Alicia Kay Fieldings Born in Springfield, Massachusetts and raised in Queens, New York. Alicia realized her desire to understand more about the body and health. Her desire developed over the years and became more of a need wanting to reach many regarding the ability to defeat obesity and disease. She believes that by improving eating habits; including eliminating foods which are killing you slowly, could also regain your self esteem and your own purpose in life. Alicia attended Queensborough Community College, she earned her certificate for Medical Office Assisting. As this satisfied some of her desire to understand health; after a series of personal events concerning eating certain foods, she later began to do much research on her own and is now a certified weight-loss consultant and speaking on health and nutrition in America. Alicia willnow be able to reach the nations. Her goal is to travel world wide to share with people of all ages that you don’t have to be over-weight or sick any longer. Preface Greetings to all those that have found an interest in DIVAS. In this handbook I want to share with you some information that may not be apart of the main stream. They tell me that brain washing is changing the way a person thinks and acting upon what they have been taught. Well, I don’t want to brain wash you but I do want to change the way you think and encourage you to act upon what you’ve learn. I want to also change the way you see food and those involved in our food production. The word diet means a prescribed selection of foods or what is included in what you eat from day do day for your life. On occasion you may enjoy some ice cream or a chocolate bar; but that’s not to make us feel as though we’ve cheated that’s just part of our overall diet. What I encourage is an overall lifestyle change; and why temporary diets don’t last. What you’ll learn is how to balance what you eat and how to supplement. We will understand that we must take our health into our hands because it is our bodies and not our physician’s body. DIVAS will show you how to be in control of your weight and health. We will look at some supplements and why supplementation is important. I give you many things to avoid but I will give the reasons why you shouldn’t eat certain things. Remember you are what you think you are. From me to you, you are fabulous right were you are; and on this journey there will be a lot o f myths to dispel and a lot of temptations to pass up. But you can do through Christ who strengthens you. In the following pages we will discover some of the many foods and food additives to avoid. In the Holy scriptures it reads “my people perish for a lack of knowledge” there are many things we miss out on or are effected by just because we don’t know. This is also called ignorance. We want lay it out plainly for you so that you no longer will be ignorant.

You can yourself to a healthier life for sure. One way I share with people on how to get started with doing that is going back to the beginning of the reason why we are overweight or sick. We must do that by eliminating those refined foods, calories and fats that will create that type of body, and start eating fresh produce, whole grain and other good foods. “The Seven Day Challenge” The seven day challenge is basically allowing your body to rest from a lot of foods that aren’t good for us and actually cause more harm than we could ever imagine. I used 7 days because it’s simply sounds better than 30 or 40 days. We can accept something quicker if it’s not going to take forever; and we will be more willing to listen to the rest of the program. There are different theories on how long it takes to create a habit and how long it takes to break a habit. I have heard 21 days; I have heard even more than that. I believe a habit can be broken in just one week. If you begin to feel better and lose some weight believe me you will not want to go back. And that’s what we want to do starting today. Make the commitment not to go back. Are you Ready !!!

From this point on we will start out with a bunch of Don’ts but before this is all over we will replace the don’ts with a lot of things you can do and things you can eat. For your seven day challenge we want to eliminate or really reduce the intake of the foods we eat. Let’s examine some of these and why we may want to limit or cut them out our diet altogether.

℘ Eat more meals a day, maybe 4 or 5 smaller meals. Finish heavy food intake by at least one hour before bed time. ℘ Try eating your heavier foods first, the salad (if that was part of the meal) second and no liquids at all during the meal. (The rule is no liquids 30 minutes before or at least 30 minutes to an hour after

