I want to be like Malala, she was the youngest person to get a Nobel Peace Prize.

QA We hear that you love to play the piano! When did you start playing and do you have a favorite song to play? I started playing piano when I was 5 years old. My favorite songs to play are Deck the Halls and I Love the Flowers. What do you love the most about playing the piano? I like the piano because it sounds so pretty and sometimes when I play I can put my little brother or sister to sleep. I also like trying to play songs by listening to them then figuring out the notes without the music in front of me. We hear that you also love to skate and surf. Tell us when you started both of those sports. I started surfing when I was really little, like 2 years old because my Dad and Papa would put me in a life jacket and paddle out with me on the front of their board. I started skating when I was five years old.

Hometown: Encinitas, CA Age: 7 Grade: 2nd Hobbies: Skateboarding, playing with my family, surfing, teaching, karate, and singing Favorite food: Pig ribs, Tri-Tip, and Shrimp‌ I love protein! Favorite thing about living in North County: We live really close to the beach.

What is your favorite thing about skating? I like skating because when I am scared to try something new, but I try anyways, and nail it, I feel really good inside. I also like it because I feel like I can inspire other girls when they see me skating. I started skating because my older sister put her foot on a skateboard and I wanted to do it too. She inspires me to do the same for other girls. Do you have a favorite trick or something you are currently working on? Yeah, I am learning to do an air over the hip in my backyard skate pool. Do you have a favorite professional skater? If so, who? I have three favorite pro skaters

that I look up to. Amelia Brodka, Jordyn Barratt, and Bryce Wettstein. All three of them are really nice, love to skate and share that love with others, and they are all really fun to skate with. What is your favorite thing about surfing? Do you have a favorite surf spot? I love that when you surf you get wet and I love to surf at Cardiff Reef. Who is your favorite professional surfer? Why? Bethany Hamilton because she lost her arm in a shark attack and still loves to surf and push herself to do better. We also hear that you practice karate! Tell us about that. I started in first grade, last year. It teaches me to protect myself from bad guys. I am learning how to spar in my class and that is really fun. And last but not least, we know that you love helping others and are always giving to those around you, including your family. Why do you like to help others? Why do you think it’s important to be a helper in the world? It makes me feel good inside when I help other people. I think it’s important to help others so that they see it and want to give back to other people too. I want to be like Malala, she was the youngest person to get a Nobel Peace Prize. She stood up to the Taliban to help girls go to school even though they tried to stop girls from going to school and even shot Malala to stop her from helping. But she got better and opened up schools for girls all over the world. I want to stand up to help other girls go to school too. NCK

“I don’t have to out paddle the shark, I just have to out paddle you!”— MY DAD

QA

with Tommy

How has living in North County affected your surfing career? It has given me tons of opportunities because there are so many different breaks within 10 miles of my house. Who are some local pros and companies that have helped you in your achievements? My Valley Middle School surf coach Kahuna Bob, has always helped me to improve my surfing and bodyboarding. I learned a lot from Erik Krammer. Any advice to other surfers out there looking to improve their skills? Try your best and put the time in, but always make sure you’re happy doing it. There’s no point of wasting your time surfing if you don’t love it. What do you love the most about surfing? When I hop up, turn and look

down a huge, long green-blue face. There truly aren’t words to describe it. That’s the best part about surfing. Have you ever had any shark run-ins? My Dad and I were surfing one day when a 5-foot leopard shark swam underneath us and kept circling under us. We flipped out. As we were paddling in I asked my Dad, “how will we out paddle a shark?” He said, “I don’t have to out paddle the shark, I just have to out paddle you!” I have had a couple of run-ins with a stingray or two as well. Where do you see yourself professionally in 5 years? I see myself free surfing and working in Hollywood as a filmmaker. Also continuing with my vlogging (check it out at WFK Entertainment Group on YouTube and subscribe).

Who is your favorite pro surfer? My favorite surfer is Taylor Knox because he’s from Carlsbad and I’m a sucker for hometown pros. Where is your go-to surf gear shop? I usually go to Surf Ride for gear and either Luke Moore or Whittlock for boards. What’s the biggest wave you’ve ever surfed? When I was 10 we went to Nicaragua and I surfed 10-foot Ponga Drops. It was the first time I was exposed to that kind of power. Is there anything else you would like to add? Thank you for selecting me for this article! I am truly honored.

