Butter Roasted Salted Nuts (to have with your beer- Netty) INGREDIENTS: ● ● ●

400g mixed nuts (I used almonds, cashews, brazil nuts, walnuts) (about 3 cups) 2 TBS melted unsalted butter 1/2 tsp kosher salt (or to taste)

Preheat the oven to 180*C/350*F/ gas mark 4. Line a large baking tray with baking paper. Toss the nuts together in a bowl with the melted butter then spread them out onto the baking tray in a single layer. Sprinkle with the salt to taste. Roast in the preheated oven for about 15 - 20 minutes, stirring every 5 minutes. Keep a close eye on them so that they don't burn. Remove from the oven and allow to cool completely. Taste and adjust the salt as needed. Open a BEER and enjoy!!:)

s p e t S & s t n ie d e r g In 3 cups flour (sifted) 3 teaspoons baking powder 1 teaspoon salt ¼ cup sugar 12 ounces of beer (1 bottle - the other 5 are for the BAKER:-) ¼ - ½ cup melted butter. Preheat oven to 375 and grease a loaf pan. Mix dry ingredients and beer. Pour into prepared loaf pan and pour melted butter over the mixture. Bake in preheated oven for 1 hour. Remove from pan and cool at least 15 minutes.

Churrasco a Picanh

s p e t S & s t n ie d e r g In 1.Trim the fat of 2.5 lb roast to about ¼-inch thickness. Rub meat with garlic, add generous salt and pepper, and a little chipotle chili powder. Leave in fridge overnight. 2. Burn 20-25 coals in chimney, then pour hot coals over 3-4 Mesquite chunks (not chips). Cover Weber, close all upper and lower vents to 1/3 open, 250°F (149°C). 3. Cut each of the roasts into 2-inch wide strips, slicing against the grain. Season the strips of meat generously with salt. Bend each strip of meat into a crescent with the pierce through with a skewer. Fit 2-3 pieces per skewer, place indirect in grill. Smoke meat to 110-15* internal temp, remove from grill.Heat 30-35 coals in chimney, spread for direct cooking. Finish meat direct over high heat, 4-5 mins per side.Remove meat from skewers, let sit 10 mins before slicing. 8. Serve with chimichhurri sauce:

Cook couscous according to package directions and let cool. Grill corn and cheese. Mix the kernels and cubed cheese with all the ingredients and add olive oil, vinegar and lemon juice.

s Ingredients & Step Heat the oven to 350 degrees. Butter and flour a cast iron pan. In a bowl, mix dry ingredients: 4 c of flour 1 scoop of sugar 4 t of baking powder 1 t of baking soda 2 ½ c of raisins 2 T of caraway seeds Then add: 1 egg (beat it in a cup before adding) 2 ½ c of buttermilk Batter will be sticky, so you might want to mix it with your hands. Next, spread it evenly into the pan. Lightly sprinkle flour on top. Then melt a little butter and spread it over the top and sprinkle with sugar. Lastly, with a knife, put a cross on the top. Bake for 50 - 60 minutes, or until the top is evenly browned. Keep an eye on it. Slice, toast, butter, and enjoy! ! Tchau!

Build a fire in your grill, leaving approximately half the grilling area free of coals. If using a gas grill, turn burners to high and then, when ready to cook, turn off the burner on the side where you will place the chicken. If using an oven, heat to 425 degrees. Remove neck and giblets from chicken. Rinse the chicken in cold water. Pat dry. Combine all the spices in a large bowl, then apply the dry rub to the chicken, inside and out. Put the beer can on a solid surface. Pick up the chicken and, taking a leg in each hand, put the cavity over the can and slide the bird down onto it. Carefully transfer the bird and the can to the cool side of your grill, its back to the fire, balancing the chicken upright and using the legs to support it in this position. If using an oven, place the chicken upright in a roasting pan using the same method and place carefully into the heat. Cover the grill and cook for approximately 1 1/4 hours, basting with barbecue sauce twice during the final half-hour if you'd like, until the breast meat registers 165 degrees on an instant-read thermometer or until the legs are loose in their sockets. (If you’re using an oven, you can tent the bird with foil after 45 minutes to keep the skin from getting too dark.) De-can and carve.B

Boil and salt the water for the rigatoni.

In a large saucepan heat 4 tbs. butter and olive oil over medium high heat until they begin to simmer. Add 1 lb. crimini or baby bella mushrooms and sauté until golden brown (about 5-7 minutes). Add 4 cloves garlic and cook for 2 more minutes.

Add 1 C/ dry white wine to the pan with the mushrooms. Simmer until the wine has reduced slightly more than 1/2 its volume.

Add 1 c. chicken stock and simmer until it has reduced to 1/2 its volume. Slowly add 1 c. heavy cream and ¼ c. freshly grated parmesan cheese. Stir until combined. Simmer the sauce for 2-3 minutes until it comes together. Drain the pasta and toss with sauce, minced parsley and chives

Restaurant Style Salsa __2 15oz cans of Diced Tomatoes with Onions and Peppers __1 cup (loosely packed) of Cilantro __1 Small Yellow Onion, roughly chopped __1 Jalapeno, seeded __Juice of 1 Lime __3 Small Cloves of Garlic Lots of salt Add all of the ingredients into a food processor, pulse until you reach your desired consistency.

Ingredients & Steps Ingredients *1-2 limes sliced in half lengthwise and the pith removed, can be cut in quarters after the pith is removed *1-2 tablespoons of sugar *2 ounces of cachaca 1 tablespoon of fresh lime juice - optional Crushed ice To garnish: *Lime slices Instructions *Either directly in a short glass or in a cocktail shaker, combine the lime halves or quarters with the sugar and use a muddler to gently crush and squeeze out the lime juice from the limes. *Add the cachaca and lime juice, stir or shake well. If using a cocktail shaker pour the drink, including the muddled limes, into a short glass with crushed ice. If making the drink directly in the glass, add crushed ice and stir. *Serve immediately garnished with a lime slice.

Dear Guy, This is not a "Goodbye" but instead a "See you later". The world is small and we will definitely cross paths again in life during our journeys. Who knows?! This is literally a “screwed up Negroni”. Because you replace the gin with prosecco, you can probably drink 3 before taking a nap. Ratio is 1-1-1 (if you wanted to make 1 drink instead of … a lot of drinks). Ingredients: 750 ml sweet vermouth, 750 ml Campari liqueur, 1 cup assorted seasonal fruit, 750 ml prosecco Steps: Add the vermouth and liqueur to a punch bowl and add large ice cubes or a large ice block. Add the fruit and top with prosecco.

Dear Guy, I have definitely enjoyed drinking with you, and I love your sense of humor and adventure, too, but I think what I’ll remember most was the day you had to deal with Jason G being bullied in your class. I happened to be in the English-Social Studies office when you came in hot, it was a moment of genuine anguish and love and frustration that made me grateful to work with you as an educator.