"Bad Cholesterol": A Myth and a Fraud! We in the medical profession, totally oblivious of the vital roles of cholesterol in the body, have been duped into thinking that it is this substance that causes arterial disease of the heart and the brain. The pharmaceutical industry has capitalized on the slogan of "bad cholesterol" and has produced toxic-to-the-body chemicals that minimally lower the level of cholesterol in the body and in the process cause liver damage to thousands of people, some who die as a result of using the medication. It is surprising that none of the frequently quoted and media-popularized doctors has reflected on the fact that cholesterol levels are measured from blood taken from the veins, yet nowhere in medical literature is there a single case of cholesterol having caused obstruction of the veins. Venous blood moves far slower than arterial blood and thus would be more inclined to have cholesterol deposits if the assumption of "bad cholesterol" were accurate. This mistake by us in the medical community, and its capitalization by the pharmaceutical industry, has caused an ongoing fraud against society. In truth, the so-called "bad" cholesterol is actually far more beneficial than is appreciated. The reason for its rise in the body is because of complications caused by chronic unintentional dehydration and insufficient urine production. Dehydration produces concentrated, acidic blood that becomes even more dehydrated during its passage through the lungs before reaching the heart – because of evaporation of water in the lungs during breathing. The membranes of the blood vessels of the heart and main arteries going up to the brain become vulnerable to the shearing pressure produced by the thicker, acidic blood. This shearing force of toxic blood causes abrasions and minute tears in the lining of the arteries that can peel off and cause embolisms of the brain, kidneys and other organs. To prevent the damaged blood vessel walls from peeling, low-density (so-called "bad") cholesterol coats and covers up the abrasions and protects the underlying tissue like a waterproof bandage until the tissue heals. Thus, the vital, life-saving role of low-density cholesterol proves this substance is of utmost importance in saving the lives of those who do not adequately hydrate their bodies so that their blood can flow easily through the blood vessels without causing damage. Cholesterol is an element from which many of our hormones are made. Vitamin D is made by the body from cholesterol in our skin that is exposed to sunlight. Cholesterol is used in the insulating membranes that cover our nerve systems. There is no such a thing as bad cholesterol. If all the primary ingredients are available for its normal functions, the human body does not engage in making things that are bad for its survival. Until now we did not know water was a vital nutrient that the body needed at all times – and in sufficient quantity. Water itself – not caffeinated beverages that further dehydrate – is a better cholesterollowering medication than any chemical on the market. Blackstrap Molasses

70 percent sucrose. The dark, syrupy "leftovers" from the sugar-refining process. Marginally qualifies as a natural sweetener, but it does contain most, if not all, of the redeeming value of the original cane plant--such as thiamine, riboflavin, niacin, pantothenic acid, calcium, iron, magnesium, potassium, and chromium, as well as other micronutrients. Very strong flavor. A source of iron.

Excellent sweetener in quickbreads (such as zucchini bread), cookies, cakes, and pies. I sometimes use half molasses and half honey, brown rice syrup, or barley malt syrup when baking.

Evaporated White Grape Juice and Brown Rice Syrup (Fruitsource, manufactured by Fruitsource Confections, Inc.)

Use in all baked goods. Honey has a very distinctive taste that takes getting used to for some people, but once you start cooking with it, it grows on you. Once source I have says use 2/3 to 3/4 as much honey as white sugar in recipes, but the other says only 1/2 as much. I tend to use half and have been satisfied. Reduce liquid by 1/4 cup, but if there is no liquid to reduce, add 3-4 tablespoons of flour for each 1/2 honey used. Also add 1/8 teaspoon baking soda per half cup of honey. Reduce oven 25 degrees and adjust baking time. Buy only pure, raw honey, as some honey has sugar added to it and/or has been cooked. Some vegans don’t use honey as bees are sometimes killed after season. Don’t give honey to children under age 2, as it can transmit botulism. Honey can adversely affect blood sugar levels.

Maple Syrup

From sap of maple trees (not the imposters in grocery stores!); about 40 gallons of sap produce 1 gallon of syrup; 60% sucrose

Peach, pear, grape, and pineapple juice most common. Sucrose, some natural fructose. Generally amber colored and fruity tasting.

Use in all baked goods and desserts, especially spice, carob, and chocolate cakes. Substitute 2/3 cup for 1 cup white sugar. Reduce liquid 1/3 cup per cup and add 1/4 teaspoon baking soda per cup concentrate. Reduce oven 25 degrees and adjust baking time. Some concentrates are more acidic than others. Store in refrigerator, but use at room temperature.

Stevia Stevioside

A perennial shrub of the aster family; available in whole or broken leaves, coarse ground, powder extract, or liquid extract; 8-300 times sweeter than table sugar (depending on quality and whether it is leaf or extract) but with 0 calories; sweetening attributes are the

To make your own liquid solution, dissolve 1 tsp. white Stevia powder in 3 T. pure water and pour concentrate into a small bottle with a dropper; store in fridge. Approximately 1 tsp. of concentrate equals 1 cup of sugar. You will have to experiment in converting recipes, adjusting liquid and dry ingredients to make up for the lack of bulk that Stevia provides. Ground Stevia may be sprinkled lightly over cooking vegetables and meats, cereals and salads; significantly enhances the flavor and nutritional value of the food.

