Cous Cous and Fresh Herbs with Preserved Lemon and Currant Chutney Serves 8

Ingredients 2 cups chicken stock 2 cups cous cous ½ cup Preserved Lemon & Currant Chutney 4 tbspn extra virgin olive oil 2 tsp sea salt ¾ cup almonds, flaked ½ cup flat leaf parsley ½ cup mint 7 tbspn extra virgin olive oil, to serve

Method 1. Preheat oven to 180˚C, fan-forced. 2. Spread the almonds onto a baking tray and roast for approximately 8 minutes. Allow to cool. 3. In a saucepan, bring the stock to the boil. Place the cous cous into a large heat-proof bowl. 4. Pour the hot stock over the cous cous and allow to stand for 5 minutes. After 5 minutes fluff with a fork. 5. Add the almonds, parsley and mint and mix to combine. 6. Stir through extra virgin olive oil and salt. 7. Add the Preserved Lemon and Currant Chutney and mix to combine.

Brown Sugar Meringues with Strawberries and Cream Serves 6 Ingredients ¼ cup firmly packed brown sugar ¾ cup caster sugar ¾ tbspn corn flour 3 eggs at room temperature, whites separated 1 pinch salt 1 tspn Verjuice 2 punnets fresh strawberries, hulled and cut in half 2 tspn Vino Cotto 1 tub Strawberries & Cream Ice Cream

Method 1. To make the meringues pre-heat a fan-forced oven to 120˚C. Grease and line two flat baking trays and place aside. 2. Place the brown sugar, caster sugar and corn flour into a mixing bowl and combine together well. In the bowl of an electric mixer, whisk the egg whites with a pinch of salt until soft peaks form. With the motor running, slowly add the sugar mixture, a little at a time, whisking until stiff and glossy. Then fold in the Verjuice and divide the mixture into ten meringues and place onto the lined baking trays. Transfer to the oven and bake for one hour. Cool completely in the switched off oven with the door ajar. 3. Once the meringues have completely cooled remove from the oven and roughly crush. 4. To warm the strawberries, place a large non-stick frying pan over a low medium heat, add the strawberries, lightly toss until they are just warm. Remove from the heat and add the Vino Cotto, gently toss to coat the strawberries and set aside. 5. To plate up, place some of the crushed meringue on the bottom of plate, top with two scoops of Strawberries & Cream Ice Cream, spoon over the warm strawberries and finish off with some more of the crushed meringue on top. Serve immediately.

ubbed the Montessori Method by founder Dr Maria Montessori almost 100 years ago this new age philosophy is actually one of the oldest known teaching methods. Many of you have more than likely heard of it – there are Montessori Early Learning Centres and schools popping up all over the country – however, do you know how it differs from traditional education? The type with a teacher, blackboard and a bell? Well, the backbone of the Montessori Method lies with the belief that children require a very specific environment in order to learn, absorb and develop to their full potential. In a Montessori classroom there is no running and no raised voices – by students or by teachers. To get a child’s attention teachers actually sing. Through lessons in ‘practical life’ children are taught to understand the learning of responsibilities as they apply to every day life. They are also given the opportunity to make their own choices, even when it comes to what activity they want to take part in next.

The atmosphere is calm, there are no limits, and there is no fixed ‘timetable’. Instead children work at their own pace and learn through their own exploration. Children are also not segregated according to age – two-year-olds learn alongside six-year-olds and the melting pot seems to work. “The younger children learn from watching the older children, while the older ones benefit from helping the younger ones,” explains Anna Standish from Adelaide Montessori Early Learning Centre. While many skeptics question whether mixed age groups and giving kids free reign in the classroom setting is truly productive to learning, a US study dispels the claims. “In a recent study of 5-year-old children Montessori students proved to be significantly better prepared for primary school in reading and mathematics than non-Montessori children,” says Anna. “They also displayed better abilities on the social and behavioural tests and on the playground they were more likely to engage in emotionally positive play and less likely to engage in rough play.”

Children require a very specific environment in order to learn, absorb and develop to their full potential For many the jury may still be out, but one thing that is unquestionable is this – Montessori education continues to grow steadily in Australia. There are currently around 200 schools and centres nationwide and a growing number of privately owned centres as well as programs within public schools. “There is finally a growing awareness of Montessori methodology in Australia,” says Anna. “People realise it is an education philosophy that actually works.”

move back to Adelaide and their own home reno projects spurred friends Jacqui Hooper and Zoe Elvish to launch Canyon, a new interiors service designed to help would-be designers decorate their own dream home. “When I moved back to Adelaide I found it really challenging to source everything I wanted for my new home,” says Jacqui, who previously worked in advertising in Sydney. “We had just embarked on a huge renovation so I spent a lot of time getting to know the local furniture and homewares stores – there are some fantastic things on offer, but I found I sometimes had to look further afield.” Enter interior designer Zoe, who since studying design at Uni SA has worked on numerous projects as well as dabbling in retail as the co-owner of Adelaide-based homewares store Cocoon, and Canyon was born. “I guess it wasn’t quite as simple as that,” says Zoe, “but in a nutshell we bonded over a shared passion for interiors and decided to collaborate in order to help clients get the best results in their home from a limited budget.”

