CITRUS GLAZED HAM Ingredients For the Ham 1 whole ham (bone-in or boneless, about 810 pounds) Whole cloves (optional, for studding the ham if desired)

For the Citrus Glaze 1 cup orange juice (freshly squeezed is best) 1/2 cup lemon juice (freshly squeezed) 1/2 cup honey or brown sugar 1/4 cup Dijon mustard 1 tablespoon orange zest 1 tablespoon lemon zest 2 garlic cloves, minced 1 teaspoon ground ginger 1/2 teaspoon ground cinnamon 1/4 teaspoon ground cloves

Instructions Preparing the Ham 1. Preheat your oven to 325°F (163°C). If you have a convection oven, reduce the temperature by 25 degrees. 2. Prepare the ham: If using a bone-in ham, ensure it fits in your roasting pan. For both bone-in and boneless hams, score the top of the ham in a diamond pattern. Make shallow cuts about 1/4-inch deep and 1 inch apart. If you like, stud the intersections of the cuts with cloves for added flavor and a classic appearance. 3. Place the ham in the roasting pan: Put the ham on a rack in the roasting pan. Add about 1 cup of water to the bottom of the pan to prevent the ham from drying out.

Making the Citrus Glaze: 1. Combine the glaze ingredients in a small saucepan over medium heat: orange juice, lemon juice, honey or brown sugar, Dijon mustard, orange zest, lemon zest, minced garlic, ground ginger, cinnamon, and cloves. 2. Simmer the glaze for 10-15 minutes or until it thickens slightly, stirring occasionally. Glazing and Baking the Ham 1. Brush the ham with the glaze: Approximately 30 minutes into the cooking time, start brushing the ham with the citrus glaze. Continue to brush the ham with the glaze every 20 minutes. 2. Bake until done: The total cooking time will depend on the size and type of your ham. A general guideline is about 15 minutes per pound for a bone-in ham and a bit less for boneless. The ham is done when it reaches an internal temperature of 140°F (60°C) as measured with a meat thermometer. 3. Let the ham rest: Once done, let the ham rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the ham, making it moist and flavorful. Serving Slice and serve: Cut the ham into thin slices, taking care to cut around the bone if using a bone-in ham. Arrange the slices on a platter and serve warm. Garnish (optional): For a festive touch, garnish the platter with additional orange and lemon slices or wedges.

Let’s Make Them Hasselback Potatoes with Rosemary

Potatoes Au Gratin with Thyme

Ingredients

Ingredients

4 medium potatoes, scrubbed (not peeled) 2 tablespoons olive oil 2-3 cloves garlic, minced Fresh rosemary sprigs, to garnish Salt and pepper, to taste Instructions 1. Preheat your oven to 425°F (220°C). 2. Place a potato between two chopsticks or wooden spoons to act as a stopper, then make thin, evenly spaced slices along each potato, cutting down vertically. Be careful not to slice all the way through. 3. Mix the olive oil and minced garlic in a small bowl. Brush the potatoes with this mixture, ensuring it gets in between the slices. Season with salt and pepper. 4. Place the potatoes on a baking tray and roast for about 50-60 minutes, or until the outsides are crispy and the insides are tender. 5. Five minutes before the potatoes are done, carefully insert small bits of rosemary sprigs into the slices. 6. Serve hot, garnished with additional rosemary if desired.

2 pounds Yukon Gold potatoes, thinly sliced 1 cup heavy cream 1 cup grated Gruyère cheese 2 cloves garlic, minced 1 teaspoon fresh thyme leaves, plus more for garnish Salt and pepper, to taste

Instructions 1. Preheat your oven to 375°F (190°C). Grease a medium baking dish. 2. Arrange a layer of potato slices at the bottom of the dish. Sprinkle with some garlic, thyme, salt, and pepper. Repeat the layers until all the potatoes are used. 3. Pour the heavy cream over the potatoes, ensuring it seeps into the layers. 4. Top with the grated Gruyère cheese. 5. Cover with foil and bake for 1 hour. Remove the foil, then bake for another 30 minutes, or until the top is golden and bubbly. 6. Let it cool for a few minutes before serving. Garnish with fresh thyme leaves.

Ingredients 1 tablespoon olive oil 4 cod fillets (about 6 ounces each) Salt and pepper to taste 1/4 cup unsalted butter, melted 2 tablespoons lemon juice 1 teaspoon garlic, minced 1/2 teaspoon paprika 1 tablespoon parsley, finely chopped Lemon slices, for garnish

Instructions 1. Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish suitable for the size of your cod fillets. 2. Prepare the Cod: Place the cod fillets in the prepared baking dish. Season both sides of the cod with salt and pepper, to taste. 3. Make the Lemon Butter Sauce: In a small bowl, combine the melted butter, lemon juice, minced garlic, and paprika. Mix well. 4. Apply the Sauce: Pour the lemon butter mixture over the cod fillets in the baking dish. Make sure each fillet is evenly coated with the sauce. 5. Bake the Cod: Place the baking dish in the oven and bake for about 12-15 minutes, or until the fish is opaque and flakes easily with a fork. The exact time may vary depending on the thickness of your cod fillets. 6. Garnish and Serve: Once done, remove the cod from the oven. Garnish with freshly chopped parsley and lemon slices. 7. Enjoy: Serve hot with your choice of sides, such as steamed vegetables, rice, or a salad.