The body stores acid poisons in fat cells. This is what the body does in order to keep the acid poisons out of vital organs. Why Is Constipation So Unhealthy? Many people are constipated and don’t even know it. The Deadly Risks of Gastric Bypass Researchers are debating whether or not bariatric surgeries dealing with obesity present more benefits or more risks to patients. Gastric bypass surgery, which involves creating a smaller stomach by stapling off a section and rearranging the small intestine, is one they have been specifically focused on. While some researchers claimed the surgery saves lives of extremely obese people, an opposing study found that one in every 50 gastric bypass surgeries result in death within a month after the operation. Critics say the risks far outweigh the benefits, in that the surgery not only poses a risk of death, but also sets people up for medical problems such as malnutrition. Those in favor of the surgery disagree, and believe that patients who make it through the operation will benefit from improvements in common obesity-related health issues such as diabetes, heart disease and lung function. They even claim those who undergo the operation seem to live longer. In a study involving 66,109 obese patients, two groups were formed. The first group consisted of 3,328 patients who received gastric bypass surgery, while the second group included the remainder of the patients, or those hospitalized for some other medical reason. Researchers found: • •

In the time span of 30 days, one in 50 surgery patients died Approximately 3 percent of patients who had gastric bypass surgery were younger than 40 and died after 13.6 years, compared to the 13.8 percent who did not have the surgery

After 15 years, 11.8 percent of patients of all ages who had gastric bypass surgery died, compared to the 16.3 percent who did not have the surgery

Another study concerning bariatric surgery involved 1,035 morbidly obese patients who had gastric bypass surgery and 5,746 patients of the same weight who did not have the surgery. The results from the study showed: • •

Sixty-seven percent of the gastric bypass patients lost their excess weight In a five-year follow up, six patients died (four from the operation), compared to the 350 patients who died and did not have the surgery

Patients having bariatric surgeries had an 89 percent reduced risk of death

experience of the surgeon, in that patients are at five times the risk of death during surgery if a surgeon is less experienced.

Diets Don't Work!


By Chad Tackett Many Americans view a healthy lifestyle as something difficult to attain--and something that's not much fun. Traditional diets have taught us that to lose weight, we must count calories, keep track of everything we eat, and deprive ourselves by limiting the amount--and kinds--of foods we eat. Diets tell us exactly what and how much food to eat, regardless of our preferences and individual relationships with hunger and satiety. Dieting can help us lose weight (fat, muscle, and water) in the short term but is so unnatural and so unrealistic that it can never become a lifestyle that we can live with, let alone enjoy! While very few diets teach healthy low-fat shopping, cooking, and dining-out strategies, many offer unrealistic recommendations and encourage healththreatening restrictions. Even more important, diets don't teach us the safest, most effective ways to exercise; they don't teach us how to deal with our cravings and our desires, or how to attend to our feelings of hunger and fullness. Eventually, we become tired of the complexity, the hunger, the lack of flavor, the lack of flexibility, the lack of energy, and the feeling of deprivation. We quit our diets and gain back the weight we've lost; sometimes we gain even more! Each time we go on another diet of deprivation, the weight becomes more difficult to lose, and we become even more frustrated and discouraged. Preoccupation with body shape, size, and weight creates an unhealthy lifestyle of emotional and physical deprivation. Diets take control away from us. Many of us who diet get caught in a "yo-yo" cycle that begins with low selfacceptance and results in structured eating and living because we lack trust in our body and are unwilling to listen and adhere to our body's signals of hunger and

fullness. On diets, we distrust and ignore internal signs of appetite, hunger, and our need to be physically and psychologically satisfied. Instead, we depend on diet plans, measured portions, and a prescribed frequency for eating. As a result, many of us have lost the ability to eat in response to our physical needs; we experience feelings of deprivation, then binge, and finally terminate our "health" program. This in turn leads to guilt, defeat, weight gain, low self-esteem, and then we're back to the beginning of the yo-yo diet cycle. Rather than making us feel better about ourselves, diets set us up for failure and erode our selfesteem. The attitudes and practices acquired through years of dieting are likely to result in a body weight and size obsession, low self-esteem, poor nutrition and excessive or inadequate exercise. Weight loss from following a rigid diet is usually temporary. Most diets are too drastic to maintain; they are unrealistic and unpleasant; they are physically and emotionally stressful. And most of us just resume our old eating and activity patterns. Diets control us; we are not in control. People who try to live by diet lists and rules learn little or nothing about proper nutrition and how to enjoy their meals, physical activity, and a healthy lifestyle. No one can realistically live in the diet mode for the rest of their life, depriving themselves of the true pleasures of healthy eating and activity. We Don't Fail Diets; They Fail Us! Decades of research have shown that diets, both self-initiated and professionallyled, are ineffective at producing long-term health and weight loss (or weight control). When your diet fails to keep the weight off, you may say to yourself, "If only I didn't love food so much . . . If I could just exercise more often . . . If I just had more will power." The problem is not personal weakness or lack of will power. Only 5 percent of people who go on diets are successful. Please understand that we are not failing diets; diets are failing us. The reason 95 percent of all traditional diets fail is simple. When you go on a lowcalorie diet, your body thinks you are starving; it actually becomes more efficient at storing fat by slowing down your metabolism. When you stop this unrealistic eating plan, your metabolism is still slow and inefficient that you gain the weight back even faster, even though you may still be eating less than you were before you went on the diet.

