Curried Eggplant and Tomato Burgers Nutritious and filling, these burgers bring to the table a lovely curried, smoky flavor that the audience will simply love. Servings: 4 burgers Ingredients: 1 eggplant, sliced 2 large tomato, cut in thick slices 2 tablespoons balsamic vinegar 2 tablespoons olive oil 1/2 teaspoon dried basil Salt, pepper Vegan burger buns Directions: Put the eggplant and tomato in a colander and sprinkle plenty of salt. Let them rest for 30 minutes then rinse and drain on paper towels. Mix the vinegar with olive oil in a small bowl and brush the eggplant slices. Heat a grill pan over a medium flame then cook the eggplant slices on each side for a few minutes until tender. Remove from the pan and cook the tomato slices in the same pan. Serve the eggplant and tomatoes layered on vegan burger buns.
