Let them rest for 30 minutes then rinse and drain on paper towels. Mix the vinegar with olive oil in a small bowl and brush the eggplant slices. Heat a grill pan over a medium flame then cook the eggplant slices on each side for a few minutes until tender. Remove from the pan and cook the tomato slices in the same pan. Serve the eggplant and tomatoes layered on vegan burger buns.