In addition, low-calorie diets cause you to lose both muscle and fat in equal amounts. However, when you eventually gain back the weight, it is all fat and not muscle, causing your metabolism to slow down even more. Now you have extra weight, a less healthy body composition, and a less attractive physique. Diets require you to sacrifice by being hungry; they don't allow you to enjoy the foods you love. This does not teach you habits which you can maintain after the diet is over. Most diet programs force you to lower your caloric intake to dangerously low levels. The common theory is that if you eat fewer calories than you burn, you will lose weight. But when you eat fewer calories than your body needs to maintain its life-sustaining activities, you're actually losing muscle in addition to fat. Your body breaks down its own muscles to provide the needed energy for survival. Traditional diets which use calorie restriction to produce weight loss are no longer appropriate. Most weight-loss programs measure success solely in terms of the number of pounds lost per weight loss attempt. Diets don't take into account the quality of the process used to achieve that weight loss or the very small likelihood of sustained weight loss. For long-term good health, you need to move away from low-calorie diets and focus on enjoyable physical activity and good nutrition. Exercising regularly and eating lean-supporting calories, protein and carbohydrates, and reducing fat-supporting calories will not only help you look and feel better, it will also significantly reduce your risk of disease. America spends billions of dollars on different ways to fix people. If we focused more on prevention and on improving our day-to-day behaviors, we could cut health care costs in half. Contrary to popular belief, leading a healthy lifestyle doesn't have to be difficult; it doesn't have to painful or time-consuming. Making gradual, simple changes in your diet and physical activity will make great improvements in your health and well-being, and they can drastically reduce your risk of disease. If your weight management program is to be a success, everything you eat and every exercise you do must be a pleasurable experience. If you're not enjoying yourself, it is unlikely that you'll continue your program. It's that simple. These small, gradual changes are not painful or overwhelming but rather the core of an exciting lifestyle that you will look forward to.

Where Diets Go Wrong When we discover that we are heavier than we want to be, we have a natural inclination to eat less food. We may skip lunch or eat only a tiny amount of our dinner in the hope that if we eat less our body will burn off some of its fat. But that is not necessarily true. Eating less actually makes it more difficult to lose weight. Keep in mind that the human body took shape millions of years ago, and at that time there were diets. The only low-calorie event in people's lives was starvation. Those who could cope with a temporary lack of food were the ones who survived. Our bodies, therefore, have developed this built-in mechanism to help us survive in the face of low food intake. When researchers compare overweight and thin people, they find that they are roughly the same number of calories. What makes overweight people different is the amount of fat that they eat. Thin people tend to eat less fat and more complex carbohydrates. Losing weight is not something one can do overnight. A carefully planned weight loss program requires common sense and certain guidelines. Unfortunately, there's a lot of misinformantion floating around and lots of desperate people are easily duped and ripped off. Every day one can open a magazine or newspaper and see advertisements touting some new product, pill or patch that will take excess weight off quickly. Everyone seems to be looking for that "magic" weight loss pill. Millions of Americans are trying to lose weight, spending billions of dollars every year on diet programs and products. Often they do lose some weight. But, if you check with the same people five years later, you will find that nearly all have regained whatever weight they lost. A survey was done recently to try and determine if any commercial diet program could prove long-term success. Not a single program could do so. So rampant has the so-called diet industry become with new products and false claims that the FDA has now stepped in and started clamping down.

Being seriously overweight and particularly obesity can develop into a number of diseases and serious health problems, and it is now a known fact that when caloric intake is excessive, some of the excess frequently is saturated fat. The myth is that people get heavy by eating too many calories. Calories are a consideration it's true, but overall they are not the cause of obesity in America today. Americans actually take in fewer calories each day than they did at the beginning of the century. If calories alone were the reason we become overweight, we should all be thin. But we are not. Collectively, we are heavier than ever. Partly, it is because we are more sedentary now. But equally, as important is the fact that the fat content of the American diet has changed dramatically. People who diet without exercising often get fatter with time. Although your weight may initially drop while dieting, such weight loss consists mostly of water and muscle. When the weight returns, it comes back as fat. To avoid getting fatter over time, increase your metabolism by exercising regularly. Select an exercise routine that you are comfortable with and remember that walking is one of the best and easiest exercises for strengthening your bones, controlling your weight and toning your muscles. Are You Drinking Enough Water? Most people have no idea how much water they should be drinking, and most Americans live from day to day in a dehydrated state. They don't drink enough water. Without water, we would be poisoned to death by our own waste products and toxins resulting from metabolism. Water is vital to digestion and metabolism, acting as a medium for various enzymatic and chemical reactions in the body. It carries nutrients and oxygen to the cells through the blood, regulates body temperature and lubricates our joints (which is particularly important if you're arthritic, have chronic muscular-skeletal problems or are athletically active). We need water to breathe; we lose approximately one pint of liquid every day just by exhaling. If you are not in "fluid balance" you can impair every aspect of your body's physiological functioning. Dr. Howard Flaks, Beverly Hills: "As a result of not drinking enough water, many people encounter such problems as excess body fat, poor muscle tone and size, decreased digestive efficiency and organ function, increased toxicity in the body, joint and muscle soreness (particularly after exercise) and water retention." Proper water intake is the key to weight loss," says Dr. Donald Robertson, Scottsdale, Arizona. "If people who are trying to lose weight don't drink enough water, the body can't metabolize the fat, they retain fluid, which keeps their weight up, and the whole procedure we're trying to set up falls apart." "I'd say the minimum amount of water a healthy person should drink is 10 eightounce glasses a day," he continues, "and you need to drink more if you are overweight, exercise a lot, or live in a hot climate. Overweight people should drink an extra eight ounces of water for each 25 pounds that exceeds their ideal weight."