THE KELSAY KIDS’ NORTH COUNTY REVIEW OF THE MONTH

Lazy Acres the Market with Fun for Everyone! By Aubrey Kelsay (Age 9) and Kirra Kelsay (Age 7), Edited by Mom

L

azy Acres is an amazing and healthy market in Encinitas. They offer cooking classes for kids while parents get their shopping done and they invited us to go check out the Fall Flavors cooking class. We love cooking so we said YES! When we first walked into Lazy Acres we noticed the smell of buttery popcorn and everyone had a smile on their face. It was the perfect way to start our afternoon! All the way in the back of the store is where we found the Moonlight Room. That is the kitchen where the cooking classes happen. All of the kids were given aprons to wear and we each got to pick out our own working station that came filled with everything we needed to cook. Chef Isabelle introduced herself and taught each of us to have fun and be independent with our cooking. That meant trying things on our own and making sure to keep our work station clean. She made the class so awesome and educational. Fall flavors was the focus of our class and we got to make an apple lemonade with seasonal apples, chicken pot pies, and fruit kabobs with caramel dip. Aubrey loved making the chicken pot pies because it was fun to mold the dough and see all the unique ingredients that went inside. Kirra enjoyed making the fruit kabobs because the fruit could be dipped in the yummy caramel sauce. After the cooking class ended we went on a tour of the entire store with Caitlin Gunderson from Lazy Acres. She brought us to the olive bar to do some taste testing because we love olives! We also stopped by the meat station, the Poke bar, and the cheese counter! We tried really old cheese called Wisconsin Cheddar and decided it tasted very interesting. Our favorite was the giant cookies they have near the bakery that are made fresh every day! They were so good! One of the last places we stopped was the beehive they have in the store. It was so cool to see a beehive behind glass with bees swarming in and out of the honeycomb right in front of us. What’s even better is that the bees are able to come and go whenever they want through a hole in the roof! We love Lazy Acres because the people are so nice, the cook-

ing classes are really fun, and the food is healthy and delicious. They have a lot of options for people with allergies and other diet restrictions like our little sister, Juliet. She is allergic to almost everything in the world like tree nuts, shell fish, and gluten! So it was good to hear that they have stuff she can eat and they can even make the cooking classes safe for her. They are celebrating one year of being open on Saturday, November 11th and will be having fun family friendly activities all day long. We hope to see you there!

Fun Facts We Learned From Lazy Acres 1. Olives start green, but change colors depending on their age and how they are processed. 2. If you squeeze lemon juice onto apples they won’t turn brown. 3. The oldest cheese in the store is ten years old and called Wisconsin Cheddar. 4. You have to take a really hard test to become a “Certified Cheese Professional.” 5. Lazy Acres has been around for 25 years and has four stores. 6. Every day the Poke bar goes through 60-100 pounds of fresh tuna.

Do you have or know of an awesome, local, kid-friendly business that the Kelsay kids should review? If so, email us and let us know! info@sdnorthcountykids.com November 2017 | North County Kids

Holiday Fun in the Kitchen with Tiny Pies

Get your kids involved in the tradition of holiday baking this Thanksgiving with something a little different. Kidstir, a unique monthly subscription service created by moms for pint-sized foodies, has the perfect recipe for stress free, hands-on holiday excitement. The gourmet teams’ tiny personalized pies can be easily assembled using an all-natural store bought crust and pre made pie filling, but you can let your imaginations soar with sliced peaches, fresh blueberries or even dried cranberries!

