amigos de lugares tan variados.

¿Cuál fue tu primera experiencia con la música?

Desde chiquito siempre me gusto la música, yo recuerdo que cantaba muchas de las canciones de Alejandro Fernández porque a mi mamá le gustaba y yo también me ponía a escucharlo. Creo que desde ahí empezó mi camino en la música.

¿Quiénes son tus influencias musicales? ¿Quién y qué te inspira?

A mí hasta hoy me inspira Arcángel, es para mí un grande. También Jhay Cortez y Myke Towers son artistas muy grandes que ahorita escucho sus canciones y digo: “me gustaría alcanzarlos y ser como ellos”.

¿Escribes tus propias canciones? Si es así... ¿Cómo es tu proceso de composición?

Si, primero empiezo a buscar un beat, ya que lo encuentro, comienzo a buscar un flow, la melodía, el cómo va a ir la canción. Después comienzo con el coro, ya teniendo el coro, el verso se escribe más fácil y así voy haciendo mi música.

¿Qué canción de todos tus lanzamientos es tu favorita y por qué?

Pues todas me gustan, pero en la que sí me divertí mucho es en la canción llamada “Los Lobos” ya que la hice con dos de mis amigos.

Tell us a little about yourself, who is Jaay Perez?

I was born in Mexico in the city of Oaxaca, I came to Canada at the age of 5 or 6 with my mom and brother. I grew up and went to school here, learned fluent English and here we are still here.

What is your favorite part of living in Canada?

The experience of being able to meet people from different nationalities and cultures. I have many Colombian, Venezuelan, Ecuadorian friends and that is one of the things I liked the most because even though we are from different places, we are all Hispanic here. I also have Italian friends and it has been very nice for me to have friends from so many different places.

What was your first experience with music?

Since I was a little boy I always liked music, I remember that I used to sing many of Alejandro Fernandez’s songs because my mom liked him and I also used to listen to him. I think that’s how I started my musical journey.

Who are your musical influences? Who and what inspires you?

Arcángel inspires me to this day, he is a great for me. Also Jhay Cortez and Myke Towers are very great artists that now I listen to their songs and I say: “I would like to reach them and be like them”.

Do you write your own songs? If so... What is your songwriting process like?

Yes, first I start looking for a beat, once I find it, I start looking for a flow, the melody, how the song is going to go. Then I start with the chorus, and once I have the chorus, the verse is easier to write and that’s how I make my music.

Which song of all your releases is your favorite and why?

Well, I like all of them, but the one I had a lot of fun with is the song called “Los Lobos” because I did it with two of my friends.

Mi amigo Magic me ayudó mucho en la música, él fue el que me dijo para hacer esta canción y me puso el beat; esta canción es como un corrido-trap.

¿Con quién te gustaría colaborar?

He conocido varios artistas que igual van empezando, tengo un amigo que se llama Esco, es artista aquí en Toronto y me gustaría hacer algo con él. Es un chavo muy talentoso, lo conozco en lo profesional y es un buen amigo.

¿Cuál es tu canción favorita (de cualquier otro artista) de todos los tiempos y por qué?

Esa si está difícil, realmente no me podría decidir por una.

¿Qué es lo más difícil de ser músico?

Tienes que estar constantemente haciendo promoción y estar conectado con el público por medio de redes sociales. Eso para mí es un poco difícil porque si no tienes un equipo, pues necesitas aún más tiempo.

¿Cómo defines el éxito como artista?

Para mí sería llegar a tocar a miles de personas, que realmente sientan mi música, que les agrade y les guste. El éxito es conectar el público y que se aprendan mis canciones de corazón.

¿Dónde te ves musicalmente dentro de 5 años?

Me gustaría ser bien conocido aquí en Toronto, crecer y desarrollarme aquí mismo y comenzar a expandirme ya con unos cuantos álbumes, por lo menos dos.

¿Cuándo se lanzará tu álbum debut?

Tengo un par de canciones en lo que llamamos “caja fuerte”, pero creo que dentro de un año ya tendría algo bien preparado para todos.

¿Tienes algún consejo para los aspirantes a artistas?

Que le echen muchas ganas porque esto de la música no es fácil, pero también que se diviertan.

I’ve met several artists who are just starting out, I have a friend named Esco, he’s an artist.