Your water intake should be spread judiciously throughout the day, including the evening. Dr. Flaks cautions against drinking more than four glasses in any given hour. Always check with your physician before embarking on a water intake increase program. You may ask, "If I drink this much water, won't I constantly be running to the bathroom?" Initially, yes, because of the hypersensitivity of the bladder to increased fluids. But after a few weeks, your bladder calms down, and you urinate less frequently, but in larger amounts. There is a difference between pure water and other beverages that contain water.

Water is water. Obviously you can get it by consuming fruit juice, soft drinks, beer, coffee or tea. Unfortunately, while such drinks contain water, they also may contain substances that are not healthy and actually contradict some of the positive effects of the added water. Dr. Jerzy Meduski, Los Angeles, California: "Beer contains water, but it also contains alcohol, which is a toxic substance. Beverages that contain caffeine, such as coffee, stimulate the adrenal glands; fruit juices contain a lot of sugar and stimulate the pancreas. Such drinks may tax the body more than cleanse it." Another problem with these beverages is that you lose your taste for water. The way to interpret all of this, therefore, is that the recommended daily water intake means just that--WATER! Can Stress Make You Fat? You've heard that stress can kill you - that it's a risk factor for high blood pressure, heart attacks and strokes - but is it also a risk factor for obesity? Is it really fast food that has made Americans the fattest people in the world... Or is it something more insidious? Scientists have charted the precise physiological mechanisms that convert a stressful event happening outside us into a stressful result inside us. Muscles contract to armor us against injury. Blood pressure rises, heart rate and respiration quicken to provide the energy we need to fight or flee. Digestion shuts down. Blood will clot more quickly to slow blood loss from injury. The liver releases energy in the form of glycogen, raising blood sugar. All these processes are designed to cope with acute stress. Unfortunately, when these protective mechanisms are activated over and over again for years and years, they cause great physical harm. Chronically contracted muscles induce chronic pain. The immune system's impaired ability to turn off inflammation leads to arthritis and other difficult to treat conditions such as Fibre-myalgia. Chronic high blood pressure and increased clotting cause heart attack and strokes. Poor digestion results in faulty absorption of vital nutrition, as well as gastritis and irritable bowel syndrome. Rapid shallow breathing removes too much carbon dioxide from the blood which then loses its proper acidity, causing heart palpitations, faintness and panic attacks. Chronically Increased blood sugar promotes Type II Diabetes.The release of cortisol from the adrenal glands shuts down the immune system, slowing wound healing and lowering the body's ability to fight off colds, flu and other more serious diseases. Last but not least, cortisol (we used to call it adrenalin) fosters deposits of fat, particularly around the abdomen. Have you been dieting, or just eating right, and exercising regularly, but can't lose any weight? The stress/cortisol connection may be the reason. Here's another reason why stress can make us fat. High starch foods, like pasta, potatoes, and white bread, stimulate the production of seratonin, that wonderful hormone responsible for a happy, relaxed mood. Dair/ products contain l-iryptophan, an amino acid that converts to seratonin. It's no wonder we crave those foods. They actually help us feel less anxious. As I noted above,, the stress response shuts down digestion. Conversely, digestion shuts down the stress response. Just the act of eating calms you. So don't stress over your weight. It's normal to eat more and put on weight when you're going through stressful times. Concentrate, instead, on finding ways to relieve the stress you feel. Review your lifestyle and see what needs to change. Then turn your attention to what and how much you eat; how little you exercise. Through my own experience I was grieved and angry, but when I made the necessary changes in my life and changed my eating habits, the pounds came off and stayed off, I am still astounded. I weighed 180 lbs+ for a long time wearing a size 18/20 and sometimes 22. After making up my mind that I was sick and tired of being sick and tired. I began to rapidly lose weight so much that my friends and family thought I was sick; to be honest I started to get concerned

