Over the years, we have received excellent responses to this special complimentary booklet, which we at MAPCO Publishers have strived to keep alive. And, the reactions to the unique style and content of the Menu Guide; as well as, the valuable service it provides to Jamaicans and visitors to our shores, have encouraged us to keep printing the publication. In the 2013 issue, we feature the wide variety of restaurants across the island; highlight the delightful mix of ethnic cuisine offered to diners, and feature the rise of budding chefs; as well as, explore alluring sauces, wines, and desserts. ood aficionados were treated to an exclusive culinary affair at the second series of events for the Savour Jamaica Supper Club, “Due South”, held at UTECH in Kingston and Jamaica Inn in Ocho Rios. Kicking off with live jazz and blues notes courtesy of the event’s saxophonist, delicious hors d’oeuvres and speciallycreated Appleton and Southern Comfort cocktails, “Due South” delivered a lip-smacking journey to America’s Deep South with TV chef and Louisiana native, Brad Turner. During her brief welcome, April Jackson, Founder of Savour Jamaica, said “We enjoyed challenging some of the culinary clichés often associated with southern fare and here we’ve taken familiar ingredients and dishes and redefined them in the most delicious way imaginable.” Chef Turner, also known as The Grill Sergeant, was as entertaining as his food was delicious and guests enjoyed the complete experience, from the candlelight ambience to the crash course education on the essence of Southern food and how it paired with Wray & Nephew’s selection of wines.

Chef Brad Turner, Jr. The six-course menu featured such soulful favourites as the New Orleans Seafood Gumbo, the Red Beans and Rice and Southern Fried Chicken with each dish managing to showcase the best of Jamaica too with local producers Copperwood Pork, CB Chicken and Rainforest Seafoods all contributing to full bellies – an enjoyable change to the stereotypical small plates often associated with fine dining. Dinner ended on a high with each guest leaving with a small gift of Kelly’s Homemade Pepper Jelly bringing to close an evening where, for US$150, guests were treated to cocktails, delicious menu, entertaining evening, fine wines and first-class service delivered by the Savour Jamaica Supper Club. A splendid night all round and there was even hope for those who missed out on the limited number of tickets that were available beforehand after Jackson said, “We are currently planning an event for a charitable cause as Savour Jamaica Supper Club is as much about enjoying the ultimate dining experience as it is about uplifting the culinary industry in Jamaica.”

T

he frozen yogurt has taken Kingston by storm since the opening of Tutti Frutti in Loshusan Plaza in May 2013. And thanks to Peter and Phillip Azar, owners of the franchise, children and adults alike have been enjoying the new and novel “ice cream shop” concept. There has been a consistent influx of people at all hours of the day (yogurt for lunch anyone?) and if you dare to venture out on a Friday, Saturday or Sunday night, then you may mistake it for one of the hottest night clubs in Kingston. Why? Because the line is at least 20 people strong, waiting for the security guard to give them permission to enter.

People obviously think that it’s worth the wait, possibly because 60 different flavours of yogurt are sold (a choice of 12 flavour combinations at one time) including dairy-free, sugar-free and soy, and more than 30 different toppings to choose from. The beauty of a visit to Tutti Frutti is that the entire experience is designed to please the customer. You chose the flavour or flavours of yogurt of your liking and then add one, none or all the toppings that you desire, and then your cup is

weighed and priced accordingly. So, whether you are craving a bite or a bucket of your favourite flavours, it doesn’t matter, because there is something for everyone. Peter Azar tells us more. Why did you decide to bring Tutti Frutti to Jamaica? We were customers of Tutti Frutti while in Los Angeles and Florida, and our kids went every day, sometimes twice a day… ..and they loved every minute of it. The whole concept was just so new and fresh, and we loved the philosophy of Tutti Frutti’s parent company that focuses on clean and healthy living to a great extent.

Tell us a little about the Tutti Frutti Concept. It’s all about the simple feeling of freedom that you get from being in a Tutti Frutti store. You are free from poor service and unhappy faces. Tutti Frutti gives the consumer the power to choose, the power to take a lot today or a little tomorrow. It’s a great feeling. What has been you biggest challenge so far?

The initial investment was very challenging because of machinery cost, and the franchise fees to get sole distributorship for Jamaica. The set-up of the store was very tough too, because we stuck to extremely rigid guidelines and did everything top of the line. The importation criteria were difficult too, but we got a lot of assistance from the Jamaica Manufacturers Association (JMA), the Trade Board, and the Ministry of Agriculture. It is much better than a year ago, but still a bit challenging, at times,

w i th t h e necessary forms, applications etc. What are some of the most popular items on the menu? They would be birthday cake, cookies and cream, lychee, salted caramel, and chocolate, but really, our entire frozen yogurt flavours move well. And we change them pretty regularly. We have approximately 60 different flavours, with about 12 at one

time, as well as, the combinations. What was the inspiration for the décor? Did you have to follow any company guidelines or were you able to add your personal style to the designs? We started out with franchise guidelines, but Judy Azar really took the task of making it her own and shaped it to be the clean space it is today. She specializes in that type of clean renovation and did a fantastic job.