Tiny Apple Pies Ingredients • 1 apple, peeled, cored, and finely chopped • 2 tablespoons sugar • 1 teaspoon ground cinnamon • 2 teaspoons orange juice • 1 tablespoon butter • 1 pie crust (we used a store-bought organic pie crust) • Milk and egg (for brushing on pie tops)

Hands-on time: 15 minutes Start-to-eat time: 35 minutes

Step-by-Step Instructions 1. Mix the chopped apples, sugar, cinnamon, and orange juice in a bowl. Set it aside to get nice and juicy. 2. Unroll the pie crust and place it on a piece of waxed paper or plastic wrap on your countertop. Cut out twelve 2 1/2 inch circles with a round cookie cutter or rim of a glass. Press each one into a muffin cup. 3. Gather the dough scraps and roll them out. Use tiny cookie cutters to make decorative shapes or cut thin strips for lattice toppings. 4. Add 1 rounded tablespoon of filling to each cup. Dot with a tiny piece of butter. Add a top crust with slits, a pie crust star, or a lattice top. Pinch the edges with the tines of a fork to seal. 5. note Brush the mini pies with a beaten egg mixed with a little milk. Bake in a preheated oven at 375° for 15 to 17 minutes or until the filling bubbles and the crusts turn golden brown. Let the pies cool for just a few minutes in the pan, then carefully remove each one by running a sharp knife around the edges and popping it out of the pan. TOYS FOR JOY

A SEASON OF GIVING

I

t is almost the holiday season, which means retailers and shoppers are gearing up for one of the largest shopping weekends of the year! Thanksgiving, Black Friday, and Cyber Monday sales have exploded in the past two years and are forecasted to continue growing. According to CNN, shoppers spent $1.9 billion online on Thanksgiving Day and $3.3 billion in stores on Black Friday during 2016. They reported that the average consumer spent about $290 just between these two days. Cyber Monday, 2016, also proved to be the largest day in e-commerce history. FORTUNE reports that a whopping $3.45 million was spent on that day alone. Wouldn’t it be great if we challenged ourselves to shop with a greater purpose in mind? The Rock Church’s largest event of the year, Toys for Joy, is set to take place on December 9 across four locations: Lincoln High School, El Cajon Valley High School, Vista High School, and Southwest High School. Toys for Joy is all about bringing a smile to a child’s face by gifting them a toy for Christmas they would not have received, as well as providing groceries, clothing, fun festivities, and a meal to their families. This year, the event expects to give away over 25,000 toys. There are so many ways to get involved in the giving process! Take Caleb Kennedy and his family for example. Caleb and his parents have been putting together bikes to donate to Toys for Joy for years. Each year, they order bikes off the Toys for Joy Amazon.com wish list and assemble it together. This past year, the tradition grew when Caleb’s grandparents got involved by helping him put the bikes together. They knew there was a need for bike donations and saw it not only as a great opportunity to help those in need, but also a great opportunity to teach Caleb about generosity. A piece of advice from Susan is to start small; she says the best way to start is by having your kids go with you to the store to pick out the toys, take them to the donation site so they can learn to “let go” of the toys they picked out, and then have them volunteer if they are old enough. She explained, “As volunteers, he’s been able to see the actual event and see where his bike is going. You’ll come full circle with it.” Another great example of a family that reflects the giving spirit are Marc and Darlynne Menkin. The Menkins own two companies: Where You Want To Be Tours & Out of the Ordinary Group Adventures. They

16

North County Kids | November 2017

have generously decided to donate a bike to a worthy cause for each job that they get. Darlynne stated, “We are always looking for ways that we can bring glory to God through our business. We have been given this wonderful blessing, so we are always looking for ways to further the kingdom.” Marc explained that they were inspired by the ideology behind Tom’s Shoes; Tom’s shoes famously started the “One-For-One” shoe campaign where for each Tom’s Shoe purchase, the company would donate a shoe to someone in need. On top of this, the Menkins continue to spread the spirit of giving through their other business, Out of the Ordinary Group Adventures. One of the main events they host are charity bike builds, where teams are presented with “Minute To Win It” challenges and build bikes to be donated. At the end of the event, the charity of their choice picks up the donated bikes. After hosting one of these events this year, they decided to send all of their bike donations from July through December to Toys for Joy. Their advice to anyone who wants to be involved with Toys for Joy is to find the thing you are passionate about or go with what God puts on your heart. Marc added, “It doesn’t have to be anything really elaborate; giving up your time to help bring people to a better place is awesome! Whatever you decide to give, it has to be something you’re passionate about – it has to be in your sweet spot.” If you feel compelled to do more with your holiday spending, here are four easy ideas to give back and make a difference: 1) Black Friday – Buy an item for yourself or your family (clothing, toys, etc.), donate an item to someone in need. 2) Cyber Monday – Shop for a cause! Be a part of the Toys for Joy virtual toy drive! 3) Giving Tuesday – Sign up to volunteer at a Toys for Joy location! 4) SHARE and spread the word on social media!