As I lost the weight I actually lost the ability of getting sick at all and have been without sickness going on two years including two flu epidemics where this past winter they actually closed schools because of the vast amount of people who were sick (perhaps you were one of them –winter 2005) Last winter and summer I had to buy all new clothes (which was fun) wearing a size 12/14 and this year I’m still buying yet another wardrobe wearing a size 7/8. Don’t tell me it’s impossible. What you learned today is only the beginning but I think that’s all a person can take in one day. It’s all true and if you and your family apply there’s nothing you can’t accomplish. I give you this information because of my love for people and my love for the truth. Don't Drink Your Milk! Processing Is the Problem The path that transforms healthy milk products into allergens and carcinogens begins with modern feeding methods that substitute high-protein, soy-based feeds for fresh green grass and breeding methods to produce cows with abnormally large pituitary glands so that they produce three times more milk than the old fashioned scrub cow. These cows need antibiotics to keep them well. Their milk is then pasteurized so that all valuable enzymes are destroyed (lactase for the assimilation of lactose; galactase for the assimilation of galactose; phosphatase for the assimilation of calcium). Literally dozens of other precious enzymes are destroyed in the pasteurization process. Without them, milk is very difficult to digest. The human pancreas is not always able to produce these enzymes; over-stress of the pancreas can lead to diabetes and other diseases. The butterfat of commercial milk is homogenized, subjecting it to rancidity. Even worse, butterfat may be removed altogether. Skim milk is sold as a health food, but the truth is that butter-fat is in milk for a reason. Without it the body cannot absorb and utilize the vitamins and minerals in the water fraction of the milk. Along with valuable trace minerals and short chain fatty acids, butterfat is America's best source of preformed vitamin A. Synthetic vitamin D, known to be toxic to the liver, is added to replace the natural vitamin D complex in butterfat. Butterfat also contains re-arranged acids which have strong anti-carcinogenic properties. Non-fat dried milk is added to 1% and 2% milk. Unlike the cholesterol in fresh milk, which plays a variety of health promoting roles, the cholesterol in non-fat dried milk is oxidized and it is this rancid cholesterol that promotes heart disease. Like all spray dried products, non-fat dried milk has a high nitrite content. Non-fat dried milk and sweetened condensed milk are the principle dairy products in third world countries; use of ultra high temperature pasteurized milk is widespread in Europe. Other Factors Regarding Milk Milk and refined sugar make two of the largest contributions to food induced ill health in our country. That may seem like an overly harsh statement, but when one examines the evidence, this is a reasonable conclusion. The recent approval by the FDA of the use of BGH (Bovine Growth Hormone) by dairy farmers to increase their milk production only worsens the already sad picture. BGH causes an increase in an insulin-like growth factor (IGF-1) in the milk of treated cows. IGF-1 survives milk pasteurization and human intestinal digestion. It can be directly absorbed into the human bloodstream, particularly in infants. It is highly likely that IGF-1 promotes the transformation of human breast cells to cancerous forms. IGF-1 is also a growth factor for already cancerous breast and colon cancer cells, promoting their progression and invasiveness. It is also possible for us to absorb the BGH directly from the milk. This will cause further IGF-1 production by our own cells. BGH will also decrease the body fat of cows. Unfortunately, the body fat of cows is already contaminated with a wide range of carcinogens, pesticides, dioxin, and

antibiotic residues. When the cows have less body fat, these toxic substances are then transported into the cows' milk. BGH also causes the cows to have an increase in breast infections for which they must receive additional antibiotics. Prior to BGH, 38%of milk sampled nationally was already contaminated by illegal residues of antibiotics and animal drugs. This will only increase with the use of BGH. One can only wonder what the long term complications will be for drinking milk that has a 50% chance it is contaminated with antibiotics. There is also a problem with a protein enzyme called xanthine oxidase which is in cow's milk. Normally, proteins are broken down once you digest them. However, when milk is homogenized, small fat globules surround the xanthine oxidase and it is absorbed intact into your blood stream. There is some very compelling research demonstrating clear associations with this absorbed enzyme and increased risks of heart disease. Ear specialists frequently insert tubes into the ear drums of infants to treat recurrent ear infections. It has replaced the previously popular tonsillectomy to become the number one surgery in the country. Unfortunately, most of these specialists don't realize that over 50% of these children will improve and have no further ear infections if they just stop drinking their milk. This is a real tragedy. Not only is the $3,000 spent on the surgery wasted, but there are some recent articles supporting the likelihood that most children who have this procedure will have long term hearing losses. It is my strong recommendation that you discontinue your milk products. If you find this difficult, I would start for several weeks only, and reevaluate how you feel at that time. This would include ALL dairy, including skim milk and Lact-Aid milk, cheese, yogurt, and ice cream. If you feel better after several weeks you can attempt to rotate small amounts of one form of milk every four days. You probably are wondering what will happen to your bones and teeth if you stop milk. The majority of the world's population takes in less than half the calcium we are told we need and yet they have strong bones and healthy teeth. Cows' milk is rich in phosphorous which can combine with calcium -- and can prevent you from absorbing the calcium in milk. The milk protein also accelerates calcium excretion from the blood through the kidneys. This is also true when you eat large amount of meat and poultry products. Vegetarians will need about 50% less calcium than meat eaters because they lose much less calcium in their urine. It is possible to obtain all your calcium from dark green vegetables (where do you think the cow gets their's from?). The darker the better. Cooked collard greens and kale are especially good. If you or your child is unable to take in large amounts of green vegetables, you might want to supplement with calcium. If you can swallow pills, we have an excellent, inexpensive source called Calcium Citrate, which has a number of other minerals which your body requires to build up maximally healthy bone.

