JUNIOR LEAGUE COOKBOOKS Happy summer, Junior League! I hope your June is off to a wonderful start. The summer months bring so many opportunities for hosting, especially when you consider your quintessential summer holidays like Memorial Day and the Fourth of July. If you are looking for a recipe to bring to your next summer cookout, as always, the Junior League Cookbooks have got you covered. Summer nostalgia always brings to mind barbeques, corn on the cob, apple pie, and of course popsicles to cool off from that hot southern sun. At your next event, consider whipping up some guacamole (recipe found in the Revel Cookbook, page 108). If you are feeling spicy, substitute the dash of Tabasco with one half or a whole jalapeño. Make sure to clear out the seeds and wash your hands thoroughly after handling! This dip will be a hit as an appetizer at any summer event. If you are wanting a more Cajun-spiced dish, consider the Cajun Pasta Salad. This recipe is featured in Mardi Gras
to Mistletoe for the month of May on page 83. Something my mother always tried to avoid was heating up the house by turning on the oven for an extended period of time during the summer. This recipe does utilize the stove, but only for a few minutes to boil water for the pasta and to hard boil a few eggs. If you are firing up the grill, consider New Potatoes on Rosemary Skewers which is also found in Mardi Gras to Mistletoe on page 97. This simple four-ingredient recipe packs a punch with a mix of spices that enhance your run of the mill red potato. It also presents an alternative to your traditional barbeque potato salad or French fries. For your main dish, the Beef Teriyaki recipe can be done either on the grill or on the stove! This tasty main course can be found in the July section of Mardi Gras to Mistletoe on page 119. If you are grilling for the evening, put the seasoned flank steak on bamboo skewers that have been presoaked in water for at least 30 minutes. Hope some of these Junior League recipes inspire you to fire up the grill and enjoy some time outside on a warm summer evening.