A IS FOR APP

Thanksgiving Apps Thanksgiving Menu Maker Free Most dinners on Thanksgiving have the old standbys. Switch it up a little with Thanksgiving Menu Maker, which lets you plan out your dinner with just a few taps. All recipes are broken down to their categories and you simply add the dishes you wish to make. A shopping list is automatically created. The killer feature is the planner section. This area breaks prep down to the day before, Thanksgiving morning, four hours prior, etc. If you use this app, you’ll have a four course meal planned in minutes. How to Cook Everything $4.99 Mark Bittman’s popular How to Cook Everything app has thousands of recipes, including many specifically for Thanksgiving. There are Thanksgiving recipes for all the popular dishes, including Classic Roast Turkey with Stuffing, Traditional Cranberry Sauce, and -- my favorite -- Pumpkin Pie with Gingersnap Crust. If this is your first time preparing a Thanksgiving meal, you’ll also find lots of how-to content. The timing charts for defrosting and roasting turkeys are particularly helpful. Be sure to also check out the many varieties of mashed potato recipes, including Joel Rubuchon’s Mashed Potatoes recipe that calls for a half pound of butter (yum!). Epicurious Recipes Free For foodies, the Epicurious Recipes app offers a host of gourmet Thanksgiving recipes. Epicurious has a dedicated section for Thanksgiving, and it includes nearly 200 recipes from Gourmet and Bon Appétit magazines. If you’re not sure how you want to

cook your turkey, this is the app for you. There are a ton of turkey recipes, including Clementine-Salted Turkey with Redeye Gravy and Sage Butter-Roasted Turkey. Those planning a vegetarian Thanksgiving will also appreciate veggie-friendly holiday recipes like Vegetarian Shepherd’s Pie or Pumpkin Stuffed with Vegetable Stew. Whole Foods Market Recipes Free The Whole Foods Market Recipes app also includes a good amount of Thanksgiving recipes, and has a sleek, easy-to-use interface. Recipes are healthy and include nutrition information -- not that you’re likely to be worried about calories and fat grams on Thanksgiving! One of the best recipes is the Thanksgiving Weekend Strata, which uses leftover stuffing. You could also try the Roasted Parsnips and Sweet Potatoes with Honey-Pecan Drizzle in place of your normal marshmallowtopped sweet potato recipe.

Martha’s Everyday Food $0.99 Martha Stewart knows a thing or two about holiday entertaining, so you’ll find plenty of Thanksgiving inspiration in the Martha’s Everyday Food app. Apps like Epicurious and How to Cook Everything are better for turkey recipes, but Martha Stewart’s app has a lot of good recipes for Thanksgiving side dishes. Recipes for Sweet-Potato Biscuits, Cranberry Chutney, and Bourbon Gravy are already makes us drool. KitchenPad Timer Free When you’ve got ten things cooking simultaneously, the timer on your microwave ain’t gonna cut it. KitchenPad Timer is a must-own application that does one thing and does it perfectly: multiple timers. You’re shown five stove burners and four ovens, each ready to start counting down. You can label each one, give it its own alarm sound, and even designate the temperature you’re using! With this app, you’ll never burn the turkey again! BFAds.net Black Friday 2017 Free It’s hard to sleep on a full stomach, so why not do the next best thing: shop! As the hours wind down on Thanksgiving, we turn toward getting the best deals on Black Friday. BFAds.net has a great app letting you know the deals to be had in a simple way. Each retailer is shown on the left and after tapping, you’re shown all the deals starting at 3AM! You can tap a product to see its current listing on the respective site and even add it to a shopping list. Prioritize, organize, and caffeinate because with this app, you’ll be a superstar shopper on Friday morning.

