Dear Guests, This has been an amazing year for us! Thank you all for your continued support in our growth and desire to better ourselves. We are so proud to announce that we have been awarded #1 resort in Texas and the Midwest by Conde Nast Traveler for 2018! This is such an honor to receive and one that is predominantly fueled by those of you who have supported us over the years, and we are so grateful to each and every one of you. Now, as another year comes to a close with the holidays quickly approaching, we are looking forward to celebrating with you at Lake Austin Spa Resort… In the coming months we will continue to celebrate the new plantings of our organic gardens which provide both a beautiful backdrop to the lake as well as ingredients for our “Conscientious Cuisine.” We are thrilled to introduce Molly Pikarsky, our new Flora and Fauna Manager who has a background in agriculture, cuisine and organic gardening. Molly and Chef Stephane are working together to ensure that our Thanksgiving feast this year is a reflection of the bounty from our own gardens, along with other locally sourced products. Our “Paws by the Lake” weekend returns November 30 - December 2. Please arrive in time for Yappy hour… sign up for your pet massages, pet photography, bark brunch and all the other pet n’ pal activities! Robbie Hudson, our incredibly creative Programming Director, is in the throes of planning the 12 days of Holiday Cheer starting on December 20th-January 1, 2019. Asian Food paired with Wine with Special Guest Chef Corinne Trang and Wine Expert Eric Asimov Corinne Trang and Eric Asimov will take over our demo kitchen for a fun, informative and engaging food and wine pairing course. Join us during culinary week with our dynamic duo. Corinne Trang is an award-winning author of nine Asian cookbooks. For over 20 years, her research into eastern food philosophies and practices has guided her as a classically -trained chef and certified holistic health and nutrition counselor. Dubbed the “Julia Child of Asian cuisine,” her specialty is in sharing authentic foods with a focus on health without compromising on flavor. Eric Asimov is the chief wine critic of The New York Times and the author of “How to Love Wine: A Memoir and Manifesto,’’ published by William Morrow, and “Wine with Food: Pairing Notes and Recipes from the New York Times,’’ written with recipes by Florence Fabricant and published by Rizzoli. His weekly column appears in the Food section of The Times.

Sweet with Special Guest Pastry Chef/ Chocolatier Valerie Gordon Valerie Gordon is a celebrated chocolatier who has been recognized in Food & Wine, Bon Appétit, and Saveur, served as a guest judge on BRAVO’s “Top Chef: Just Desserts “ and more. She co-founded Valerie Confections in 2004 with her life and business partner Stan Weightman, Jr. as a tiny, family-run business with just six flavors of chocolate-dipped toffee. Now a top chocolatier in the country, her business has grown exponentially with a full line of chocolates, petits fours, handmade preserves, cakes, pies, and pastries all incorporating the very best ingredients and offering a delicious spin on the unexpected.

Tapas for Holiday Entertaining with Special Guest Kimmie Rhodes Join local favorite musician, Kimmie as she cooks up some delicious recipes and shares some stories and songs. Singer-songwriter Kimmie Rhodes is a native Texan who calls Austin home. Kimmie’s multi-platinum selling songs have been recorded by such stellar acts as Willie Nelson, Wynonna Judd, Trisha Yearwood, Amy Grant, CeCe Winans, Joe Ely, John Farnham, Waylon Jennings, Peter Frampton, Mark Knopfler and Emmylou Harris. A creative and prolific artist, she has recorded and released a total of sixteen solo CDs, written and produced three musical plays and a catalogue of hundreds of songs, and published a novel/cookbook.

Before launching the school in 2002, she honed her editorial chops as a former Food Editor at Martha Stewart Living and the Recipes Editor at The Wall Street Journal. After teaching for 15 years, she returned to her writing roots and published a cookbook that offers a visual encapsulation of the best-selling class at her cooking school: Six Basic Cooking Techniques: Culinary Essentials for the Home Cook (2018). Branded a “terrifically helpful guide” by Publishers Weekly, Jennifer relishes the opportunity to travel the country and spread her “you can do it” cooking gospel, refined over years at the helm of her NYC kitchen classroom. She lives in the Hudson Valley, NY.

featured w i nter RECIPE Pumpkin Soup with Apple and Sage INGREDIENTS: • 2 tablespoons butter • 1/2 of an onion, small diced • 1 carrot, small diced • 1 stock celery, small diced • 2 cups can pumpkin • 1/2 a Granny Smith apple, diced • 1/4 cup toasted pumpkin seeds • 1 1/2 tablespoons fresh sage leaves, finely chopped • 1 cup coconut milk • 3 cups vegetable broth • Salt and pepper to taste

DIRECTIONS: • Using a medium size pot, melt butter on medium to high heat, and sauté onion, carrot and celery till soft, for about 2 to 3 minutes. • Turn the heat down to medium and then add pumpkin, sage, coconut Milk and broth and whisk all together till smooth. • Allow soup to cool for 15 minutes. • When the soup is ready, use a hand blender to purée the soup till smooth. • Season with salt and pepper. • Use apple and pumpkin seeds for garnish.