Projects to date have included a restaurant fit-out for a winery and the sourcing of unique and sometimes hard-to-find furniture for individual clients. The girls have also joined forces with Tony Bond, Paul Swain and Paul Gerard to form Veda Art + Interiors in North Adelaide. This combined office space, art gallery and furniture showroom showcases an eclectic range of art, vintage furniture and homewares and has allowed Jacqui and Zoe to begin sourcing their own Canyon range of lighting, furniture, rugs and other special pieces for the home. “The new Canyon range is exciting,” says Jacqui. “We have some custom-designed vintage Turkish patchwork rugs and unique neon light boxes that Zoe first sighted in LA, as well as beautiful French bed linen from Bedouin Societe –soft greys and neutrals for a master bedroom or bright tangelo or saffron for a child’s room.” To see the complete Canyon collection, or to chat to the girls about your own home decorating project, visit Veda Art + Interiors, 140 Barton Terrace West, North Adelaide.

knack for styling and a love of beautiful bed linen and unique, one-of-a-kind homewares means Jacqui Hooper’s three boys’ rooms are forever changing. As co-owner of Adelaide-based interiors business Canyon Jacqui is fortunate enough to be able to get her hands on the latest offerings from some of Australia’s best-loved designers – and mixed with a few well-cared for antique pieces she has created a unique space for three-year-old Toby. “I have always just bought pieces I love – either for myself or for our three boys – and then moved them around the house to find a place where they work best,” explains Jacqui. “Since our eldest son Hamish was born we have lived in five different homes in total – four rental properties in Sydney and now our own home here in Adelaide – so we have learnt to be creative and versatile when it comes to styling a room!” “I am a big fan of beautiful bed linen and have collected pieces from Harvest Textiles, Rachel Castle and Bedouin Societe for all of the boys’ rooms. They all work well

together and allow us to mix things up a bit and create different looks, changing from winter to summer or to suit the boys’ latest craze, which could be anything from Ninja Turtles to Skylanders.” Jacqui stresses good storage is key in creating a cohesive space and, most importantly for her, it needs to be portable – she gives a nod to IKEA for their great costeffective options. “I also like to incorporate a bit of character where possible,” she says. “The vintage crates in Toby’s room are from Veda Art + Interiors in North Adelaide and are a great way of creating shelves to display toys, book and other paraphernalia.” Other key items include the over-sized custom-made AL+EM pin board, the Nook bed from Jardan, the Mark Tuckey cowhide rug and the blue vintage toy chest, which was picked up from an antique store on Magill Road. “I just fell in love with it,” says Jacqui. “The colour is quite unique, and coincidentally very ‘on trend’ right now, and the age of the piece seemed to fit with the age of our new house, which was built around 1856.” kidsdomainmagazine.com.au kidsdomain

A COOL CLASSIC Subtle splashes of pink mixed with crisp white makes little Lulu’s room a space that will easily transition with her from baby to big-girl.

O

riginally the spare bedroom, five-week-old Lulu’s room was a blank canvas before mum Pia went about redecorating. While the black and white fireplace and a large north-facing window with views of the garden took centre stage, the neutral colour palette meant it could easily be changed into a boys or girls room. “When we originally decorated the room we chose curtains and carpet that would work for either a boy or a girl,” says Pia, “and colours that fit in with the rest of our home. When baby Lulu arrived a few splashes of colour made it easy to transform the room into a pretty, contemporary space that works.” The large Deborah Pauwe photographic print, which was purchased by Pia many years ago, was used as a starting point and other accessories, such as the awning stripe Armadillo & Co rug and the Leander cot, built on the contemporary meets classic theme. “Texture was introduced with the reindeer hide and the vintage ruffle pillowcase, while brighter splashes of colour were added with the kids’ pink Pantone chair and the Spacecraft metallic cushion. “Adding a bit of depth was important,” says Pia, “although I didn’t want the room to be too girly and pink!” The end result is a calming space that can easily grow with Lulu. “By changing a few of the smaller accessories as she grows we will easily be able to update the space, but I imagine the larger pieces such as the rug, print and vintage-style coat hooks will be fixtures for many years to come.”

retty pastels, paper pinwheels, glass jars overflowing with mouthwatering berries and a collage of framed photographs of Winter during her first year set the scene for this little cherub’s first birthday celebration with close friends and family. “The day was really simple,” says mum Kirsty, owner of Appleseed Photography and the lady behind the lens of Kids Domain’s photo shoots. “The lovely Rachel from Red Apple Events took care of all of the styling and design, so all that was left for me to do was to put together some of the decorations and take some snaps!” “My two older children, Jasper, 9, and Tulip, 8, really wanted to be involved so they made the paper pinwheels and chains, which were both from Martha Stewart Crafts. Other decorations included a selection of photos of Winter from her first year, birthday cards, flowers, fruit platters and scented candles. The sun was thankfully shining so we were able to open the French doors and spill outside.” Kirsty was also adamant that the party food would be a departure from the usual sugar overload synonymous with kids’ parties, instead she stuck to savory foods such as quiche, sandwiches, sausage rolls and vol au vents. The cake, which took centre stage on the food table, was created by Create Me A Cake – “Winter tried her very first piece of birthday cake and absolutely loved it,” says Kirsty.