MOM TO MOM BOOK REVIEW

Fried Green Tomatoes at the Whistle Stop Café by Fannie Flagg

Lonely housewife Evelyn Couch endures going to the nursing home every Sunday with her husband to visit his mother, where she soon meets Mrs. Threadgoode, and starts to look forward to hearing her tales of the people of Whistle Stop, Alabama during the Great Depression. Especially the stories of tomboy Idgie and sweet Ruth, who owned the Whistle Stop Café together, and served tasty barbeque, pie, and sometimes, even murder. Most people are already familiar with this story, because of the movie, but even though the movie is fantastic, it has nothing on the book! The book goes so much deeper into the lives and relationships of Evelyn and Mrs. Threadgoode, and Ruth and Idgie, and brings up many social issues still extremely relevant today. I give it an A-. This is the Hip Chicks book selection this month.

The Good Daughter by Karin Slaughter

Twenty-eight years ago, when they were still kids, Samantha and Charlotte “Charlie” Quinn suffered a gruesome attack on their family stemming from their father Rusty’s work as a defense attorney, leaving them beyond scarred for life and with many secrets of what really happened that night. Now a lawyer herself, Charlie is in the wrong place at the wrong time (for very wrong reasons) when she witnesses a school shooting, bringing back horrible memories of that night twenty-eight years ago that she must endure in order to prove that the school shooter might not be entirely guilty. Wow! This book! What an emotional roller coaster, with lots of twists and turns. Just a warning though, it has some extremely gruesome and vivid violence, but it is written in such a way that you really connect with the characters. I couldn’t put it down! I give it an A-. If you like this one, try Pretty Girls, also by Karin Slaughter.

DOWN TO EARTH DAD

iZombie T

here is a virus spreading through our community. It’s infecting everyone, but it’s hitting our children especially hard. The name of the virus is iZombie, and it’s turning our kids into nonverbal, mindless little drones. The virus causes a person to be mentally paralyzed by their smartphone. Unfortunately, California’s new mandatory vaccination legislation doesn’t include protection against iZombie. A few months ago I witnessed one dad’s futile attempt to fight off an iZombie. We were out having dinner when I noticed another family in the restaurant. There was tension at their table. I saw the father rip the iPhone out of his teenage son’s hand and drop it into a full glass of water. He was instantly attacked by the other iZombies who were sitting at his table and devoured. I desperately wanted to come to his rescue, but I’ve watched too many episodes of The Walking Dead, and I know in a situation like that you just have to sit back and save yourself. Slowly, over the past few years, I’ve watched all of my daughter’s friends succumb to the effects of iZombie. Once they were cute little kids. They used to giggle and skip rope on the playground. Now whenever I see them their little faces are glued to iPhones, constantly liking things on Instagram. Sometimes I attempt to engage them in conversation, but there is never a response. However, I know they are alive because I can see them tap and swipe on their phones. My wife and I refuse to buy our children iPhones because we fear loosing them to iZombie. We don’t want our childhood to be a meaningless blur of likes and swipes. But we’re in the minority, and sometimes it really feels like we are swimming against the tech stream.

One dad I know recently cried on my shoulder. He told me how distraught he was because he lost his daughter to iZombie. I guess he didn’t think she’d turn into an iZombie when he bought her that phone and paid for her data plan each month. But don’t fret. If your child is infected with iZombie there is a cure. Now, I’ll be honest, it’s not painless. It’s going to hurt a little bit, maybe even a lot. What you have to do is this: take away the phone from your kid. However, I have to warn you, attempting to remove the phone while they are conscious may cause too much trauma, so you might want to wait until they are asleep. Once you have safely extracted the phone from your child’s hand you must then immediately hide it. If you have a safe in your house I suggest putting it there and keeping it locked away for a year or two. Don’t try to compromise and merely place limits on phone usage. That never works. The only effective way to cure your child of iZombie is to go cold-turkey. Initially you’ll notice your child go through withdrawal symptoms. There will be crying and screaming, but this is normal and should be expected. Once your child is free from the grasp of iZombie they should be able to quickly regain the ability to speak and make eye contact. I know, it sounds very draconian to take away your child’s phone. But just remember this, Steve Jobs didn’t let his kids have iPhones. NCK The Down-To-Earth-Dad is a lawyer by day and youth soccer coach by night. He lives in Carlsbad with his wife and two kids.