What are the plans for the future? I am happy to say that we have about six offers for franchises islandwide, but immediate plans are to perfect our current store. That’s really what it’s about; perfecting the product, perfecting the service, and perfecting the experience that our valued customers get when they enter a Tutti Frutti store.

The Magic of Chocolate by Michelle Smith

W

hich one would you choose: an after-dinner aspirin or a couple of squares of dark chocolate? Chocolate is a magical and good for the heart. The antioxidants in chocolate fight free radicals, which are chemical compounds created naturally in the human body and cause disease and aging. Found in certain fruits, vegetables, and other foods, these oxidants can help slow the gaining process, and perhaps even help prevent heart disease, stroke and cancer. Dark chocolate in particular, because it contains more cocoa and is less processed, is high in antioxidants. Other good sources include blue berries, raspberries, acacia berries, black berries and straw berries. (Just imagine what a dark chocolate dipped strawberry can do for you!) And, since doctors agree that eating small amounts of dark chocolate on a regular basis may significantly increase cardio health, there’s no reason not to enjoy a little of this favourite treat every day! Wine and chocolate are a match made in heaven, but some combinations are definitely better than others. We have found that a wine with fruit tones can produce an outstanding ‘marriage’ with chocolate and a fantastic experience!

It’s also worth noting that semisweet chocolate works beautifully with wine: pair a Merlot with our ‘Original Sin – white Rum Truffles’ and our ‘Sexy Cherry – Cherry Liqueur’ Truffles and have friends talking about this sensual combination for weeks to come! And remember: whenever possible, avoid pairing wine with chocolate-covered nuts, as you will not enjoy the aftertaste.

HISTORY: Established in the 1830s and registered by Jack Daniel in 1866, the Jack Daniel Distillery is the oldest registered distillery in the United States. FAMOUS AND EMERGING JAMAICAN CHEFS

J

amaica has always had famous chefs, such as the late Norma Shirley, who operated from Norma’s on the Terrace, at Devon House, for many years. She was fondly known as the “Julia Child of the Caribbean.” Norma’s cooking style and texture of menus live on through those she taught; and is also captured in the culinary tour of

In 21st century Jamaica, young chefs are also emerging, not only to become bona fide entrepreneurs, but to establish their own restaurants; and operate as caterers, as well as to stage special brunch and dinner events. The Menu Guide spoke with Chef Karl Thomas, now Executive Chef and Chef Technologist, operating Lillian’s Restaurant, at the University of Technology, Jamaica (UTECH). Chef Thoms, who catered for the Jamaican athletic team at the London 2012 Olympics, spoke like a proud father about the budding chefs he taught at the Runaway Bay HEART Hotel & Training Institute, prior to moving on to UTECH. His path to the culinary arts began at Tarrant Secondary School, where he studied plumbing, carpentry and food preparation. He decided that he enjoyed food preparation, which led to his matriculation at the Runaway Bay HEART Hotel & Training Institute where he completed Levels One and Two in Food Preparation; and the Advanced Chef Programme, which included three levels for Certification by the Culinary Institute of America. He also com-

pleted— Certified Culinaria, Certified Chef de Cuisine and Certified Executive Chef, which are also approved by the American Culinary Federation (ACF). Chef Thomas was particularly proud of his proteges from HEART/NTA including—Shea Stewart, Garcia Brown, Brian Lumley, Theo Smith, Nicolas Beckford, and George Matthews. Shea Stewart, fondly called “The Bachelor Chef” is making his personal mark on Kingston’s culinary landscape through his company, Elite Kreations, which caters for all-inclusive parties, private dinners, corporate events and weddings; as well as, prepares meals and snacks for several delicatessens and supermarkets, in the Corporate Area, on a daily basis. “Culinary service is on a rise, as more people are respecting the craft, and being a chef is no longer seen as doing the job of an underachiever,” Shea says. Executive Chef, Garcia Brown excelled at the HEART/NTA Institute. He was the gold medal winner in the 2011 Taste of Jamaica Chef of the Year competition, and silver medalist in 2012. He is currently the Chef at the Brazilian Embassy. Brian Lumley, who was “Caribbean Chef of the Year” at the Taste of Caribbean Culinary Showcase 2013… has been cooking since he was nine years old. Now a Certified Chef de Cuisine, he travels to many countries to participate in culinary competitions. Some of his other awards include: The Observer Food Awards 2010, double nomination for Chef of the Year and Caterer of the Year; and the Taste

He has been featured as a guest chef on television shows; and is currently Personal Chef to the US Ambassador. Chef Thomas’ advice to his past students and other young chefs: “Today, young chefs need to focus on more traditional techniques. This brand, which ranks among famous sauces and is exported around the world, can be used to sauté and marinate meats; and works whether you are basting, grilling, stewing, or broiling.