I have a friend named Esco, he is an artist here in Toronto and I would like to do something with him. He’s a very talented guy, I know him professionally and he’s a good friend.

What is your favorite song (of any other artist) of all time and why?

That’s a tough one, I really couldn’t decide on one.

What is the hardest thing about being a musician?

You have to be constantly promoting and being connected with the public through social networks. That for me is a bit difficult because if you don’t have a team, you need even more time.

How do you define success as an artist?

For me it would be getting to play to thousands of people, that they really feel my music, that they like it and love it. Success is connecting with the audience and having them learn my songs by heart.

Where do you see yourself musically in 5 years?

I would like to be well known here in Toronto, grow and develop right here and start branching out already with a few albums, at least two.

When will your debut album be released?

I have a couple of songs in what we call a “vault”, but I think within a year I would have something well prepared for everyone.

Do you have any advice for aspiring artists?

To put a lot of effort into it because this music thing is not easy, but also to have fun.

Dentro de sus experimentaciones con la música se encuentran la incorporación del jazz, y diferentes tipos de música latina como la cubana, el bolero y el tango. Esto le ha valido un gran público de todos lados del mundo que al oír sus melodías se identifica y se reconoce.

El año 2020 tuvo una presentación a manera de homenaje llamada Cigala Canta a México. El motivo del show era externar el amor y respeto que le tiene a dicho país. Cantó canciones propias y de artistas legendarios mexicanos como José Alfredo Jimenez, Chavela Vargas, Vicente Fernandez entre muchos otros.

Sobre su experiencia con la música mexicana menciona que desde pequeño se vio influenciado puesto que escuchaba a artistas flamencos cantar canciones típicas del país norteamericano. Añade que su acoplamiento con la música de mariachi fue sorprendentemente sencillo, “me salió del alma”, continuó diciendo que la poesía de las letras lo apasiona a sobremanera.

Diego Ramon Jimenez Salazar, whose stage name is Diego El Cigala, is one of the most important flamenco and Latin music singers worldwide.

Throughout his career, he has pushed the boundaries of flamenco by blending musical genres and captivating people with his unique voice.

His natural talent for singing was nurtured from a young age under the guidance of his father, who was also a renowned singer and taught him the fundamentals of this beautiful discipline.

Among his musical experiments, he has incorporated jazz and various types of Latin music such as Cuban music, bolero, and tango. This has earned him a large and diverse audience from all around the world who identify with and appreciate his melodies.

In 2020, he had a tribute performance titled “Cigala Canta a México” as a way to express his love and respect for Mexico. During the show, he sang his own songs as well as songs from legendary Mexican artists like Jose Alfredo Jimenez, Chavela Vargas, Vicente Fernandez, among many others.

Regarding his experience with Mexican music, he mentioned that he was influenced from a young age because he heard flamenco artists singing typical Mexican songs. He added that his connection with mariachi music was surprisingly easy, saying, “It came from my soul.” He continued by expressing his deep passion for the poetry of the lyrics.

La historia alude al ya conocido choque cultural; migrantes que no sintonizan con el entorno. No es una sorpresa que la adaptación del recién llegado a una nueva cultura entrañe drama y desafíos, pero el acercamiento a nuevas tradiciones, y sobre todo su práctica, fomenta la inclusión en la comunidad.

Nuestra leyenda del pájaro y los murciélagos termina cuando al cabo de un tiempo, al vistoso pájaro, se lo ve todavía en la cueva, colgando de las patas. “A donde fueres haréis lo que vieres”: este lema parece seguir vigente, sobre todo cuando hablamos de procesos de adaptación.

El Thanksgiving en Canadá o el Día de Acción de Gracias, es una celebración cívica y familiar que comenzó como una fiesta para agradecer la cosecha. En Canadá se celebra el segundo lunes del mes de octubre, con una cena con pavo. El festejo marca la identidad de sus ciudadanos, y los latinos que vivimos en Canadá hemos abrazado esta tradición: cada año nos preparamos con la familia y los amigos de distintas latitudes para la celebración.

En Canadá existen lugares mágicos y uno de ellos es sin duda el Parque Nacional Banff, que con sus majestuosas montañas rocosas, diversidad de paisajes y la amplia flora y fauna que lo describen, lo convierten en uno de los destinos imperdibles dentro de Canadá.
