Smiley’s favourite summer drink – how to brew your own lemonade! Ingredients • 4 lemons • 12 cups of lemon balm (fresh lemon balm leaves, also known as honey plant) • 3 leaves of lemon basil • 12 cups of brown sugar • 23 cups of boiling water • 2 1/2 cups of water • ice (optional) • 1 lemon balm (to decorate) Preparation time: 15 min Total time: 30 min Servings: 5 servings

Recipe from Smiley’s Nana: • Scrub the lemons well. Peel the rind thinly, avoiding the white pith, and set aside the lemons. • Place the lemon rind, lemon basil and lemon balm leaves and the sugar into a small heat-proof pitcher. Pour the boiling water into the pitcher and stir well, crushing the lemon balm leaves to release their flavour. Leave mixture to infuse for about 15 minutes. • Now, cut the lemons in half and squeeze out the juice. Strain juice into a large glass pitcher, add a few fresh sprigs of lemon balm, and add the cooled, strained syrup. Top up with water or half-water half-ice, and chill until needed. …Lemon balm is often used as a flavouring in ice cream, herbal teas and lemonades. It is also frequently paired with fruit dishes or sweets. The crushed leaves, when rubbed on the skin, are used as a repellant for mosquitos…

Smiley’s green thumb tip – grow your own herbs for lemonade!

In summer my Nana makes fantastic lemonade with herbs from her garden. The secret ingredient is lemon basil! Do you want to try it yourself? Nana’s lemonade recipe is on the back page.

Lemon Basil Seeds

1. Chose a medium flower pot (approx. 15cm) and fill it with soil. 2. Moist the soil well and sow the seeds (approx. 6mm deep).

3. Keep the flower pot in a sunny and warm place like the window sill (min 15°C, half-shade during midday). 4. Keep on watering your plant (ideally in the morning). 5. Wait about 14 to 21 days and you can harvest the first leaves.