And, in recent times, “Reggae, Reggae Sauce,” made famous by Jamaican Levi Roots, who pioneered the product in the United Kingdom, having won investment support on The Dragon’s Den television show; and is now a Jamaican sauce multi-millionaire. Levi Roots plans to open a spice shop at Devon House, in Kingston, in November 2013.

It is said that former Cuban President, Fidel Castro, following his official visit to Jamaica, developed a liking for Pickapeppa sauce; and spoke kindly about its “piquancy.”

On a recent radio show, he revealed that the shop was his first Jamaican business venture…as he “brings the sauce back home.” However, he also plans to get involved with other local based enterprises.

OUR GRAPES: We know that grapes come in a variety of flavours, very much like our mangoes and wines are generally named after the grape they are made from. White: Chardonnay Pinot Grigio Reisling Sauvignon Blanc Red: Cabernet Sauvignon Malbec Merlot Pinot Noir Pinotage Shiraz/Syrah Zinfandel

Legs – Drops of wine which creep up the side of the glass. Higher alcohol content will result in thinner legs that flow back into the wine after swirling the glass.

The most common descriptions: Acidity - Perceived as tartness, imparted by natural acids in wine. Desirable for balance with sweetness. Aroma – In a broad sense, odors, whereas ‘flavours’ are merely aromas perceived orally. Wine aromas are defined as odors produced by the grape, not aging or fermentation. Balance – A pleasurable equilibrium between complementary or opposing factors, as in balancing oak to fruit aromas or residual sugar to acid in the wine. Body – The wine’s ‘substance’ or viscosity. Affected by residual sugar, oak aging and concentration of alcohol and grape extracts.

Tannin – Naturally occurring phenolic compounds in grape skins, stems, seeds, and oak barrels which impart an astringent, mouth-drying sensation. More prevalent in red wines. Desirable in moderation, especially with fatty foods. Varietal – Type of grape variety(ies) in a wine, like ‘Chardonnay’. Vintage – Year of harvest for at least 95% of the grapes in a wine. If not noted, indicates blend of multiple years’ harvest.

Serving Wine… The way a wine is served is a decisive factor in ensuring that it will be fully appreciated. So first things first: Hold the stem or base of the glass so that your body heat does not warm the wine Basic Principles - White wine is served before red wine - A light wine should be served before a robust one - Wines should be served in order of increasing complexity - Younger wines are usually served before older ones Serving Temperatures: Always remember, that room temperature in Jamaica is not room temperature in Europe, therefore you may need to chill your red wine before serving it. Ideal serving temperature for white wines is 41-48F (5-9C) and for red wines it is 59-64F (15-18C). Very low temperatures will anaesthetize the taste buds and one’s perception of sweetness and alcohol increases with higher temperatures. Cold red wine tasted more acidic and bitter. Matching Food with Wine: There are no hard and fast rules for pairing wine with food – what is important is that you like it! However, the general guidelines are: Food Suggested Wine Shellfish/Fish: auvignon Blanc, Pinot Grigio, Riesling Chicken: Chardonnay, Pinot Noir Spicy Foods: Riesling, Viognier Pork/Veal: Merlot, Pinot Noir, Sangiovese Lamb: Syrah/Shiraz, Merlot, Cabernet Sauvignon Beef: Cabernet Sauvignon, Zinfandel, Syrah/Shiraz Fruit/Custard Desserts: Ice Wine, Sauternes, Late Harvest White Wines

amaica is known for its fine rums, liquors and beers; however, fine wines from famous vineyards and vintners are imported from around the world. And, while good quality wines are available at retailers and on supermarket shelves, two entities—the Wine Shop in Southdale Plaza and Bin 26 at Devon House are specialists in the promotion of fine wines. Both entities also offer special wine tastings. Members of the Wine Shop and their friends are invited, on a quarterly basis, to tasting sessions, which feature wines from special regions…“featuring blends of different grape varieties and showcasing the character of the vineyards.” Bin 26 offers “over 300 international wines by the bottle and a satisfying selection by the glass.” They invite wine aficionados to come “sip, savour and celebrate.” Their website features wines; and their space is available for private dinners and receptions.