It is much better than a simple calcium tablet. You can take about 1,000 mg a day. For those who already suffer from osteoporosis, the best calcium supplement is microcrystalline hydroxyapatite. It is also important that you take vitamin D in the winter months from November to March. Normally your skin converts sunshine to vitamin D, but the sunshine levels in the winter are very low unless you visit Florida or Mexico type areas. Most people obtain their vitamin D from milk in the winter; so if you stop it, please make sure you are taking calcium with vitamin D or a multi vitamin with vitamin D to prevent bone thinning. Most people are not aware that the milk of most mammals varies considerably in its composition. For example, the milk of goats, elephants, cows, camels, wolves, and walruses show marked differences, in their content of fats, protein, sugar, and minerals. Each was designed to provide optimum nutrition to the young of the respective species. Each is different from human milk. In general, most animals are exclusively breast-fed until they have tripled their birth weight, which in human infants occurs around the age of one year. In no mammalian species, except for the human (and domestic cat) is milk consumption continued after the weaning period. Calves thrive on cow milk. Cow's milk is designed for calves. Cow's milk is the number one allergic food in this country. It has been well documented as a cause in diarrhea, cramps, bloating, gas, gastrointestinal bleeding, iron-deficiency anemia, skin rashes, atherosclerosis, and acne. It is the primary cause of recurrent ear infections in children. It has also been linked to insulin dependent diabetes, rheumatoid arthritis, infertility, and leukemia. Hopefully, you will reconsider your position on using milk as a form of nourishment. Small amounts of milk or milk products taken infrequently, will likely cause little or no problems for most people. However, the American Dairy Board has done a very effective job of marketing this product. Most people believe they need to consume large, daily quantities of milk to achieve good health. NOTHING could be further from the truth. Public health officials and the National Dairy Council have worked together in this country to make it very difficult to obtain wholesome, fresh, raw dairy products. Nevertheless, they can be found with a little effort. In some states, you can buy raw milk directly from farmers. Whole, pasteurized, non-homogenized milk from cows raised on organic feed is now available in many gourmet shops and health food stores. It can be cultured to restore enzyme content, at least partially. Cultured buttermilk is often more easily digested than regular milk; it is an excellent product to use in baking. Many shops now carry whole cream that is merely pasteurized (not ultra pasteurized like most commercial cream); diluted with water, it is delicious on cereal and a good substitute for those allergic to milk. Stop the Absorption of Fats While You Eat! A natural product called chitosan is derived from chitin, a polysaccharide found in the exo-skeleton of shellfish like 'shrimp or crabs. While it has been in existence for millennia, its current form has just recently been synthesized. Chitosan is a naturally occurring substance that is chemically similar to the plant fiber called cellulose. Unlike plant fiber, however, chitosan is "magnetically" attracted to lipids and has the ability, acting like a "sponge", to significantly prevent fat in the digestive tract from being absorbed. Chitosan is not digestible; therefore it has no caloric value! No matter how much chitosan you ingest, its calorie count remains at zero. Chitosan affects fat in the stomach before it has a chance to become metabolized. It dissolves in the stomach and converts to a gel, which "traps" fat, thereby preventing its absorption and subsequent storage. Chitosan renders the fat useless to the body. Technically, it creates a "grease ball" out of excess fat which is then too large to be absorbed. Both the chitosan and the fat are excreted in the stool. A report In in the ARS Medicina (Helsinki, Aug-Oct. 1994) taking this substance lost an average of 8% body weight in 4 weeks. For a 200 pound person, this indicates a 16 pound weight loss, or 4 pounds per week. Ideally, if you neutralize fat after it enters your stomach, you spare your body from having to deal with that fat, and your body is better able to deal with stored fat. Besides absorbing fat to promote weight loss, chitosan also inhibits bad cholesterol and boosts good cholesterol. It also promotes healing of ulcers and lesions. It has antibacterial and anti-candida action. Chitosan acts as an antacid. Chitosan may help to control high blood pressure. It may treat and prevent irritable bowel syndrome. Chitosan helps to prevent constipation. It is a calcium enhancer and bone strengthener. Chitosan also reduces blood levels of uric acid (which causes gout) and has been reported to have anti-tumor properties. Chitosan may seem to be too good to be true. Can one product really accomplish all the marvelous things chitosan does and still be safe for human consumption? The answer is that chitosan has been safely used for more than two decades. Chitosan is a safe ingredient that is biodegradable and environmentally biocompatible.