Prepare for Baking: Transfer the seared cod fillets into your greased baking dish. Proceed by pouring the previously prepared lemon butter mixture over the fillets. 5. Bake: Bake in the preheated oven for 10-12 minutes or until the fish flakes easily with a fork. Since the cod is partially cooked from the sear, the baking time might be slightly reduced. 6. Garnish and Serve: Garnish with parsley and lemon slices before serving, as usual.

Transitioning from the fast-paced world of media and entertainment to the wine industry was definitely an exciting but challenging shift for me. One of the biggest hurdles I faced was earning credibility in a completely new field. Coming from a background where I was mostly known for my work as a TV host and content creator, breaking into the wine scene required me to really prove my knowledge and passion for wine and the business around it to gain trust and recognition. To tackle this challenge, I made it a point to learn as much as I could about the business while scheduling as many tastings as possible as well as networking and connecting with others in the wine world. On top of that, I used my existing platform and audience from my media career to introduce Sip Channé to a wider audience. It was kind of like bridging the gap between my previous work and my new venture in the wine industry. This strategy really helped me gain momentum and carve out my own space in the wine world. Sip Channé has quickly become known for its award-winning rosé and elegant white blend. Can you share the story behind the creation of your flagship product, Channé Rosé? The inception of our flagship Channé Rosé was inspired by an unforgettable experience exploring the enchanting South of France. The Provence region, renowned as the birthplace of some of the world's finest rosé wines, filled me with a sense of 40

adventure, romance, and happiness that I wanted to share back home in the US. However, upon my return, I couldn't find the same quality rosé that I had fallen in love with, prompting me to embark on a journey back to France. From there, I met with numerous winemakers to find the perfect flavor profile that would capture the essence of my previous trip… and we did just that!


Our rosé is a true reflection of the coastal charm of the South of France, made from Grenache, Cinsault, and Mourvèdre grapes and boasts a very dry profile. Drawing from my experiences in France, I sometimes even enjoy savouring a glass of Channé with a few cubes of ice, a practice known as a "piscine." I wanted to bring this casual yet sophisticated approach to enjoying wine to the US, encouraging others to savor the moment, whether feeling fancy or casual… or both! How do you see Sip Channé evolving in the next five years, and are there any new ventures or projects we can look forward to? In the next five years, I envision Sip Channé continuing to thrive and expand its presence both nationally and internationally. Our journey will involve exploring new markets and forging partnerships to bring our premium wines to even more consumers around the globe. While I can't reveal all the details just yet, we're currently working on some exciting projects that will further elevate our brand and solidify our position in the wine industry. Our commitment to quality, innovation, and sustainability will remain at the forefront of everything we do. We'll continue to prioritize creating exceptional wines that capture the essence of Provençal tradition while catering to evolving consumer preferences and trends. With every glass of Sip Channé we wanted capture the essence of Provence so we teamed up with our winemaker, Thomas, who has his vineyard just outside of St. Tropez to make this magic in a bottle. With every pour, we aim to transport you to the sun-drenched shores of the French Riviera, where life's simple pleasures are savored and moments of joy are celebrated. And the bonus is that our wines have no sugar and low sulfites. For us, Provence isn't just a place—it's a way of life that infuses everything we do at Sip Channé. It guides our winemaking process and inspires us to create unforgettable experiences for our customers As we have already touched upon, Provence has been a significant influence on your wine brand. Beyond the surprising pairing of rosé with spicy Thai curry, do you have another unconventional food and wine pairing you enjoy? I really enjoy pairing our Channé Blanc with sushi. It has notes similar to a cold sake with stone fruits and a dry and rich mouthfeel that is playful with a hint of spice that beautifully complements the delicate and fresh flavors of sushi. The refreshing qualities of the wine enhance the overall dining experience, balancing out the richness of the fish and the savory elements of soy sauce, fresh ginger

and wasabi. It's a delightful pairing that showcases the versatility of both the wine and the cuisine. For those new to wine, can you offer tips on how to approach pairing Sip Channé wines with meals? II would suggest keeping it simple and focusing on the basic flavor profiles of the wine and the dish. For Channé Rosé, which has vibrant fruit notes and a crisp acidity, I recommend pairing it with dishes that are equally light and refreshing.