Myth: Use of soy as a food dates back many thousands of years. Truth: Soy was first used as a food during the late Chou dynasty (1134-246 BC), only after the Chinese learned to ferment soy beans to make foods like tempeh, natto and tamari. Myth: Asians consume large amounts of soy foods. Truth: Average consumption of soy foods in Japan and China is 10 grams (about 2 teaspoons) per day. Asians consume soy foods in small amounts as a condiment, and not as a replacement for animal foods. Myth: Modern soy foods confer the same health benefits as traditionally fermented soy foods. Truth: Most modern soy foods are not fermented to neutralize toxins in soybeans, and are processed in a way that denatures proteins and increases levels of carcinogens. Myth: Soy foods provide complete protein. Truth: Like all legumes, soy beans are deficient in sulfur-containing amino acids methionine and cystine. In addition, modern processing denatures fragile lysine. Myth: Fermented soy foods can provide vitamin B12 in vegetarian diets. Truth: The compound that resembles vitamin B12 in soy cannot be used by the human body; in fact, soy foods cause the body to require more B 12 Myth: Soy formula is safe for infants. Truth: Soy foods contain trypsin inhibitors that inhibit protein digestion and affect pancreatic function. In test animals, diets high in trypsin inhibitors led to stunted growth and pancreatic disorders. Soy foods increase the body's requirement for vitamin D, needed for strong bones and normal growth. Phytic acid in soy foods results in reduced bioavailabilty of iron and zinc which are required for the health and development of the brain and nervous system. Soy also lacks cholesterol, likewise essential for the development of the brain and nervous system. Megadoses of phytoestrogens in soy formula have been implicated in the current trend toward increasingly premature sexual development in girls and delayed or retarded sexual development in boys.


Myth: Soy foods can prevent osteoporosis. Truth: Soy foods can cause deficiencies in calcium and vitamin D, both needed for healthy bones. Calcium from bone broths and vitamin D from seafood, lard and organ meats prevent osteoporosis in Asian countries—not soy foods. Myth: Modern soy foods protect against many types of cancer. Truth: A British government report concluded that there is little evidence that soy foods protect against breast cancer or any other forms of cancer. In fact, soy foods may result in an increased risk of cancer. Myth: Soy foods protect against heart disease. Truth: In some people, consumption of soy foods will lower cholesterol, but there is no evidence that lowering cholesterol improves one's risk of having heart disease. Myth: Soy estrogens (isoflavones) are good for you. Truth: Soy isoflavones are phyto-endocrine disrupters. At dietary levels, they can prevent ovulation and stimulate the growth of cancer cells. Eating as little as 30 grams (about 4 tablespoons) of soy per day can result in hypothyroidism with symptoms of lethargy, constipation, weight gain and fatigue. Myth: Soy foods are safe and beneficial for women to use in their postmenopausal years. Truth: Soy foods can stimulate the growth of estrogen-dependent tumors and cause thyroid problems. Low thyroid function is associated with difficulties in menopause. Myth: Phytoestrogens in soy foods can enhance mental ability. Truth: A recent study found that women with the highest levels of estrogen in their blood had the lowest levels of cognitive function; In Japanese Americans tofu consumption in mid-life is associated with the occurrence of Alzheimer's disease in later life. Myth: Soy isoflavones and soy protein isolate have GRAS (Generally Recognized as Safe) status. Truth: Archer Daniels Midland (ADM) recently withdrew its application to the FDA for GRAS status for soy isoflavones following an outpouring of protest from the scientific community. The FDA never approved GRAS status for soy protein isolate because of concern regarding the presence of toxins and carcinogens in processed soy. Myth: Soy foods are good for your sex life.


Truth: Numerous animal studies show that soy foods cause infertility in animals. Soy consumption enhances hair growth in middle-aged men, indicating lowered testosterone levels. Japanese housewives feed tofu to their husbands frequently when they want to reduce his virility. Myth: Soy beans are good for the environment. Truth: Most soy beans grown in the US are genetically engineered to allow farmers to use large amounts of herbicides. Myth: Soy beans are good for developing nations. Truth: In third world countries, soybeans replace traditional crops and transfer the value-added of processing from the local population to multinational corporations.
